Don’t look now, but it’s time for football, bonfires, bowls of chili, and pumpkin-spice everything. I see my neighbors setting out pumpkins in their yards and planting mums in their gardens. And though we may not have the riot of red, orange, yellow, and burgundy they enjoy elsewhere, you can still catch that vibrant yellow or red tree here and there. Fall is a lovely time of transition and a gateway to the seasons of Thanksgiving and Christmas.

It also reminds me of the work God is doing inside of His children. Just as the leaves are falling from the trees, the earth is working to replenish itself, storing up energy for a burst of new life in the spring. In the same way, the Father is helping me slough off old, unhealthy behaviors, bad habits, and sins to make room for new life and new growth within me. The spiritual “seasons” of fall and winter are necessary for the spring of rebirth and new life the Father wants to bring forth in each one of us. Let this fall season remind you to let go of the old and no-longer-needed to make way for a beautiful and abundant new life in Christ.

As Romans 6:4 promises, “Therefore, we were buried with Him through baptism into death, that just as Christ was raised from the dead by the glory of the Father, even so we also should walk in newness of life.”

It’s not too early to mark your calendars for Thursday, January 30, 2025, when the East-West Shrine Bowl will be played at Arlington’s own AT&T Stadium. The eyes of the nation will be tuning in to the NFL Network for the 100th edition of the iconic bowl game and Arlington is thrilled to have been chosen to host the game. Since 1925, the East-West Shrine Bowl has benefited Shriners Children’s and its mission to provide advanced care for children with orthopedic conditions, burns, spinal cord injuries, and cleft lip

The game is also an opportunity for the best college football players in the world to showcase their talents as top NFL Draft prospects in front of all 32 NFL teams’ scouts and executives. Many of professional football’s most decorated players, including legends

The City of Arlington’s innovative Multimodal Delivery pilot program recently delivered boxes of nonperishable pantry items from the Tarrant Area Food Bank to 150 Arlington homes using small electric ground and air robots. The program is funded with the help of a $780,182 US Department of Energy grant and is focused on food delivery to residents who are mobility challenged, historically disadvantaged, or lack a reliable means of transportation. If successful, the program will reduce emissions and increase food distribution to those who need it.

THE PERIL OF INDIFFERENCE IN PERILOUS TIMES

On April 14th, 1912, Frederick Fleet — the lookout— was standing atop the crow’s nest, approximately 95 feet up in the air, with his eyes faithfully scanning the dark and frigid waters of the North Atlantic Ocean. “At 11:39 p.m. he spotted the unimaginable. Although he knew it was too late, he immediately rang the lookout bell three times, to signal danger, then picked up the phone to call the bridge and warn them: “Iceberg right ahead!” But it was too late. At 11:40 p.m., 37 seconds later, the RMS Titanic collided with that iceberg. At approximately 2:20 a.m. the next morning, the stern of the “unsinkable” Titanic disappeared beneath the icy waters of the Atlantic Ocean.

The aftermath of the tragedy was horrifying; over 1500 “souls” — as a

ship captain would say — perished that night. Approximately 710 survived. Here is what a few of them had to say …

Surviving passenger J. Bruce Ismay recalled the scene this way: “One of the most ghastly features of the whole thing was the way those sounds rang out in the stillness of the night. The sight of people clinging to bits of wreckage, imploring help, but with no possible chance of getting it, was awful. The cries were like nothing I’ve ever heard before and hope never to hear again.”

It appeared to seven-year-old passenger Eva Hart like this: “The worst thing I can remember are the screams ... the cries for help. It was awful.”

Seventeen-year-old passenger Jack Thayer said the cries “sounded like

locusts on a midsummer night, a continuous wailing chant.”

And for second-class passenger Charlotte Collyer, the memories were all too vivid: “It was very dark, and we were drifting. All around us we could hear the groans and cries of drowning people. The stars above looked down pitilessly on what was left of the greatest ship in the world. I wanted to die.”

The time between when the iceberg was struck, at 11:40 p.m., till the stern disappeared beneath the frigid waters of the Atlantic, at 2:20 a.m. was only 160 MINUTES!

The fate of every man, woman, and child on that ship would be decided in the span of 160 minutes. Would that be enough time for the crew to warn over 2200

passengers? Would those who heard the warnings take them seriously? Or would they remember what everyone had said — “the Titanic is unsinkable” — and carry on with their laughter and games? Would 160 minutes be enough time for a mother and father with two young children to gather the family, essential supplies, and find a rescue boat with enough room for all four of them? Or would they end up having to make some very difficult decisions? Would men choose to be heroes during their 160 minutes? Or cowards? Everything hinged on what all of those people would do, with their 160 minutes!

As he reflected on that night afterward, Jack Thayer described those 160 minutes as a “fleeting moment.” Another passenger said that the chaos that was all around “left little room for realizing just how swiftly those moments were slipping away.”

Did you hear those words? Fleeting moments — were slipping away!”

My friend, if you have read, and claim to believe, the same story I have, then you are currently – right now, as you are reading this — living in your 160 minutes! The iceberg has been struck; humanity has rebelled against its Creator. Like that eerie moment, when the stern of the mighty ship finally disappeared, and it was too late for the 1500 souls trapped inside, the Day of Judgment for this great mutiny will be here in just a few moments; and when the Great Judge declares that court is in session — it will be too late! Like that perilous night, countless souls will sink down into the darkness.

The Scriptures say that all men sit under the “shadow of death” (Matthew 4:16). Even if they are unaware, death is looming over them at all times, like the boogie man in the night, waiting to seize its prey! And when that day comes — when some unexpected circumstance of life causes them to breathe their last breath, it will be too late; the Judge will be awaiting them in the courtroom! But, unlike that tragic night, their sentence will be eternal; the agony and the screams will have no end. If you claim to be a “believer” then you are professing that this story is in fact the imminent reality of your life. You are claiming to be on a sinking ship, with a lifejacket — the blood of Jesus — snug around your neck, and a rescue

boat on standby. So now there is only one relevant question; What will you do with the remainder of your 160 minutes? The stern has not disappeared yet. The clock is ticking. Precious moments are slipping away! There are countless confused and scared souls still aboard this ship — with no idea where to find a rescue boat. What will you do?

How you spend these few remaining minutes will be the evidence of whether or not that lifejacket you think you’re wearing will actually save you — whether or not that rescue boat will be waiting for you when you arrive!

As you bask in the beauty, and goodness, and security of that lifejacket you profess to have around your neck, will you refuse to look out over the railing of this ship, and see the vast number of souls already screaming and flailing in the dark Atlantic waters? Their fear and suffering have already begun; yet they have no idea of the horror that awaits them when they breathe that final breath — and find out the boogie man is real; when they find themselves sinking down into a dark and lonely abyss that has no bottom.

What will you do? Will you spend your 160 minutes tossing lifejackets to those scared souls? Or will you say a prayer of gratitude for the lifejacket you were given, and then head back into the main lounge so you can catch a few more minutes of entertainment before everyone gets wet? There is a type of person who uses their remaining minutes to enjoy the entertainment and luxuries of the ship — while the ship itself is sinking. Here is how the survivors described those people …

“Some of the passengers were dancing and laughing in the main dining saloon, utterly unconscious of their peril.”

“There was no panic, no one seemed particularly alarmed, and many passengers were playing cards and other games in the public rooms, quite indifferent to the situation.”

– Charlotte Collyer

“People were still having a good time in the lounges and smoking rooms, and many refused to believe that the ship was in danger.” – Eva Hart

They were laughing, and dancing, and playing games during their 160 minutes! Why? Eva Hart gave us the answer:

because they did not believe that the ship was sinking! What they were doing with their time was the clear and obvious evidence of what they believed! Young Eva had no idea how much truth and power her words contained: Those who played games and entertained themselves with their 160 minutes were … “unbelievers!”

I suppose there is one other type of person we should mention; Jack Thayer describes them when he tells how he watched a “partially filled” rescue boat speed away while he clung to a piece of wreckage in the icy Atlantic waters …

“Why on Earth they never came back is a mystery. How could any human being fail to heed those cries?”

I think we all know the answer to Jack’s question: They were cowards!

Now, in 1912 the cowards were able to speed away into the night. But how does our story end? Does the Great Author let the cowards speed away into eternal bliss? Will those who sipped drinks on the deck, while watching people drown, have a boat waiting for them when they get there? For those who have ears to hear, the Author tells us how the story ends…

“The one who conquers will have this heritage, and I will be his God and he will be my son. But as for the cowardly … their portion will be in the lake that burns with fire and sulfur, which is the second death.” Revelation 21:7–8

There you have it! The Divine Writer wrote the only appropriate ending there could be; the cowards will be swimming with the unbelievers for all eternity. And who is the unbeliever? The one whose “belief” does not produce corresponding works.

My friend, now is the time for us to ask ourselves the questions that matter; Does the response of my life — my 160 minutes — correspond to the story I profess to believe? Does my life reflect an “appropriate” response to the magnitude of the story? Is this lifejacket as snug as I think it is?

THE STAFF AT METHODIST MANSFIELD MEDICAL CENTER CELEBRATED A MAJOR MILESTONE IN ADVANCED SURGERY LAST WEEK AFTER A HIATAL HERNIA PATIENT TRAVELED FAR FROM HOME TO UNDERGO THE 10,000TH ROBOTIC-ASSISTED PROCEDURE AT THE HOSPITAL.

Since installing its fi rst surgical robot in 2013, Methodist Mansfield has added two additional da Vinci Surgical Systems and expanded its robotic capabilities across various service lines, including oncology, gynecology, urology, and gastrointestinal procedures.

That decade-long record of success inspired the 10,000th patient, Pamela Conn, to drive over 100 miles from Olney, south of Wichita Falls, after an exhaustive search for the right surgeon, Jeremy Parcells, MD, vice chair of surgery at Methodist Mansfield.

NAVIGATING THE HOLIDAYS WITH YOUR IN-LAWS

Years ago, I sold an essay to a major national magazine. I was so excited until it dawned on me exactly what I’d done. The essay was a tongue-in-cheek exposé about what a nightmare it is to spend the holidays with my in-laws. The magazine was due to hit the stands just before I left to spend the holidays with my in-laws.

In the end, they were gracious. They understood I was going for the laugh and conceded that they can be “a bit much.” They also reminded me they have their own in-laws, so they get it. But I spent some sleepless nights anticipating their reaction.

There’s a reason so many therapy sessions are devoted to the subject of in-laws. It’s never easy blending two families, and the holidays can make that merger even trickier. Maybe you have the best in-laws in the world — and I hope you do — but as the holidays approach, here are some tips for navigating this time of year with the wonderful people who gave you your partner.

EXPECT STRESS

Hey, it’s the holidays. Stress is all but inevitable. Keep that in mind if one person, in particular, is pushing all your buttons. It may be them, or it may just be the inherent stress of this time of year.

PRACTICE DIPLOMACY

Let’s face it, you’re unlikely to change a family dynamic that long predates you. If you’re feeling disrespected or undervalued, try imagining your in-law is your best friend who’s just having a bad day. It might help you feel more patient.

BUILD A UNITED FRONT

Communication is key in marriage. At no time is this truer than during a stressful holiday visit. Let your spouse know what things stress you out and which family members you find most taxing. Ask them to be your buffer. Establish a signal or code to let them know when you need to be rescued from a situation and when you’re ready to call it quits for the day.

FOCUS ON THE KIDS

Most grandparents adore their grandkids. And the feeling is usually reciprocal. Your kids deserve to spend time with their adoring grandparents. If your relationship with your in-laws isn’t all you wish it was, focusing on the kids can offer you a different perspective.

TRY A LITTLE DISTRACTION

Plan an outside activity or family outing focused on the children. Surprise your in-laws with an event to distract from any tension. Better yet, present three activity options and let them choose which they’d like to do together.

TAKE CARE OF YOU

The holidays can induce a lot of feelings — good and bad. Don’t neglect self-care. If you need a break, take a walk or the kids to the park. Take long diaphragmatic breaths throughout the day. As your body relaxes, your mind will follow. Acknowledge the stress, but don’t forget the light at the end of the tunnel. The holidays will be over soon enough. You’ve got this!

MONITORING MUSCULOSKELETAL CHANGES IN CHILDREN

Most people are familiar with the expression “growing pains,” which is often used when someone is learning a new job or in a new relationship. But medically, growing pains is an informal way of describing those mysterious musculoskeletal aches and pains that many children experience and defy explanation.

Even today, medical science doesn’t really know why children and even some teenagers have leg and arm pain at night that doesn’t have a specific cause, such as overuse or injury. Although physical activity at an intense level

appears to be a contributing factor, it was long believed that growing pains were linked to growth spurts, but that theory has been debunked. They do appear related, however, to a child’s overall physical maturation.

Studies have found that two of every fi ve children will have some form of growing pains. The discomfort occurs at night when a child is at rest. Pain and cramping typically starts in the legs and can include the arms. Growing pains can wake a child and last 20 minutes or more. They can also occur on consecutive nights or sporadically over several days and typically are gone by morning. Massaging the aching muscles, applying heat, stretching, and occasional use of anti-infl ammatory medication as approved by a physician, can help alleviate the pain.

Parents should be aware that growing pains may be more than just a part of growing up. They can be a sign of more serious musculoskeletal issues such as juvenile arthritis, scoliosis, which is a curvature of the spine, and sprains or broken bones. Musculoskeletal pain involves ligaments, tendons, joints, and bones, not just muscle aches and cramps. The pain also doesn’t alleviate and can be present during the day. A child may limp or favor an arm or leg, which can indicate a more serious issue.

Because growing pains usually occur between the ages of two and 12, it can be more diffi cult to assess the type of pain and level of discomfort because younger children are unable to express exactly how much they hurt and where. Sometimes, the pain may originate in one part of the body but is felt elsewhere, which is called referred pain.

Thus, it is important for parents to monitor their child’s aches and pains to determine whether a visit to the doctor is in order. According to the Cleveland Clinic, signs of abnormal discomfort include swelling at the pain site, a fever, rash, loss of appetite, weakness, and a general lack of energy. Pain on only one side of the body may also signal something other than growing pains. A child may fi nd it difficult to even go to school when the pain is persistent. If a parent has any doubts, the child should be examined by a physician who can determine whether the symptoms are growing pains or a more serious disorder, in rare cases, even cancer. This can be accomplished with an exam or bloodwork and ultrasound to rule out clots, and fluid on the knee or hip. An exam may not alleviate a child’s growing pains, but it may comfort parents to know that this is part of growing up.

We live in an age when kids spend less time spontaneously playing outdoors. Much of their physical activity is in organized sports such as baseball/ softball, soccer, track, football, dance, and even cheerleading, which can put a lot of stress on leg muscles and joints. The American Academy of Pediatrics recommends that children play multiple sports and delay specializing until late adolescence because engaging in the same activity over an extended period can cause “repetitive trauma” or overuse of the same muscle groups.

Thus, if your child plays soccer in the spring, encourage them to play another sport in the fall or not play a sport at all. Studies have shown that growing pains are equally common among boys and girls, especially now that more girls engage in sports such as soccer and softball. Taking part in a variety of sports or activities can help overall muscle development and coordination and prevent injuries in the long term.

ADULT ACNE: CAUSES, CURES, AND PREVENTION

The teen years can be rough. Peer pressure, braces, precalculus, and, for many of us, acne at the most inconvenient times. Unfortunately, that last one — acne — can rear its ugly head well into our 30s, 40s, and beyond, and breakouts aren’t any more welcome now than they were the morning of senior prom.

According to the American Academy of Dermatology, adult acne affects over 25% of women and over 12% of men — roughly 50 million Americans annually. There are many causes, including hormonal changes, stress, heredity, undiagnosed medical conditions, and certain medications.

WHAT IT IS

Adult acne is a common inflammatory skin condition doctors call “adultonset acne” or “post-adolescent acne.” (A zit by any other name, am I right?) It typically occurs when oil and dead skin cells plug skin pores, resulting in the development of lesions commonly referred to as pimples. Although it’s most common on the face, acne can occur on the back, chest, and shoulders.

WHY ME?

But why are you seeing these ugly creatures well into your 30s, 40s, and even 50s and 60s? Some people actually develop acne for the first time in adulthood. The American Academy of Dermatology lists the most common causes as:

Hormonal Changes: Just as during your teen years, you may break out around the time of your period. For some women, it’s one of the first signs of pregnancy. For others, it occurs around the time of perimenopause and menopause or when beginning or discontinuing birth-control pills or other hormonal contraception.

Stress: Some dermatology experts believe that during times of stress, the body produces more androgen hormones which stimulate the oil glands in the skin, blocking pores and leading to acne.

Family History: You may also have a genetic predisposition for acne. If a close blood relative, such as a parent or sibling, has adult acne, you may be in line for the same.

Beauty Products: Some hair and skincare products contain substances that can aggravate acne-prone skin, resulting in breakouts. If you fall into this category, look for products labeled noncomedogenic, non-acnegenic, oil-free, or “will not clog pores.”

Medication: Certain medications can cause acne. These may include hormonal medicines, antidepressants, B vitamins, halogens, and antiepileptics. If you suspect your medication is causing acne, discuss alternative treatment options with your doctor.

Undiagnosed Medical Conditions:

An example of this is polycystic ovary syndrome (PCOS). One of the symptoms is adult acne, along with weight gain, facial hair in women, infertility, etc. Most doctors don’t routinely evaluate for PCOS. If you suspect this may be your problem, ask to be assessed. Diagnosing and treating this or other conditions can, in turn, treat your acne.

WHAT TO DO

Treatment for adult acne is usually similar to treatments for adolescent acne. Your dermatologist may begin with over-the-counter (OTC) products containing benzoyl peroxide, retinoids, and salicylic acid, then may proceed with prescription treatment such as prescription-strength retinoids, antibiotics, or antiandrogens. Although it may take weeks or months to clear up completely, there is help and hope for adult acne.

If you’d like to try some home herbal remedies before resorting to medications that may come with side effects, here are three options. (Please test a small patch of skin before applying new skincare products, including homemade ones.)

Apple Cider Vinegar (ACV): Dilute one

Eat For the Skin You Want

If you’re struggling with adult acne, consider cutting back on sugar, sugary desserts, and sodas. Opt for a diet high in leafy greens, fresh fruits and vegetables, lean proteins, and whole grains.

Some foods believed to help acne are: yellow and orange fruits and vegetables (carrots, apricots, sweet potatoes) spinach and other dark green and leafy vegetables

part ACV with three parts water (or more) and apply to your skin. Rinse thoroughly after 20 minutes. Honey and Cinnamon : Mix two tablespoons of honey with one teaspoon of cinnamon, which both possess antibacterial and antiinflammatory properties. Apply the

paste to your face. Rinse off after 10 minutes.

Aloe Vera : Apply the gel from inside an aloe leaf (avoiding the outer skin) directly onto your skin. The gel’s natural salicylic acid and sulfur can help reduce inflammation and dry up excess oil.

LIVEN UP YOUR OUTDOOR SPACES WITH POTTED PLANTS

One of the best ways to dress the outside of your home is by having beautiful potted plants. From your front patio to your back deck, there are so many ways to create interest and beauty in these spaces.

When you put the time, effort, and money into adding these outdoor accessories, you want to make sure you do it right and give them the best chance possible at staying beautiful all season long.

To start, gather your supplies with the first decision being what container you’d like to use. Ceramic is my material of choice because there are so many amazing colors and textures, and they have thick walls that hold in moisture. Whatever container you choose, check that it has adequate drainage holes that will allow excess water to pass through and not drown your plant.

Next, grab your dirt. Good dirt is essential for good plants, so grab a nice potting soil. If you have a large container and don’t want the expense or weight of fi lling the whole thing with dirt, you can add some recycled material to the bottom of the container. This could be old milk cartons, plastic water bottles, broken-up sticks, etc. These items help fi ll your container so it doesn’t weigh a million pounds and you don’t need $40 worth of dirt for one pot.

Next up is shopping for plants! Make sure you know where you will place your pots before purchasing your plants and how much sun that area gets. You don’t want to go through all the work and expense of creating a beautiful pot, only to have the wrong plants that die immediately.

Speak to someone at your local nursery if you need advice, or check out the plant tags that will tell you if the plant likes sun, shade, or can handle a combination.

The rule of thumb when planting pots is to choose thriller, fi ller, and spiller plants.

Your thriller is the tallest plant in the arrangement and is planted towards the back/ center of the pot. You can use ornamental grasses or upright flowering plants.

Fillers come next, and these guys tend to be more rounded and help the container look full. These are placed around the thriller. For sun, think of plants like Pentas, Verbena, Dahlias, etc. — for shade, some of my favorites are Impatiens, Begonias, Coleus, and Ferns.

Your fi nal plant is the spiller, and this is the guy who is going to bring the drama and spill over the top of your pot down the sides. You can use ivy in the shade and potato plants in the sun.

Once you’ve made your purchases - place them in the pots before fi lling up the remaining dirt and play with how you will arrange them. After you’ve planted them, give them a good drink three to four times a week depending on where they are and how much sun they get. Potted plants tend to dry out quickly, so make sure you are watching them. Also don’t forget to fertilize.

It was renowned showman Mick Jagger who, in 1965, sang, “What a drag it is getting old.” Of course, the Rolling Stones frontman was only 22 when the band recorded “Mother’s Little Helper,” which referred to a growing dependency on prescription medication. But at 81, Jagger is still prancing around the stage, singing all the hits and disproving that getting old is necessarily a drag.

For many seniors, however, concessions to the aging process must be made, especially if they want to remain in their homes and avoid moving into an independent or assisted living facility.

Statistics for 2021 reveal that approximately 36 million injuries suffered in the home required medical attention. About 53%

of the victims were between the ages of 45 and 75+. But the death rate for those 75 and older was three times greater than any other group. And many of these injuries are attributed to falls, which can be considerably reduced.

Most of the modifications to make a house safer for seniors are not expensive. For starters, consider the second floor of a two-story house off-limits. If you have an in-home office on the second floor, move it down to the main floor. Are all the bedrooms on the second fl oor? Then consider installing a stair lift, although this could cost a minimum of $2,000. And the doorway to the bedroom may have to be expanded to accommodate a wheelchair.

Install grab bars in the master shower and bathtub, use a shower chair, and buy a toilet seat riser to make it easier to sit and stand when using the toilet. Have night lights strategically positioned in the bedroom, master bath, and in the hallway leading to the kitchen. Lower cabinet shelves in the kitchen can be used for pots, pans, and other cooking utensils. Do not store heavier appliances in a high or low cabinet. Instead, keep them at eye level, perhaps on countertops, for easier lifting. Get an estimate of how much it will cost to install pull-out shelves for the most-used cabinets and pantry, providing simpler access to food and cooking utensils.

A cardinal rule for all seniors is to avoid using ladders and even step stools at almost any cost. Hire a handyperson to replace smoke and carbon monoxide detector batteries once a year. There are also smoke detectors that use a long-life sealed lithium battery that lasts for 10 years without the need to replace them. Ask your adult child or even a neighbor to change ceiling lights.

Seniors should play it safe outdoors as well. It is great to be active and do some light gardening, but pay a landscape company for the heavy lifting, such as mowing the lawn and trimming trees, especially given the hot Texas summers. Hire a pool maintenance company and have a railing installed at the pool steps, making it easier to get in and out. Also, hire someone to put up the holiday lights. Avoid using the home’s front entrance if there are steps involved. Enter through the garage instead. Some or all of these changes may be difficult, but they will help seniors remain in their home sweet home.

Technology is not just for younger generations. Seniors can use the latest innovations to help them remain in their homes.

Some examples:

Install a doorbell camera so that you can see and speak to strangers who may come knocking without going to the door.

Have security cameras placed around the perimeter of the house for protection and add an alarm system.

Buy a voice-activated virtual assistant such as Amazon Alexa or Google Assistant and program it to remind you to take your medication or that you have an upcoming appointment.

Stay in touch with loved ones using video calling technology such as Zoom, FaceTime, WhatsApp, or Google Meet. Let them see how well you are doing.

Davis Mountains State Park and McDonald Observatory – High altitude and dark skies (TPWD.texas.gov/stateparks/davis-mountains) create perfect conditions for stargazing. McDonald Observatory, a premier astronomical research facility operated by the University of Texas, is located just past the park on Highway 118. It offers public star parties and guided tours where visitors can peer through some of the world’s most advanced telescopes. The observatory features a visitor center with educational exhibits, making it an excellent destination for families and astronomy enthusiasts alike. McDonaldObservatory.org

Since the Greater Big Bend International Dark Sky Reserve is hundreds of miles from metro areas like Dallas/Fort Worth and Houston, plan to stay at least two to three nights. Camping is available in Big Bend National Park and most state parks. Airbnbs, cabins, motels, hotels, RV parks, and lodges are scattered throughout towns such as Valentine, Fort Davis, Marathon, Lajitas, Alpine, Marfa, and Terlingua.

Copper Breaks State Park – Planning a trip to Lubbock, Amarillo, or Wichita Falls, Texas? Visit Copper Breaks State Park on a clear night to view a sky encrusted with twinkling stars. South Llano River State Park – Located on the southwestern edge of the Hill Country, the park’s elevation, lower humidity, and open spaces offer clear horizons, allowing unobstructed views of the night sky. Enchanted Rock Natural Area – About 17 miles north of Fredericksburg, Texas, Enchanted Rock is known for its high vantage points and minimal light pollution, providing a clear view of the night sky. Stargazing Tips

Choose a location as far away from city lights and nearby out door lights. The darker the sky, the better your stargazing experience. Familiarize yourself with the Bortle Dark-Sky Scale. It measures the brightness of the night sky on a scale from 1, the lowest, to 9, the most heavily light-polluted site. You can find several Bortle Scale maps and pps online.

Download a free app like Stellarium Mobile–Star Map. It includes around 2.5 million stars, 2.9 million deep sky objects (DSOs), and 10,000 asteroids. Just point your phone upward and it will display a realistic sky in your location and identify what you’re viewing. Give your eyes at least 15 minutes to adjust to the darkness before stargazing, and you’ll be rewarded with a clearer view of the cosmos. Turn off headlights, douse campfires, and don’t use lights, including regular flashlights or smartphone lights. Instead, use a red LED flashlight that minimizes pupil dilation and thus helps preserve your night vision. The best time for stargazing is during a new moon when the sky is at its darkest.

BAKED SAUSAGE ZITI

INGREDIENTS: 1 pkg. fresh Italian sausage | 1 green bell pepper, diced | ½ yellow onion, diced | 1 Tbsp. olive oil | 28 oz. crushed tomato | 1 Tbsp. dried basil | 2 Tbsp. kosher salt, divided | ½ tsp. black pepper | ½ ziti pasta | 8 oz. ricotta | ¼ cup fresh parsley chopped | 1 egg | 4 cups mozzarella, shredded | 1 cup parmesan

DIRECTIONS: PREHEAT oven to 350°. PREPARE a large pot of boiling water and season with 1 ½ Tbsp. salt. COOK ziti according to package directions. DRAIN pasta 2 minutes earlier than the time listed on the package. DRIZZLE pasta with olive oil and set aside. DICE onion and pepper. COAT a sauté pan with the remaining olive oil and add onion and pepper. SAUTÉ until translucent, then add ground sausage. COOK until browned. DRAIN excess fat. ADD the crushed tomato and seasoning and let simmer. COMBINE , in a separate bowl, the ricotta, parsley, and egg. GREASE a 9 x 13 casserole dish. Layer the bottom with sauce. MIX cooked ziti with the ricotta mixture. ADD a layer to the pan and sprinkle with ½ of the mozzarella. ADD another layer of sauce, then pasta mixture. COVER with remaining sauce and sprinkle with mozzarella and parmesan. BAKE for 30 minutes.

GRUYERE & HAM SCALLOPED POTATOES

INGREDIENTS: 2 lbs. russet potatoes, peeled | 1 medium sweet onion, sliced | 1 garlic clove, minced | 3 Tbsp. butter | 3 Tbsp. flour | 1 Tbsp. thyme | ½ tsp. kosher salt | ¼ tsp. black pepper | 2 cup half & half | 16 oz. shredded gruyere | 16 oz. diced ham

DIRECTIONS: PREHEAT oven to 350° degrees. PEEL and slice the potatoes and place them in a bowl of cold water. SLICE the onion and set aside. MINCE garlic. Melt butter in a saucepan over medium heat and add garlic. SOFTEN garlic in butter, then sprinkle with flour. ADD seasoning and stir until a paste forms. MIX in half & half and stir until it becomes thickened. ADD cheese and stir until melted. STIR in diced ham. GREASE an 8 x 8 casserole dish. LAYER potatoes on the bottom and top with sliced onions. CONTINUE to layer, with the last top layer being potatoes. POUR on the cheese mixture. COVER with foil and bake for 45 minutes. UNCOVER and bake for an additional 15 minutes until golden.

MAPLE PECAN WHISKY BREAD PUDDING

INGREDIENTS: Whiskey Cake: 1 cup unsalted butter, room temperature | 1

cup sugar | ¼ cup brown sugar | 4 eggs | ¾ cup buttermilk | ¼ cup whiskey or bourbon | 1 Tbsp. vanilla extract | 2 ¾ cup flour | 1 tsp. baking powder | ½ tsp. baking soda | 1 tsp. salt Bread Pudding: Whiskey Cake, day old, cut into cubes | 3 eggs | 2 cups half & half | 1 cup sugar | ½ cup maple syrup | 1 Tbsp. vanilla | 1 cup pecans, chopped | ½ cup brown sugar | 4 Tbsp. unsalted butter, melted Whiskey Sauce: 1 cup sugar | 1 stick butter | 1 egg | 1 Tbsp. vanilla | ½ cup whiskey or bourbon

DIRECTIONS: PREHEAT oven to 350° degrees. CREAM butter and sugar together in a stand mixer. ADD eggs one at a time. ADD buttermilk, whiskey, and vanilla, and blend well. Mix flour, baking powder, baking soda, and salt in a separate bowl. WHISK dry ingredients. ADD dry ingredients to wet ingredients and mix well. GREASE and flour a bundt pan and spoon the batter into the pan. BAKE for 45-50 minutes. ALLOW to cool for 20 minutes, then turn onto a wire rack until completely cooled. CUT cake into cubes, once cool, and allow it to sit uncovered overnight.

PREHEAT oven to 350° degrees. GREASE a casserole dish. WHISK together eggs, half & half, sugar, maple syrup, and vanilla. PLACE cubes into baking dish. POUR egg mixture over cubes and stir. CHOP pecans and mix with brown sugar and melted butter. SPRINKLE on top of bread pudding. BAKE for 45 minutes. ALLOW to rest for 10 minutes. COMBINE , in a saucepot, the sauce ingredients except for whiskey. STIR until the mixture becomes thickened and the sugar has dissolved. REMOVE from heat and stir in whiskey. SERVE bread pudding with whiskey sauce.

TIPS & TRICKS: If you don’t have time to let the cake sit overnight, you can lightly toast it in the oven.

White Chocolate & Pumpkin Pie Spice Popcorn Bites

Servings: 12 Ingredients

12 cups unsalted, unbuttered popped popcorn

3 cups chopped white chocolate or white chocolate chips

1 Tbsp. light olive oil

2 tsp. pumpkin pie spice

½ cup toffee bits

1 tsp. flaked sea salt, crushed

Directions

Line a large, rimmed baking sheet with parchment or wax paper. Place popcorn in a large mixing bowl. In a microwave-safe bowl, combine white chocolate, olive oil, and pumpkin pie spice. Microwave on medium for 2 - 3 minutes or until melted and smooth, stirring after each minute. Pour melted white chocolate mixture over popcorn. Add toffee bits and toss to combine. Transfer to prepared baking sheet, spreading to edges of the pan, and sprinkle sea salt over the top. Let cool. Refrigerate 1- 2 hours, or until set. Break into chunks for serving.
