Mansfield is a beautiful city. Residents love our landscaped medians. We are a certified Texas Scenic City and have been named a Tree City USA for 12 consecutive years. But we don’t just care about how our city looks; we care about protecting the environment around it. On April 27 the volunteers of Keep Mansfield Beautiful will join with our Environmental Services and Water Utilities departments for the third annual Earth Day Mansfield celebration. While there will be entertainment, activities for children and lots of great stuff to eat, the primary purpose of the event is to educate residents on how they can help protect the environment, not just in Mansfield

but everywhere. There will be educational booths, information on using rain barrels, tips from Tarrant County Master Gardeners and a butterfly release into the demonstration garden at the Chris W. Burkett Service Center. Join us from 10 a.m. to 2 p.m. for this fun and educational festival. Help us make every day Earth Day in Mansfield.

At the State of the City Address, I announced some great news for Grand Prairie, which I’m happy to share with you. Living Spaces Furniture, out of California, will be moving into the former Restoration Hardware building and offering a 175,000 square-foot retail store, 700,000 square-foot online fulfillment center and a 6,500 square-foot Beck’s Prime Restaurant. Living Spaces will be open early summer. And, the Main Event is opening its 7th location in DFW in Grand Prairie end of this year. This desitnation of bowling, rock climbing, gravity ropes, food and arcade is a great addition to the family friendly fun for which Grand Prairie is known. And more restaurants have announced locating along SH 161 by year end:

In appreciation and in honor of David, Rodney and his wife, Isibelle, established The Nicklas Foundation. David’s own sister, Rebecca Nicklas-Kelley, joined the Foundation, in 1996, so it’s now operated by both the recipient and donor families.

TH E GIFT OF LIFE At age 36, Rodney DeBaun needed a life-saving heart transplant. He was given that priceless gift, thanks to the donation of 22-year-old David Nicklas.

Just this month, Rodney and Co-Pilot Berry Lane helped Souther n Outdoor Dreams f ulf ill the dream of six-year-old cancer patient, Abigail Arias of Angleton, Texas by flying Abigail and her family to Jackson Hole, Wyoming, so the young organ recipient could see snow and elk. The foundation continues to look for ways to impact the lives of transplant patients and others.

This question says as much as it asks. It suggests that the god who can prevent something awful, will always do so. It is often asked critically to prove God is either incapable or unwilling to prevent evil, calling into question the trustworthiness of such a god. But notice the change in tone when we ask each other the same kind of question about a catastrophic event. “Where were you when JFK was assassinated?” or “Where were you on 9/11?” We do not expect fellow finite beings to have been present on either occasion, much less to have been able to foil the evil-doers’ plans. God is not let off the hook so easily; we tend to expect more of Him. The good news is His power and concern are not so easily disproven. According to Scripture, God is simultaneously transcendent and imminent. That is, He is spiritually over and above all things and yet near; enthroned in heaven (Ps. 2:4) and providentially involved in the minutia of life (Col. 1:17). Few portions of Scripture demonstrate this paradox like the Old Testament book of Ruth, the masterful drama about the gracious provision of God. But before it is a story of blessing and redemption, it is a story of heart-breaking loss. Out of the gate, the patriarch of an Israelite family and his two sons die in a foreign land, survived only by the widow Naomi and her two daughters-in-law. This is where the plot thickens. By the end of scene one, Naomi, in no uncertain terms, assigns full responsibility for her terrible loss to God (Ruth 1:19-22). If you were to ask her where God was when all the men in her life expired, she might have answered, “On His throne, as always.” This isn’t the only appeal to God’s sovereignty in Scripture (Ps. 115:3), not by a long shot. Job, who lost more than

Naomi, never spoke negatively against God, but declared, “The LORD gave, and the LORD took away; blessed be the name of the LORD” (Job 1:21-22). Naomi appears to struggle a bit more here than did Job, nevertheless she never doubted God’s existence or His fateful involvement. After being gone for more than a decade, she returned home with a new identity. She left as Naomi, meaning pleasant. She returned insisting she be called Mara, meaning bitter. And her reason for the name- change was the Almighty had dealt bitterly with her (1:20). She was not happy about it, but she was willing to accept the LORD’s righteous discipline, however severe (1:21). How can we learn from Naomi’s ability to reconcile God’s loving-kindness with painful loss? A fascinating clue is found in the names she uses for God. Twice she uses God’s personal, covenant name, Yahweh, which speaks of God’s nearness, His imminence. And twice she uses an older, more generic name for God, Shaddai, which speaks more of His transcendence and power. Naomi sees God as both the God to whom she must submit and the God who may be known and trusted. While God does not stop all evil in this life, His perfect character is not in question. Isaiah 55:8 reminds us that God’s thoughts are not our thoughts, and neither are His ways our ways. All of His ways are good, without even the smallest exception. The book of Ruth ends with God’s gracious provision for Naomi on remarkable display. As with Job, God blesses Naomi in ways she could never have guessed. Such is often the case in our lives, however, even if these merciful endings never come, God remains eternally worthy of our worship, obedience, and trust.

ome people are born artists, gifted with an eye for what can be, and the ability to make it a reality. Some artists work with paint and canvas, others with ceramic or clay. Then there is Matthew Wohlkinger whose medium is buttercream frosting. Y’all gotta see these cakes! A gifted artist, right from birth, Matthew had scholarship offers to pursue his art. But he had another passion too and chose to attend Le Cordon Bleu in Dallas. “I felt that studying baking and patisserie would perfectly suit my skill and interests, “Matthew said. Boy, was he right! Just ask his ever-growing customer base at Cake-aholics Bakery in Arlington. “If you can dream it, we can buttercream it,” Matthew said. “I really want to create an ‘experience’ with each cake. Whether it’s a wedding, birthday, anniversary, whatever, I really want to honor the special moments in people’s lives with a custom creation that celebrates their unique story.” I’m guessing the biggest problem his customers have is cutting into these masterpieces. But when they do, they’re in for another surprise. Matthew’s creations taste as good as they look. Or they were at a shower, wedding, or party with one of our cakes. The word of mouth has been great, right from day one.” It doesn’t hurt that Matthew’s edible works of art have been featured—and lauded—on the Food Network where he took home a victory on “Winner Cake All”. Meet Matthew Wohlkinger “I was born and raised in Johannesburg, South Africa and moved with my family to the United States when I was 16,” Matthew said. “My mother had completed a foreign exchange program here in high school, and kept in touch with her host family. So, when my family decided it was time for a fresh start, we

relocated to Arlington, where I attended James Martin High School.” Matthew knew early on that he wanted a career that would allow him to be creative but would also involve food. “Growing up, I always loved making food for my family and friends,” he said. “There’s something so satisfying about having others enjoy food you make. So, when I thought about a career that would blend both, I really felt that baking was the perfect choice for me. I just feel glad that I get to do what I love.” Now, he and his team get to be a part of the special moments in people’s lives. But it’s true that the only thing worse than going to the dentist is not going—since small issues can become big ones if left ignored.

I’m happy to report this dental weenie finally recently found a dentist who explains everything they’re about to do and what I’ll likely be feeling. Look for a dentist who specifically caters to the dentally fearful. Some include that in their advertising. But you can also ask your friends and family what their dentist does to alleviate fear. Because dental anxiety often comes from a feeling of loss of control, look for a dentist who explains things thoroughly, doesn’t act until you give the okay, and makes you an equal partner in your own oral care. Be upfront about your anxiety. It’s not the first time your dentist has heard about dental phobia and you won’t hurt their feelings. Make your dentist aware of the exact things that generate anxiety in you, so they can proceed accordingly.

Discuss things like nitrous oxide or oral sedation that can take the edge off your fear.

Schedule your appointment first thing in the morning, when you and the dental staff are fresh and relaxed (and you’ll probably spend less time waiting around psyching yourself out).

Designate different hunting areas for different ages or stagger hunt times throughout the party, so adults and older kids can have a more challenging hunt and little ones will have it easier. Buy plenty of inexpensive Easter baskets (or bags) and set up a station where guests can decorate their own before the hunt. Fill plastic eggs with more than just candy. Try small toys, hair bows, nail polish, stickers, playdough, glow sticks, bouncy balls, fun shoelaces, or movie tickets for kids and look for larger eggs you can fill for adults with little cheeses and sausages, seeds for spring flowers, and maybe even a little money. Rather than making the hunt about elbowing your way to finding the most eggs, why not have special eggs that can be redeemed for prizes such as gift cards?

Forego the traditional hunt and send teams of party guests (in varying ages) on a treasure hunt with clues inside eggs, each leading to the next clue and eventually to a prize. Or you can play an Easter egg relay with teams (again, in varying ages). One team member finds an egg, tags another player who finds an egg, and so forth, until one team wins. Keep party foods easy and light, like sliced fruit, spring vegetables, finger sandwiches, deviled eggs, and dips such as hummus, guacamole, or tzatziki. Include other activities such as sack races or eggon-a-spoon and insist that grown-ups participate. There are few things as fun for a kid as watching their parents acting like kids themselves. This is a great time for a spring-themed piñata. Deck out a table with dye, paints and brushes, markers, and glitter, and see who can come up with the coolest egg creation. Wait for it… Peeps S’mores! Set up a station with graham crackers, chocolate bars, a safe heat source, and those wonderful, colorful Peeps to use as marshmallows.

DRINKS FOR YOUR PEEPS COCONUT LEMONADE FOR KIDS In a three-quart container, mix two 12-ounce cans of (thawed) frozen lemonade concentrate with a half a cup cream of coconut and two thinly-sliced fresh lemons. Stir in six cups of water, then cover and chill before serving.

COTTONTAIL MARGARITAS FOR ADULTS In a large pitcher, stir together one can of coconut milk, one and a half cups silver tequila, one cup triple sec, half a cup pineapple juice, and a quarter cup of lime juice. For added fun, spread marshmallow fluff around the rim and dip the glass in shredded coconut.

Lastly, be sure to have a backup plan in case the weather turns bad and you must move the fun indoors.

A fact I didn’t know until my most recent visit with a friend is that that prior to the Flagship Hotel’s opening, there was an original Pleasure Pier in that same location from 1943 until 1961. That piece of real estate was destroyed too— by another hurricane named Carla.

T

he first question anyone from outside Texas asks me when I take them to Galveston Island is “Where’s that big hurricane-proof hotel?” There are a couple of historic hotels in Galveston, but I instinctively know they’re talking about the Flagship Hotel, also known as the USS Flagship. The hotel was so notorious for being the first one in North America built over the water that tourists flocked there from the 1960s until Hurricane Ike finally did in the old gal in 2008. Even so, the hotel has been famous for so long that it lives on in legend. Most people believe it’s still sitting there on Fifth Street and Seawall Boulevard until they cruise by and see for themselves that the space is now occupied by the Galveston Island Historic Pleasure Pier, and has been since 2012. The Pier hangs out into the Gulf of Mexico, hosting midway rides, carnival games, and even a roller coaster called the Iron Shark that flies out over the water.

Galveston’s history is a tormented one. It’s a very old city with a history that speaks of great success and horrible ruin. In fact, some of the most elegant homes built in the United States during the 1800s had a Galveston address, but with the elegance came fire, war, and even pirates. Jean Laffite and his band of rowdy buccaneers were possibly among Galveston Island’s first settlers from across the pond. The hurricane of 1900 did its own damage, killing thousands and becoming the deadliest natural disaster in U.S. history. If you’re looking for an adventure that will take you on a historical ride as opposed to a carnival one, stop in at a few of the older homes or hotels for a few drinks and a bedtime story— more than 60 locations are on the National Register of Historic Places.

The Hotel Galvez is one of them, sitting on the beach and nicknamed the “Queen of the Gulf.” It opened in 1911 and at one time featured a candy factory, soda fountain, barber shop, and even a doctor’s office, doubling as a military barracks for the Coast Guard during World War II. I grab a Ghost Bride cocktail at the bar, named as such due to the ghost stories of legend associated with the place—Audra, the fiancée of a local seaman, is supposedly april 2019

still looking for her man and occasionally enjoys the amenities in room 501. Bishop’s Palace, another National Historic Landmark, is said to have some ghosts too, like the builder’s wife from the 1800s who supposedly moves postcards around the house from her travels back in the day. Take note of the carvings outside the house of people, plants, animals, and mythical creatures. The Grand 1894 Opera House is especially notable for withstanding the 1900 and 1915 hurricanes along with Carla and Ike (though not without a little damage here and there), and has transitioned from live performing arts to Vaudeville to a movie house and back to a theatre again. At one time this opera house was named the “Official Opera House of Texas,” and actually officially opened on January 3, 1895, with a performance of a play called The Daughters of Eve. I don’t catch a show this time around—there’s plenty more to see. Our next stop is an afternoon at Galveston Island State Park, where we rent a kayak and set to checking out the 2,000 acre park by water. Even if you’re more of a land-lubber, there’s still hiking and plenty of nature where you might see armadillos, rabbits, ducks, or shore birds, and there are places to enjoy cycling, rock climbing, birding, archeological happenings, or even get lucky and catch a historical re-enactment. If all the history and hiking tires you out, just remember you can find plenty of beach time in Galveston too. I was satisfied to spend an entire two days just lounging around the beach. Sea Shell Beach Park is just what the name says, and you can find a selection of shells to take home. My suitcase was packed with shells on my return and I kept my motto—you can’t pick up a shell unless you plan to keep it. Saying goodbye to Galveston again I knew that although the shells were physical things that were coming home with me, I’d take a few more memories of the storied tales of Galveston back too—and would surely return someday to pay continued homage to the history and culture of this magical island.

Read about the food, the staff, and the overall camp experience. CONSIDER THE COST Higher cost may reflect a well-paid staff, the best camp equipment, high-end facilities, and a lower camperto-staff ratio. But lower-cost camps can sometimes be supported by organizations that subsidize the camp to lower their fees. And some camps offer discounts for financially-strapped families. CONSIDER LO CATION Overnight camps close to home can lessen the experience of going “away to camp.” But day camps too far away can sometimes place a burden on parents.

This is your life—not a game of Monopoly. Unless you have impeccable credit and a tidy sum of money in the bank, it is usually advantageous to close on the home you are selling before purchasing your new home. That doesn’t mean you need to wait around before looking for a new home. If you find your dream house before selling, you can make an offer on contingency. This works by offering to buy the new home only if you can successfully sell your existing home. Contingencies work best in a buyer’s market, when there are more homes available than people looking to buy.

Selling your home at least slightly before purchasing a new one takes the guesswork out of the amount you will have to spend. It may be necessary to find temporary, short-term housing before closing on your new home. This requires an additional move, and you will probably need to store your excess belongings until you close on your new home.

If a contingency offer is not in the cards for you, it is possible to request an extended closing on your new home. That may give you enough time to close on your existing home and use the equity toward your purchase. A short-term bridge loan is another option.

If the buyers of your home are not crunched for time, you can also ask them to rent the property back to you for a short time after closing. This will allow you a little buffer to close on your home purchase while not requiring an additional move. It is even possible to have both homes close on the same day. While this requires some flexibility on the part of all concerned, it can end up being to the benefit of all.

YOU JUST PUT THE GROUNDS IN A JAR, POUR IN THE WATER, WAIT A WHILE, THEN REMOVE THE GROUNDS

R

egardless of its history, the most important coffee related factoid in my estimation is that I’ve been drinking cold brew just about every morning for a couple of weeks now, and find little hope that the ways of heated coffee will be making an expeditious return to my routine any time soon (sorry, little single-serve coffee pod things). For all the buzz about this served-cold stimulant, the facts are surprisingly simple. Cold brew coffee is made by immersing coffee grounds in cold (or room temperature) water instead of hot water, and then waiting. Waiting quite a while— between 12 and 24 hours—in fact. See, while the boiling water that we use to prepare that famous hot cup of joe in the morning is a particularly effective tool when it comes to leaching all that flavor out of the grounds super quickly, cold water takes quite a bit longer. The advantage of

course to this is that you don’t need any special technology to actually make the stuff. You just put the grounds in a jar, pour in the water, wait a while, then remove the grounds (by pouring it through a filter, for example). The result is a more consistent, easy to make drink that takes on a fruity, citrusy flavor and has less bitterness and acidity than hot coffee. You can also keep it safely refrigerated for weeks! If you’re a caffeine hound, you can even pump the coffee content way up relative to the amount of water you use to make an extra strong drink you can use as concentrate or just drink straight for a particularly punchy experience. Mix it with cream, sweeten it with simple syrup or sweetened condensed milk, and enjoy. Whatever your preference, it beats waiting for the kettle to boil as you try to drag yourself outta the house—and with hot summer mornings just around the corner, the rest might be history.

directions: Preheat oven to 400ºF. Add cubed parsnip, ½ tablespoon olive oil, and ¼ teaspoon salt and pepper to a large ziptop bag. Shake to combine and scatter on a baking sheet. Bake for 30 minutes, stirring halfway through, until tender april 2019

and starting to brown. Remove from oven and set aside. Keep oven on. In a small skillet, add 1 teaspoon olive oil over medium heat. Add leeks and garlic, cooking until softened, 1 or 2 minutes. Remove from heat and set aside. In a small bowl, stir together ricotta, pinches of salt and pepper, and thyme for the tart. Line a large baking sheet with parchment paper. Set puff pastry on the baking sheet and roll out to about ¼-inch thickness. Bake for 12 to 15 minutes until light golden brown and puffy. Remove from oven and carefully use the back of a spoon to press down the center of the pastry a little bit. Be sure to leave a border around the edge. Spread ricotta in an even layer over the center of the puff pastry. Top with cooked leeks and garlic. Add roasted parsnips. Bake for an additional 7 to 10 minutes. Sprinkle with bacon, then slice and serve.


LEMON RISOTTO WITH ROASTED PARSNIP

Preheat oven to 350ºF. Line a 12-cup muffin pan with 9 to 10 liners. Add raspberries, sugar, and water for the topping

Stir to combine and add 1 tablespoon of the mixture to each liner. Press down to firmly pack in the crust. Bake for 5 minutes and set aside to cool. In a stand mixer fitted with a paddle attachment, beat together cream cheese and sugar on medium-high speed until smooth and creamy, about 1 minute. Beat in sour cream, vanilla extract, and lemon juice until combined. Beat in egg, raspberries, and lemon zest until just combined. Divide batter evenly between liners. Bake until edges are set, about 18 to 20 minutes. The centers should only slightly jiggle. Remove from oven to cool at room temp for about 30 minutes. Place in refrigerator and chill for 1 hour. Add raspberry topping to each cheesecake and chill for another 1 hour before serving.
