A lo largo de la historia, los lazos interculturales se han creado cuando las comidas se preparan y comparten. Es importante devolver la importancia que la cultura identitaria tiene, de la comunidad en la que nacimos y vivimos. Nuestra herencia es transmitida y está íntimamente ligada a los platillos de origen. La disponibilidad de los alimentos, el clima y las técnicas de cocina, que han evolucionado a lo largo de muchas generaciones, han unido a individuos y grupos desde el principio de los tiempos. No existe una relación más estrecha que la que existe entre los habitantes de un territorio y sus la familias. La comida desempeña un papel importante en la definición de roles familiares, reglas y tradiciones. Nos ayuda a descubrir actitudes, prácticas y rituales que rodean a los alimentos, arroja luz sobre nuestras creencias más básicas sobre los demás y nosotros mismos, es el color, la textura y el sabor de nuestra identidad como país. Estamos acostumbrados a ver vallas en las carreteras o fotografías en los restaurantes en grandes blow ups, de hamburguesas y pizzas. ¿Por qué no vemos grandes blow-ups de Gallo Pinto, Tajadas, Vigorones, Chanchos con Yuca, Nacatamales, Dulces de la Purísima o Quesillos? Se debe sobre todo, a que lo que consideramos “mejores y comercializables”, son los sabores internacionales, nuestros sabores se guardan en casa o en los poblados rurales, y no reciben ningún encomio, ni atención sustantiva, porque consideramos nuestros sabores como “íntimos”. Por eso, yo elegí el tema, para darle énfasis a esa riqueza culinaria de Nicaragua y mostrarla como lo que es, arte puro, sabores y colores únicos.

Throughout most of history, bonds and shared cultures have been created when meals are prepared and shared. We need to bring the importance of community back into food. Our heritage is often passed down and intimately bound up in the food we eat. Food availability, climate and cooking techniques, evolved over many generations have united individuals and groups of people into a distinct culture. There is no closer relationship than the one with the family and food plays a large part in defining family roles, rules, and traditions. It helps us to discover attitudes, practices, and rituals surrounding food, it sheds light on our most basic beliefs about others and ourselves. It is the color, the texture and the taste of our identities as a country. We are habituated to seeing road fences or big pictures in restaurants of big blow-ups from hamburgers and pizzas. Why do not we see huge blow-ups of Gallo Pinto, Tajadas, Vigorones, Chanchos with Yuca, Nacatamales, Dulces de la PurĂsima o Quesillos? It is mainly because what we consider "best and marketable" are international flavors; our flavors are kept at home or in rural villages, and receive no commendation or substantive attention, because we consider our flavors as "intimate ". That is why I chose the theme, to emphasize Nicaragua's culinary richness and show it as what it is, Art, unique flavors and colors.

Breve resumen curricular Laura Báez de Lacayo , con más de 40 exposiciones colectivas y una personal, fue seleccionada para el libro “The Best of 2016” del International Emerging Artists Award, de Art Dubai, precisamente por su metáfora del mar y la mente. Laura ha ganado varios reconocimientos, entre los que podemos contar ser seleccionada por la curadora Despina Tunberg por ARTAVITA para exhibir en noviembre de este año en Spectrum Red Dot en Miami. También aparece en el libro ENTRE SIGLOS de arte contemporáneo Centroamericano de Fundación Rozas Botrán, así como en ICA, International Contemporary Art, editores de artistas seleccionados en su libro anual 2016 en New York, USA. Y entre otros, en su país ganó en 2004 el Tercer Premio del Certamen Nacional de Pintura “Antonio Sarria”, del Banco Central de Nicaragua y en 2002 fue finalista del Premio Nacional de Pintura “Toribio Jerez” del Banco Central de Nicaragua y actualmente, fue seleccionada por el Ministerio de cultura de su país, para exhibir en “Horizontes do Arte na America Latina e o Caribe”, Centro Cultural do Banco do Brasil, Brasilia, DF. Biosketch Laura Baez Lacayo, with more than 40 group exhibitions and and a solo show, was selected for the book "The Best of 2016" International Emerging Arts Award, Art Dubai, precisely because of its metaphor of the sea and the mind. Laura has won several awards, among the, we can mention the invitation by curator Despina Tunberg, of ARTAVITA, to participate in November 2016 in Spectrum Red Dot Miami. She also appears in the book BETWEEN CENTURIES, Central American contemporary art, as well as ICA, International Contemporary Art, publishers selected her for their annual book 2016 in New York, USA. And among others, in their country she was awarded in 2004 with the Third National Painting Prize, the Competition "Antonio Sarria", by the Central Bank of Nicaragua and in 2002 she was recognized as a finalist for the National Painting Prize "Toribio Jerez" by Central Bank of Nicaragua and currently, she was selected by the Ministry of Culture of Nicaragua, to exhibit at “Horizontes do Arte na America Latina e o Caribe�, Centro Cultural do Banco do Brasil, Brasilia, DF.
