"In London, it's all about giving restaurants a make-under." Lennart Wallander of Food&Friends talks about trends. MAGAZINE
What is Food&Friends? We are Sweden's only niche communication bureau for food, drink and mealtimes. Since our beginnings in 1998, we have not worked with anything outside this area. Today we are 22 people working with retail, food service and the service industry. I myself am the project manager, trendspotter and CEO. An increasing number of restaurants in Sweden are creating concepts. Story-telling, interior decor and clothing. What do you think about this trend? Food, just like all other popular culture, will eventually eat itself. What was acceptable to serve up in years gone by is impossible to consider today - just think of 'Flying Jacob', the casserole with chicken, cream, chilli sauce, bananas, roasted peanuts and bacon. We're always on the hunt for the latest thing, and despise the boredom in our lives by trying
being talked about. Having ready answers for questions like: What would you say to your friends about the place? What chefs do you have that you can boast about? What's the decor style? What's the best thing to Instagram? In a few years, what type of place will we want to be going to? The leading trend is a more informal atmosphere at restaurants, as well as fast food being made into a premium option. When both of those 'ends' aim to meet in the middle, the result is that both fine dining and the simplest fast food will suffer. There will always be a place for top-class restaurants, but how many? When we increase our eating out, we don't want to pay over the odds for a meal – it's not a one-off huge party! Instead it's more everyday, to get a good meal at a reasonable price. Without needing to get dressed up to the
something new. The reason to try a new restaurant must always be to do something that other people are not. This has lead to many new combinations and global kitchens being researched and popularised. But right now, I think we're feeling like we've had enough. In London, all the talk is about restaurants giving themselves a 'make-under', where some concepts have been so overworked that they've become unattractive. Now we're after the true roots of a concept. How important is it to think conceptually when running a restaurant? It's not for nothing that interior design companies specifically for restaurants have sprung up, and PR agencies are seen as an essential part of a restaurant opening. To an increasingly larger extent, it's become about reaching out and
nines for it. Internationally, what's the most exciting trend right now? Up to now, the no waste trend hasn't been so evident in Sweden - that is, the idea of working to reduce food waste in your establishment. What meals can be made from food that would otherwise have been thrown in the bin? That's one of the big questions, and something that takes many forms. There are several restaurants that have this concept as their USP, such as Bror in Copenhagen. But there's only a few in Sweden. This trend can also be seen as part of the general movement to care for the planet. How do we make sure there's enough food to feed everyone? And how do we ensure the planet has enough resources for us?

�We want to create new landmarks.� Samuel Laulajainen, Food & Beverage Concept Manager, Scandic Hotels Scandic has recently launched several exciting hotel initiatives. How does it work? We are segmenting our hotels right now, where several hotels are to be launched in a new concept of a signature hotel. The two latest examples are Grand Central and Haymarket in Stockholm. The aim is for the signature hotels to make a big impression in the city and become landmarks. Meeting places where people want to socialise, work and relax - not simply spaces to sleep in. And that's where I think we've really succeeded. Take the Grand Central in the city centre - the area

was a bit rough before, but nowadays there's so much more life and movement. Haymarket opened recently and we hope for the same development there. We want to have a strong position in the cities we operate in. How has the hotel industry changed? In Sweden, a hotel has long been a traditional product for accommodation. Guests sleep there, eat breakfast and then they go and do other things elsewhere. But in recent years, the industry has become better at getting people to experience different things at the hotels themselves. Scandic will soon open Vasateatern under its own management, next to Grand Central. But it could just as easily be something like there being more life and soul in the hotel lobby. Thanks to laptops and mobiles, you can just as easily sit and work in our hotels. This also gives you a nicer atmosphere than a bland office environment. Plus, I think we have become more skilled with the food, drink and the overall feeling in general. After all, the most popular bars in Stockholm are run by us these days. Malmen, Grand Central, Haymarket, Continental and Anglais. How have the guests responded to your concept? Fantastically well. We've had a great response. For example, if I go to the Anglais at Stureplan on a Tuesday morning, people are sitting, using our premises, drinking coffee and having meetings - which in turn drives sales of accommodation. And if you are one of our hotel guests, it doesn't matter whether you're from down the road or from New York, you still want to feel part of the city. You want to meet the locals and experience the culture. You already get a sense of it all in the lobby when checking in to any of our hotels. It's always more than just an international hotel lobby, which is bland, sad and could be anywhere. Ideas and solutions. How do you find them? We often create the basic concept ourselves. The 'hardware' - the hotel and the area within the city - that's already in place. But what type of city is it? What type of area is it within the city? What is our target audience and what are they like? What local history is there that we can showcase? Using these facts, and ideas that pop up, we can create a document. Food, drink, music, style, feeling. We also have a sort of 'master template' that we use when contacting our suppliers. Like Segers, for example. Sometimes we can have four different 'outlets', as we call them, in one and the same
hotel. And each outlet needs its own identity in the crockery, uniforms and printed materials. Together with our suppliers, we create different solutions that suit us and are clear for our guests. What's the Swedish hotel industry like in terms of uniforms and clothing? I worked for many years in luxury hotels in London. They often have an entirely separate department for uniforms; their own laundry area, for example. With these conditions, plus tradition, it's simpler for staff to work and 'look good'. At the same time, you have to remember that it's an entirely different economy in London hotels, and it's been hard for Sweden to maintain similar standards. But I really do think we're getting there. Obviously it must be easy to manage, a smooth delivery and simple to complete for the hotels. And no matter what you've decided your concept is going to be, you should stick to it. Internally we have to make it simple for staff to use the right things. For me, that's important. What requirements will be placed on hotels in future? For us we need to keep up with trends. Most sensitive is of course the food and drink. We have to be at the cutting edge and really deliver, day after day. Good products and good service. One challenge is the guests' own knowledge. Every year they are more well-informed, and almost everyone is a connoisseur in food, drink and decor. They're not just eating pasta out the pan when they're at home. So we've got to be better than all these home experts, all the time. Our aim is to continue to take up our places in these cities and be a 21 natural place to meet up and stay at.
