If you remain in me and I in you, you will bear much fruit; apart from me you can do nothing.” John 15:5 NIV When I think about summer, I realize there’s the natural summer season on the calendar and there are seasons of life, seasons in relationships, and spiritual seasons in our walk with God. Summer 2021 has already brought blessings of weekends at the lake, dinners from the grill, poolside dates with friends, bonfires, s’mores, and lazy afternoons with our grand girls. Some days I wish it could last forever. But we also all walk through spiritual seasons. Autumn is a time of change, winter a time of barrenness (and preparation), spring a time of rebirth, and summer a time of bearing spiritual fruit. No matter what season is on our calendar right now, we can choose to embrace “summer” by cultivating the spiritual fruit of love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and selfcontrol. (Galatians 5:22-23) Relax, have fun, celebrate, and practice gratitude for your blessings. Our Heavenly Father calls us to remain in Him, enjoy the season we’re in, and bear much fruit in His perfect timing.

The City of Mansfield is fully embracing the frivolity of Summer. People are beginning to enjoy the company of friends and neighbors. The parks and the downtown area are filled with laughter and the joy of summer 2021. The city had the opportunity to celebrate the 156th anniversary of Juneteenth at MISD Center for Performing Arts. This event also gave an opportunity to recognize a local educator, Brenda Norwood who has served the students and to the community faithfully throughout her life. Residents from all walks of life came together to enjoy this culturally rich event that is one of the longest running celebrations of its kind in the entire state. Speaking of Parks, July is National Parks and
mayor
Recreation month and their theme is "Our Park and Recreation Story," highlighting the idea that parks are central to so many moments in our daily history. Finally, what is July without celebrating the birth of our nation. We will celebrate Independence Day with a weekend of fireworks and fun, July 2-4. The Big Event, our ticketed event will offer premium parking and viewing of the fireworks at Big League Dreams or Hawaiian Falls the night of July 3. MISD's Vernon Newsom Stadium will also be a free viewing option for fireworks in which families may park and gaze at the fireworks display from the comfort of their vehicle. This time last year, none of us knew what life in Grand Prairie was going to look like. Happily now as more and more citizens are being vaccinated, businesses are returning to full capacity, and city parks and services are back to normal, Summer 2021 is shaping up to be a wonderful time in our beautiful city. Last month, we celebrated of our nation’s newest holiday, Juneteenth, with a parade, food, drink, music, and inflatables for the kids. Thanks to all of you who came out to help us mark this important occasion. I want to take time to say a great big “thank you” to our city manager, Tom Hart, who’ll be retiring toward the end of this year. Tom has served and lead our city for 22 years and represents everything that’s good about civil servants. In his wake, he leaves a legacy of world class service, integrity, and a commitment to

His sense of humor, creativity, and innovative thinking combined with his thorough knowledge of the intricacies of city finance have tremendously benefitted our residents, and propelled Grand Prairie into many awards, high rankings, and accolades. During his tenure, Grand Prairie grew in population from 118,000 to more than 200,000 and has been ranked nationally as a happiest city, best place to live, best place to retire, best place for a staycation, best city for jobs, best city for living the American dream, best city in which to raise a family, and safest city. When I moved to Arlington in 1983 fresh out of the Marine Corps, I never could have imagined the path my life would take. I wanted to be a police officer and heard North Texas was booming. I had job offers from other cities but fell in love with Arlington. The community was flourishing and the schools were everything I wanted for my young son. Over the next 13 years, I proudly served this great city as a tactical officer, training officer, and narcotics detective while simultaneously finishing college and raising my family. I finished law school, opened a law firm, and started a fine dining restaurant here. This community has always taken care of me, my family, and my businesses. Nether “Can-Do City” nor “American Dream City” adequately describes the true compassion and love our citizens have for one another. I’ve see Arlington simply as the “City Who Cares”—about
ARLI NGTON our residents, our visitors, and our businesses. We’ve been blessed with outstanding leaders, from Mayor Tom Vandergriff to Mayor Jeff Williams. I worried as Mayor Williams finishing his last term that Arlington might lose its momentum toward success and growth and decided I could give back to the city by running for mayor. On June 5th, I was blessed once again when this community voted to have me serve as their next mayor. I was humbled by the outpouring of support throughout the campaign and am committed to working hard to take Arlington to the next level. The shoes I fill are big ones, but I won’t be alone. I’ll have the support of a wonderful city council, the best city manager on the plant, and a supportive community. Thank you, Mayor Williams, for a job well done and thank you Arlington for your love, trust, and support. I look forward to what the future hold for our city. july 2021

ou may find it funny, that I would start an article about art by saying my husband and I never imagined we’d produce art, much less launch a ministry using art as the primary tool. However, this isn’t a story about us and what we are capable of — it’s a story about God and what HE is capable of through us. A familiar phrase comes to mind — “Here I am.” Perhaps this is familiar to some in a playful peek-a-boo game with a child or a fun way to announce your brilliant hiding spot that you’d have spent eternity in had you not revealed it to the seekers (If that’s the case, bravo!). For us, we see it repeated throughout God’s incredible story, and it has challenged us in our walk with Christ.
The Truth
These three words come as a response to God calling some of the most well-known people of faith recorded in the Bible. The people themselves aren’t to awe at, though — it’s the heart posture that leads to a simple “Here I am” — it’s a willingness to lay down their own will and trust God’s. The real awe comes when we see what God does through a surrendered heart. This is what challenges us. Do we have a heart that can say “Here I am” to the things God is calling us to or away from? Are we willing to walk into things that might be hard or confusing while trusting God’s promise to work all things for our good and His glory? Do we believe that, regardless of what we gain or lose in this life, Jesus is the treasure our hearts were made for?

The Victory
The Life
This phrase rang in our ears as the Lord pressed on our hearts to take a step of obedience. Recently He challenged us in stepping out – surrendered and dependent – to produce a new way to share the beautiful truth that Jesus changes everything. So was born Bridges to Grace. A ministry aimed at turning our homes/workspaces into mission fields through the art we display. Our goal is that our art creates opportunities to share the gospel with those God places in our everyday lives.
by this love, He acted and put on flesh, living a sinless life, and dying a death that we deserve. Jesus’s death paid the penalty for sin, and His righteousness is credited to those who have faith, giving those who believe eternal life.
Our paintings are a series of journeys in the Bible God used to accomplish His purposes. They are abstract in nature to invite questions. For those we have in our home to ask, “what does that mean?” The outcome — A bridge to the gospel. Each journey is paired with a card that gives the map of that journey, scriptural references, and the significance of that journey. We also layered each painting with meaning through color choices that each represents a characteristic of Jesus that further tells the story of His love for us. Our flagship paintings are called the Foundation Series. The Truth is the path of Jesus’s ministry as He revealed the glory of the Father. Jesus is God incarnate. He came from His throne in eternity and humbled Himself by taking on human flesh. Jesus teaches us the fundamental truth of our existence and design, showing us through His life what it looks like to love God and love others. The Way is Jesus’s path through Jerusalem during His arrest, trial, and crucifixion. Due to our sinful nature, there is nothing we can do to work our way into God’s holy presence. God loves us too much to allow this permanent separation. Driven
The Victory is Jesus’s appearances after His resurrection, affirming the finished work of the cross. Jesus’s defeat over sin and death was proven by His resurrection. His victory over the grave is the same victory He promises us when He returns. Hope in this victory is what anchors us during this life filled with inevitable trial and suffering. While His victory doesn’t promise an easy earthly life, through Jesus’s death and resurrection, we are assured that it is finished, and we have eternal life waiting for us. The Life shows the initial spread of the Gospel through Paul’s ministry. Paul’s life shows the power of Jesus’s love. His transformation from persecuting Christians to surrendering his life to Jesus and being used to share the good news – establishing the early churches – is evidence that it doesn’t matter where you are today or what you have done — Jesus changes lives and offers salvation to all who turn and believe. Our hope is that God uses this art to bring hearts to know and trust in Him. We pray over every print as they go out, that the Lord would give us a heart to share His love with others, that He would move in the hearts of those in our lives that do not believe and use this art to bring Him glory. “How beautiful are the feet of those who preach the good news!... So faith comes from hearing, and hearing through the word of Christ.” (Romans 10:15, 17)

Shenefiel concluded, “Combining direct animal service training, coaching, and mentoring with community engagement and legislative action — has had astonishing success in several Texas cities such as Dallas, El Paso, Houston, Palm Valley, and Harlingen. We know no-kill in every shelter and every community is possible with the resources needed to sustain and scale our work through these challenging times. Through a partnership with the Meadows Foundation, Best Friends will be able to engage with and provide lifesaving resources to more shelters and communities across Texas.” In 2019 Best Friends launched the pet lifesaving dashboard, an award-winning data visualization tool that recently garnered Best Friends a spot in Fast Company’s list of most innovative companies in the world for data science. Football has especially been scrutinized the past several years primarily because of the risk of head injuries. Groups such as the Concussion Legacy Foundation recommend young people avoid contact sports such as football until they are fourteen years old. Although players wear helmets, shoulder pads, and other protective gear, a Centers for Disease Control and Prevention (CDC) study revealed that young people playing tackle football are 23 times more likely to suffer a “high magnitude” head impact than those playing touch or flag football. So, how do parents protect their children? They can be diligent in learning whether concussion protocols are in place during practices and games. Parents can educate their kids about concussions and encourage coaches to avoid contact drills during practices. And for their part, coaches should know how to recognize whether a young player has suffered a potential concussion and teach their players to avoid using their head to initiate contact. Also, for parents, ask if a medical professional will be in attendance during games. Football, however, is not the only sport under the microscope. Soccer, usually viewed as a safer option for youth participation, has had its share of head injuries — resulting from “headers,” which are one way of advancing the ball or taking a shot on goal. Now, there is a movement to ban headers and having participants rely solely on using their feet.

And banning the use of the head in soccer is not being debated only in youth leagues. A 2019 study by the University of Glasgow in Scotland found that professional soccer players are three and a half times more likely to die due to neurodegenerative disease than the average person. Of course, it’s essential to keep in mind the overwhelming majority of young people participating in organized sports in Texas will not suffer debilitating or long-term brain damage from playing organized sports such as football, soccer, or baseball. But one activity parents sometimes overlook is cycling. Texas doesn’t require cyclists to wear a helmet, but some cities have implemented laws that require young cyclists to wear a helmet. One study conducted by the CDC and another by Consumer Reports found that wearing a helmet while biking can reduce the risk of serious head injuries by as much as 70%. This is where parents can lead by example. Although adults aren’t required to wear a helmet while cycling, they can make their children safer by wearing one. Kids, in turn, will be more willing to wear theirs. Although there are risks with physical activity, the chances of serious injuries remain low and are far outweighed by the benefits of an active lifestyle. And that is the goal of National Youth Sports Week.

Modern medical science and cutting-edge techniques provide alternatives with smaller incisions that typically mean shorter recovery times and barely noticeable scars.

it on! EXPLORING TILE DESIGN IN YOUR HOME BY C O UR TN E Y WAR R E N
hether it is for a client or in the recent custom build for our family, I turn to tile to infuse personality and set spaces apart. When making my selections, I feel like the proverbial kid in the candy store. So many shapes, colors, and textures. How can you choose just one?
RELAXING RETREAT The main bathroom is my place to escape. An oversized freestanding tub and large shower allow me to get away from the stress of the day. I used marble in contrasting shapes and coordinating lighting to make this feel like a five-star retreat. A final French mosaic saying “Madame and Monsieur” makes sure my husband doesn’t stray too far to store his cologne on my vanity. Just kidding, if anyone overruns the bathroom countertop with products, it’s me.

[LEFT] WARM WELCOME My in-home design studio is where I work with clients, so I wanted to make the guest bath friendly and energetic. To do this, I used contrasting penny tiles to create a heart in the shower inset. This was the only place in the home not overrun by boys, so I embraced my love for all things feminine.

This Frisco family was ready for their “best day ever,” so we included it in the mosaic in the shower, and we used black marble hexagon tile around the freestanding sink. We paired black star tile in the same home to pack a punch in the guest bath surround. A rattan rug highlights the bold star statement and “you look good” sign.

ome insurance is one of those things you hope you never have to use. But when it comes to your house and belongings, being covered by the right home insurance policy is vital. If you selected your policy long ago, then you might not remember exactly what it covers, and that’s OK. It just takes a few minutes to brush up on the basics to make sure you’re adequately covered in case of an emergency. If you’re a new homeowner, take the time upfront with your insurance agent to understand the coverage you need and what they recommend.
HOW DO I SEE WHAT MY CURRENT POLICY COVERS?
WHAT IS HOMEOWNER’S INSURANCE?
IS THIS STILL WHAT I NEED?
Most home insurance policies insure your home’s structure, the items inside up to a certain amount depending on your policy and provides certain liability coverage. Liability coverage pays for bodily injury claims and property damage sustained by others for which you or covered household residents are legally responsible. Sometimes special coverage is included for jewelry and other valuables.
It’s a good idea to review your home insurance policy annually to see if it still provides adequate coverage. Often, we sign up for policies in the middle of closing on a new house and then don’t think about them again until we need them. Maybe you want to increase your liability protection or switch to a lower deductible, so you don’t have to come up with as much cash to start repairs. Perhaps you have a new outdoor structure that hasn’t been added to the policy. These are all big decisions that could make a huge impact in the aftermath of a damaging storm. Your agent can help you make the right choices that fit your family and situation.
WHAT OTHER THINGS DOES IT COVER? If your home is damaged to the point, it’s temporarily unsafe to live in due to a covered disaster, your policy should provide additional living expenses (ALS) coverage to help with things like hotel stays. It can also cover theft, vandalism, and wind and hail damage, but typically not floods or earthquakes. You’ll require separate policies for those. Sometimes, you can get a policy that covers structures on your property, such as fences, sheds, gazebos, and detached garages.

Check your copy of the policy, log in to your account to review your policy online, or reach out to your agent to send you a copy. Start your review with the policy declaration page, which summarizes your coverage and provides the valuable information you need in case of a disaster or injury. This page also provides your policy number, effective and expiration date, list of coverage types and limits, and any extra coverage you have purchased. It will also include what you’re paying for the coverage, how much deductibles will be, and any applied discounts that save you money.
HOW CAN MY AGENT HELP? Your insurance agent is there to guide you along this journey. If you have questions or concerns about your policy, your agent can explain it and work with you to get the right coverage at a rate for your unique situation and budget. Your home is special. Finding Your Roots THE WHY AND HOW OF RESEARCHING YOUR FAMILY TREE BY MIMI GREENWOOD KNIGHT
It’s only natural to want to know where you come from and from whom. Learning your genealogy can provide important medical history, offer a deeperpersonal identity, strengthen family connections, and turn into an engaging hobby. Here are some steps to begin your own search.

Gather what information you already have about your family. Scour your basement, attic, and closets looking for family records, old photos, letters, diaries, and newspaper clippings. Ask family members to do the same. Interview relatives. Ask older members of your family about their memories. Gather not just facts but stories about their childhoods and ancestors they remember. Analyze your data. Document what you know and take note of holes in the information you’d like to fill. Source the Internet. Visit FamilySearch.org, which has the largest collection of free genealogy records. While sites like Ancestry. com require a subscription fee, inquire whether you can use the subscription at your public library. You may also find websites that distant relatives have already established researching your family tree. Visit a Family History Center. The Church of Jesus Christ of Latterday Saints has more than 4,000 Family History Centers containing the world’s largest collection of genealogical information. More than two million rolls of microfilmed records from around the world including, births, marriages, and death certificates, are available to the public. Compare the information with what you already know and hopefully fill in some blanks in your family tree. Organize your information. Look for free or inexpensive online family tree builder programs like the one at FamilyTreeMagazine. com or compile your information by hand. Make a note of the places you found your info in case you want to revisit them later. File photocopies and notes by family, geography, or source so you can refer to them later. Plan your next step. Once you’ve gathered all you can from your family, the Internet, and the LDS Family History Center, consider scheduling vacation time in the places where your ancestors lived. Once there, you can visit courthouses, churches, cemeteries, and other places where old records are stored, enjoy a walk in the footsteps of your ancestors, and imagine what their lives may have been like. Share your research. Print family trees and share them with your relatives or start a family history website to share your research. Don’t be surprised if relatives begin adding stories and family information to what you’ve already compiled.
There’s no shortage of online resources for researching your genealogy. Prices vary from free to several hundred dollars. Before you purchase a subscription, inquire whether your public library has one you can use for free. Here are some of the top genealogy resources available. Ancestry.com

MORTGAGE MATTERS IS REFINANCI NG YOUR HOME A SLAM DUNK FOR YOU? BY SYDNI ELLIS
A
ny homeowner with an email account probably spent the better part of spring receiving a flood of offers to refinance their house. With mortgage rates super low, the temptation to lower the monthly payment or reduce the term of the loan can be difficult to resist. There are, however, some things a homeowner should consider before leaping into the refinancing pool and all that paperwork to review, initial, and sign. For example, refinancing may bring you instant gratification because your monthly payment is lower, but it could cost you more in the long run. How? Well, let’s say you have a 30-year mortgage you have been paying for five years. Refinancing with a lower rate will indeed lower your payment, but it also resets the clock if you choose another 30-year term. So, those five years of mostly interest payments start all over again. You may also want to avoid refinancing if you aren’t in your “forever” home and planning to move in a year or two. These scenarios and others are why homeowners should do their homework before deciding to refinance. The first thing to do is shop for the best interest rate. All lenders are not the same. In addition to rates being offered, what other enticements are there? No closing costs, perhaps? That might make a lender with a rate that is a fraction higher more attractive because of reduced or eliminated fees associated with refinancing. Remember, refinancing essentially means you are buying your house again. Know your budget. An ideal scenario may be refinancing for a lower interest rate and trading a 30-year mortgage for a 15-year mortgage. That means you will own your home sooner and pay less interest over time. The question is whether your monthly income and expenses can absorb the new monthly payment? You don’t want to make yourself house poor. Refinancing is also a good idea if you have an adjustable-rate mortgage (ARM). This type of mortgage usually gives homeowners a few years of a low fixed interest rate, then balloons considerably, which can make it

difficult to make your monthly payments. In the Great Recession of 2008, many homeowners with ARMs who lost income because of the downturn in the economy faced foreclosure when interest rates rose. If you want to avoid that inevitable rate increase in an ARM, refinancing for a fixed rate makes sense. Another reason for refinancing is to roll a second mortgage or highinterest equity loan into your first mortgage at the refi rate and save yourself a bushel of money. Again, make sure the new monthly payment fits your budget. Take into account your job security before refinancing or your spouse or partner’s job security if both salaries are needed to pay the bills. Refinancing is also an option if you are re-investing in your home. For example, are you remodeling your home or updating the kitchen or master bath? Putting your equity back into your house may increase its value or at least make it sell faster. Beware, however, of refinancing where you are using the equity in your home to buy a boat, a car, or take an expensive vacation. People do this more often than you may think, but it can come back to bite them. Remember we said refinancing is like buying your house again. That means you will face fees such as an appraisal and closing costs. You may have the option of rolling these fees into the new loan or paying them upfront. Before you contact your lender, research rates online and use a mortgage calculator to determine how much a new mortgage will cost per month. It is important to be well informed because your home will probably be the biggest single investment in your life.

THE UNIVERSITY OF TEXAS AT AUSTIN UT Austin is the flagship institution of the University of Texas system known for its famous catchphrase, “Hook ‘em Horns.” While you’re in Austin, take a live or guided tour of the Texas Capitol building and grounds and live the “keep Austin weird” slogan by visiting Casa Neverlandia. Then, at dusk, gather on or near the Congress Avenue Bridge and watch North America’s largest urban bat population emerge from underneath. Thousands ascend into the night sky and fl y East over Lady Bird Lake.

WILLIAM MARSH RICE UNIVERSITY Rice University, a private research university in Houston, consistently ranks as one of the best universities in the country and often snags the #1 spot on best colleges in Texas lists. Part of Rice’s charm is a campus with secret symbols and places. For example, the columns in Lovett Hall’s arch were carved to represent the four stages of college life, and alcoves in Herzstein Hall create a whispering chamber. Pop into Rice Coffeehouse, a student-run, on-campus spot that serves various coffee drinks, smoothies, and special summer drinks.
TEXAS CHRISTIAN UNIVERSITY TCU, a private Christian university in Fort Worth, is home to the renowned TCU Frog Horn. The large, purple metal contraption designed to look like a frog is a staple at Horned Frog home football games and community events. Smoke comes out of two horns, and the sound it emits is akin to a loud train whistle. While you’re in Fort Worth, watch the daily longhorn cattle drive from the restaurants and sidewalks on East Exchange Avenue. Enjoy walking through the 15-block Stockyards District, with unique shops and lively nightlife.
UNIVERSITY OF TEXAS AT DALLAS Initially founded as a private research arm of Texas Instruments, the University of Texas at Dallas is located in Richardson, a Dallas suburb, and is the northernmost campus of the University of Texas system. When you’re ready for a cool break from touring the campus, head about 15 minutes south to The Galleria Ice Skating Center, you can also enjoy a little retail therapy by browsing the Galleria Mall’s 137 stores. If you’re spending the night in the Richardson area, check out the Plano Super Bowl, which boasts 48 lanes and a scratch kitchen.
UNIVERSITY OF HOUSTON The University of Houston, a public research university and the f lagship institution of the University of Houston system, is considered one of the country’s most ethnically diverse major research universities. W h i l e t h e r e , a m at e u r g h o s t b u s t e r s c a n check out haunted places near campus. For instance, Glenwood Cemetery allegedly has high electromagnetic fields. Elder Street Artist Lofts, formerly the ruins of the Jefferson Davis Hospital built on an old burial ground, is known for its super creepy hauntings. When you’re ready for lunch or dinner, try Hungry’s in Rice Village. The eclectic menu offers something for everyone.
Southern Methodist University, Dallas
SOUTHERN METHODIST UNIVERSITY SMU is a private research university in Dallas. Touring any Texas campus in the summer can be hot and tiring, but ice cream makes it bearable. One of SMU’s popular spots, Pokey-O’s, located next to the SMU bookstore, lets you create your own cookie sandwich treat with a choice of two cookies and ice cream. If you enjoy art and culture, SMU’s Meadows Museum, located on the edge of the Southern Methodist University campus on Bishop Boulevard, is considered by many as the greatest collection of Spanish art outside of Spain.
UNIVERSITY OF NORTH TEXAS UNT in Denton is a public research university founded in 1890. It was known as North Texas State University until 1988. Notable alumni include Dr. Phil McGraw, Don Henley, and many more. A visit to Denton wouldn’t be complete without checking out Goatman’s Bridge, a registered historic landmark considered to be a paranormal hotspot. If you’re touring UNT on a Saturday morning, stop by the Denton Community Market, featuring live music, local artists, food trucks, local farms, and a variety of vendors.
TEXAS TECH UNIVERSITY Texas Tech, a public research university in Lubbock and the main institution of the Texas Tech University System, boasts one the largest landmass campuses in the country at 1,839 acres. Take a break from touring and stop by Buddy Holly Center, which features an annual Summer Showcase Concert Series, offering live music Thursday evenings through August 19, 2021. Grab lunch or dinner at one of Lubbock’s numerous BBQ joints. TEXAS A&M UNIVERSITY Ready to be an Aggie? Texas A&M University is a public land-grant research university and the flagship institution of the Texas A&M University System. Steeped in lore, you’ll hear students talking about putting a penny on a certain statue to bring good luck and other traditions. Then there’s Bottle Cap Alley, which has become a fi xture of Aggie culture in College Station. The Northgate neighborhood alleyway contains what some estimate to be hundreds of thousands of discarded beer and soda caps. Bring a cap or two along to add to the collection.
BAYLOR UNIVERSITY Chartered in 1845 by the last Congress of the Republic of Texas, Baylor University is a private Baptist research university in Waco. When touring the campus, stroll along the river walk behind the law school with views of McLane Stadium. Also, check out the AZA-accredited Baylor Bear Habitat. Many American Black Bears have called Baylor home since 1917. Today, “Joy” and “Lady” enjoy their comfortable, curated environment. And since Waco is the home of Dr. Pepper, visit the Dr. Pepper Museum. Saddle up to their old-fashioned soda fountain and try a Dr. Pepper float.

TIPS & TRICKS: Use the rod-shaped sprinkles, known as “jimmies.” They stick to the bars far better than the small round sprinkles.
SERVINGS: 16 ICE CREAM BARS | PREP TIME: 10 MIN. | CHILL TIME: 6 HRS. | TOTAL TIME: 6 HRS. 10 MIN.
INGREDIENTS: 1 box Funfetti cake mix | 2 ¼ cups whole milk | ¼ cup whipped cream | ½ cup rainbow sprinkles | 16 ice cream sticks DIRECTIONS: WHISK together cake mix and milk until smooth. ADD whipped cream and whisk until combined. ADD 2 Tbsp.
sprinkles to mixture and stir. DIVIDE mixture into ice cream bar molds, add sticks, and place in freezer until frozen, usually 6 hours. LET BARS SIT for a couple of minutes before easing out of molds. COVER with sprinkles before serving.

4 INGREDIENT STRAWBERRY BANANA ICE CREAM SERVINGS: 4 | PREP TIME: 35 MIN. | CHILL TIME: 2 HOURS | TOTAL TIME: 2 HRS. 35 MIN. INGREDIENTS: Base Ingredients: 4 large bananas, frozen | 2 cups
strawberries, frozen | 4 Tbsp. sugar
DIRECTIONS: PLACE frozen strawberries in bowl and sprinkle with sugar. LET SOFTEN for 30 min at room temperature or defrost in microwave with sugar on strawberries. ONCE softened, add strawberry mixture and bananas to blender and blend until combined. BLEND 3 minutes, stop and scrape down pitcher as needed. Your fruit chunks will slowly become creamy. TIPS & TRICKS: These sandwiches are great with any flavor cookie and any flavor ice cream. They are also a great activity for summer parties.
DIRECTIONS: LET ice cream soften just a bit. SCOOP ¼ to
½ cup ice cream onto bottom side of one cookie. PLACE another cookie on top, bottom side on ice cream. REPEAT for each cookie and place in freezer for 15 minutes. While cookies firm, PREPARE your toppings. With 2 minutes left on the cookie chill time, PREPARE your candy coating as directed on package. ONCE coating is ready, dip one side of cookie sandwich into candy coating then immediately sprinkle with topping of choice. PLACE on parchment or waxed paper and chill for 15 more minutes.
