Mature Farmhouse Cheddar
Dorset Drum is an authentic West Country Farmhouse Cheddar. It is one of only a few Cheddars to carry the world renowned Protected Designation of Origin (PDO) status for Farmhouse Cheddar.
Dorset Drum is made on a farm in Dorset, using milk from herds that graze on the lush, green pastures of the South West of England. Made to a unique recipe, using traditional handmade methods, Dorset Drum is a mature Cheddar with lots of flavor. An exceptional tasting Cheddar that is powerful and nutty, with an earthy aroma which results in a lingering tang. This truckle is formed then dipped into black wax. Smoked Red Fox

A unique twist on Belton’s famous Red Leicester, Red Fox. The complex blend of sweet and savory distinctive flavors of the Red Fox, matured for between 16-18 months and then naturally smoked for 10 hours over oak chips. The russet-colored cheese has a cunningly unexpected crunch, from the naturally occurring calcium lactate crystals which form as the cheese matures. Special Reserve English Farmhouse Cheddar

Stilton must be made in a cylindrical shape and allowed to form its own coat or crust. It has a beautiful unique appearance with magical blue veins radiating from the center and the texture is crumbly and creamy with a bold flavor. The milk for our Stilton comes only from local farmers ensuring low food miles. Made at one of only five dairies in the world able to make Stilton due to PDO status. rBST

Shropshire Blue
Despite its name, Shropshire Blue isn't made in Shropshire, nor has it ever been. It is made in the Stilton-producing regions of Nottinghamshire, Leicestershire and Derbyshire. Shropshire Blue is a wonderful cheese. The taste and appearance, especially the blue veining, is very similar to that of a Stilton but there is much more color to Shropshire Blue due to the addition of the natural plant extract, annatto. The texture is also somewhat firmer than a typical Stilton.

Huntsman® Double Gloucester with Blue Stilton®
Hand-finished Huntsman® is comprised of two layers of Double Gloucester with a ring of Blue Stilton sandwiched in between. It makes a perfect centrepiece for a cheeseboard and is delicious in a Ploughman’s lunch with a pint of good strong Ale.
The orange layer is Double Gloucester, and the blue and white marbled layer is Blue Stilton. Flavor levels depend on the age of the cheese, but the Double Gloucester used for this Huntsman™ has a firm, close texture, and a clean, mellow, creamy and buttery taste. It pairs perfectly with the bold and expressive tangy Blue Stilton to create a wonderful taste combination.
