On behalf of everyone involved I would like to welcome you to the 14th Ascot Beer Festival held in association with the Berkshire South East branch of the Campaign for Real Ale (CAMRA). It has been a tough couple of years for the brewing and hospitality industry with the restrictions imposed during the Covid-19 pandemic. Our breweries and public houses need your support more than ever and I would urge you to go and seek out and enjoy the wonderful treats that our local breweries and cider producers have to offer, whether at home or in the comfort of your local pub. In support of our local brewers, we have sourced our range on offer for you today mainly from LocAle breweries, that is, beers brewed within 25 miles of this festival. The festival would not take place without a huge team effort from our CAMR A volunteers who have lovingly selected and ordered over one hundred and sixty beers, perries and ciders, arranged equipment deliveries and staffed the bars today to help you find your favourite tipple.

We were treated at our last festival to a superb double chocolate stout, Morrisman, brewed by Andy Parker (with guest CAMRA member Tim Lloyd) at Elusive Brewing in Finchampstead and I am pleased to say that it was resoundingly voted as our Beer of the Festival in 2019. This year Morrisman returns, with bells on, as an imperial reincarnation with the chocolate notched up and an ABV that will have you dancing and waiving your handkerchief along the concourse. Pride of place at the bar alongside Elusive Brewing will be Tutts Clump Royal Berkshire Cider, our current festival cider champion from Bradfield. Please don’t forget to vote for your favourite Beer and Cider of the Festival using the voting form in this programme. This is a prestigious award for any brewer to win and the more people who take part, the better.
REAL ALE AND PUBS Draught real ale tastes best at your local pub (or club). With pubs continuing to close at an alarming rate I would urge you to make a habit of visiting them to ensure their long-term survival. Your support will help make them a viable business going forward. Congratulations to the Queens Head in Wokingham who are our current Pub of the Year. Carol Williams and team serve a great selection of real ales including Loddon’s Ferryman’s Gold and quite often a beer from Stardust Brewery served in excellent condition. As one of our former Mad Cow editors once (accidently) put in their advert, “Severing customers for centuries”. Just don’t nod your head when you leave! Lastly, I would like to thank you for supporting us in this 14th year of the festival and please enjoy the beers but drink in a responsible manner and stay safe.

BEER STYLES REAL ALE Real ale is a fresh, natural product brewed using traditional ingredients and left to mature in the cask from which it is served in the pub, through a process called secondary fermentation. It is this process which makes real ale unique amongst beers and develops the wonderful tastes and aromas which processed beers can never provide. It is served without the addition of extraneous carbon dioxide and is also known as cask-conditioned or naturally-conditioned beer. The fundamental distinction between real ale and other beer is that live yeast is present in the container from which it is served, although it settles at the bottom and is not poured into your glass. Real ale is a very diverse product and with more than 1,600 breweries across the UK there is a beer out there to suit everyone’s palate. Here is an explanation of the most common beer styles: (Further information can be found at camra.org.uk/learn-discover/the-basics/beer-styles) MILDS
Gold to dark brown in colour, these beers differ from Bitters and Pale Ales in that they should be lightly hopped and may have a corresponding light fruit character. SESSION BITTERS (UP TO 4.3% ABV)
These are ‘traditional’ bitters. Low to medium malt must be present with noticeable hops. Bitterness may range from light to strong. Hops are typically earthy, spicy and peppery but may also be floral or piney. PREMIUM BITTERS (4.4% TO 6.4% ABV)
These are ‘traditional’ stronger bitters. Medium to strong malt flavour with noticeable hops. Bitterness may range from medium to strong. BRITISH & NEW WORLD IPAS (5% ABV AND ABOVE)
Amber to pale brown. These beers should be heavily hopped with a good balance of malt and medium to high bitterness.
There is often honeyed/biscuit malt aroma and flavours with pepper, spicy, earthy, piney or floral resins from the hops. SESSION PALE, BLOND AND GOLDEN ALES (UP TO 4.3% ABV)
Straw to amber with a light malt character. Hop flavours will be present but hops may vary from traditional earthy or spicy English and German hops to citrusy New World hops. PREMIUM PALE, BLOND AND GOLDEN ALES (4.4% TO 6.4% ABV)
Dark gold to amber in colour. Malt will be present but must be light to medium in character and should not dominate. BROWN AND RED ALES, OLD ALES AND STRONG MILDS (4.1% TO 6.4% ABV)
Malt is to the fore and may impart nut-like flavours, although there may be some hop character and a light to moderate bitter or dry finish.

SESSION STOUTS AND PORTERS (UP TO 4.9% ABV)
Stouts should be black with flavours and aromas resulting from the roasted malts e.g. chocolate, caramel and coffee notes. There should be minimal hop and fruit notes. STRONG STOUTS AND PORTERS INCLUDING IMPERIAL STOUTS AND BALTIC PORTER (5% ABV AND ABOVE)
Full mouthfeel with only a little sweetness. There is a dry astringency that may come unmalted dark-roasted barley. BARLEY WINES AND STRONG ALES (6.5% ABV AND ABOVE)
SPECIALITY BEERS WHEAT, WILD/SOURS, SAISON, AGED, SMOKED, LAGER, FLAVOURED, FRUIT (UP TO 8.5% ABV)
Speciality beers are those where a base beer has been made with non-conventional ingredients or techniques. Where the effect of this ingredient or technique dominates the appearance, aroma or flavour it becomes a Speciality The staff on the CAMRA bars are all beer-loving members of CAMRA who have come along as volunteers to help make this festival a success. Gold to tawny to black in colour. May be dry to sweet depending on whether the sugars have been fermented out. Honey notes are not uncommon. Noticeable alcohol is present. Rich, complex and full bodied.
CIDER AND PERRY Real cider and perry is fermented from the whole juice of fresh pressed apples (for cider) or pears (for perry), without the use of concentrated or chaptalised juices and are neither carbonated nor pasteurised. Cider has undergone a massive revival in recent years although it is unfortunate that many of the most well-known ciders in the UK are cold, fizzy keg products which have been produced artificially rather than naturally. More people are now discovering for themselves how deliciously mellow, aromatic and intoxicating the flavours of naturally produced real cider or perry can be. To make real cider, the apples are washed and checked for rot or mould. The apples are then crushed in a machine called a scratter which chops them up into small pieces called pulp. The pulp is placed in layers on a press. If a traditional screw or hydraulic press is used, the pulp is wrapped in fine mesh cloth parcels called cheeses. The apple juice is then extracted and natural yeasts in the juice start the fermentation. Several months later you have real cider. In order to maintain consistency and suit different palates, the producer will often blend ciders made from different apple varieties. Perry is made in exactly the same way. 6
