W

eight management and calorie balance are two things that everyone desires to follow these days. But What is a calorie balance? Basically it refers to the number of calories you take in compared to the number of calories you burn. Calorie balance is done for weight management. Now days a lot of people are suffering from diseases. It is due to the unhealthy eating and intake of more than sufficient amount of calories that leads to these diseases. But, majority of people are getting fitness freaks managing their weight by burning right amount of calories. Everyone needs to balance their calories and eat the right food to stay healthy. But hey, do you know how many calories it takes to gain 1 pound? You’re not the only one who doesn’t know how that potato wedges you had last night would affect your weight. So basically 3500 calories combine to give us 1 pound

of fat. It’s not hard to balance the calories. Balancing the right amount of calories involves every person to get their BMR’s (Body Mass Rate) checked every month. BMR of Every person is different. If you’re a male, you’re taller then you will have a higher BMR as compared to female who is short, lighter and will have a lower BMR. Eating the right amount of food with the right amount of calories is a simple way of balancing the calories. Exercising regularly helps in burning excessive amount of calories. People believe that eating healthy all day long will

keep them fit. But that’s not the truth. Eating healthy all day may keep us healthy but it won’t help in the right calorific balance. Taking small meals every 3 hours helps feel less hungry and keeps the calories balanced. Exercising 1-2 hours a day isn’t difficult. It not only involves hitting the gym and doing weights. Yoga and aerobics are evolving day by day in our country. People are getting into new ways of exercises including Zumba, step aerobics etc. A meal is a like a lifestyle, different for different people. The most basic and easy calorific balance includes a heavy breakfast, followed by

right amount of lunch with a very light taste of the dinner. It is believed that it is the time of the day that affects the body weight. The fact is that it isn’t the time of the day that affects how the body uses calories; it’s the overall number of calories taken consumed by the body and the calories burnt over the course of 24 hours that affects the body weight. The diet itself only does not contribute to overweight, it’s the genetic factors also that lead people to overweight. A scientific says, “To balance good amount of calories we must have healthy food regularly, including no junk food but can include one cheat day in a week”. The bottom line is that every person’s body is different from another and may have different calorific needs. R

ishim Sachdeva, The Executive Head Chef of Uzuri Deck and Dining started working for this dream at the age of 16 when he had gone to London to do his B.Sc (Hons.) course. Rishim felt that he got more knowledge about managing a restaurant than the basics of kitchen cooking. He then started working at Hesten Blumenthal’s Fat Duck Restaurant as sous chef. He worked for four restaurants in London, out of which the first two experiences were mostly French cooking and he had a passion to get into modern European cooking.

Q) What was the force that drives you to become a chef and get into this culinary carrier? A) Mr. Sachdeva is a man with a vision. It was always in his mind to become a chef and manage a restaurant. He started to cook when he was 11 years old. He was always fond of cooking and reading. It all started with a diwali party at his place. There was a diwali party at his place and he was the one who had to serve the guests, He not only served food to them but also cooked and washed the dishes, this was when he realized his passion for cooking and decided to become a chef and have his own restaurant. I would like to quote his words

when he was asked this question “it was always planned”.

Q) Tell us a little about education background in this field? A) At the age of 16 he went to London to do his B.Sc (Hons.) course from Oxford Brooks. He felt that the course taught him more about “Managing a restaurant” than the “kitchen cooking basics”. So he joined the Hesten Blumenthal’s Fat Duck Restaurant as sous chef. It was a part of his curriculum only , he focused more on ON THE JOB training methods .Having worked at 4 restaurants in London, of which the first two experiences were mostly old school-French cooking, he had a zeal to get into modern European cooking. Working in restaurants brought out the creativity in him, they helped the bring out his creative side in

cooking.

Q) What is the process behind becoming the master chef and the master chef of the restaurant ? How was your journey? How long did it take you to become a restaurant executive? A) He started his career in this industry at the age of 16. His education was 4 year long and it included various on the job training methods. He said “there is no specific time required to be a chef, it depends on an individual”. He worked for 4 different restaurants in London .At the Fat Duck, he was promoted to head chef from sous chef but after some time he was demoted to a lower position and when he left the restaurant he was second in position. He has seen the good and the bad experiences in this

field and his career had been full of ups and downs. In 2013 he founded Uzuri with 2 more people and manages the kitchen in the restaurant. He is one the restaurants executive.

Q) Chef you admire the most? A) Without any double thoughts he quickly said “Robin Gill”. Robin Gill is an Irish guy who owns a restaurant in London named “The Dairy”.

Q) What do you think about health and Food these days? A) The first words which came out of his mouth on this question were “all food is healthy”. According to him a person should eat whatever he wants to eat whenever he wants to eat. He said “I’d even have a heavy meal at midnight”. If a person is not following a diet he can eat anything. It depends on a person what he likes to eat. A

slim person should try n have a lot of starch and fat. If you are following a diet you should be particular about what you are eating otherwise you can eat anything. He said a person shouldn’t be conscious about what he is eating.

Q) If you had to impress somebody and you are given a condition that you will be only cooking the food and not serving it .What would it be?

Q) What is your favourite meal? A) The chef said ”The one cooked by my mum” with a soft smile. He rarely gets to eat homemade food. We got to see the nostalgic side of Chef when we asked this question. It was one beautiful evening with a young, passionate chef and we would love to see more of Uzuri and Rishim in the future! Wish them all the best!

A) He said I’d cook “what i will like to eat”. He gave us idea of the ingredients he would be using – pickles, acidic element, starch, herbs and hint of spices. He would prefer cooking a balanced diet rather than focusing on a particular type of diet.

It specialises in cakes, cupcakes and brownies with sugar crafted cakes being the most popular among customers. What started off as a onetime thing for a friend has turned into full time work for her. Cuteats Kitchen now supplies cakes all over Delhi. When we asked her what encouraged you to start this venture? She said “I had always been a very avid cook and baker. The warm vanilla makes me nostalgic as it always reminds me of my childhood days when I used to bake cakes with my mother using her age-old recipes. My journey as a baker has continued slowly as I kept experimenting with new recipes and flavours and perfecting my icing skills. Soon, I started fixing up a cake for every occasion and supplying some to friends and relatives as well. My baking

efforts were reinforced by my husband’s encouragement, who always pushed me to take my hobby to the next level. Thus, Cuteats Kitchen was born. We started with small cakes which gradually gave way to big ones. The sugar crafted theme based cakes are the most interesting to make, as I get to use all my creative abilities to make one of them.” we also asked her if she took some training for the same so she told us “ i graduated from Delhi University in the field of Home Science which build my foundation as a cook. After about 20 years of marriage my husband encouraged me to take some professional classes to enhance my skill. After a few months of learning, I started experimenting with my cakes. My first taste of the sweet world of baking was when I was 12 and I baked my first batch of cookies with my aunt. It was during my high school years that I felt this surge of passion and all I wanted to do was bake. Right before college started, with the encouragement from my family and friends, in July 2013 we set up our little home bakery called Sugar Loft.

Hung Curd Crunchies

Ingredients: 1. 2 tbsps Hung Curd 2. 2 spring onions (finely chopped) 3. 2 tbsps capsicum (finely chopped) 4. 1 tbsp cucumber (finely chopped) 5. 1/2 tsp jalepeno peppers chopped 6. 1/4 tsp black pepper

Preparation: (For Hung Curd): 1. Take any piece of cloth and put some curd in it. 2. Hang it somewhere over the sink for about 30 minutes. 3. After 30 minutes, place the curd in some bowl and keep it aside.

(For Dip):

7. Coriander or mint leaves

1. Mix all the vegetables and spices and the hung curd in a bowl.

8. Red or Yellow capsicum (for garnishing)

2. Put one spoon of the mixture on one biscuit.

9. Salt

3. Then garnish the dip on the biscuit with mint or coriander leaves. 4. Serve immediately.
