February has long been considered the month of love. God’s word has a lot to say on that subject. 1 John 4:8 tells us quite plainly, “God is love”. Elsewhere in the Bible, God’s love is described as unceasing, unchanging, unfailing, unselfish, merciful, steadfast, kind, gracious, tender, and faithful. As His children, we’re called to love that same way.
The Bible uses the words for love hundreds of times, and in case we still didn’t get the message, our Father spelled it out quite plainly—and beautifully—for us in 1 Corinthians. “Love is patient, love is kind. It does not envy, it does not boast, it is not proud. It does not dishonor others, it is not self-seeking, it is not easily angered, it keeps no record of wrongs. Love does not delight in evil but rejoices with the truth. It always protects, always trusts, always hopes, always perseveres. Love never fails.”
That’s a pretty tall order for mere mortals like us. But remember, when God calls us to do something, He stands ready to equip us to do it. We love God because He first loved us, and we love others with a love that comes straight from Him. Whether it’s love for your “special Valentine” this month or love for a neighbor, coworker, family member, friend, or stranger, God is ready and fully capable of empowering you to love others like He loves us.

The household hazardous waste drop-off is for you. You can safely dispose of your hazardous material Thursday, February 9 through Saturday, February 11, at our Environmental Collection Center located at 616 S. Wisteria St. You can bring everything with a warning label, recyclables, and any electronics you no longer need. The center will be open from 3 to 7 p.m. on Thursday and Friday and from 10 a.m. to 3 p.m. on Saturday. How about having fun with the whole family? Join the Parks and Recreation department for a chillin’ good time at "Frozen Fest," Saturday, February 11th. Participants will explore frozen experiments, create tracks in the "snow," learn about animals in winter, enjoy a guided story walk, and embark on a self-guided scavenger hunt through the woods. Later in the month of February, you can participate in the "Tutu Fun Run." Join us for a free 2.2-mile fun run at 6 p.m. on Wednesday, February 22 (2/22) at McKnight Park East. Participants are encouraged to wear their best tutus to the race. It's too cute and too silly to miss! Prizes will be awarded for the most creative tutus, fastest or slowest runners, and too many more to count! I hope to see you there!
There’s a lot going on around The American Dream City this month. One exciting development is construction on the new Active Adult Center on the southwest corner of the current Pierce Burch Water Treatment site. We’re expecting great things from this center which is scheduled to open in winter 2024 and offer a range of programs and amenities to keep our active adult population (ages 50 and up) even more active.

“He that has ears to hear, let him hear!”
That was the phrase Jesus so often used as He taught His great parables. Although many were gathered around listening, only some were hearing!
Two groups of people. Some had ears to hear, and some did not! Both would listen to the same message - from the same Man - at the same time.
One group was listening to a great teacher. The other was hearing the Savior of the world. One group would perish. The other would inherit eternal life.
The question is this — What was the distinguishing quality that would allow one group to hear and not the other? — The answer to that question has eternal implications!
Jesus himself answered that question with the very first words out of His mouth as He sat down to teach His great Sermon on the Mount.
“Blessed are the poor in spirit , for theirs is the Kingdom of Heaven.” Matthew 5:3
Poverty of spirit was the distinguishing quality that separated those who could hear from those who could only listen. We see this principle taught throughout the Scriptures.
The great King David echoed this sentiment.
“O God, you are my God, earnestly I seek you; my soul thirsts for you, my body longs for you, in a dry and weary land where there is no water ” Psalm 63:1

And herein lies a great truth that I fear has been lost in this version of Christianity we see so often preached today. The message of Christ is simply not for everyone. What do I mean by that?
It’s as if there is a ticket that one must present to gain admission into this great Kingdom. On the one hand, this ticket is free. On the other hand, it will cost you everything!
It is costly because, on this ticket, you must have a certain stamp. Each man will hand his ticket over as he approaches the gate to have it inspected for authenticity. It must have a stamp. The stamp not only proves the ticket’s genuineness but also shows that this man has been chosen to hear the message and enter the Kingdom. If the ticket does not have the stamp, he will remain outside – always listening but never hearing. So, what is this stamp?
It is the stamp of poverty. Now I don’t mean material poverty, but poverty of spirit. This stamp shows that the ticket holder has been broken. It shows he has come to the end of himself in this life. He has strived and failed. He has looked within and found that nothing good dwells there – only emptiness. He is lonely and without hope. He has gone internally bankrupt. He is dying of hunger and thirst within his spirit. He is desperately ill and has no cure.
But this stamp does not only show he has looked within; it shows he has also looked outside of himself and found nothing to fill the void. It shows he can testify with King David; I dwell in a dry and weary land where there is no water
The comforts, securities, achievements, and riches of this world have become worthless to him. This stamp shows that only something infinitely greater will quench his thirst and satisfy his hunger. He is seeking a greater Kingdom.
SO WHY AM I WRITING THESE THINGS TO YOU?
I’m writing because I believe some of you may be at a season where you can finally hear the call. For years you listened, but you never really heard. But for some reason, this season is different.
Maybe your life is falling apart. Perhaps you have achieved everything you set out to accomplish in life, only to realize you are still empty and unfulfilled. Maybe you have lost all hope in this wicked world. It does not matter the reason. The only thing that matters is the answers to these questions.
Are you poor and broken? Have you come to the end of yourself? Are you tired and weary? Has the weight of this life become too much to bear? Are you empty inside? Have you looked within and seen that nothing good dwells there? Have you finally realized that nothing in this world will satisfy the void?
MOST IMPORTANTLY, HAVE YOU REALIZED YOU ARE A SINNER IN NEED OF FORGIVENESS?
If you go to the doctor and describe your symptoms, they will diagnose you, and they may prescribe you medication. If you read one of the self-help books of our day, they will teach
you to manage your time better so you can get more sleep and exercise. If you go to the consultants of this world, they will tell you to set bigger goals and update your vision board. But what if those are the wrong answers? What if the last thing you want to do is figure out how to keep going? What if the most terrifying thing you could do is to pull yourself up by your bootstraps and go another five years? Another 10 years? What if the most frightening solution you could come to was somehow learning to be happy and content with this life?
What if those solutions only clog your ears once again and cost you the next life? Do you recall those words He spoke? “He that seeks to save his life will lose it. But he who loses his life for my sake will find it.”
What if all the circumstances and trials and afflictions that have brought you to this very season had been orchestrated so that at this very moment, you would finally be broken enough to hear the message at last, so that you would finally be humbled enough to bow your knee at the foot of the cross? What if all the despair and emptiness you currently find yourself in has been written into your story in eternity’s past so that at this very second, you might have your ticket stamped and enter eternal life? Could this be so?
I believe it could be. It was my story. It is my ongoing story. The same stamped ticket that admits one into the Kingdom is also the one that allows him to advance within it. It never changes! The way of the believer is continual brokenness. It is a constant emptying of oneself so that we may be filled with more of Him. The believer takes up his cross daily. The more he dies – the more he lives!
This is the life I have chosen. I will not tell you it is easy. It is, in fact, very costly. But it is LIFE! I tried it the other way, and it was death. That life was worthless. That man was worthless. I now have a reason to live! I guess you could even say, I now have a reason to die. I long for that day when I finally pass from this life to the next. I yearn for that moment when I will see Him face-to-face and when I will finally be able to bow down before His holy throne!
But until that day, I have been given a task. It is the same task for all of us who call ourselves “Christians.” To spread the message to all those who have been chosen. To call out to those who have ears to hear.
If anything I have said resonates with you, I beg you, turn from your sins! Believe in the Lord Jesus Christ! Receive forgiveness and everlasting life! Seek Him while He may be found. He will not call forever. Turn to Him now, and He will give you rest! He will quench your thirst and satisfy your hunger!

The magazine awarded the satellite nursing school campus its Outstanding Real Estate Project as part of its 2022 Excellence in Health Care Awards. The award recognizes the partnership’s investment in addressing the regional nursing shortage.
The Texas Tech University Health Sciences Center (TTUHSC) School of Nursing satellite campus opened last August and offers a top-tier nursing education, including one-on-one clinical training and mentorship opportunities. The first class of nursing graduates celebrated their BSN with the Mansfield, Texas community on Dec. 3 with a lamp lighting ceremony.

Texas will be short almost 16,000 nurses by 2030, according to a report from the U.S. Department of Health and Human Services.

First, here are the facts of life as they pertain to water and Texas. The state averages just over 27 inches of precipitation a year, with half that amount in West Texas and almost double the average in East Texas. North Texas gets about 34 inches of precipitation annually, and Houston gets around 45 inches of rain yearly. So, why is this important? Well, the population of Texas was about 4.8 million in 1921, and today it is 29.5 million and counting. And guess what? Mother Nature hasn’t allocated additional rainfall to account for the population explosion.
This makes water conservation imperative, especially when Texas is prone to periodic droughts. There are numerous steps we can take that might not seem like much but, cumulatively, can result in saving and better utilizing hundreds of thousands of gallons of water.
For starters, consider investing in a rain barrel. They can hold from 50 to 100 gallons of water collected from the gutter and downspout, which is cut to a height above the rain barrel. The rain barrel itself has a spigot that enables you to attach a hose so you can use the rainwater to irrigate the garden and even wash your car.
Speaking of which, how often have you seen a neighbor’s sprinklers running the morning after a major rainstorm? Raise your hand if you have also been guilty of this wasteful act. If you want to avoid manually monitoring your irrigation system, purchase rain sensors. These devices are attached to the sprinkler system and detect when there has been enough rain to prevent your sprinkler system controller from starting.
There are different types of sensors, and all are excellent ways of saving water and lowering your water bill as well. Before you get that bucket, soap, and garden hose ready to wash your car, consider going to the car wash. Yes, it is a more expensive way of keeping your car clean, but many car washes use recycled water, which is better than using fresh water. If cost is an issue, you can keep it down by getting only the exterior washed and cleaning the car’s interior yourself. There are dozens of water conservation measures you can do inside the home. For example, purchase low-flow showerheads and low-fl ow toilets for the bathrooms. Check your toilet and faucets for leaks. And while you are at it, do not pour money down the drain by using water more than you have to. Reduce time spent in the shower, and don’t run the tap while brushing your teeth or shaving.
In the kitchen, install an aerator on your faucet to reduce the flow of water. In fact, put aerators on all your faucets. If you have a dishwasher, fi ll it before you run it. It is estimated that you can save up to 5,000 gallons of water a year compared to washing dishes by hand. Fill a pan with water and wash fruit and vegetables instead of putting them under running water.
Follow the same principle when using the washing machine. Wait until you have a full load and use the “quick wash” cycle whenever possible. Your clothes will still come out clean. And use cold water to wash because it saves water as well.
Acting on even some of these suggestions to conserve water will benefit the environment and slow that water meter spinning in the front of your house.

During spring, your yard is a different place every day as leaves return to trees, the grass renews itself, and local nurseries beckon with a rainbow of flowers to brighten your landscape. If you’re as excited as I am about the approach of spring, it’s an excellent time for a bit of prep work to get your yard springtime ready.
Start with cleaning up any leaves, twigs, or other debris that accumulated over the winter. Employ your rake and/ or leaf blower to eliminate anything that can get stuck in your lawnmower or block fertilizers and other benefi cial materials from absorbing into your lawn.
Hit your lawn with a combination of fertilizer to feed your grass and a pre-emergent such as Scotts Turf Builder, to prevent weeds. Follow the directions, but in general, you’ll apply it again in six to eight weeks, adding a broadleaf weed killer. It’s better to take preemptive action than try to play catch-up with weeds later. Get your mower out and start it up. If it seems sluggish, perform a tune-up, including changing the oil and air fi lter, replacing the spark plug, draining out and replacing leftover gasoline, and sharpening the mower blade.
It always amazes me what a fresh layer of mulch can do for a fl owerbed. Along with replenishing the mulch, trim back dead branches on shrubs and replace anything that didn’t survive the winter. If there are shrubs you’ve been meaning to move, spring is the time to do it. Consider hiring a tree
trimmer (about every three years) to prune away dead or dying branches on trees which can cause property damage or personal harm.
Give your garden tools a good cleaning and sterilization since remaining plant sap, dirt, or debris can harbor bacteria or fungal spores which may infect your new plantings. You can do this with a soak for about a half hour in a solution of 10% household cleaner to 90% water. Then give your tools a good coating of oil to prevent rusting.
Have the soil in your fl ower or veggie beds tested by your local agricultural extension service. They can diagnose your soil’s current pH and what amendments you can add to optimize your planting this season. Pull any weeds, trim any winter-killed, brown leaves from last year’s perennial fl owers and divide the ones that need dividing. Unless you’re using a no-till gardening method, turn over the top six to eight inches of soil, looking for caterpillars, cutworms, or other garden pests that may have overwintered there. Raised beds may need to be topped o with more soil. Visit a local nursery and get an idea of what annuals you might want to add, then draw up a plan of how they’ll work into your perennial landscape. Consider incorporating something new and untested with some old, faithful plants that consistently produce for you. With a little prep work this spring, your garden will be ready to provide you with beauty, fragrance, and enjoyment all summer long.

We work hard to make sure our families eat good food and get plenty of exercise. We work to keep stress levels low and spend time crafting a home that’s a relaxing oasis from the world outside. There’s something else you can do to improve your family’s quality of life: surround them with green, growing things. I know. I know. Not everyone is born with a green thumb. But not all houseplants are high-maintenance and nurturing the ones that aren’t can be well worth it for you and your family.

The right house plants can add color and intrigue to your rooms, but studies show they can help purify the air, provide allergy relief, improve sleep quality, and reduce stress levels. During the process of photosynthesis, plants convert the carbon dioxide we exhale into fresh oxygen and remove toxins from the air we breathe in by filtering out toxic chemicals such as Formaldehyde, Benzene, and Trichloroethylene. Here are some suggestions for good air-purifying plants that also happen to be easy to keep alive and happy.
QUEEN FERN
This pretty, frilly fern is basically foolproof. Offer it some bright, indirect light, or even direct as long as you keep the soil moist. Queen ferns love the humidity, so they will thrive in your kitchen or bathroom.
RUBBER
TREE
Rubber trees make a bold statement with their dark, glossy green, and burgundy leaves. Sometimes called Ficus Burgundy, it can grow eight to 10 feet tall when it gets enough TLC. But this isn’t a great plant around children and pets who may ingest the toxic leaves.
SNAKE PLANT
Not only dramatic looking, these babies also practically thrive on neglect. They’ll survive with little water and
light and happily improve your family’s air quality. And their deep green vertical leaves will make any space look elegant.
ENGLISH IVY
I bet your mom and grandmother had a little English ivy trailing somewhere in their décor. English ivy grows fast and is easy to keep healthy. Offer it low-to-bright indirect sunlight and water it when the soil feels dry. It’s easy to propagate, too, so be sure to share.
WEEPING FIG TREE
Give it a well-lit room and water it weekly. Your weeping fig tree will grow three to six feet tall and will do best when offered a larger pot each year.
BROMELIAD VRIESEA VOGUE
I have a love/hate relationship with this plant since the leaves are — meh— but the flowers are spectacular. Also known as the flaming sword plant, it’s non-toxic, dramatic, and colorful. Offer it bright sunlight and water and mist weekly.

Aloe
vera
Used worldwide for its medicinal properties, aloe vera is also relatively easy to grow. As a succulent, it prefers bright, indirect light and dry conditions. Avoid sustained periods of direct sunlight and give it a little water every two or three weeks.
ZZ Plant
ZZ is a great indoor plant for neglectful indoor gardeners since it only needs to be watered about once a month. It can tolerate almost
any environment and thrives in low light and low humidity. Your zz plant doesn’t even need natural light to survive. Fluorescent lights or other artificial lights are enough for it to thrive.
Pothos
These trailing-foliage houseplants are popular in offices where they thrive in low light. Also known as Devil’s ivy, pothos propagates easily from cuttings. (So, share!) Give it a good soaking every week or two, and keep in mind that it’s toxic to cats, dogs, and children.

When was the last time you skipped rope? If you loved this activity as a kid, jump back into it today. Not only is jumping rope a full-body workout that can improve your coordination and balance, but it can also improve your cardiovascular health. Even jumping at a relatively moderate rate can burn ten to 16 calories a minute. Experts recommend that beginners jump for one to fi ve minutes every other day.
GO FOR A BRISK WALK
For average adults, this means walking at a pace of about three to four miles per hour. The goal is to get your heart rate in a moderate-intensity zone. Use the talk test to determine whether you’re in this zone. You should be able to carry on a conversation but not have the breath to belt out a song.
DO SOME HOUSEHOLD CHORES
Whether you give your bathtubs a good scrubbing, mop the floors, or mow the lawn, these activities can get your
heart rate up to a level that can benefit your cardiovascular health. And bonus — you’ll come away with a tidier space.
LET LOOSE
Keeping an active lifestyle doesn’t mean you have to be a marathon runner. Fun activities like hula-hooping, dancing, shooting hoops, or playing fetch with your dog all count as heart-healthy activities.
WORK IN MORE “EXERCISE SNACKS”
Many people forgo traditional exercise because they feel like they don’t have time for it. By embracing “fun-sized” exercises, you can reach the recommended 150 minutes per week of moderate-intensity activity or 75 minutes per week of vigorous activity. These “snacks” are short bursts of activity, whether you take a fi ve-minute break to jump rope or a 15-minute strengthtraining class on your favorite workout app.
Five Ways to Keep Your Heart Healthy (No Cardio Required)
Eat more fruits and veggies . Aim to eat at least two to four types of plant-based foods daily. Fruits and vegetables of all kinds contain many healthy nutrients that can help improve blood vessel function. Foods with the most benefits include apples, pears, oranges, leafy greens, cruciferous veggies like broccoli and cauliflower, and green and yellow vegetables like peppers and carrots.
Cut back on alcohol. Alcohol can lead to many heart-health issues, including abnormal heart rhythms. Most health experts agree men should drink no more
than two glasses of wine per day, and women should limit it to one glass. Reduce your sugar and salt intake . Too much sugar can lead to obesity, diabetes, and heart disease. Excess salt can also be bad for your heart as it can up your risk factors for heart disease. The American Heart Association recommends that men limit their added sugar to about nine teaspoons a day and that women keep it under six teaspoons. Try to keep added salt to under one teaspoon a day.
Maintain a healthy weight . Being overweight can be a precursor to obesity, which comes
with many chronic issues, including heart disease. Talk with your doctor about the best ways to reduce body weight, whether that means revising your diet or undergoing weight-loss surgery.
Take a nap . Getting enough zzz’s is huge for your heart health. If you’re not getting the recommended seven hours, lie down for a quick snooze during the day. The Sleep Foundation reports that the ideal nap length for adults is about 20 minutes but no longer than 30. If you rest for longer than a half-hour, you’re more likely to wake up feeling groggy.

LIP love AUGMENTATION OPTIONS

Have you been thinking about perfecting your pout? Show your lips a little love this February by getting a lip augmentation. Whether you want to restore volume lost due to aging, fi ll in wrinkles, get a more defi ned lip line, correct asymmetry, or simply want to rock the in-vogue look of full, luscious lips, you have a few treatment options to consider. Some last a few months up to a year, while others are more permanent.
DERMAL FILLERS
The most popular lip augmentation method is injectable hyaluronic acid dermal fi llers. Fillers specially designed for the lips, such as Juvederm Volbella and Restylane Kyss, create lips that are softer and feel more natural and results generally last up to a year. In addition to adding volume, they can reduce the appearance of vertical perioral (smoker’s) lines and create upturned corners of the mouth.
FAT TRANSFER
We’re much better these days at predictably transferring fat from elsewhere in the body to a new location to augment an area, including the lips. Performed in-office under local anesthesia, a small amount of fat is harvested from your abdomen via liposuction, purified, and then injected into your lips. Results can last up to fi ve years and sometimes longer. Ask your provider to compare the pros and cons of fat transfer to dermal fi llers and lip implants.
LIP FLIP
The lip fl ip involves injecting a few units of Botox above the upper lip line near the cupid’s bow to subtly create a

Growing up, we count on our parents for food, shelter, guidance, and understanding. Even as adults with children of our own, we often continue to rely on them. But when our parents reach the autumn of their life, it is time to return the favor and make sure their financial status and physical well-being are secure.
Talking to aging parents about financial matters can be difficult. Parents can be secretive, even with their own children, especially if money is in short supply. They may also be sensitive to any discussion centered on their eventual death.

Nonetheless, it is the responsibility of adult children to have an overview of their parent’s financial status and to know whether they have enough to live comfortably in retirement. In addition to finances, it is vital to determine if they have a will and whether the surviving parent will have power of attorney and can execute a living will. If only one parent is surviving, who has been designated as executor of the estate once they pass?
Assure your parents that you are not planning for their death but want to ensure they are financially solvent as they age. Here is some information you need to help your parents plan their future.
If your parents own their home, are they still making mortgage payments, or do they have a HELOC (home equity line of credit? What are the monthly payments? Do they have an HOA, and if so, what are those monthly payments? How much do they pay in property taxes, have they applied for a senior exemption, and where is the deed to their property? Determine the average annual cost of maintaining the home, including utility bills, repairs, and other potential expenses such as pool maintenance and purchasing new appliances. If they have credit cards with balances, what are the monthly payments? Are their cars in good running order, and do they still need two vehicles? Have a list of all the service providers and the account numbers.
Are your parents collecting Social Security? How much do they receive monthly? Do they have a pension
or a retirement fund such as a 401k, and who manages it? Some seniors continue to work past retirement age as a necessity and may have a part-time job for extra spending money. What is their salary? And don’t forget about their bank account and how much cash they can access quickly. Ask your parents for the account numbers for their bank accounts, retirement portfolio, and their credit cards.
Are your parents on Medicare yet? If so, do they have an all-in-one Medicare Advantage plan issued by private companies, or do they have regular Medicare? It is essential to enhance regular Medicare with a supplemental plan issued by a private company that covers what Medicare doesn’t. That also means having a separate dental, vision, and pharmacy plan issued by private companies. Just as important is whether your parents have long-term care insurance. Although premiums are high, this insurance covers in-home and nursing home care without emptying their savings or retirement fund.
Are your parents planning to live their senior years in their own home? Are they planning to move into an assisted living or independent living facility? Will they need a nursing home? Or are you planning for your parent(s) to move in with you and your family? What will that arrangement mean to you financially, and consider if it will require moving into a bigger house? The answers to all these questions will enable you and your parents to have a plan in place for their golden years.

The colder months are the best time of year to tuck into a steaming hot, hearty bowl of deep red chili - named the offi cial Texas state dish in 1977. Luckily, the Lone Star State hosts many Texas chili competitions, known as cook-offs, each winter. Follow your nose to these now decade-long, belly-filling traditions to explore the land, meet people from around the globe, and taste world-class chili you’ll want again and again. Cooks face off in a friendly attempt to outdo one another for the most beautiful and satisfying bowl of Texas “meat and gravy” — beef with a thick sauce of dried red chilis. Cook-off entries are graded on aroma, taste, consistency, and color, and while some say beef is optional for the trophy bowl, others say disqualification awaits anything less. One thing everyone agrees on with Texas champion chili — no fi llers are allowed. Beans, rice, and corn are not considered part of an authentic bowl of Texas heat.
For some elite competitions, chefs win many smaller cook-offs as the price of admission to a larger championship. Whether you’re at a small regional cook-off or one of the bigger title fi ghts, you’re in for a meat-lovers treat.

TERLINGUA’S CHILI CHAMPIONSHIP COOK-OFFS
Texas’ best-known chili championships simmer amidst the breathtaking beauty of West Texas on the fi rst weekend of November in Terlingua. With roots stretching back to 1967, the now almost week-long food festivals, split into two separate cook-offs in the 80s, gather chili enthusiasts from around the globe.
Sprung from the culinary duel between Texas writers Wick Fowler and Frank X. Tolbert (author of A Bowl of Red ) and New York journalist H. Allen Smith, the original matchup in Terlingua aimed to settle a dispute over which region’s chili masters knew more about the dish. Despite ending in a draw, the rivalry created an enduring tradition. After a few years, some participants worried about commercialization, resulting in the creation of a separate Terlingua championship.
Today both organizations work to raise as much money as possible for charities.
Despite the division in competition banners, both cookoffs take place less than fi ve miles apart, with cooks often visiting each other and trying for titles at both gatherings. Look for the Original Terlingua International Championship Chili Cookoff (also called the Tolbert Cookoff or Behind the Store), and you’ll spot the CASI Terlingua International Chili Championship down the road and vice versa. Keep your ears open as live country music bands are a guaranteed draw and nightly pastime at both events.
Both Saturday chili championships are invitation only, but all are welcome to camp and politely ask chili cooks to taste their creations after submitting their entries to be judged. Smaller competitions on the days leading up to Saturday’s

BRATWURST BITES WITH BEER BRAISED ONIONS
SERVES: 10 | PREP: 15 MIN. | COOK: 30 MIN. | TOTAL: 45 MIN.
INGREDIENTS: 1 pkg. of Bratwurst | 2 medium sweet onions, sliced | 2 garlic cloves, minced | 3 Tbsp. butter, divided | 1 bottle of beer | 1 tsp. thyme | 1 Tbsp. brown sugar | ½ tsp. kosher salt | ¼ tsp. black pepper | 1 pkg. of top sliced hot dog buns | Whole grain mustard
DIRECTIONS: BROWN the bratwurst in a sauté pan with 1 Tbsp. butter. REMOVE from pan and set aside. ADD the remaining butter, minced garlic, and sliced onions using the same pan. COOK over med-low heat until onions are soft and caramelized. DEGLAZE the pan with beer and add spices. COOK until the liquid is reduced. CUT each bun in half as well as bratwurst. MAKE bites by adding bratwurst to buns and adding mustard and onions on top.
TIPS & TRICKS: Warm bratwurst in the onion mixture before making sandwiches or toast the buns for added texture.

PIMENTO CHEESE ARANCINI (FRIED RICE BALLS)
SERVES: APPROX. 15 BALLS | PREP: 2 HRS. 20 MIN. | COOK: 45 MIN. TOTAL: 3 HRS. 5 MIN.
INGREDIENTS: 1 pkg. Arborio rice | 3 cups chicken stock | 1 12 oz. pkg pimento cheese | 1 cup flour | 2 eggs, whisked | 1 ½ cup panko breadcrumbs | 2 Tbsp. kosher salt, divided | 2 tsp. black pepper divided | Vegetable oil for frying
DIRECTIONS: MAKE rice according to package directions. STIR occasionally while cooking to release starches and make it creamier. Let rice cool when done. STIR pimento cheese into rice. Prepare a jelly roll sheet and spread the rice mixture in an even layer onto the sheet. REFRIGERATE for at least 2 hrs or overnight. SET up a breading station with one bowl of flour, one bowl of eggs, and one bowl of breadcrumbs. SEASON the flour and breadcrumbs with salt & pepper. HEAT oil in a pot to med-high heat. USE enough oil to fill the pot about 2 ½ inches deep. Shape cold rice into 2-inch balls. PLACE each ball into the flour and coat. REPEAT in the egg mixture and, finally, the breadcrumbs. PLACE into the hot oil and fry until golden. DRAIN on paper towels before serving.

CHORIZO EMPANADAS
SERVES: 10 | PREP: 25 MIN. | COOK: 10 MIN. | TOTAL: 35 MIN.
INGREDIENTS: Empanadas: 1 pkg. fresh chorizo | 1 green bell pepper, diced | ½ yellow onion, diced | 1 Tbsp. olive oil | 1 pkg. empanada dough disks | 1 egg Sauce: ½ avocado | 1 cup sour cream | ½ lime | 2 Tbsp. cilantro
DIRECTIONS: PREHEAT oven to 350°. PREPARE a baking sheet with parchment paper and set it aside. HEAT sauté pan to medium heat and add olive oil. ADD onions and peppers and cook until softened. ADD chorizo and cook until browned, drain. PLACE an empanada disk onto a lightly floured surface. BRUSH the edges with water. PLACE a scoop of the chorizo mixture onto the center of each disk. FOLD in half and press to seal using a fork. WHISK egg and brush the tops of each empanada before baking. BAKE for 25 to 30 minutes until golden brown. BLEND avocado, sour cream, lime juice, and cilantro in a blender until smooth and creamy. SERVE on the side for the empanadas.
TIPS & TRICKS: Empanada dough can be found in the freezer section or use refrigerated pie crust as a substitute.
