HASTINGS CULTURAL OLYMPIAD BOAT, COLLECTIVE SPIRIT

March 25th 2011 seems a long time ago. That was the date that artists Gregg Whelan and Gary Winters – the artistic duo known as ‘Lone Twin’ – visited Hastings to gather donations of wood with a tale to tell for The Boat Project*. Residents from Hastings & St Leonards responded in style and flocked to the Stade Hall to hand over their precious offerings. They contributed more donations than any one town in the South East. Those items, which include a mast donated by Hastings fishermen and a piece of Hendrix’s guitar, have now been incorporated into the hull of this beautiful – seaworthy – work of art, made specifically for the London 2012 Festival. The boat set off from Chichester on its maiden voyage in May, and three of the six crew members nominated by members of the public are from 1066 Country. Collective Spirit arrives

in Hastings on 6 July. Most other towns only catch a glimpse as it sails along the coast, but in Hastings is fortunate to have the boat on display on the Stade Open Space during the weekend of 7 – 8 July 2012. The Boat will be met at sea en route to Hastings from Eastbourne by a flotilla of Hastings’ and St Leonards’ vessels led by Hastings Fishing Fleet. It will moor off the Stade beach where it will be greeted by the Hastings Shanty Singers, followed by a traditional blessing of the sea by Father Robert Featherstone of the Old Town Parish. This event is produced with the assistance of the Hastings Fishermen's Protection Society. The boat will then be brought out of the water and on to the Stade Open Space for the duration of the weekend. An exciting programme of

events is planned in honour of Collective Spirit. These include a singathon lasting two days with community and school choirs; a sound and image installation telling the story of The Boat Project and many of the local wood donations; new works presented by Project Art Works in collaboration with Jerwood Gallery, Lone Twin and Hastings Borough Council. You can see the Boat on shore at Hastings from 10am – 5pm Saturday 7 July and Sunday 8 July on the Stade Open Space, Rock-a-Nore Road, The Stade. The Boat Project is a living archive of people’s stories and lives, a 30ft seafaring vessel made from donated wooden items. The Boat Project by Lone Twin is part of Artists Taking the Lead, a series of 12 public art commissions across the UK to celebrate the London 2012 Cultural Olympiad. The Boat Project is the winning commission for the South East region and is funded by Arts Council England.

BONHAMS TICK UP HUGE PRICES FOR CLOCK

A fine robust clock that is still ticking despite a bomb strike on the house, in which it once stood, was sold in Bonhams Fine Clock sale on June 20th for £43,250. This trooper of a timekeeper has a story to tell. The clock survived the London Blitz in WWII despite an exploding bomb striking the top of the house. Shrapnel hit the clocks carrying case, stored in the attic, but thankfully this magnificent clock remained unscathed in a downstairs room.

This rare mid 19th century French 'Bubble' top grande sonnerie giant carriage clock, built in gilt bronze with a glass dome, stands 11 inches tall. The clock-making Berrolla family who lived in Paris Rue de la Tour between 1850 and 1860 made and retailed this exquisite timepiece. They showed their carriage clocks in the Paris Exposition of 1839 and exhibited carriage clocks at the London Exhibition in 1851 and 1857. Another clock with an astonishing story is a very fine 18th century walnut longcase clock of

exceptional provenance built by George Graham of London which stands an imposing 7ft 2in.This huge clock which had not moved since 1733 sold for £175, 250. This clock has been in the same British house since new and was offered for sale by a family descendant of the original purchaser. As such, it offered a unique opportunity to acquire a clock that was last sold in 1733.The clock was in generally excellent condition said James Stratton, Head of Clocks at Bonhams. The sale made a total of £861,375 for 138 lots in all.

A DICKENS OF A TIME 2012 IS THE BICENTENARY OF CHARLES DICKENS

This summer really does have an exceptional amount going for it: the success of The Queen’s Diamond Jubilee; the London Olympic Games; and, of course, the ongoing bicentenary celebrations of the birth of one of our greatest writers – Charles Dickens. This anniversary is considered to be of such significance that the Royal Mail has issued a set of commemorative stamps, featuring ten of Dickens’ most memorable characters. The actual date of Dickens’ birth, 7th February, was marked by numerous ceremonies, including a service at Westminster Abbey, celebrations in the city of his birth, Portsmouth, and throughout Kent, with which he had a lifelong association. International events included a 24-hour ‘readathon’ which linked readings from his works in countries from Albania to Zimbabwe. Meanwhile back in London, all members of the Cabinet were presented with copies of Dickens’ works, the Prime Minister’s allotted titles being, incidentally, Hard Times and Great Expectations... Clearly, celebrations of the bicentenary of such a major and influential figure could not be compressed into a single day, and events are being held, nationally and internationally, throughout the year. Dickens 2012 was set up by the Charles Dickens Museum and Film London, in association with the Dickens Fellowship, to co-ordinate a wide programme of events including theatre, outdoor performing arts, exhibitions, literary festivals, and film, TV and radio adaptations. Dickens’ love of Kent began with his very happy childhood in the county, to which he came aged five, and his books contain many and varied references to the people and places of Kent. He enjoyed long walks with his father over the marshland and fields surrounding the River Medway near Rochester, a landscape 32

which featured strongly when he came to write Great Expectations, although the marshes are described in the book as being around the Thames. Dickens World at Chatham, a permanent multimedia family attraction, is hosting numerous special events and shows throughout the year. (tel. 01634 890421, or go to www.dickensworld.co.uk). Also in Chatham, performances of his works will be held at the Historic Dockyard, where Dickens’ father worked and would often take his son. The dockyard made a huge impression on the young Dickens, and appears as a backdrop in many of his novels. Rochester, Medway and Broadstairs, which Dickens visited regularly, hold annual Dickens festivals, plus special events to mark the bicentenary. Dickens stands as a colossus among the great English writers: in the rankings of the popular classics, only the Bible and Shakespeare are listed ahead of Dickens. He is also one of the most widely-translated authors, his works remaining immensely popular worldwide. So what gives Dickens’ books such a wide and enduring appeal, two centuries after their author’s birth? Each of the major novels contains a truly memorable plot, and is populated by a whole range of unforgettable characters, many of whom have entered the national consciousness. The miserly Scrooge from A Christmas Carol is a prime example of a Dickensian name which has come to bear an immediately recognisable connotation. Then, of course, the word Dickensian itself has entered the lexicon, summing up various, usually less savoury, aspects of the Victorian era. In our own, multi-media age, Dickens’ characters and the novels they inhabit transfer with enormous success to visual interpretation on stage, television, and in film, where the often larger-than-life characters and atmospheric Victorian settings immediately engage both our

attention and our imagination, drawing us into the story and the lives of his characters, with pleasurable ease. But the enduring popularity of his work, both nationally and internationally, must mean that there is more to Dickens than the ability of a master story-teller, however great. Looking at his work as a whole, it becomes clear that Dickens’ main theme runs through all his novels: the struggle of the individual against the system. Perhaps the example of this which springs immediately to mind is Oliver Twist, the orphan failed by the inhumanity and corruption of the system, here represented by the workhouse. Similarly, in Bleak House the system against which the individual must struggle is the endless process of law; in Great Expectations the enemy is a rigidly-enforced class system; in Our Mutual Friend it is money and in Hard Times it is the power of industry – which we would, perhaps, call Big Business. These themes are of course not restricted to Victorian England, but are both universal and timeless. They remain as relevant to our global economy in the twenty-first century as they were to the Victorians’ Industrial Revolution in the nineteenth. So Dickens is a writer whose work reaches far beyond his own time, country and culture. He remains a huge influence on contemporary art, literature, film and – most importantly, perhaps – conscience. As the Dean of Westminster said at the thanksgiving service: “This bicentenary should help renew our commitment to improving the lot of the disadvantaged of our own day”.

So that now, as then, wherever there is injustice or abuse of the innocent or the weak, Dickens’ criticisms of the system still demand our attention, and hopefully spur us to action, resounding with a relevance as fresh as when they first demanded attention, and action, in Victorian England. And that, surely, is a legacy well worth celebrating – in anyone’s book. Written by Alison Brissenden

KNOCKOUT DAY OUT We spent the day at Knockhatch Adventure Park near Hailsham recently. The girls enjoyed a superb day out with a great combination of learning and enjoyment. There are farm animals,birds of prey and many other animals from around the world living at Knockhatch. For dad the go karts let me show my prowess on the track and my guerilla

fighting skills in the fantastic laser war zone. No one was impressed on the day. I narrowly beat my 10 year old on the track and was killed twice in the warzone. The boating trip was a great unwind in the middle of the afternoon. The falconry display was the high point of the

day while the bungee jumping came a close second. This summer expect to see an influx of many baby animals to Knockhatch. Oh, and prices inside for refreshments are good, so no need for picnics. FARMER DAVY TAKES DELIVERY OF HIS NEW TRACTOR Few things make Farmer Davy happier than the chance to try out a brand new tractor. The hard-working farmer, who cares for the many animals at the Rare Breeds Centre in Woodchurch, near Ashford, is already putting the New Holland TD5020 through its paces at the popular visitor attraction. He said: “It is beautiful to drive! The main tractor driver, Pete Penfold and I, are very pleased with it. If you see me driving it around the Rare Breeds Centre, then wave hello!” The centre has another tractor, used for giving visitors a tour of the extensive site, but this new one will be reserved for the really hard work. Davy added: “This is the tractor we will use for mucking out, carrying bales of hay and other duties. This is a real workhorse.” A registered charity, the Rare Breeds Centre is owned and run by Canterbury Oast Trust, which provides care and opportunities for adults with learning disabilities. Funding for the new machine came from the trade-in of a previous tractor and from some generous donations. The Civil Service Insurance Society, for example, donated £5,000 towards the buying of the tractor, through the CSIS Charity Fund, which uses the annual trading surplus of the insurance society to support charitable causes. Farmer Davy added: “The new tractor is definitely 36

going to make work on the farm easier for Pete and myself. It should take a long time before we manage to wear it out!” Gill Gibb, chief executive of Canterbury Oast Trust said: “If there is one thing which widens Farmer Davy’s smile it is brand new, heavy duty agricultural machinery – and who can blame him? The tractor will be a real boon to the farm.”

As Coco Ocean’s wow factor quickly unravelled, I grabbed an opportunity to sample one of the three cascading pools which led me down to the beach to a privatecabana for some welcome relaxation and shade before dinner. Within the hotel there’s a choice of restaurants providing formal and al fresco diningincluding its Coco Beach restaurant with possibly the best beach views any restaurant could offer. International chefs produce dishes from Morocco and Thailand as well as European cuisine. For many guests a key attraction is the fantastic Spa facility. Additional features include a Thalasso pool, plunge pool, Hammam, Finnish sauna, gym and relaxation area with a full range of

treatments, along with a boutique and juice bar. Weddings, honeymoons and special occasions can all be catered for, whether a simple celebration or a more lavish affair. While the Coco Ocean Resort & Spa is ideal for those seeking indulgence and rest, a trip to The Gambia would not be complete without experiencing the simplicity and warmth of the people and the wealth of activity on offer. I soon discovered that outside of the hotel lies an enriching and welcoming culture plus an incredible myriad of birdlife and wildlife to discover. A range of tours and excursions exploring the villages and bush will provide visitors with a great introduction to Gambian life - while witnessing baboons and monkeys or the many species of exotic birds and butterflies in their natural habitat is an education in itself and will captivate nature lovers. The extreme luxury of my hotel contrasted starkly with the day to day life of ordinary Gambians. Many of the locals live in what we in Britain would describe as extreme poverty, although relative to the rest of Africa Gambia is doing better than most.

The access to fresh water and the sea for fishing provides much needed lifelines for Gambian families. Corruption is rife in local life and government and to my eyes it is the children who suffer most. We visited a much needed local school (Gambians have to pay for their childrens education) to visit the new kitchen facilities, paid for by donations. On the day we were told by the headmaster that the funds had not yet been used. Much shuffling and turning of heads as questions were asked. What was the shell of the kitchen building was stuffed with artworks crafted by the children. I purchased a few items and asked that the money be given direct to the artist.

On a visit to a rural community the locals survived on growing peanuts and various root crops in shack houses. No electricity or running water inside and ornaments of plastic and glass scavenged from the rubbish tips of the nearest town. An old poster of now dead Ghadaffi hung limply on a wall and an ancient 1960s TV sat in the corner beside an old car battery for life. Despite dirty clothes and bare feet the children were a joy to meet! Happy

smiling faces and animated with questions and tales to tell, the children seemed happy in their surroundings, as are the adults of Gambia. Everyone is influenced by the UK and the Premiership where a number of Gambian home boys play. These players are revered as gods in their home country, where the locals genuinely think that in England everyone lives like Posh and Becks.

A trip to Makasutu Cultural Forest, just a 45 minute drive away from Coco Ocean comes highly recommended as a must visit. This 1,000 acre conservation area is home to the impressive and award winning Mandina Lodges, situated in the heart of the Gambian bush on a tributary of the River Gambia. Here guests can stay in stilted or floating lodges on the water, or jungle lodges in the bush and, make use of thedug out canoes and guides provided which enable opportunity to explore the waters and forest where wildlife and birdlife are plentiful. Cruising over to Sitanunku Lodge aboard a catamaran was also on my list.This, a newly built collection of lodges on the North Bank of the mighty River Gambia,

offers guests a peaceful and idyllic riverside location with kayaking, fishing and birdwatching, among some of the activities on offer. On the return journey down river, an added attraction was the welcoming reception from dolphins which chaperoned us home. As I sipped my sundowner back at the hotel, my thoughts turned to the many visitors whom I was told return to The Gambia year after year……perhaps I could be one of them!

WEALDEN IRON RESEARCH GROUP WELCOMES THE SOUTH-EAST HOME EDUCATORS

Wealden Iron Research Group (WIRG) welcomed visitors from the South-East Home Educators (SEHE) at an experimental iron smelt in the Ashdown Forest. A group of parents and six children from the SEHE recently joined the Wealden Iron Research Group for one of the group’s periodic attempts to re-create ancient iron working methods of the Wealden area. Iron smelting was a common industry in ancient times and the end product, iron, was hugely profitable. The smelting process, which the WIRG are keen to understand further, is very complicated and involves many stages. Including mining and roasting the ore before it can be charged (heated) in the furnace where temperatures reach over 1100 degrees Celsius. 40

WORKING WEALDEN

The fully working replica furnace, which the WIRG group has constructed from clay, sand and straw using ancient techniques as understood from historical local records, was shown to the SEHE group. The method of smelting was briefly outlined before the children were allowed to get hands on and have a go at using the hand bellows to pump oxygen into the furnace to keep the furnace functioning at its optimum level. Once Dr. Tim Smith, a metallurgist who was leading the smelt declared the charcoal and iron ore had burnt down sufficiently, the front of the furnace was removed and the molten embers pulled out and carefully sifted through looking for any iron yielded by the smelt. Anything produced from the furnace still needs to be hammered into ‘billets’ while still hot before it is a saleable product.

Sonny 15, a visitor from SEHE who has an interest in history and wants to be an archaeologist in the future said: “My favourite part of the day was pumping the bellows to keep the furnace working. I found the experiment interesting as I like to find out how things were done and how people lived in the past." Lily 7, was “amazed” when the furnace was opened up and she saw how hot it was inside. Genevieve 9, found the day enjoyable: “I had more fun than I was expecting to, the best part of the day was using the mirror to look inside the furnace and realising how hot it was. ASPARAGUS AND CRAB TART RECIPE This is a fine thing to set up on a summer table next to a chilled bottle of white, personally I see this as more a lunchtime thing if possible to be enjoyed alfresco

around. Scrumple up some baking paper, this will help you fit it over the pastry, pour in some baking beans so the pastry is well weighted down.

Information

Put the case on a baking tray and cook in the oven for approximately half an hour until the visible overhang appears to be turning a rich golden colour.

Cooking time: 80 minutes Preparation time: 15-20 minutes Serves: 6 to 8 You will need 25cm loose bottom tart case Ingredients 1 packet short crust pastry 1 egg, beaten for brushing the case 2 bundles of British asparagus 50g butter 1 small onion very finely chopped 1 ½ tsp tomato puree 1 generous tsp Dijon mustard 300g soft fresh brown crab meat 300ml single cream 2 medium eggs A heavy grind of black pepper & salt to taste

Remove from the oven, take out the paper & beans and put the tart back in for a further 5-6 minutes, in order to crisp up the bottom. Remove from the oven and whilst still hot paint the entire of the case with a beaten egg.

for a minute or so more. Add the brown crab meat, followed by the cream, salt & pepper, stir it all together Take off the heat and beating the entire time break in the 2 remaining eggs, beat in well. Leave to one side. Scatter the asparagus into the pastry case, pour the crab filling over the top, gently return the tart to the oven & cook for approx 25-30 minutes. When the tart is nearly done, give the tray a little shake, the filling should wobble faintly in the middle. It is important to take the tart out at this time as it will go on cooking, you want the filling soft rather than overset. Either eat warm or at room temperature.

Taking a small paring knife shave around the rim of the case detaching the overhang, this makes good bird food.

Method

Cut the asparagus spears in half. Bring some salted water to the boil, drop in the asparagus and when the water starts boiling again cook for no more than 1 ½ minutes, drain, cool in cold water, drain again and thoroughly dry in a tea towel.

Pre-heat the oven to 190°c Take a tart case & roll out the short crust pastry nice and thin. Tuck neatly into the case whilst leaving the sides hanging down all the way

Melt the butter in a saucepan and sauté the onions slowly, this should take 10 minutes or so until they are totally soft and pale gold. Stir in the tomato puree and mustard and cook gently

Every year during the event, people munch their way through roughly 28,000vkg of juicy English strawberries. The indulgent vanilla cream complements the fresh tartness of the strawberries, which sit on a blanket of fluffy pancakes. This recipe is a winner - game, set and match! Information (makes 4 servings) Ingredients 250g Allinson Nature Friendly Plain White Flour 2 eggs 1 pint whole milk ½ tsp Nielsen Massey Vanilla Extract 50g butter 300ml whipping cream Strawberries, raspberries, blueberries or seasonal fruit of your choice Silver Spoon icing sugar for dusting Method Sieve the flour into a bowl and whisk together 42

with the eggs Slowly whisk in the milk making sure you disperse any lumps Heat a little lard in a large frying pan and tip to cover the whole surface, when sizzling, add a ladle of pancake mix, move the pan so the mix covers the whole surface Cook for a minute on one side and then flip or turn over with a palette knife and brown on the other side Remove from the pan onto a plate and place a

square of greaseproof on top, repeat until all the mixture has been used Whip the cream and add Nielsen-Massey vanilla extract Chop strawberries, raspberries or blueberries into desired sizes Choose a pancake add a generous spoon of cream plus a generous hand full of fruit and fold in half. Dust with icing sugar and enjoy!

SMOKED HAM HOCK AND CORNICHONS TERRINE Terrine serves 10 people  3 liters of water  3 ham hocks  2 large carrots, chopped  2 sticks of celery, sliced  1 large onion, cut in half  10 black pepper corns  bouquet garni  100g Cornichons  gelatin  cling film  900g loaf tin Put the water into a large pan and add the ham hock(s), the carrots, celery and onion. From the pack of parsley take out a few sprigs and add to the water along with the peppercorns.

Bring to the boil and cook for about 10 minutes. Then reduce the heat so that the water is hardly moving and remove any scum that comes to the surface. Cook for at least three hours or until the meat is easily removed from the bone. Once cooked remove the hock(s) and allow to cool down. Sieve the liquid into a jug and put it to one side to cool down also. Once the meat has cooled down, remove as much fat as possible and pull the meat from the bone. With your hands pull the meat into shreds and place into a bowl. Take the Cornichons and rinse them, cut in half length ways and then chop into small pieces and add to the meat.

it in boiling water for about 15-20 seconds. Remove and chop finely (I used the stalks as well). Add it to the meat. Take 500ml of the ham stock that was set aside and place it in a pan. Heat gently but do not let it boil as the gelatin might not set very well. I am using leaf gelatin and whilst the stock is warming up, I placed 4 leaves of the gelatin (check your instructions on the pack as it may be different) into cold water. After 5 minutes remove it and squeeze out any water then add it to the stock, stirring until the gelatin has melted. Remove from heat and let the mixture cool down. Take a long piece of Clingfilm and pull it over the loaf tin, pushing it into the sides and then back again, leaving an edge on both sides. Repeat this again, so that you have four layers in the tin.

Apple Jelly: 250ml apple puree 5 gelatin leaves 1 fresh vanilla pod Soak the gelatin leaves for about 10 min in water, heat up the apple puree and mix together until smooth and add vanilla pod and set in non stick tray for about 2 hrs Mustard Mayonnaise; 2 tbs of Hellman’s mayonnaise 1tbs of English mustard recipe supplied by head chef of Bannatyne Spa Hotel 01424 851222

Place the ham mixture into the loaf tin, pushing down to get as much in as possible. If you haven’t got a lid for your loaf tin, take a piece of cardboard, the same size as your loaf tin and wrap tin foil over it. It will be used to sit directly on the meat. Once the ham stock is cooler, pour it into the loaf tin, being careful not to pour too fast, otherwise the liquid spills over the top. Once the liquid has covered the ham completely, pull the cling film over the top to over it. Put the lid on top and place in the fridge for 12 hours. You need to add some weight on to the lid so that it presses the contents down. A couple of tins of beans (or similar) should do the trick.

SEARED SCALLOPS WITH GINGER Ingredients 24 Loch Fyne King scallop meats 30ml Rapeseed oil 15gms piece Fresh root ginger finely chopped 6 Garlic cloves finely chopped 2 Red chillies, deseeded & chopped ½ tsp Ground cumin ½ tsp Ground coriander ½ tsp Ground turmeric 1 tsp Lime juice 2 tsp Chopped fresh coriander Malden sea salt Method 1. Heat the oil in a heavy frying pan to almost smoking point 2. Add in the Loch Fyne King Scallops, add in the ginger, garlic and chillies, and toss once 3. Sprinkle in the ground spices cumin, coriander & turmeric toss again 4. Add the lime juice and chopped fresh coriander 5. This should all be done in 2-3 minutes so the scallops are plump and juicy To serve - arrange 6 per person in a neat line and garnish with crisp salad and baguette. Romney Marsh is a patchwork quilt of agricultural land tacked onto the south-east corner of Kent. From its shingled beach desolation to its manicured pastures, it’s steeped in extraordinary legend. In winter it looks worn, with birch and elms lining the horizon like upturned witches’ broomsticks – a crow lonely landscape; but in summer it transforms to an achingly beautiful emerald green vista, punctuated by brilliant white sheep and tractors coughing along the horizons. It’s a tranquil and untouched part of the county that’s long been a place where artists and writers seek inspiration. Here, in an area of some 100 square miles, Romney Marsh can claim as its own four historical ruins, sixteen scheduled ancient monuments, ninety-seven recorded archaeological sites, eight areas of special scientific interest, one national and one local Nature Reserve, and fourteen ancient churches. Like the 13th Century St Augustine's church in Brookland, a handsome place of worship that’s been standing there, adding a little touch of nobility and grandeur to the landscape for more than seven hundred years.) And here it’s just an anonymous country church, treasured by a few aging parishioners. Directly beside St Augustine’s church is the Royal Oak Inn, 46

originally built to house the parish clerk in 1570. Now, sympathetically restored, it’s one of the few upmarket places to stay on Romney Marsh. Having won numerous accolades, this four-star Inn has not lost its sense of tradition as it exudes olde-worlde charm, but in a comfortable, inviting way. Accommodations on offer include five light and airy bedrooms - two of which are grandly proportioned doubles with en-suites. The rooms are dressed in crisp white linens, soft drapes and Italian wool rugs, complete with a tranquil, dreamlike view of the neighbouring pasturelands and grazing sheep. The Royal Oak is exactly what you’d want from a historic country Inn. Stripped-wood floors, ceiling beams hung with hops, real ales at the bar, a blazing inglenook fireplace, the restaurant buzzing with local diners whilst owner, David Rhys-Jones (whose brother-inlaw, Prince Edward occasionally dines there), unobtrusively attends to guests both behind the bar and in the restaurant. When you cast your eye over the enticing specials board, hung at the entrance, you’ll soon realise they take their food seriously, which is why it’s essential to

book. The printed menu offers six starters and six mains, whilst the specials board has an additional ever-changing selection of three starters and three main courses – all of them mouth-watering and showcasing only local suppliers. For lunch we started well with a creamy celeriac and garlic soup; breast of local wood pigeon seared to pink perfection; and succulent Rye Bay scallops with chilli, ginger and garlic. Mains consisted of a steak, ale and mushroom pie whose aromas drew much attention when delivered; grilled fillet of sea bass with mindblowing coriander salsa verde; and tender braised shoulder of venison with lardons, chestnuts and wild mushrooms. The grand finale off the desserts menu delivered Hokey Pokey - a riot of honeycomb and toffee laced ice cream; a velvety Pistachio crème brule; and homemade gingerbread with vanilla ice cream as smooth as cold silk. Gently pour the eggs over the onion and potato mixture, shaking the pan so the egg mixture

SUMMER TAGINE Serves 4 Prep Time: 20 Mins Cooking Time: 30 Mins You will need: 1 kg vine tomatoes, skinned, deseeded and chopped 250g green beans, blanched and cut into 2 cm pieces 175g podded broad beans, blanched and peeled to remove tough outer skin 1 med onion, finely chopped 4 tbsp olive oil 1 tsp cardamom seeds 1 tsp ground cinnamon 2 tbsp tomato puree 2 tsp runny honey* or light muscovado sugar To garnish 35g toasted walnuts, chopped 1 med lemon, cut into wedges Season to taste

You need to: 1. Saute the onion in 2 tbsp olive oil until soft before adding the tomatoes and spices. Cook gently until the tomatoes start to break up and then add the puree, the other 2 tbsp oil and a little water if the sauce seems too thick. Season well.

FACING UP TO THE PROBLEM HOW TO INFLUENCE POSITIVE DIETARY CHANGES

Nutrition scientists at the British Nutrition Foundation (BNF) believe that a key to tackling the nation s obesity epidemic could lie with Aristotle and the phrase the whole is greater than the sum of its parts . Their announcement is made as health professionals and academics are gathering in London to discuss and debate how to influence positive behaviour change in eating and lifestyle habits, at the BNF s 45th anniversary conference, being held at the Royal College of Physicians. A report by independent experts, commissioned by the government shows that there are more than one hundred internal and external factors that influence what, how much and how often we eat and exercise and, therefore, how able we are to manage our own weight and health profile. Research into behaviour change has shown how these internal and external factors can be influenced by interventions2, 3, 4, 5 and, following examination of current scientific research, the BNF s team believes that the extent to which we are able to successfully maintain a healthy weight is directly, or indirectly, affected by any number of these factors at one time. The BNF says that people who proactively focus effort on addressing several of these factors simultaneously will have more success in their efforts to lose weight and maintain a healthy weight. Bridget Benelam, senior nutrition scientist at the British 54

Nutrition Foundation explained: We are all very different and the way that we behave in relation to external and internal stimuli varies considerably. So, what works for some people may not for others. Studies have identified at least 108 different factors that influence our ability to maintain a healthy weight. So there are lots of different options to choose from in terms of making changes in our behaviour that could have a positive impact on our health. The BNF has grouped the different factors identified into seven broad categories: Social, Psychological, Eating and drinking, Physical activity, Environment, Physiology and Media. Benelam continued: Within each of these categories there are multiple influencers and we believe that by proactively selecting a range of these to focus attention on, people can make a series of small changes to their behaviour which, when combined, will have a larger overall effect. For example, we believe that social engagement can have a positive impact on weight management for some people, as can developing cooking skills, keeping a food or activity diary, spending more time outside, and using the same weekly on-line grocery shopping list. On the reverse side, we know that always using a car for transport, social

isolation, stress and self-criticism, and large portion sizes can have a negative impact on people s ability to manage their weight. If everyone were to choose one factor to do more of and one to do less of, from each of the seven influencing categories, we believe they would increase their chances of successful weight loss considerably, while also finding the route to a healthier and more enjoyable lifestyle. Based on this theory, The Small Changes: Big Gains chart has been produced by the BNF s team to help people identify small, positive changes to make in their own behaviour. While including an hour-long aerobic class in your exercise regime can help you burn off around 400 calories, the BNF s suggestions for smaller changes include getting up from the TV and doing some housework during the ad breaks, which could help burn up 40 calories per hour of TV viewing; eating fruit instead of biscuits as an afternoon snack to reduce calorie intake by around 50 kcals each day; measuring out small portions of crisps rather than eating straight from the pack, which could lead to you eating up to 130 calories less each time; and if you are an office worker, getting up to talk to a colleague or make a drink at least once each hour, which can use up around 120 calories each day. Often seen entertaining passers by in Northe Laine, this popular band mixed things up with their folk renditions of well known pop songs including Lady Gaga and Jessie J, whilst donning some very dapper attire. For those who wanted to carry on the party, guests moved to La Plateau where 58

Using mainly leather and irredescent jersey, the stagewear is a powerful and bold fashion statement perfect for performers or the fashionably fierce. Walterworks finished the show with his wearable art made from various recycled products such as cola cans, plastic knives and forks and even a whole bicycle! His designs are wearable sculptures taking disposable items from everyday life and reinventing them to have form and function.

Designer Celia Arias opened the show with a visual narrative that was acted out by live puppets, drowned in colour and draped in luxurious textiles.Taking clear inspiration from fables, old folk lore and religion, this was an enchanting way to start off the evening, leaving an eerie sense of mystery left in the air.

His clothing was about construction and sculpture, creating some breathtaking pieces. Joey described Brighton Fashion Week ‘as an amazing event’ and he can’t wait to be involved again in the future.

HERSTMONCEUX CHURCH WRITTEN & PHOTOGRAPHED BY

The village of Herstmonceux is a busy rural community on the A271 between Battle and Hailsham. The parish church, however, is two miles away down a country lane appropriately named Chapel Row leading to Church Road. To find All Saints Church you pass through the hamlet of Flowers Green, with its barely noticeable roadside sign, past the former pub The Welcome Stranger, known locally as The Nodding Donkey, but which has not been a hostelry for years although it still retains its sign and car park, past Herstmonceux Chapel, the Free Church which celebrated its 200th anniversary in 2011, until you can go no further. The church is nearer to Herstmonceux Castle than it is to the village. Although it has been in existence for much longer than the medieval castle.

All Saints Church stands on an area of raised ground, thought to be an early sacred site, and commands unrivalled views across the Pevensey levels to the South Downs. The Manor of Herste is mentioned in the Domesday Book which also notes ‘there is a church’. The original village, which probably surrounded the church, was moved northwards, possibly at the time of the Plague in the fourteenth century, or a century later when Sir Roger Fiennes, a veteran of the Battle of Agincourt and builder of the nearby castle, received permission to enclose 600 acres which would have included any houses and the church. Whilst there is little doubt that a place of worship has existed since Saxon times, the

oldest parts of the present church are the tower and the west wall, together with square-edged pillars in the north aisle, which date from the twelfth century. The nave, chancel and aisles were added over the next two hundred years, whilst the north, or Dacre, chapel was built in the fifteenth century. These additions reflect the importance of the church and its everincreasing links with the castle. This is especially evident in the east wall, and the north wall of the chapel, which are built of red Flemish brick in exactly the same manner as those used for the castle. It is one of the earliest uses of this building material to be found in a church in Sussex. Due to the tower with its shingled spire being offset from the nave, the Dacre chapel having been added, and two large


  

dormer windows above the north and south aisles added in Victorian times, the church presents unusually varying appearances. When viewed from the south, with prominent buttresses supporting the walls, and a porch, the former church entrance, you could be forgiven for thinking that you were looking at a country manor house rather then a rural parish church. Internally, the trussed medieval roof with tie beams over the nave, and the curved timber panelling of the chancel roof, provide a sense of height and space. The north porch, added in the eighteenth century but replaced in I874, is now the main entrance to the church. Between the chancel and the chapel is the church’s greatest treasure, the Dacre tomb. Erected in 1534, this magnificent tomb chest and canopy is built of Caen and Bonchurch stone and Purbeck marble. It is probably the finest of its type in Sussex. The north side shows more signs of wear than the chancel side which seems to indicate that it may have been exposed to the weather and formed part of the outside wall of the church until enclosed by the chapel in the fifteenth century. On the tomb lie the effigies of Thomas, 8th Lord Dacre (1470-1533), and his son Sir Thomas Fiennes, who pre-deceased his father in 1528. Both wear Milanese armour, their hands in an attitude of prayer. Their feet lie on animals representing the bull of the Dacres and the wolfhound of the Fiennes. It is thought that the figures may have been brought from nearby Battle Abbey, when dissolved by Henry VIII, and originally depicted the brothers Hooe until they were later altered to represent Dacre and Fiennes. Above the canopy on the chancel side is an ornately carved cornice of shields and helmets. The middle shield bears the arms and eagle crest of the Fiennes family, builders of Herstmonceux castle in 1440 and Lords of the Manor for nearly 300 years. The tomb was restored and repainted, with the advice of the College of Arms in 1970.

Although to modern eyes it might appear gaudy, it is believed to be accurate. A further memorial to a member of the Fiennes family, Sir William Fiennes, father of the builder of Herstmonceux Castle, lies on the floor of the chancel. This memorial brass, dated 18th January 1402, is in almost perfect condition. It shows the knight in full armour wearing a sword with his feet resting on a lion. The inscription is in medieval French. Another distinctive memorial in the chancel is the plaque commemorating Douglas McGarel Hogg, 1st Viscount Hailsham, who “Served God and The King Truly, as soldier, lawyer and statesman”. A former Lord Chancellor, he worshipped in the church for many years and died in 1950. On the west wall of the south aisle is a memorial to Lieutenant Colonel Claude William Henry Lowther, erected by his two sisters. He was Lord of the Manor of Herstmonceux in 1911, after the castle had become a ruin and been demolished, and was responsible for initiating its repair and restoration. In 1914, at the outbreak of war, he raised and equipped three battalions of the Royal Sussex Regiment whose soldiers became known as Lowther’s Lambs. The stained glass in the east window of the south aisle commemorates the five sons and two daughters of William and Anne Hooper Greenaway. On the south wall of the tower there is a brass plaque commemorating one of their sons, Major Henry Greenaway, 1840 -1879, “In affectionate remembrance of an honoured comrade and true friend” which includes the regimental badge of the 10th Bengal Lancers, Hodson’s Horse, inscribed with the battle honours “Abyssinia, Delhi and Lucknow”. A far cry from the rolling meadows and woods of Sussex. The font of light-coloured sandstone with a square bowl supported on a circular stem and four octagonal pillars dates from the late fourteenth century and is covered by a

distinctive wooden carved lid, probably of Victorian origin. Next to this, in the north aisle, stands a marble sculpture of a small child known as ‘the cherub’. It is thought to be the work of the celebrated sixteenth century French sculptor, Jean Goujon, and was presented to the church by Colonel Lowther. The exceptionally fine pipe organ, installed in 1878, was made by Henry Bevington. The organ in St Martin-in-theFields church in London is by the same distinguished firm. The All Saints organ was restored to its original condition in 1997. Dark oak box pews, some with doors and tall brass candle-holders at the aisle ends, add a Dickensian touch and remind of the church’s nineteenth century restoration. In the early hours of the morning of 3rd July 1944 the church suffered damage from an enemy bomb which demolished three windows and damaged the roof, spire and other windows. Much of the stained glass was smashed but the oldest fragments that remain are the fifteenth century yellow and white glass in the upper lights of the east window in the north chapel. Three months later, after urgent repairs, the church re-opened. The main entrance to the church from Church Road is directly opposite the gateway leading to Herstmonceux Castle. This highlights the historic bonds that have linked the buildings and the communities associated with them for nearly six hundred years. An ageing mounting block stands hard against the church wall outside the gate. It is not difficult to imagine, in centuries past, members of the congregation after Morning Service on Sundays walking through the churchyard and then mounting their horses for the long ride back to the village, or the shorter distance to the castle. In view of the location of All Saints Church, these sturdy and well-worn stone steps tell their own story.

SOLAR GREENHOUSE BUSINESS STARTS TO FLOURISH

A Sussex inventor who came up with a novel solution that allows gardening enthusiasts to grow plants and vegetables while generating electricity at the same time has now installed his design of greenhouses all across the UK. Uckfield-based New Horizons Solar will be exhibiting the company’s unique solar greenhouses at this year’s RHS Hampton Court Flower Show from 3rd to 8th July after successfully launching the product last year.

The unique arrangement of photovoltaic panels on the Solar PV Greenhouse, which is made of beautiful cedar wood, is capable of generating 70 per cent of the average household’s electricity needs while providing a perfect environment for growing plants. The greenhouse is also a great solution for people who can’t or don’t want to put solar panels on their roofs. Managing Director of New Horizons Solar Russell King, who developed the product, said: “We are exhibiting at RHS Hampton court because it is the perfect showcase for the Solar PV Greenhouse. The show is important because we believe this new product is ideal for gardeners and the type of eco-conscious people who will be at the event.” 90

Since launching the product last year, Russell has installed Solar PV greenhouses all across the UK including in conservation areas and national parks. The combination of an attractive greenhouse that also generates electricity is being well received by the clients and planning officers. “Our design of greenhouse is very attractive both inside and out and can be installed in any size garden,” Russell explained. The Solar PV greenhouse has been redesigned this year to increase its power yield and reduce costs. For instance, the model on display this year has increased its power by 36 per cent and the solar panel prices reduced by over 50 per cent. The soaring cost of electricity will make the greenhouse attractive even with reduced government subsidies. Well-heeled petrolheads will have a unique opportunity to take possession of one of the world’s rarest supercars on the planet this summer, when an ultra-exclusive Lamborghini Reventón supercar features in an exclusive H&H Classics sale. The new Mercedes-Benz SLS AMG GT boasts enhanced driving dynamics and even better race track performance. Mercedes-AMG has achieved the output of 591 hp through in-engine dethrottling measures in conjunction with an increase in peak pressure. The GT version of the front mid-engined amg 6.3-litre V8 responds with even greater agility to accelerator pedal movements and excites with even sportier performance characteristics. The reaction time experienced by the driver is made even more emotional as a result of more distinct gear changes. The automatic double-

declutching function when shifting down is also more pronounced due to an increase in engine torque in manual mode The shift procedure is even quicker than previously – and is accompanied by some passionate acoustic feedback for the driver. Overall, the optimisation of the dual clutch transmission complements the sporty nature perfectly. But it is not just the 6.3-litre v8 front midengine and the optimised dual clutch transmission which are responsible for increasing the driving dynamics. The newly developed ride control performance suspension also enhances the vehicle's sportiness. As standard, the vehicle comes with 265/35 r 19 tyres on the front and 295/30 r 20 tyres on the rear, fitted to weight-optimised AMG forged light-alloy wheels featuring a 10-spoke design and painted in matt black and with a high-sheen finish.
