I’ve begun to see a pattern in me and my husbands morning prayers—a recurring plea each morning. Lord, help us to be “significant” today. Help us to make a difference in a life today and may You be glorified through it. As time marches on, our focus in life has certainly changed. Our peaceful, empty nest has birthed a wideopen canvas to be a living sacrifice for Christ; to be God’s hands and feet to those around us. I love Mark 10:45 which says, “For even the Son of Man did not come to be served, but to serve, and to give his life as a ransom for many." May we all be encouraged to be the hands and feet of Jesus in our own circle of influence, today and every day. Lastly, as we enter the month of March and our annual Top Doc section, we want to lift up a special prayer of thanksgiving for the many outstanding doctors and medical practices in our area, working so hard among us each day.

Glad to see spring creeping into place as the city starts coming to life amid warm temperatures and all that green. March in Mansfield is the start of great family fun, and there is no better place to begin than at the Pickle Parade in Historic Downtown Mansfield. The eighth annual event, set for March 15-16, will have some changes this year as the parade and palooza work around the South Main Street reconstruction. Visit their website, www.pickleparade.org, for details. It wouldn’t be spring without a little cleaning. Several city departments are joining together Saturday, March 23, for “Not Your Mother's Spring

When I begin to count the number of charitable organizations and generous individuals who come together to make Arlington the American Dream City, my cup runneth over. For countless Arlington residents and organizations, selflessness and good works seem to be a way of life. One outstanding example is The Arlington Tomorrow Foundation which last year alone contributed nearly $2.3 million through 25 grants to enhance our city services and support a variety of charitable causes. Grants included a $1 million gift toward the Green Oak School’s future life prep academy for students with intellectual disabilities and an $82,000 contribution for webcams in Texas Health Arlington Memorial Hospital’s Neonatal Intensive Care Unit. These cameras allow families to see and talk to their

newborns, when they can’t be at the hospital with them. The Arlington Tomorrow Foundation also supported projects aimed at increasing access to healthcare, food, and affordable housing, providing school supplies, bicycles, and safe after-school activities for youth, and enhancing the city’s cultural and recreational opportunities. In fact, since May 2007 the foundation has awarded almost 400 grants totaling nearly $21 million to local charities and city departments. May we all continue to work together and look for ways—large and small—that we can reach out and make our community—and our world—a better place to live.

Few states were more well represented than Texas when it came to this year’s annual Grammy awards, which featured nearly a dozen artists that won awards, were nominated, or performed to a national audience. The big winner of the night was Golden, Texas and Mineola native Kacey Musgraves, who took top honors with Album of the Year and Best Countr y Album, in addition to winning for Best Countr y Song (“Space Cowboy”) and Best Country Solo Performance (“Butterflies”). A handful of Texas artists took at least a single awa rd home, includ ing L eon Bridges, who nabbed Best Traditional R&B Performance honors for “Bet Ain’t Worth the Hand.” St. Vincent won Best Rock Song for the title track from her album Masseduction, and gospel singer artist Kirk Franklin took the award for Best Gospel Performance/ Song for “Never Alone.”

Arlington’s Maren Morris headed to the show with five nominations, and though she didn’t take home any hardware, she did perform a rendition of Neil Young’s “After the Gold Rush” with Dolly Parton and Miley Cyrus. Burleson native Kelly Clarkson was up for best Pop Vocal Album but lost out to Ariana Grande’s Sweetener, and Colleyville’s Demi Lovato was up for Best Pop Duo/Group Per formance, an award that was won by Bradley Cooper and Lady Gaga for “Shallow” from A Star is Born. Jerry Junkin & Dallas Winds were up for Best Classical Compendium, but that went to JoAnn Falletta and the London Symphony Orchestra. And Grapevine native Post Malone performed with the Red Hot Chili Peppers, but didn’t win any of the four awards for which he was nominated. Travis Scott, most recently seen as a guest performer during the Super Bowl LIII halftime show, represented Missouri City with a performance of “No Bystanders,” though he missed out on awards for Best Rap Performance, Best Rap Song, and Best Rap Album. And just two months after being named Billboard’s “No. 1 Gospel Artist of the last decade,” Houston’s own gospel singer Yolanda Adams took part in a tribute to Aretha Franklin, performing with Fantasia and Andra Day. “Thank you so much for the wonderful comments,” she said on Twitter after the performance.

Six Flags Over Texas, the Thrill Capital of Texas, launches its 58th and most thrilling season ever starting Saturday, February 23. From record-breaking coasters like Titan, New Texas Giant and THE JOKER to pint-sized adventures such as Bugs Bunny Cloud Bouncer, Taz Tornado Swings and El Sombrero—the park is ready to roll out its signature collection of thrills for all ages. “Our team is ecstatic about the upcoming season and all of the entertainment options we have to offer our guests,” said Park President Steve Martindale. “With more than 100 rides, shows and attractions, there is truly something for everyone. And, our new Membership program gives families the opportunity to visit us again and again throughout the year.” Later this spring, El Diablo opens as the park’s 14th coaster. Towering a staggering 100 feet tall, the world’s largest looping coaster boasts a fiery • red and orange theme and FOR MORE, HEAD TO sends riders back and forth, SIXFLAGS.COM propelling them head over heels through a series of 360° revolutions. The coaster changes direction halfway through the ride cycle, leaving riders suspended upside down at the top of the loop for incredible hang time. Wouldn’t it be nice to thrive in your relationships at home, at work, and in the public? For years I would have some success thriving, but inevitably I would find myself back in some sort of dysfunction because I would discover the character flaws in those around me. My marriage was always just okay, my work relationships were never quite right, and don’t get me started on those obnoxious parents at my kid’s sporting events. Everyone else was always the problem. If my boss could just lead better. If my wife would just think like I thought. If the coach would just get more training. If my coworkers would just trust me more. Signs of heavy dysfunction to slight dysfunction shrouded every relationship in my life. I saw other people around me doing well in their relationships, so why couldn’t I do better? Eventually I discovered a concept that began my journey of getting closer to thriving in relationships. “You can’t change other people, you can only change yourself. So, the best way to thrive in relationships is to draw a circle around yourself and fix everything inside that circle.” (Matthew 7:1-5 in the Christian New Testament). So, the best piece of advice I could ever give myself in order to thrive is to make sure I am in the best spot in life through asking myself what it is about me that needs to change or grow—not asking that about others. As I stopped focusing on changing those around me and focused on changing myself, progress slowly but surely started to happen. It’s exhausting trying to change others. It’s nearly impossible to change others. It’s short-sighted and selfish to try and change others. Trying to change others is control. But trying to change yourself so that you can relate better to those around you? That is love. If you are sick and tired of not thriving in
all the relationships that surround you, then turn unselfishly inward. Make focusing on you the top priority. Here are some steps I have taken to change myself: •
Go and see a professional therapist for a few sessions. A lot of times there are things in our past that keep us locked into certain negative behaviors. If you figure out what those hurts and ruts are, then often you can break your cycle of hurt and pain.
•
Read. If we stop learning then we stop growing. A lot of people say to me that they are not readers so they just can’t learn. If that is the case then listen to audio books, take an online class, or listen to podcasts. Just do something that causes you to think more deeply and caringly then you do now. This is a must.
•
Focus on your spiritual life. If we can get in touch with a God that has all the compassion, power, and wisdom to change us then we really must focus on that source. A few moments of consistent focus on the spiritual can bring great calm, focus, and peace.
•
Exercise. Maybe exercise for you looks like a walk, a workout, or joining a gym. Whatever it is, this is one of the best ways to deal with stress, anxiety, anger, and negative emotions.
•
I have got to resist the temptation to isolate and I must find myself in a community setting that focuses on growth. A book club, an exercise group, a small group at church, or taking a class. These are hallmarks of people that change and thrive.
So, if your relationships are struggling, then most likely it is you that has the issue. Besides, even if it’s not you, there is very little you can do about it. Thrive—it all starts with you.

These days they spend as much time as they can outdoors watching their kids, Kai and Liv, discover and explore the world around them. Kai has inherited his dad’s athletic gene and Jed and Kim hustle to keep up with him, on his motorbike or snowboard or his own two feet. During our photo shoot at their lovely home, Dr. Hildebrand had his hands full, as he scrambled up the clubhouse ladder behind Kai or kept up with Liv on the family’s trampoline. Dr. Joseph Berman’s 37-year medical practice experience in Arlington has opened up new opportunities for his patients. He and his staff of nurses and therapists are all members of The International Cartilage Repair Society. His office and Arlington Orthopedic Associates have been designated an international teaching facility by the International Society of Arthroscopy, Knee and Orthopedic Surgery. As one of only a few designated centers of excellence in joint restoration in the US, the Joint Preservation Center, of which Dr. Berman is the founder and medical director, now has the opportunity to offer patients new research and techniques in joint maintenance and repair. Dr. Berman recently completed a select FDA study and trial of a new artificial meniscus implant – the NuSurface. One of only 10 centers in the USA to offer an artificial meniscus, the “C-shaped” shock absorber in the knee, for patients who’ve lost their medial meniscus. The device, easily implantable as an outpatient procedure, can save years of wear on the joint and decrease or significantly postpone the need for future surgery. Enrollment has now been completed and data is being collated to present to the FDA. This may be an exciting answer to the question many patients ask “what are you going to put back in” after the medial meniscus is removed. Having completed one study, Dr. Berman has embarked on another FDA study. Using natural sea coral plugs, the study will show that articular cartilage can be encouraged to grow toward the coral plugs. This is one the first studies of joint and cartilage restoration in which the FDA is allowing us to treat osteoarthritis. All studies

prior have addressed injury to cartilage; this study may allow cartilage and bone growth which may preclude the indication of partial or total knee replacement. A potential exciting alternative to arthritis treatment. Lastly, there is genuine excitement about a very new option for patients with osteoarthritis. Available currently, Cryopreserved Human Amniotic Suspension Allograft has shown anti-inflammatory characteristics and may have the potential to help grow or stabilize articular cartilage through increase in natural growth factors. These stem cells, harvested from human placenta and umbilical cords, have shown some early evidence that this injection may decrease progression of the arthritic disease. A single injection into your knee done in the office, can offer relief from painful arthritis for as much as a year. That is twice the usual amount of time that many of the viscosupplements (rooster comb) or other preparations can boast. It can be repeated yearly if indicated.

Doctors help people every day of course, but Dr. Frank Rodriguez is going out of his way to improve life for more than his own patients. He is, in fact, going all the way to Boston to raise money for a charity that is dear to his heart. This April 15th, Dr. Rodriguez will not only run his eighth Boston Marathon, but he will be raising money to benefit low-income students through Hale Reservation Inc. Hale Reservation Inc. is a private, non-profit organization that offers educational and recreational opportunities that develop self-confidence, inspire a passion for learning and encourage an appreciation for the natural environment. Their Hale Outdoor Learning Adventures (HOLA) program encourages Boston youth to lead active, healthy lifestyles, and resonates with Dr. Rodriguez because of his own lifelong love of the outdoors. “I loved exploring the outdoors when I was a kid,” explains Rodriguez. “Those carefree and adventurous days gave me confidence and helped make me the orthopedic surgeon I am today.” The HOLA program specifically addresses the “summer learning slide” that most adversely affects low-income students. It’s designed to encourage academic gains and develop social-emotional skills during the summer months so students are ready to begin the next grade in the fall. “Every child should be – and needs to be – outdoors,” emphasizes Rodriguez, “because exploring and enjoying nature provides an ideal opportunity to learn life lessons. I’m running this year’s Boston Marathon to give this opportunity to as many children as possible.”

Hearing loss is a far more common health issue than most people realize. It should have been no surprise to Diane Blaising’s family when she found her calling helping others live a better life through improved hearing. Way back in elementary school, it was a young Diane who wowed her classmates with a science project demonstrating bone conduction hearing. “This was back when we had portable record players,” she said. “I took the record player to school and instead of using the needle on the record, I had a sewing needle stuck into a pencil eraser. We’d hold the wooden end of the pencil between our teeth and place the needle on the turning record and could hear the record through our teeth and bones in our skulls. It’s not coming through your ear canals. It’s bone conduction hearing.” The workings of the human auditory system haven’t ceased to amaze Diane. Now as a board-certified doctor of audiology, she’s discovered she likes the human side of audiology even more than the medical/science side. “I love the patient contact and making a difference in the lives of my patients the most,” she said. After more than 23 years serving as an audiologist, the last 11 with her own practice, Dr. Blaising sees herself as a source for total hearing care. “I want my office to serve as a resource center for everything hearing,” she said. “I opened Cityview Audiology & Hearing Aids because I wanted to do more for my patients. For instance, we’re starting a free aural rehab class for anyone who wants to learn coping strategies for people with hearing loss and their families. Sometimes family members need a little education about how to communicate with the one with hearing difficulties.”

Dr. Edward M. Mairura and Dr. John R. Harris are affectionately known to their patients as “the bone docs”. he quality of our skeletal structure has a direct effect on our appearance, vitality, and energy level. The better we stand and move around, the more youthful we will look and feel.
WHAT ARE BONES MADE OF? Our bones are actually living tissue that constantly changes throughout our lifetime. The bone in our bodies is a combination of collagen, a protein that provides a soft framework, and calcium phosphate, a mineral that adds strength and hardens the framework. Throughout our lifetime old bone is removed (resorption), and new bone is added to the skeleton (formation). Generally, bone formation outpaces resorption until our peak bone mass is reached around age 30. After that, bone resorption slowly begins to exceed bone formation. In some cases this reversal is what leads to osteoporosis.
WHAT DOES OSTEOPOROSIS DO? Osteoporosis is a disease that weakens bones to the point where they break easily, and it especially affects bones in the hip, spine, and wrist. It’s often called a “silent disease” because you may not notice any change until you break a bone.

The interior of your bones looks something like a honeycomb. With osteoporosis, the spaces in the honeycomb grow larger, and the bone forming the honeycomb gets smaller. Meanwhile, the outer shell of your bones gets thinner, and this combination of interior and exterior changes leads to weaker bones that are more prone to breaking easily. The risk of osteoporosis grows as you get older. At the time of menopause, women may lose bone quickly for several years. In men, the loss of bone mass is slower, but by age 65 to 70, men and women are losing bone at the same rate.
HOW DO I PREVENT IT? Most people believe that thinning bones are inevitable as we age, but recent research challenges this idea. Actually, there are things you can do at any age to prevent weakened bones. These include eating foods rich in calcium and vitamin D. And a study at the University of Toronto shows that aerobic exercise such as weight training, walking, hiking, jogging, climbing stairs, and tennis improved the amount of calcium in the upper thighs and upper body, two areas prone to fractures. Even dancing helps, so get off the couch, turn up the music, and cut a rug!

Needless to say, there have been a few improvements since then! These days, elective medical cosmetic surgery is consistently gaining in popularity for changing everything from the shape of your nose to the size of your belly, the contour of your breasts, and the tautness of your tush. There are more and more attempts to address these issues non-surgically with fillers, lasers, and other methods that have little downtime, but, as Dr. Matarasso said, “Nothing can replace what surgery does.”

This procedure involves using breast implants (silicone or saline) or fat transfer to enhance the size of the breasts and improve the balance of hip and breast contours. There are all kinds of shapes and sizes of implants to choose from and various ways to get these implants (or fat transfers) surgically. It is best to discuss all options with an experienced and qualified plastic surgeon.
More commonly called a nose job, this procedure is used to reshape the nose for aesthetic reasons, to create facial harmony, or to correct structural defects in the nose that make it hard for some people to breathe. “Rhinoplasty has amazing staying power simply because the nose sits in the center of the face,” said Dr. Shah. “Rhinoplasty surgery has an incredibly high satisfaction rate, but as it is considered the most difficult cosmetic surgery procedure, it should only be performed by a specialist.”
“[Breast augmentation] remains in the top spot because women will continue to embrace flattering cleavage,” said Manish Shah, MD, a board-certified plastic surgeon practicing in Denver, Colorado. “What we will see is an increase in requests for fat transfer to the breasts as the trend to smaller augmentations continues and more women try to avoid the use of implants. [But] implants will still be king.”
LIPOSUCTION While minimally invasive procedures such as CoolSculpting and Zerona have gained serious traction in the last few years, the gold standard for fat removal is still liposuction. First approved in the United States in 1982, liposuction slims and reshapes areas of your body by removing stubborn fat deposits. Liposuction can treat the thighs, hips, buttocks, abdomen, upper arms, back, inner knee, cheeks, chin, neck, calves, and ankles. It cannot, however, treat cellulite. For best results, you need to be at a healthy weight and have good elasticity in your skin.

As far as tummy tucks are concerned, they will be a mainstay of plastic surgery forever.”

TIPS FOR A DAZZLING SMILE You should replace your toothbrush every three months. If you have trouble remembering to do this, the next time you change your brush, consider writing the date on it in permanent marker. Drink plenty of water and eat crunchy fruits and vegetables. A healthy diet will not only make your teeth healthier, but you healthier. Limit sugar and acidic foods as they can break down tooth enamel.
SOMETHING TO CHEW ON Some health conditions and and medications cause dry mouth, which can lead to tooth decay and gum disease if left untreated. It’s a common cause of dental decay in older adults, but there are ways to remedy and prevent it. •

But it was while completing her design degree she awakened her artistic side and decided to marry the two gifts. “My joy comes in using my artist eye and my design knowledge to make an unloved space or piece of furniture a beautiful part of a home again, “she said. “Casting vision and taking the journey to create a beautiful space is a wonderful adventure for me—and my client.” Amy says her designs aren’t so much about what happens to be “in style”, at any given time. “It’s about what you like, what inspires you, and what your personal style says about you,” she said. “I always knew I’d work in the creative field. The need to change things—to improve things—is what drives me.” Amy moved to this area in 2009 and realized her dream of becoming a US citizen. The joy of her life is her two children. “My son owns Cake-aholics Bakery,” she said. “He’s also extremely artistic. My daughter will graduate in June and will pursue her career as a police officer with the Carrollton P.D. One important factor for those who have children or are planning on having children in the near future is picking a neighborhood with quality schools. Even if you don’t have children—or

Neighborhoods with sidewalks are great and help keep you off the road and away from automobiles. Then a house with bedrooms staggered on different floors could be the better option for you. Another thing to consider when making a decision on a new home is the size of the yard. For younger adults with children, having a large backyard might be very important. It allows you to have some peace and quiet in the house, while your kids get to run, jump, and play outside. When selecting a new home, consider if you will be able to watch your kids from the comfort of your kitchen or living room as they play in the backyard. Having a clear view of the yard from inside the house will mean you will be able to stay inside and take care of household chores and still be able to keep an eye on your kids. One final thing to consider when selecting a new home how move-in ready it is. Make sure you ask a lot of questions about the history of the home. When was it built? How many previous owners has it had? When was the roof last replaced? Getting your potential new home inspected and walking through it multiple times is a great way to know exactly what you are purchasing before you move in. Will the previous owners be leaving behind the appliances? Do you need to update cabinets or replace carpeting? Older homes need more upkeep, and that could be less than exciting. So instead of fixing the roof or updating the siding on your home, it might be a good idea to start checking out other options on the market. “
W
e should sign our names on it,” I heard Toni declare as I chewed thoughtfully, reaching for the crackers, cheese, and fig spread. “Anybody have a sharpie?”
The sun had begun to set, casting pink and orange hues over Carhenge, and I couldn’t help but think “these really are the days of our lives” as I hopped off a half-buried truck to squeeze my initials between the thousands that came before mine. I’m talking about Carhenge in Alliance, Nebraska, a fun tourist trap slash art installation that offers a curious recreation of Stonehenge using broken down autos. Truth be told, I found it the perfect ending to my first long road trip with friends. Thankfully, our destination had not been Alliance, Nebraska. It was merely a pitstop on our way home from Colorado. As with many things in life, our adventure started on a whim. My stepfather had a week-long timeshare getaway available and I figured it wouldn’t hurt to look. A free place to stay and a summer trip, yes please! The place that ultimately caught my eye was Vail, Colorado. As a nature lover I’d always wanted to hike the Rockies, and it was a perfect time to go to Vail with the cool, dry weather. I called Toni and Craig, two friends with a penchant for adventure who love nothing more than good company and some laughs. The thing is, as a somewhat unorganized college grad navigating the week with two other less-organized people, our trip was to be a learning process rife with shenanigans. It didn’t take long to realize that driving my aging SUV—a vehicle with broken air conditioning—for three days through the American Midwest in summer wasn’t the most pleasant thing in the world. And with no auxiliary audio port, we had to get creative to stave off road hypnosis as the sea of cornstalks sent us into a trance. We got our mileage out of the same six CD mixes I made in high school, but to get a better feel of the Midwestern states we were passing through we eventually decided that whoever was riding shotgun would look up and read aloud local Craigslist personal ads. What will always stick with me is the surprising number of vampires in Iowa seeking companionship with those of their own kind. Vail, Colorado, which is packed during ski season, was all but a ghost town during our late summer visit. It wasn’t long before we started to feel like honorary locals. The girl at the coffee shop across the street was eager to hear of our daily escapades

FRESH AIR and the bartenders at the pubs shared the history of the town and a few ghost stories. After a particularly long evening at such a pub, we decided to walk to the nearby grocery store to save money instead of going to a restaurant. Being rather unorganized as previously mentioned, we awoke the next morning to find we had purchased an array of food that didn’t quite match up. Bottles of dressing with no salad, a single onion, loaves of bread, and frozen pizzas— despite there being no oven in the condo. We soon discovered the joy of grilled pizza. Throughout my stay I soaked in Colorado’s many wonders. While we were not that far from civilization on the trails, it still felt as if the world had stopped and all that existed was the quiet beauty of nature. The hushed whispers of wind over the brush, the songs of birds and chattering of small animals, and most strikingly, the dense lushness of untampered land that seemed to breathe life itself enveloped me. Aspen trees huddled over us, the pattern of their bark like watchful eyes keeping us company on our long treks into their inner sanctum. The nearby hiking destination of Beaver Lake Trail will always be an important and personally memorable spot. We originally planned to hike up the trail to rest at what residents described as a peaceful lakeside oasis. Although we had to admit defeat after making it only halfway, the siren song of mental and physical triumph called, and in the spirit of adventure I rallied my friends to try again the next day. The second time around we persevered through the rocky final stretch and were rewarded with a view of Beaver Lake accompanied by friendly wildlife so used to hikers they walked right up to us to socialize. It’s possible that this trip was nothing more than some college graduates hitting the road, but the memories I ended up with will follow me for the rest of my life. It was a breath of fresh air and strengthened a bond I shared with close friends. We learned that not all adventures have to be grandiose and result in a fantastic destination. Sometimes merely getting away can help to bring you some peace at a certain point in your life. That’s what crossed my mind as I packed up the last of my Carhenge picnic from atop the rusted trunk and walked back to the car.

Beecoming a beekeeper BY MIMI GREENWOOD KNIGHT
WHEN I REACHED A CERTAIN AGE, I
remembered Ouiser Boudreaux from Steel Magnolias who said old southern women should “wear funny-looking hats and grow vegetables in the dirt.” I’ve never been able to pull off a hat, but I figured I might be able to coax a few vegetables from the ground. So, five years ago, I accepted my obligation as a southern lady, installed nine raised beds in my back yard, then made every mistake a novice gardener can make over the next five years. ¶ Season one, I sprayed a healthy crop with Dawn dishwashing liquid and water. The sun came out and scorched every leaf off every plant. Season two, I foraged cow pies from a neighbor’s pasture which had been sprayed with herbicide to discourage weeds only to discourage my vegetables from growing. Season three, I enticed my chickens to turn the beds for me all winter, then spent spring and summer unsuccessfully shooing them, as they happily uprooted everything I planted. I over-watered,

From bumbling gardener to buzzing queen of the back yard
over-fertilized, and over-crowded. At the end of the experiment, I’d scored a solid C- in gardening. ¶ Still, there was another southern lady adventure that intrigued me—beekeeping. What could be more timeless than charming a colony of bees into fertilizing your bountiful (someday) garden while proffering honey right in your own back yard? My research turned up too many benefits to list. ¶ There’s local honey to inoculate me against seasonal allergies, and beeswax for myriad DIY projects. Bees are independent, preferring to be left alone. I can do that. Honey bees are not aggressive and only sting if they’re provoked or to protect their hive. They’d get me out in the fresh air and I could do my part in saving the planet. The more I read, the more I was hooked on the idea. So, I got my hives, my suit, my bee tools, and finally my bees. That was a year ago, and I confess I’m still Nervous Nellie around my girls. My bee guru, Mr. Curtis, wears only jeans, a t-shirt, and tennis shoes

been doing this for millennia. ¶ I recently had the joy of harvesting my honey and gifting it to friends. They looked at me with admiration—"my friend, the beekeeper!” Should I tell them I can’t grow a tomato to save my life? Would they realize the only thing I did right for my bees was leave them the heck alone? Nah, I’d rather let them savor their image of me as the consummate southern lady. Ouiser would be so proud.

OUR UNIQUE FORM OF REAL LIFE TIME SHIF TING GIVES US A CHANCE TO CHANGE OUR ROUTINES BY BRANDON DAIKER
D
aydreaming about how I could best use the extra hour of daylight each day that will be afforded to me by this month’s onset of Daylight Saving Time—which we will first enjoy on Sunday the 10th—has occupied me for well over an hour this morning, an hour I could have spent utilizing the current amount of daylight in… a way that I haven’t quite thought of yet. In a world fixated on the fictional and theoretical possibilities granted by time travel, our cultural tinkering with the clocks is about the closest we can come to hitting pause on the DVR for our daily lives. Even though we’re really just jumping

forward and back during the wee hours of the morning twice per year, opinion is mixed, generally, as to which particular quantum leap people enjoy more (when it’s about time to “fall back” people seem thrilled to get the extra hour of sleep, yet when it’s time to “spring forward” the extra hour of sunlight is the raison d’être). Originally kicked off in 1918 (Happy 101st birthday Daylight Saving Time!) as a wartime conservation effort to preserve gas and electricity used on lighting, DST came about at a time when people didn’t have the self-illuminating technological gadgetry we do now, and extra daylight meant more time for visible entertainment outside instead of staying
DAYLIGHT SAVINGS TIME inside wasting energy. In 2019, what it really means is that the world of the outdoors is more available to us once we get done with work than it is during the colder months, when it can sometimes be dark as you leave the house and dark again by the time you’re home. Outdoor projector users, fans of patio lights, lovers of the early evening moonlight serenade, and stargazers lament! This time of year is not for you. In exchange, there’s more time to enjoy a family picnic, go for an evening swim, or do some of that yard work and outdoor maintenance you’ve been putting off for the last month or two. Despite losing the hour, an informal poll of the office reveals that more of us are excited about
the impending change than not. Some report not getting tired as easily in the evening owing to the extra light, having more time to go for a well-lit jog, being more inclined to swing by the store or run some errands after work, and generally feeling like it’s finally time to start getting into the spring and summer spirit after a long, dark winter. This all sounds fine. But if like me you started this article unsure of what exactly you’re going to start doing to make this newfound hour of extra sunlight count each day, fear not—it isn’t too late. By my estimation, you’ve got about 55 minutes left. march 2019

Vanessa Cancel always had a passion for helping people achieve their goals, although that passion took different forms throughout her life. “In college I worked admissions, financial aid, and orientation programs on campus,” she said. “Then I worked in the restaurant industry coaching and teaching employees, from servers or dishwashers to general managers. As a parent I loved challenging my kids and supporting them on their journey.” Now as owner/operator of Kidcreate Studio in Mansfield she scratches that itch every day empowering and challenging kids to create and explore their own imagination. “Part of what we teach them is the planning and implementing that goes into completing a project,” Vanessa said. “It’s teamwork and time management. It’s creativity and finding oneself within a masterpiece, and I’m able to do what I love in helping young people achieve their best self.” Opening her own Kidcreate Studio enabled Vanessa to realize that elusive work/life balance so many women pursue. Kidcreate is a unique art studio— just for kids. They specialize in children’s art classes, camps, and art-themed birthday parties, for kids age 18 months to 12 years. “We’re filling a need for young children who love to be creative, messy, and explore but don’t get as much time to do that in school or at home,” Vanessa said. They also travel to schools and churches that aren’t mobile and able to go out on fieldtrips. “We have birthdays where everyone
goes home with an awesome gift and camps that help the kids feel proud and accomplished at the end of each day with amazing projects to show for it,” Vanessa said. “All our teaching assistants are students at the Early College High School in Mansfield. Heat grill to medium heat. Stir together salt, garlic powder, papr ika, onion powder, and pepper in a small bowl. Rub salmon filets with olive oil evenly. Sprinkle with spice mixture, about ½ teaspoon per piece. Place sa lmon sk in side down on the heated grill. Cover and grill for about 5 minutes per side. Serve salmon immediately with tomato avocado salsa. Drizzle with olive oil and balsamic reduction. Top with a garnish of fresh basil.

TIPS & TRICKS You can use whatever tomatoes you like for the hummus cups! Cherry, grape, roma, hot house, and more work wonderfully in this appetizer. Make sure you have about 1 to 1½ cups total chopped tomatoes for the recipe.

Optionally, toast the mini filo shells. Fill each cup with 1½ teaspoons hummus. Divide tomato, cucumber, and feta evenly between the cups. Sprinkle with pepper and serve.

HEALTHY HONEY LEMON BARS
MAKES: 12 BARS | TIME: 50 MINUTES + 4 HOUR COOL for the crust:

¼ cup coconut oil, melted and cooled
Preheat oven to 325˚F. Line an 8”x8” pan with parchment paper.
2½ tablespoons raw honey
Add coconut oil, raw honey, egg, and almond extract to a medium bowl for the crust. Mix together until combined. Stir in almond flour, coconut flour, and salt until a dough forms. Press into the prepared pan until an even layer. Bake for 10 minutes. Cool for a couple minutes while you make the filling.

for the filling: zest from 1 lemon ½ cup freshly squeezed lemon juice (about 3 lemons) ½ cup raw honey 4 large eggs 1 egg yolk 1 tablespoon tapioca flour powdered sugar, sifted
Whisk together lemon zest, lemon juice, raw honey, eggs, egg yolk and tapioca flour for the filling until combined. Pour over the baked crust. Bake for 18 to 25 minutes until filling is set. The center should not jiggle.
TIPS & TRICKS You can also turn these honey lemon bars into honey key lime bars by substituting key lime juice and zest for the lemon juice and zest as listed in the recipe.
Cool completely in the pan, then place in the refrigerator to cool for at least 4 hours. Cut into 12 bars and serve with a garnish of powdered sugar on top.
