In late May I helped organize a first family reunion for my wife’s side of the family. It was quite an effort, but seeing some of the family light up when seeing others that they had not seen for many years was very much worth the effort.

Along those lines we have an article by Vicki Bezems about preserving family memories.

This month we profile Jules Kovacs, one of the more interesting people that I have had the privilege of interviewing. His approach to health is intense with results that validate his techniques. Here is an average man who can inspire all of us to pursue a more active and healthy lifestyle.

For many of us, me included, our pets are precious members of our family. There have been any number of studies on how pets contribute to our health in a very positive way. Our article on preventing pet loss gives important information on how to protect them.

We have the third installment of the Fiber series. We bring you more information to help you with attaining a healthier lifestyle.

1. Musikfest will be rocking Bethlehem from the 6th-15th. Go for a show, something good to eat, or just to walk around and people watch.

2. Take a hike. Find a trail near you at www.trails. com. . Play backyard games.

Fill water balloons and have a water balloon toss in your backyard, draw a hopscotch court, and have a hula-hoop competition.

4. Go play. Check out the beautiful new playground designed for kids with special needs at Cedar Beach in Allentown.

Preserving Family Memories

While going through a closet recently, I found some precious memorabilia: a t-shirt that my now 13-year old son decorated in pre-school with his hand-print and his own drawing of a car; and a tote bag with inserts for photographs, given to us by my daughter’s godmother, complete with pictures of our visit with her to the Philadelphia Zoo a few years ago. The warm reminiscences associated with these items struck a chord with me -- about the value of preserving our memories and passing them along to younger generation.

As we age, we realize that recording our memories allows future generations to share in their family heritage, which otherwise may well be lost.

My husband and I are over 50 Lost in a WW II air raid and raising a teenager and a pre-teen. At this stage of our lives, we’re acutely aware of the differences between generations and how easily memories can be forgotten. Our son and daughter can’t appreciate the effort now, but someday they will cherish our video recordings of my 91-year old mother telling stories of her youth, and my grandmother’s 100th birthday party.

They will look at photos of family headstones in the village graveyard we visited in the Netherlands, where their father’s great-aunt and cousins were killed in an air raid during World War II. We were made aware of this chapter in our family’s story when we reconnected with my late fatherin-law’s elderly sister in Holland on Skype, a free internet teleconferencing service; we now have regular visits with her from three thousand miles away. Because of this contact with her, we feel that we have the opportunity to create memories with a family member who would otherwise be out of reach.

As a bonus, she has sent us boxes of photographs and the results of her own genealogical research.

There are ideas and materials aplenty to help you organize your memories. You can do a Google search for “preserving family memories” and find a numerous suggestions, projects and books to get you started recording your family’s history, or visit the genealogy or family memories section of your local bookstore or library.

Here are a few ideas for illustrating your family’s stories: Memory books, such as AARP’s For My Daughter and For My Son, help you capture the experience of raising a child from birth all the way into young adulthood, by posing questions such as:

It’s Not a Secret After All

I recently met a most remarkable person here in Allentown. To meet him you would not at first think that he is unusual in any way. A handsome, tall man with a long, lanky, youthful stride, Jules Kovacs seems like a regular Joe who exercises constantly and keeps a trim body behind his alert eyes.

Nothing remarkable until you hear that Jules is 84 years old!

Think 84 and you usually think of someone who is a tad slower physically and a bit frail. Not Mr. Kovacs! We should all want to be like Jules when we are 54, 64, or even 74.

To understand Jules we need to go way back to his youth. As a young lad he was somewhat frail and not at all an athlete. When he turned 30 he decided he wanted to get healthy and build up his body so he started to work out with weights. He went at it with a vengeance.

Center I met Jules to watch his workout and chat some more.

He promptly got on several machines and went through his paces. Jules has more than 20 years on me and I am sure that he would run rings around me at the gym. Fortunately, I did not stay to find out.

Jules worked all of his life in the Valley. He worked for Chrysler First for many years, retiring in 1988. A widower, Jules was married for 37 years to his wife, Mary. He has two boys and several grandchildren.

I would be willing to bet that Jules has a good many years ahead of him. It would not at all be wrong to attribute his longevity and good health to his determination to stay physically fit and mentally active. Not a bad example for all of us to follow. The secret to a healthy life is not a secret after all.

For years he worked out 6-7 days a week, and maintained this regimen until 1990. Now he does only(!) 3 workouts per week, exercising different parts of his body with each workout. He eats a healthy diet and has enjoyed excellent health for all these years.

While his physical regimen is a major reason for his healthy lifestyle it is not the only reason. Jules keeps active in many other ways. He works with ceramics and has a nice artistic touch as evidenced by the pieces in his home. He also does crossword puzzles and gains benefits from frequent walks. In other words he keeps an active lifestyle. My own mother will turn 91 this month and her secret is the same: eat well, walk everywhere and maintain a relatively stress free lifestyle.

Is this all Jules does? No. In addition to everything else he is a seasoned traveler having toured Europe, Russia and the Far East. Anything else? Yes, he avidly does crossword puzzles and does oil paintings - more doing and less sitting. We are not finished yet: he has been the organist at his church for 63 years! I got fatigued just typing everything that he does.

Improve the Environment and Improve Your Health - It’s Easier Than You Think by Barry Lovelace, FitQuest Fitness How often do we hear about global warming?

There are all kinds of theories on this topic.

Regardless of whether or not you believe that there is a problem, hopefully we can agree that it simply makes sense to live less wastefully and conserve resources.

Now, how often do we hear about diet and exercise and their links to our health?

Again it is a constant message as people like me, frankly, try to persuade others to take control of their health in a positive way.

What is interesting is that these two paramount issues can be worked on together. For instance, take these two facts: The average American does not get enough physical activity in their daily life; and the use of cars contributes to the emission of carbon dioxide, not to mention the need for oil. Do you see where this is going? Yes, I am going to suggest walking or biking instead of using your car.

Now, I know this is not practical in many situations; but if you think about it, I’ll bet there are times when you drive, say to the local drug store or the corner market, when you could walk or ride a bike. I know that in my neighborhood I see people driving to the high school football games when they only live a few blocks from the field.

This is a perfect example of an opportunity to get in a little extra activity while letting the car sit. I see people giving their kids a ride to school when they live close enough to walk and get some exercise, while spending some nice time together as well.

Another correlation that I would like to address between the problem of the environment and this nation’s health is the consumption of red meat. We all know that when we eat red meat we are serving ourselves a helping of high cholesterol and artery clogging saturated fat.

But did you also know that the meat industry is a huge polluter, and that it uses far more energy than crops like fruits and vegetables... not to mention the incredible amount of land that is wasted.

Thousands and thousands of acres of grain are grown and used to feed cattle, which we then eat.

Think about that. We grow good and healthy grains, which would nourish us healthfully, but instead we feed it to cows and then we harm our health when we consume them. Does this make any sense to anyone?

It is so easy to go through our life and not really think about how small things that we do or take for granted can have an affect on the big picture. We are lucky to live in a time where we have access to the knowledge of how to care for our bodies and our environment. How sad if we don’t use it!

Judith Lieberman Turns 90

On the morning of her birthday, he arose early, made her a bowl of Lucky Charms, then took her to Six Flags. He put her Judith Lieberman has been on every ride in the theme park. I asked Judith for some of her cherished memories. She spoke of her long marriage to Marc and her four children.

Judith remembered with great pride the time she was stationed in Maine during the D-Day invasion. She tended to the first American evacuees from that battle. A few other special memories were of her son being accepted to the Naval Academy and of her daughter, Martha, receiving her college degree in Social Work.

At the birthday celebration there was a moving tribute from Martha to her mother with the reading of Judith’s favorite poem - “A Woman of Valor” from Proverbs 31.

Two lines from that poem speak to Judith’s character: “She opens her hand to the needy, and extends her hand to the poor”

Jim left for work on Friday. It was payday, so instead of going home, he stayed out the entire weekend partying, playing golf and spending his entire paycheck. When he finally appeared home Sunday night, the old geezer was confronted by his angry wife and was scolded for 2 hours.

Finally his wife stopped the nagging and said, “How would you like it if you didn’t see me for two or three days?” He replied, “That would be fine with me.” Monday went by and he didn’t see his wife. Tuesday and Wednesday came and went with the same results. But on Thursday, the swelling went down just enough where he could see her a little out of the corner of his left eye.

9. Just say no. Accept that you simply can’t do everything!

Resist the urge to take on more activities, projects or financial obligations than you can handle. If someone asks you to do something that will stretch you too thin, explain honestly why you can’t — and don’t feel guilty.

10. Stay positive. Do your best to avoid negativity. Instead of dwelling on what you can’t do, pat yourself on the back for how much you are doing, and focus on the rewards of caring for someone you love.

If you’re like me, you’re either helping care for an older adult at home or you know someone who is. In fact, according to national research, more than 43 million adults provide care for loved ones over 50, with about three-fourths of caregivers also working outside of the home.It’s no secret: Helping to care for a sick loved one exacts a steep emotional toll. Pet Loss: 5 Ways to Prevent it from Happening to You

These days there are too many ways to lose our pets.

We have to worry about dog snatchers, hit-and-run drivers, another neighborhood dog, animal control, or the accidental swallowing of household items, like a needle. And while no one likes to think that we could ever lose our pets, there are a handful of things we can do to help prevent some of these from happening.

Take care of your pets By taking proper care of your pet you lessen the risk that anyone will have cause to take your pet from you. This means properly feeding, watering and housing your pets.

Do not have 10 dogs living in one dog house. Make sure their living area is clean and free of feces and filth. If you have too many pets to care for, cannot afford them, or don’t want them, then do them and yourself a favor and give them up for adoption. Do not be the next person we watch on Animal Planet being raided by the animal control officer.

Train your pet Training your pet to come when called on a reliable basis is a requirement for keeping your pets out of trouble. This does not replace a leash law. If you are going to walk your dog on busy streets, then use a leash. Do not think that you dog could not ever disobey you. The desire to chase a rabbit might easily outweigh the desire to come to you. This training will also help to prevent any unwanted problems with other people. In this day of “suing happiness”, why risk fines or worse because your dog jumped on someone?

Supervise your pets No matter how well trained your pets are, when they are unsupervised they can and will get into things. They are curious natural explorers. They will find twigs, sticks and anything that resembles one to chew on.

If you leave your favorite tools outside, these become a risk to your pet. Remember to look at things around your yard from a pet’s perspective. They are low to the ground,

sniff for bugs, chew on rocks and dig in the dirt. When they do this, they are looking for stuff to keep themselves occupied. Make sure what they find is not a hazard to them.

Pet proof your house This goes hand in hand with supervising your pets, but is quite commonly missed or done incorrectly. We always assume that since the dog never jumps on the counter when we are home that they will never do it when we are not. Well, you’re wrong.

If you have a dog that is large enough to reach stuff, then move that stuff, or risk losing it to the unsupervised curious dog. Pet proofing means eliminating all potential threats to your pet. Take away anything they can chew or swallow, remove things they can knock over or break, and cover anything that has sharp edges. Take the same precautions with your pets as you would a newborn baby.

Get pet insurance coverage Many better insurance companies, and online companies like VPI Pet Insurance, offer direct pet insurance to you. These insurance carriers will cover your pet for a host of issues ranging from having your pet spayed or neutered to cancer treatments or surgeries. There is no way to know ahead of time if your pet will develop some medical issue that could cost you thousands of dollars.

Because your pets can be lost in so many manners, it is absolutely crucial that you take what steps you can to protect your pets. You are not trying to protect just from harm, but from other people, other animals and the ever rising costs of pet care. You want the best for your pet because they are a member of the family. Do the best you can for your loved ones, including your pets, and they should be with you for many years to come.

Calming, Comforting, Stimulating the Memory Impaired Through The Senses

Many older adults experience difficulties with some of the senses. When this happens to a person with Alzheimer’s disease or a related disorder, it can contribute to some of the confusion that he/she is already experiencing. Although the person may not always be able to make sense of complicated sensory stimuli, he/she derives enjoyment from pleasant sensations and is turned off by unpleasant ones. Stimulating the senses of the person with dementia has many positive benefits. There are no boundaries to sensory stimulation and can include a variety of activities. It is important to draw on emotions and memories by getting in touch with all 5 senses.

Smell The sense of smell is one of the most meaningful in terms of connecting us to our past and bringing back memories.

No matter what your age, ability or disability, smells have a powerful effect. They can be pleasant, strong, relaxing or comforting and can elicit many emotions. Think of how your feel when you smell a warm batch of cookies or bread baking in the oven and the memories it brings to mind.

Consider baking or using other distinct smells such as coffee, rose water, mint, lavender, perfume or aftershave, cinnamon, orange/grapefruit, vanilla, herbs, ginger, herbal tea, baby powder. Also consider: • Appetite stimulating scents - grapefruit, clove, baked bread, lemongrass, vanilla • Calming scents - lavender, frankincense, lemon balm • Anti-depressant - thyme, bergamot, sage, cinnamon, orange, lemon, ylang ylang • Pain relieving - rosemary, chamomile, balsam fir, bergamot.

Sight One of the best ways to redirect someone with dementia is to ask them to look at pictures with you. No matter what your age, it is pleasing to view something you consider beautiful or memorable. Looking at pictures of places that they’ve visited or lived or a picture of a person or event triggers a memory that stimulates conversation and happiness.

Bright light is known to be effective in treating seasonal affective disorder – depression that occurs when the days get shorter during winter. Many studies suggest that bright light may also work to ease sleep disturbances, restlessness and behavioral disorders among people with dementia. Dress a person with dementia in bright or soft colors but avoid complex patterns.

Touch Meaningful touch can be an extremely important communication tool with people with dementia. Whether it is a hug, a handshake or simply holding hands, touching elicits an emotional response that is unparalleled. Even basic touching such as a touch on the shoulder should be incorporated into any interaction.

Combine the sense of smell with the sense of touch by giving the person with dementia a hand massage with lavender oil before bedtime.

Give them play-dough or regular dough to knead and play with – this not only is a soothing activity but it can also help in strengthening the person’s hand.

Another Spring When I Was A Kid

I remember well my mothers’ words, ‘it’s time for spring house cleaning” and that meant everybody in our house had some sort of job to do. The wash lines were put up and rugs and throw rugs all went out on the lines.

One of my chores was to beat the rugs with a carpet beater. I didn’t mind too much as I really took my frustrations out on those rugs and, boy, the dust really flew. After beating them they hung for hours to get a good airing. My mother wore a bonnet on her head to keep her head from getting all the dust in her hair. Almost all the ladies wore them in those days when hanging wash on the lines or when gardening. I don’t see them anymore except at flea markets or craft fairs.

All pictures or wall hangings came off the walls and were dusted and put out of the way. Then the walls and ceilings were all brushed off and all the windows were opened to let the dust escape. All the floors and woodwork were wet washed, windows and doors were wiped and furniture polish put on the frames of doors and windows. All the screens for windows were brushed and readied for summer. Windows were all washed and looked so clean. The window shades were damp wiped and rehung. All furniture was brushed well and the wooden chairs wiped with furniture polish, hanging lights in all rooms were cleaned, as well as floor lamps. All doilies and furniture coverings were washed and hung out for airing, nothing was missed. That was a complete day of work for all of us. It was such a good feeling to look around the rooms and see everything glisten and smell the fresh air and see the signs of spring through clean windows.

We sat together to eat and express our feelings of the refreshened rooms, it’s something I shall never forget. We lived in a three story house and the bedrooms had the windows cleaned, the heavy winter comforters were washed and lightweight covers put on the beds. Pennsylvania Dutch people were strict about cleanliness, as I remember my mom checking the kids’ necks and ears after a bath to be sure we didn’t miss any parts of our bodies.

Once in awhile, she made some wipes in places we missed. Spring also meant the change of our clothing, getting rid of the long johns and the lighter union suits, our underwear again became fashionable.

Mother took all the summer clothing out of the closets and hung on the lines and brushed and aired them.

When I was a kid, I took all these things for granted, but as I grew older I think about a lot of these things and realize all the work my mother did as there were seven in our family. She cooked and baked and saw to it that we were all fed and clothed properly. She also did the washing and mending, and usually sewed clothing for we kids on a pedal sewing machine. It makes me feel like all our forbearers worked from morning till night.

Dad also had a busy day, as he walked a couple miles to work and came home and made sure the coal furnace in the cellar was stoked and ashes shook, a hard and dusty job. Our kitchen also had a combination coal and gas stove with a water jacket that made hot water for washing dishes and other needs. Dad also took care of that. He also helped my mother with many chores too numerous to mention.

As I look back and think of all the nice things our parents did for us, we could never thank them enough for showing us how to live by being good examples. Before bedtime, our parents gathered us together and the Bible story book was read to us, and we asked many questions. We then went on our knees for prayer time and we all joined in, and those times of prayer are etched in my heart. When Evelyn and I married and had children we followed my parents’ example and read that Bible story book and prayed together. I treasure those precious times, never to be forgotten. Evelyn taught Sunday School for 25 years at our church. How wonderful having parents who showed us how to live, and we passed it along to our children.

Don’t Worry, Be Happy

The Bobby McFerrin song “Don’t Worry, Be Happy” reached #1 on the Billboard Hot 100 chart in 1988. I’m sure it also merited a special place on the Sappy Song and Sentiment chart. I’ll probably be labeled as the kind of person who paints horns and mustaches on smiley faces, but I think we’ve all outgrown the shallow sentimentality of feel-good phrases and bumper-sticker bywords. Generations are looking for answers with substance.

Bobby’s song invites us to stop worrying while listing a litany of things to worry about. Like those rapid-fire lists of side effects for medications in the TV commercials, the cure seems scarier than the disease. Only the song offers no good cure or reason for its prescription of optimism.

As we get older, the number of things to worry about multiplies like rabbits, only not as cute and harmless. Warm fuzzies make us feel good for a while but soon disappear into the dark holes of reality. Aging brings troubles—real troubles. We need comfort—real comfort. Times change but people don’t. Almost 3,000 years ago, King Solomon said, “Remember your Creator in the days of your youth, before the days of trouble come and the years approach when you will say, ‘I find no pleasure in them’” (Ecclesiastes 12:1). He listed the physical ailments that attend old age, reducing our ability to enjoy life as we once did. He concludes the whole matter: “Fear God and keep his commandments, for this is the whole duty of man” (v. 13). In our declining years, God declines to just say, “Don’t worry, be happy;” he tells us to continue to trust him.

When our earning power and our faith in government programs decrease, and the number of people we can depend on decreases, the preciousness of God’s promises increases.

When teaching the importance of prayer, Jesus commanded, “Do not worry about your life, what you will eat or drink; or about your body, what you will wear” (Matthew 6:25). That sounds suspiciously familiar, like “Don’t worry, be happy.”

However, Jesus doesn’t leave us there. He continues: “But seek first his kingdom and his righteousness, and all these things will be given to you as well. Therefore do not worry about tomorrow, for tomorrow will worry about itself. Each day has enough trouble of its own” (v. 33). That sounds suspiciously familiar, like Solomon’s words above. The bible doesn’t just give simple slogans; it offers solid solutions. The remedy for worry is to trust God to supply all your needs.

The Apostle Paul reinforced this truth in Philippians 4:19: “And my God shall supply all your need according to His riches in glory by Christ Jesus.” Paul knew what it was

to be hot, cold, hungry, full, sick, well, popular, hated, etc.

(2 Corinthians 11). He knew God’s supply first hand and was confident that the Lord could meet every need. The key, however, is to fear God, keep his commandments, and seek him and his righteousness.

Knowing that a loving, all-powerful, all-knowing, all-wise, all-present heavenly father is in charge frees us from every fear. Does this mean we go through life jauntily tiptoeing through the tulips, laughing at calamity until our dentures fall out? Only if we want to be branded as lunatics. The bible encourages normal expressions of emotion and concern; it just forbids morbid worry. If we don’t think God can and will handle our needs, do we believe worrying will accomplish anything greater than God can or will do? Hear the word of the Lord: “Who of you by worrying can add a single hour to his life?” (Matthew 6:27).

Read again one of the most liberating verses I’ve ever read: Philippians 4:19 (above). If we don’t have it, we don’t need it.

If we need it, we have it. Sounds simple, but it’s oh so deep when backed up by the promises of God.

Fiber is Good Medicine Part 3

This is the third installment in our series on fiber. We’re featuring high fiber foods in an effort to promote a healthier lifestyle. Foods with high fiber content provide a wide range of health benefits; they can help you lose weight, lower your cholesterol and blood pressure, and prevent stroke and cancer.

This month, our featured fiber food is beans, also known as legumes. According to the Mayo Clinic, legumes are a “class of vegetables that includes beans, peas and lentils [and are] among the most versatile and nutritious foods available. Legumes are typically low in fat, contain no cholesterol, and are high in folate, potassium, iron and magnesium. They also contain beneficial fats and soluble and insoluble fiber. A good source of protein, legumes can be a healthy substitute for meat, which has more fat and cholesterol.” See http://www.mayoclinic.com/health/legumes/NU00260.

Seale, M.D., Teresa Sherard, M.D., and Diana Fleming, Ph.D., LDN; If you avoid beans because of the effects on your gastrointestinal tract, try this no-gas soaking method: Fill a large pot with 10 or more cups of water. Add 1 pound of beans. Boil for 2 to 3 minutes. Then cover and set aside overnight. The next day 75 to 90 percent of the indigestible sugars that cause gas will have dissolved into the soaking water.

Red Beans and Rice Experiment with spices in this dish to create your own favorite. The combination of beans and rice makes a perfect protein.

1 lb dried light or dark red kidney beans 1 clove garlic, minced 2 tsp Cajun or Tex-Mex seasoning (optional)

10 cups water 2 tsp onion powder

2 15-oz. cans no-salt added tomatoes 1 ½ cups brown rice

Soak beans according to the no-gas method shown above. Pour off water; cover beans with 10 cups fresh water; add garlic, onion powder, and seasoning and bring to a boil. Reduce to simmer and cook 1 ½ hours. Add tomatoes and simmer ½ hour longer. Cook rice according to directions on package, and serve beans over rice, with cornbread and tossed green salad.

Easton’s National Canal Museum

If you’re looking to take a journey into local history, look no further than the Lehigh Valley’s own National Canal Museum in Easton, Pennsylvania. It is the only museum in the United States dedicated to telling the story of

Easton’s National Canal Museum offers the opportunity to experience the way of life of “canallers”, those who lived and worked along the canals in the late 19th and early 20th centuries, with four galleries of interactive exhibits for adults and children alike. From the museum, you can also visit a locktender’s house, where the life and work of a locktender’s family is illustrated in room exhibits and comes to life through costumed period actors.

The Delaware River canal is basically a 25-foot wide and seven-foot deep ditch, which was dug by hand beginning in 1825. From 1832 to 1931, the Delaware canal was used to transport anthracite coal from the mines of Mauch Chunk, PA to Bristol, PA. Teams of strong bodied mules walked the towpath, pulling boats loaded with up to 100 tons of cargo. Mule drivers, who were frequently the children of boat captains, walked with the teams. It was their job to make sure the mules kept to the path and kept moving.

The canal runs beside a 60-mile long towpath trail, (now part of the National Rails to Trails Network), providing a recreational playground for hikers, cyclists, joggers, horseback riders, and other outdoor enthusiasts. The museum directs you to Hugh Moore Park, where you can visit locks, other canal structures and 19th century industrial ruins, as well as the park’s centerpiece, the Josiah White II canal boat. An actual mule-drawn canal boat ride on the Josiah White II is to me the most intriguing experience the museum has to offer.

Canal boat rides are available in a variety of packages, which range from basic sightseeing to dinner cruises, to fall foliage cruises from May through September. The season concludes with an Oktoberfest cruise.
