METHOD 1: For the filling, thinly slice some thyme, oregano and dill and place in a bowl. Add dijon mustard, lemon juice, salt, pepper, olive oil, cashew cheese and some chopped roasted cashews. Stir until the ingredients combine and place it into a piping bag to chill in the fridge for 20 mixtures. 2: Once the mixture has chilled, gently open the zucchini flowers and fill with a tablespoon of filling. Don’t overfill them as they may open and fall to pieces during frying. Gently close the flowers and place them in the fridge. 3: To make the tempura batter, use aquafaba (chickpea juice) to replace egg whites. Pour the aquafaba into a bowl and whisk with a mixer for 10 minutes, until the liquid becomes light and fluffy to mimic the texture of egg whites. In a separate bowl, whisk together the rice flour, bi carb soda, White Wings Cornflour and sparkling water and aquafaba. 4: Coat the filled zucchini flowers in cornflour before dipping them in the tempura batter. Then, deep fry the zucchini flowers in heated Crisco Canola Oil and cook for two to three minutes. It is important to note that tempura batter doesn’t turn golden brown, it stays light in colour even when cooked. 5: Mix the Praise Lite Mayonnaise, which has no traces of egg, and Siracha hot sauce in a bowl until it’s fully incorporated. INGREDIENTS (serves 10-12)
METHOD
175 g 80 g ¾ cup 500 g 2/3 cup 3 tbsp 300 mL 1 tsp
1: Crush biscuits in a food processor to a fine crumb. Transfer to a medium sized bowl and mix in the butter. Press evenly into a 20cm springform cake tin and refrigerate for 30- 45 minutes until set firm.
Topping 1½ cups 1½ cups 50 g ½ tsp 100 g
Granita biscuits DAIRYMONT butter, melted Bega Crunchy Peanut Butter DAIRYMONT Cream Cheese, at room temperature Caster sugar Gelatin dissolved in ¼ cup boiling water Thickened cream, whipped to soft peaks Vanilla extract
2: Warm the peanut butter slightly in a microwave (or over a double boiler) until just softened.
3: Beat cream cheese and sugar with an electric mixer until smooth. Gradually Roasted, unsalted peanuts beat in gelatin mixture, vanilla extract Caster sugar and peanut butter until combined. Fold DAIRYMONT butter, chopped in thickened cream. Spoon over the Salt flakes chilled biscuit base, and using a spatula, Caramel popcorn smooth down the top evenly.
Caramel Sauce 75 g DAIRYMONT butter ¼ cup Brown sugar 2 tbsp Milk
4: Refrigerate for 4 ½ hours or overnight. 5: For the brittle; spread the peanuts out on one layer on a flat baking tray lined with baking paper and set aside. 6: Heat the sugar with ½ cup water in a medium saucepan over high heat. Stir with a metal spoon until sugar has dissolved then stop stirring and cook for 8-10 minutes until golden brown. Remove from heat and stir the butter through until well combined. 7: Pour hot caramel over the peanuts, sprinkle with sea salt and allow to cool on a cold surface for 15 minutes until set hard. Break into chards. 8: To make the caramel sauce; melt the butter over low heat in a pan. Add the brown sugar and mix until dissolved. Add the milk and stir until smooth. (If the caramel is too thick add a teaspoon more milk). Allow to cool. 9: To decorate, top the cheesecake with caramel chards, caramel popcorn and drizzle with caramel sauce.
