Za’atar Spiced Beet Dip with Goat Cheese Prep Time: 10 minutes Cook Time: 5 minutes Serves 8-10
Ingredients 4 cups sliced cooked beets 1 cup full fat Greek yogurt 2 small garlic cloves 1 ½ tbsp honey 1 Tbsp Za’atar, plus more for serving ½ tsp crushed red pepper Salt and pepper 1/3 cup Celebrity goat cheese crumbles, plus more for serving 2 Tbsp toasted slivered almonds 2 Tbsp toasted pepitas 2 scallions, white and green parts sliced 3 Tbsp olive oil
Directions In the bowl of a food processor, add beets, Greek yogurt, garlic, honey, Za’atar, crushed red pepper, salt and pepper. Pulse until smooth, then add goat cheese. Pulse, scraping down sides as needed, until smooth and creamy. Taste and adjust seasoning as needed.
Transfer to a serving bowl and top with almonds, pepitas, scallions, goat cheese crumbles, sprinkling of Za’atar. Finish with a drizzle of olive oil before serving.
