“Rejoice always, pray continually, give thanks in all circumstances; for this is God’s will for you in Christ Jesus.” – 1 Thessalonians 5:16-18

I like to start each day with thanksgiving. It can be hard when I open my eyes and remember whatever has me stressed or depressed at the moment. But if I can stop and begin listing my many, many blessings, it changes everything. Whatever you do first thing in the morning—the moment your feet hit the floor—whether it’s make the bed or stumble to the coffee pot, begin listing the small things you’re thankful for such as a good night’s sleep and a reasonably pain-free body. Then, move out to your friends and family, your job, your home, then out further to God the Father and a Savior who loved you enough to die for you. No matter what your day has waiting for you, those first moments of thanksgiving can make all the difference.

That’s because gratitude is God’s love language. In fact, the Bible uses the word “gratitude” ( χάριτι in Greek) 157 times. Notice He doesn’t tell us to “feel thankful” in all circumstances just to “be thankful”. I believe, when we exercise the discipline to thank God even when we don’t FEEL thankful, the scales can fall from our eyes and we can catch glimpses of God’s glory in even the most dire circumstance. When we begin our day thanking God for Who He is and thanking Him for what He’s done, our perspective of Him grows larger and your problems grow smaller. Let’s try to make every day THANKSgiving day!

It’s Fall and Mansfield is the place to be this November. Fun starts Saturday, November 2nd at 7:30 a.m. at the 10th Annual Mansfield Run with Heart, at Methodist Medical Center. Also on the 2nd there is a Pressure Points Self Defense class at the Mansfield Activity Center (MAC) for ages 12 and up.

On Monday, November 4th we break ground on our Veteran’s Memorial Park at 11 a.m. at Julian Field Park.

On Saturday Nov 9th at 10 a.m. is the Veterans Day Parade & Salute using a New Route this year along Broad Street in front of City Hall. Just when I thought I couldn’t be prouder of our city, the City of Arlington was chosen to receive Scenic City Certification at the Texas Municipal League’s Annual Conference. 175 Scenic City officials and business leaders from across the state were on hand ze Arlington, which was among 15 cities rtification for the 2024-2029 period.

The Scenic City designation was based on the “unique Scenic City model” devised by The Scenic City Certification Program and Scenic Texas, Inc. and was awarded based on The City of Arlington consistently demonstrating its dedica tion to enhancing public spaces and roadways through long-term, strategic investments. FINALLY HEARING THE HARD THINGS JESUS SAID

STRUNG OUT ON A COUCH…when a Visitor arrives!

There were only two things I cared about as a teenager: surfi ng and getting high.

On this particular south Florida afternoon, the waves were fl at. That left me with only one option. I had one pill of ecstasy, a bag of weed, and the house to myself. Not sure why I’d be having my own little private party that afternoon, as I had nothing to celebrate; I was only 19 years old and had just been arrested for the second time in my life. That arrest was a violation of my probation for the fi rst arrest, which only compounded my problems. My life was heading in the wrong direction quickly.

But that afternoon the party had a different ending. I still remember it like it was yesterday. I was sitting on the couch in my living room, strung out, and in one of the most shameful states of my entire life. As the drugs wore off, I began thinking about the embarrassment of a man I had become, and the direction my life seemed to be heading. These thoughts led to me asking myself some difficult questions about the meaning and purpose of life, and where I had gone so wrong. But as I contemplated these things, I remember becoming aware that something strange was happening; I had answers. The answers were clear and obvious, as if they had been right in front of me the whole time. My eyes were being opened. That afternoon, in a period of about 90 minutes, it was as if every question I had about life was answered. All the seeds of truth my mother had planted during my early childhood years were being watered. I now realize the Holy Spirit had joined me that afternoon. I sat down on that couch blind. But when I arose, I could see. I remember getting in my car the next morning and looking at the stack of CDs in my console, and thinking to myself, I don’t like any of this music anymore

GOD – A GIRL – AND AN EDUCATION

One year later I was enrolled in Bible college at Christ for the Nations Institute in Dallas, Texas. I had no intentions of going into the ministry; I just knew I had a desire to study the Bible, to know God more, and C.F.N.I. seemed to be where He was leading me. I’m certain He was testing me also, to see if I’d be willing to lay down my idol of surfi ng and follow Him.

I graduated C.F.N.I. with a Certifi cate of Practical Theology. Around that same time, I met my beautiful bride, Tiffany, and we were hitched one year later. But now I had a problem; I had to figure out how to provide for this girl. I didn’t have the money or desire to go to college, and I still didn’t want to go into the ministry. So, I did what any normal person would do. I decided to become a real estate agent. Eight hundred bucks and eight weeks later, I had all the building blocks of something great: God, a wife, and a real estate license! Time to start building. So that’s what I did. I was young, newly married, and ambitious. Tiffany and I began building a family, and pursuing what I think most would refer to as the American Dream .

THE AMERICAN DREAM …making babies and making money!

Success in real estate came quickly. I sold 50 homes my fi rst full year in the business and won Rookie of the Year in my brokerage. Life was going well. Tiffany and I were making babies and making money. I think we would have been considered a typical middle-class Christian family in the Bible belt of America. We had a house, two cars, two kids, and went on two vacations a year. I did my quiet times in the morning. We gave our ten percent faithfully. We went to church on Sunday (when it was convenient) and lived a moral and upstanding life. What else is there?

Fast forward about 20 years and it’s October of 2020. The kids are older. The house and cars have gotten a whole lot nicer. I now own my own brokerage, and I’ve got about 100 agents working for me. We’re on track to sell nearly 1100 homes, and I’m about to make

more money than I ever dreamed I would make in one year. While the rest of the world has shut down for COVID, my wife and I somehow manage to get away for 6 vacations (don’t judge me). Oh, and to top it all off, I’m just under 6% body fat. We still go to church when it’s convenient. I still do my quiet times. We still give our ten percent. 2020 was the year I realized I was no longer chasing the American dream; I had achieved it. In October I decided to take the rest of the year off. After all, I had earned it.

SOMETHING IS WRONG!... and the darkness sets in.

That time off marked the beginning of what would become the darkest and most difficult season of my life. As I thought about the life I had built, I came to the realization that I had achieved everything I had ever set out to achieve in life, and yet I was discontent and unfulfilled. Something wasn’t right. Something seemed to be missing. Nevertheless, the new year was approaching, and I knew my time off would be coming to an end. So, I did what I always did; I thought about the upcoming year and began to list out another set of goals to conquer. But I quickly realized that something was wrong; I was fi nding no motivation to achieve any of those goals. The money, the toys, the vacations, the body, none of it excited me anymore; I had already attained those things, and I knew they wouldn’t satisfy the void. Yet I didn’t have a choice because I had created a life, and a business, and an image, that now had to be maintained.

As I approached 2021, it felt like the pressure was building with each passing week. I felt like everyone in my life was expecting to see a renewed and invigorated version of Mike, that was ready to crush another set of goals. But that Mike was nowhere to be found. Instead, with each passing week, the exhaustion and emptiness seemed to be growing. I found myself with a complete inability to move forward and no answers in sight, and yet my deadline to get back to work was getting closer and closer. I was now beginning to feel trapped — by

the very life I had built. The weight of the life I had created was crushing me. I felt like it was suffocating me.

THE EXAM BEGINS

As I did when I was 19, I looked at my life and began to ask myself some questions. But this time the questions were much more difficult, and the answers didn’t come nearly as easily. I had read the Bible; I knew what it said. And I knew something was terribly wrong. There was a life the scriptures say was available to me, that I was not experiencing. As far as I could tell, that Book said I was supposed to be walking in a peace that surpasses all understanding, a joy that is unspeakable. It said the believer has true contentment available to them. But when I looked back over the last 20 years of my Christian walk, I did not find these things. I saw a man whose peace, and joy, and contentment were constantly rising and falling based on the number of pending transactions he had on the books, the amount of money he had in the bank account, how much body fat he saw in the mirror, and how far away the next vacation was. My tree was not producing genuine fruit (Galatians 5:22–23), and I knew what Jesus said about trees that don’t produce fruit (Matthew 7:19). What had started with some questions was now turning into a full-scale self-examination.

SINCE THE FIRST HURRICANE MADE LANDFALL, CAUSING WIDESPREAD DEVASTATION ACROSS SIX STATES, THE NORTH TEXAS-BASED MINUTEMAN DISASTER RESPONSE (MDR) HAS MOBILIZED MORE THAN 70 VOLUNTEERS, DEDICATING NEARLY 6,000 HOURS OF RELIEF EFFORTS, ASSISTING OVER 130 FAMILIES IN VALDOSTA, GA, AND ASHEVILLE, NC.

The mission of MDR is to serve in the immediate aftermath of a disaster by deploying highly trained and equipped volunteers who assist with disaster scene management, emergency communications, and debris cleanup — at no cost to those they help. They simply deliver hope with precision and compassion.

Founded in 2011, MDR has grown from a small organization into a network of 750 volunteers across 36 states who are ready to respond quickly and self-sufficiently to disasters in the U.S. and Puerto Rico.

Savor Steamed Vegetables

Holiday feasts are all about the side dishes. Dogs can enjoy their own sides with plain vegetables like steamed green beans or carrots, making for a flavorful, nutritious addition to their meals. The presence of both caffeine and a chemical called theobromine makes chocolate toxic to dogs because they can’t metabolize them the way humans can. If ingested, chocolate can lead to a spike in heart rate and blood pressure, as well as vomiting, diarrhea, agitation, seizures and more. If ingested, pet parents should monitor their pup closely and check with a veterinarian.

Enjoy Fresh Meats

When cooked, fresh meat such as chicken, turkey, pork or beef can satisfy cravings while also offering pups a nutritious meal that is easy to digest. Despite the adage that “you’ll catch your death of cold,” the cold doesn’t cause illness. More accurately, the cold is more hospitable to viruses, making it easier for them to spread. While you can’t control Mother Nature, you can take steps to protect your health when temperatures drop.

PROTECT YOUR IMMUNE SYSTEM

A weakened immune system makes it harder for your body to ward off intrusive germs. If you’re otherwise healthy, protecting your immune system can be as simple as stepping up typical healthy habits, like eating plenty of nutrient-rich produce, getting enough sleep, and exercising. Managing

Have your lips gone from full and voluptuous to thin as a pencil line? It’s a normal part of aging. Starting in our 30s, our bodies produce less collagen and elastin. As a result, our once-full lips lose defi nition and plumpness, and many of us are left with thin, defl ated lips.

If you’re looking to get fuller, more luscious lips, there’s a whole world of non-surgical and cosmetic options available. We explore some of them here.

Fillers. When you want to restore your lips’ natural volume without any drastic changes, look into lip fi llers. This non-surgical procedure involves injecting hyaluronic acid, a naturally occurring substance in the skin, into the lips to add shape, defi nition, and volume. Many fi llers last six to 12 months and provide immediate results with no downtime.

Platelet-rich plasma (PRP) therapy. This non-surgical procedure involves drawing a small amount of your blood, processing it to concentrate the platelets, and then injecting it into the lips to stimulate new collagen and cell production. If you’re looking to give your lips a subtle, natural fullness, this could be right for you.

Microneedling with lip infusion. Microneedling essentially prompts your lips’ skin cells to rebuild. The procedure involves creating tiny micro-wounds in the uppermost layers of your lips using a device with fi ne needles. When you combine it with a lip infusion of hyaluronic acid, you enhance the natural plumping effect of microneedling. Just note that it may take a few weeks to notice results.

Lip augmentation. This cosmetic procedure gives you fuller, plumper lips and can involve various techniques like fat grafting and dermal implants. Although the recovery time can range from a week or two, you can benefit from longer-lasting results. Most

lip augmentation procedures are performed under local anesthesia. Lip lift. This straightforward surgical procedure is exactly what it sounds like — a surgeon makes a small incision below the base of the nose and gently lifts the upper lip for a more defi ned lip and a more youthful appearance overall. The results are often permanent. Plan to take one or two weeks off to recover and ensure proper healing.

Lip implant. When you want to plump your pout for the long haul, a lip implant may be the way to go. Designed to be a permanent solution, a lip implant involves placing silicone or other biocompatible materials into the lips through a small incision in each corner of your mouth. You can customize the size, shape, and placement of your implant, allowing you to enhance certain areas, like the cupid’s bow. Recovery time is typically one to three days, although it can take a week or two for the tissue to begin scarring and hold the implant in place.

An Easy Lip Care Routine for Soft, Healthy Lips

Do you pamper your pout like you should? Here are a few simple, quick ways to take care of your lips. Start with hydration. Every morn ing, apply a hydrating lip balm or nourishing lip oil. Make sure it has SPF to protect against the sun’s rays.

Give your lips a mid-day refresh. After lunch, swipe on some lip balm for a burst of hydration. Look for a light weight, non-greasy formula with nourishing ingredients like vitamin E, grapeseed oil, and honey.

Exfoliate to smooth and soften. Once or twice a week, gently rub a lip scrub onto your lips using circular motions. Leave it on for five or 10 minutes, and then rinse with warm water. You can make your own lip scrub at home by combining a teaspoon of honey or olive oil with two teaspoons of sugar.

Apply a lip mask before bed. Use a leave-on lip mask to give your lips a surge of moisture while you sleep. You can buy a product or DIY it by combining equal parts honey and coconut oil.

A FABULOUS fireplace

GIVE THIS COZY FOCAL POINT A FACELIFT

Cold weather season is here, and my favorite thing about it is snuggling by the fireplace. But if you find your fireplace is more of an eye sore than a starring attraction, there are things you can do to change it. These options range in cost from budget-friendly to a bit of a commitment, but each one will make an impact and hopefully turn your ugly fi replace into a beautiful focal point.

PAINT IT

Painting is one of the easiest and least expensive ways to improve your fi replace. If your fi replace surround is a decent design, simply painting it a different color can drastically alter the look. You can go with any color, and if you go to Pinterest and search “painted fi replace,” you’ll see all kinds of options, from white (probably the most common) to green, blue, and black.

When prepping your fi replace to paint, remove the old screen and replace it with a stand-alone one. It won’t add much cost to the project but will update your look.

Paint is your least expensive option, and you get a lot of bang for your buck because the transformation is impactful!

SALVAGED FIREPLACE SURROUND

I also like to source salvage fi replace surrounds. These can be pricey antique marble and stone surrounds imported from Europe, or they can be great bargain fi nds at a salvage yard.

Finding a salvage mantel surround brings a lot of character into your home. You can also look on Etsy and eBay for these or do a Google search for “Salvaged Fireplace Surrounds,” you can find some beautiful and unique items.

TILE IT

Tile is a great way to bring in a fun, colorful focal point with your fi replace. There are literally thousands of options, and it truly makes your fi replace a work of art. This is an option people don’t utilize often, but when done right, it’s probably one of the most impactful changes.

COUNTERTOP SLAB

Another option is using a countertop slab around your fi replace. When we bought our home (not pictured), I was not fond of the fi replace. The tile was slapped straight to the wall without any dimensional depth to the fi replace’s facade, and that is NEVER an ok thing to do.

I knew I wanted something modern with clean lines, and the way my fireplace is situated was the perfect opportunity for a countertop slab.

This may sound daunting, but if you like this look, all you need to do is fi nd a good countertop fabricator, and they can get this done for you.

START FRESH

Sometimes the fi replace just makes no sense. Perhaps where it is located or if it is super traditional, but your taste leans modern, there are a plethora of reasons it may not work, and sometimes, if budget allows, it’s best to start completely over!

Here is a before and after with a complete makeover. You can see how it went from dated to very modern and sleek. This is your most expensive option, but never think something is impossible.

HOW TO USE THESE FLAVORS LIKE A PRO

Spice THINGS UP

First things first. What’s the difference between an herb and a spice? Quite simply, they’re different types of seasoning from other parts of the plant. Herbs come from the green, leafy part of the plant. Think basil, rosemary, sage, thyme, parsley, and oregano. A spice is the root, stem (stalk), seed, fruit, flower, or bark of a tree or plant. Think ginger, turmeric, cinnamon, nutmeg, cumin, saffron, and black pepper. Herbs are often used fresh, while spices are almost always dried. Both add flavor to food, but herbs tend to be more subtle, while spices lend a stronger flavor.

As you plan your holiday menu, consider how you can elevate your cooking with spices like the pros.

GRIND ‘EM

Sure, you can buy your cinnamon or nutmeg already ground, but purchasing whole spices and grinding them yourself will immediately increase the flavor and quality of your dish. You may also save on your grocery bill since pre-ground spices are typically more expensive than their whole counterparts.

Grinding your own also allows you to decide what texture you’d like. Experiment with a more rustic texture as you grind with a coffee grinder, mortar and pestle, or a spice mill. (This is especially nice with cumin.) Or try a combination of fine-ground and rustic.

TOAST ‘EM

You know that little lightly burnt edge on the pepperoni that tastes better than the rest of the pizza? That’s because of something called the Maillard reaction. Similarly, toasting can bring out a whole new layer of flavors in spices, especially the “warm spices” such as cumin, coriander, and cinnamon. To turn up the flavor of your spices, before you grind them, toss them onto a dry pan (no oil) and heat over a high flame. Shake periodically to avoid burning. When you smell the spice fragrance, you’ll know you’re doing it right. For a deeper, smoky flavor, toast your spices until they darken in color and the fragrance becomes even headier.

REPLENISH ‘EM

The best cooks I know buy spices often because they don’t buy more than they’ll need for the next few weeks. It’s fine to shop in the bulk spices aisle since these spices are sold and replenished frequently. But remember, time is the enemy of spices. As they sit in your spice cabinet, they lose their oomph, and oomph is what you want for your dishes.

TOSS ‘EM

When you buy ground spices, there’s no way of knowing how long they were ground before they were packaged, how long they spent in a warehouse, and how long they were on the grocery store shelf before they worked their way to the back of your pantry. (I recently found some in my pantry that came from my dad’s house, and he’s been gone 20 years.) Since spices lose potency over time, it might be time to thank them for their service and replace them with something fresher.

THE INS AND OUTS OF THIS CULINARY TRADITION

Did you know many Americans begin the holiday season in a fowl mood?

Of course, we are talking about Thanksgiving when the National Turkey Federation says that 88% of Americans eat turkey. That comes to 46 million birds consumed on the fourth Thursday of every November.

The all-clear for the turkey population doesn’t end then either, as another estimated 22 million turkeys are consumed on Christmas.

While oven-roasted is still the traditional and most popular method of preparing a turkey, some alternatives are becoming popular. They include grilled, deep-fried, smoked, and believe it or not, “upside down roasting,” the rationale being that the dark meat takes longer to cook and white breast meat needs to be shielded from cooking too soon. Some cooks like to brine turkey, which is a form of marinating it overnight, or using a dry rub to give it extra spice and flavor.

Still, estimates are that 76% of turkeys are cooked old school on Thanksgiving, meaning oven roasted. Most culinary experts recommend setting the oven temperature at 350°, allowing 13 to 15 minutes per pound. Because the average size turkey purchased is 16 pounds, that means at least four hours and use a food thermometer to make sure the turkey has reached a safe minimum internal temperature of 165°. Remember, not all ovens are the same, and cooking time may vary, especially if you stuff the turkey.

Oh, did we say stuff the turkey? This is generally a regional practice followed in the Northern U.S. A mixture of crumbled bread or pre-packaged breadcrumbs, vegetables, seasonings, butter, eggs, and water or stock are mixed and placed in the turkey cavity. It is safest to cook the stuffing separate but, if you cook the turkey in the cavity, make sure the center of the stuffing reaches 165° and wait 20 minutes after taking the bird out of the oven before removing the stuffing. In the South, those ingredients, often using cornbread, are baked in a separate pan and known as dressing.

Since this is Texas and November can have relatively mild weather, grilling and deep-frying turkey is becoming more popular. You can grill the whole turkey as you would any meat or carve the wings and legs ahead of time and grill them separately. Deep-fryer pots are used for frying turkeys, which should be completely dry and not stuffed. Peanut oil is preferred, although cooking oil with a high smoking point will do.

And what would Thanksgiving be without some leftovers? FoodSafety.gov recommends that leftovers be stored at 40° or colder within 2 hours of serving to prevent food poisoning. Slice or divide big cuts of meat, such as a roast turkey, into small quantities for refrigeration so they can cool quickly. Plan to eat within 3 to 4 days and reheat all leftovers to at least 165° before serving.

You can also freeze turkey leftovers, which can be thawed and eaten from two-to-six months later. However, something says those leftovers will disappear in a few days.

Did you know that Sarah Josepha Hale is considered the mother of Thanksgiving? In today’s terminology, she was an influencer, writer, and editor who, according to the National Women’s History Museum, first campaigned for a national day of giving thanks in the 1840s.

Hale also authored the nursery rhyme “Mary Had a Little Lamb.” She was from New England, where turkeys were plentiful, which may be why we don’t eat lamb on Thanksgiving.

Hale wrote a letter to President Abraham Lincoln, who, in 1863, during the height of the Civil War, signed into action “A National Day of Thanksgiving and Praise.” However, the unofficial first Thanksgiving can be traced to 1621 when the Pilgrims and Native Americans joined in a three-day celebration of the fall harvest.

OLD TIME CHRISTMAS AT SILVER DOLLAR CITY

The theme park that grew out of a cave boasts more than 40 rides spread across over 100 acres. But what makes it shine is a luminous Christmas glow-up of 6.5 million lights. Enjoy over

1,000 trees decked out in their evergreen best and visit the park’s Midtown Light Spectacular to see light tunnels, running reindeer, and a Christmas light parade. Broadway-style holiday musicals and performances inside Silver Dollar City also run through the season.

LIGHT UP THE NIGHT

If the fi rs and pines steal your heart each Yuletide, this trail of 700 trees might be your highlight. The Branson Christmas Tree Tour means you’re never far from a conifer set ablaze with colorful lights, whether on a mountain coaster, showboat, or at a resort. Helicopter tours will happily fl y you over the enchanted spectacle, but you can also cruise through the drive-thru displays at Branson’s Lights of Joy, The Shepherd of the Hills, Promised Land Zoo, and Big Cedar Lodge.

VISIT THE NORTH POLE

The Branson Scenic Railway offers historic rides that zip over Lake Taneycomo and tunnel through the Ozark Mountains at other times of the year, but Christmas is different. Especially for younger kiddos, this winter train ride to meet Old Saint Nick offers plenty of Christmas tradition. Marking the occasion, train cars arrive festooned in tinsel, draped in flowers, and otherwise bedecked for frosty weather fun. Passengers should be prepared to meet Santa, sip hot chocolate, and eat cookies. Once Santa boards, he’ll gift everyone a tiny silver bell. It all happens on an hour and 15-minute round-trip. First, you’ll glide over to Hollister to pick up Mr. Claus, then head north to a light show before returning to Branson. On this trip to the North Pole — based on Chris Van Allsburg’s beloved book, The Polar Express — you’ll hear carolers singing, too.

WARM UP THIS WINTER WITH SCRUMPTIOUS SOUPS & STEWS

SOUTHWEST PORK STEW

SERVINGS: 10 | PREP: 20 MIN. | COOK: 4 HRS. 30 MIN. | TOTAL: 4 HRS. 50 MIN.

INGREDIENTS: 6-8 tomatillo, peeled and washed | 1-2 jalapeño | 1 white onion, diced & divided | 1 bunch cilantro, chopped & divided | 4 Tbsp. extra virgin olive oil, divided | 2 pork tenderloin | 2 garlic cloves, minced | 4 cups chicken stock | 2 Tbsp. cornstarch | 1 can Rotel tomatoes & green chili | 1 can sweet corn, drained | 1 can black beans, drained & rinsed | 3 Tbsp. ground cumin | 2 Tbsp. ground coriander | 2 Tbsp. kosher salt | 2 tsp. black pepper

DIRECTIONS: PREHEAT oven to 350º. PLACE peeled tomatillos, ½ diced white onion, and jalapeño on a parchmentlined baking sheet. DRIZZLE with 2 Tbsp. olive oil. ROAST for 15-20 minutes until soft and slightly browned. REMOVE salsa verde ingredients from the oven. LET cool. DICE pork tenderloin into large pieces like stew meat. HEAT a large frying pan over high heat. ADD 2 Tbsp. olive oil to the pan. SPRINKLE pork tenderloin with salt and pepper and brown in batches. SET aside. ADD the remaining onion, garlic, browned pork tenderloin, Rotel, sweet corn, and black beans in a slow cooker. MIX cornstarch with 1 cup of stock in a separate glass. POUR the stock and cornstarch mixture into the slow cooker. SEASON with cumin, coriander, salt & pepper. COOK on high for 4 ½ hours until pork is tender. REMOVE the stem and seeds from the jalapeño. PLACE the onion, jalapeño, and tomatillos with juice into a blender. CHOP cilantro and add ½ of cilantro to the blender and blend until smooth. STIR in the salsa verde when the pork is tender and adjust the seasoning to taste. STIR in the remaining cilantro. SERVE with sour cream and fresh jalapeños (optional).

TIPS & TRICKS: You can make stew in less time using an Instant Pot or pressure cooker. Follow the same instructions but adjust the cooking time to 45 minutes under pressure.

TIPS & TRICKS: Only blend half of the soup if you want a chunky curry. You can also use it as a sauce over rice or vegetables.

PUMPKIN COCONUT CURRY

SERVINGS: 4 | PREP: 15 MIN. | COOK: 20 MIN. | TOTAL: 35 MIN.

INGREDIENTS: 1 Tbsp. extra virgin olive oil | ½ medium sweet onion, diced | 2 garlic cloves, minced | 2 Tbsp. Thai curry paste | 1 small pumpkin (or butternut squash) | 1 14 oz. can coconut milk | 3 cups vegetable stock | 2 tsp. fish sauce | 1 Tbsp. Thai basil, chopped | ½ tsp. kosher salt | ¼ tsp. black pepper

DIRECTIONS: HEAT olive oil in a medium sauce pot over medium heat. DICE onion and garlic. SAUTE in olive oil until softened. ADD Thai curry paste. PEEL , dice, and de-seed pumpkin. Add pumpkin to onions and garlic. SHAKE can and then add coconut milk and vegetable stock to the pot. ADD fish sauce, Thai basil, salt & pepper. LET simmer for 20 minutes until the pumpkin is softened. REMOVE from heat. BLEND using an immersion blender or countertop blender. PLACE back on the stove to keep warm. ADD more vegetable stock to make it thinner if desired.

TIPS & TRICKS:

This is a brothy vegetable soup. For a thicker soup, puree half or more of the mixture and add back into the broth.

BORSCHT

SERVINGS: 10 | PREP: 20 MIN. | COOK: 30 MIN. | TOTAL: 50 MIN.

INGREDIENTS: ½ medium yellow onion. diced | 1 carrot, diced | 2 celery stalks, diced | 3 beets, peeled & diced | 2 cups green cabbage, chopped | 4 gold potatoes, diced | 2 Tbsp. extra virgin olive oil | 6 cups chicken stock | 1 bay leaf | 3 Tbsp. white vinegar | 1 Tbsp. fresh dill, minced | 1 Tbsp. kosher salt | 1 tsp. black pepper

DIRECTIONS: DICE onion, carrot, and celery. PEEL and dice gold potatoes and beets. PLACE potatoes in a bowl of cold water until ready to use. CHOP cabbage. HEAT olive oil in a large stock pot over medium heat. ADD onion, carrots, and celery and saute until softened. ADD beets and cabbage. ADD stock. BRING to a boil and let simmer for 10 minutes. ADD potatoes, bay leaf, vinegar, dill, and seasoning. BRING back to a boil and let simmer for another 15 minutes until beets and potatoes are cooked through but not mushy. REMOVE bay leaf and serve.
