The cheese is named after Pecorino, specifying the sheep’s milk that it is made with, and Romano, referring to the Lazio countryside outside of ancient Rome where the cheese originated. CABRALES, BLUE (DOP)
Celebrated for its complex, savory tang, Cabrales (a protected cheese since 1981), can only be handmade in a few villages, including its namesake Cabrales. Made either purely with raw cow’s milk, or a blend of cow, goat and sheep’s milk, Cabrales obtains its rustic green-blue veining from the two-to-six month aging process that takes place in some of the world’s deepest natural caves, set in the Picos de Europa mountains of Italy. Cabrales is unique in that it is not injected with mold spores like other blue-veined cheeses, but rather cures from the outsidein. Each Cabrales wheel is placed on a wooden shelf within the cave and is periodically hand-turned and cleaned until the mold spores fully saturate the creamy, slightly granular body, and a natural, sticky, yellow-brown rind covers the cheese. Finally it is wrapped in Los Caserinos foil that prominently displays the Cabrales DOP logo. The cheese holds a bounty of flavors, ranging from tangy to salty with a slightly piquant bite and invigorating aroma.

In the summer of 1850, a small group of monks came to settle on the wild plateau of Scourmony, near Chimay, Belgium. A farm, brewery, and dairy soon sprang up around the monastery. In 1876, Brother Benoit went to France to learn how to make cheese with a semi-frim consistency: Chimay ‘Trappist’ Cheese Was Born! The cheeses of Chimay are exclusively produced using milk from the region and traditional methods. Chimay cheese is an authentic Trappist cheese. It is produced in the immediate vicinity of Scourmount Abbey, with the community of Trappist monks being responsible for quality control during the production process. Most of the profits are allocated to social assistance.

This cow’s milk cheese undergoes an initial 6-month period of aging in La Casearia’s cellers, after which the wheels are soaked in the Veneto’s local Raboso (IGT) wine for several weeks.
