Marcona Almond and Amedei Chocolate Caramel Corn Prep Time: 15 minutes Cook Time: 1 hour Servings: makes 17 cups 15 cups popcorn 1 cup Don Juan marcona almonds 1 cup dark brown sugar 1/4 cup light corn syrup 1/2 cup salted butter 1/4 tsp baking soda 1 cup Amedei dark chocolate chips Preheat oven to 250 degrees. Spread popcorn out on a large rimmed baking tray. Sprinkle almonds over top evenly. Combine the brown sugar, corn syrup, and salted butter in a medium pan. Bring mixture to a boil, stirring continuously. Allow to boil for 5 minutes. Remove from heat and stir in baking soda. Immediately pour over the popcorn and toss to coat completely. Bake for 1 hour, stirring every 20 minutes. After 1 hour remove from oven and transfer popcorn to a tray with waxed paper. Allow to cool completely. Add Amedei chocolate chips and toss well.


Fudge Prep Time: 15 minutes Cook Time:10 minutes Servings: 20 pieces 2 cups Amedei dark chocolate chips 1 14oz can sweetened condensed milk 3 Tbsp unsalted butter 1 tsp vanilla extract Flakey sea salt Line a 9x9 pan with parchment paper. In a large, heatproof bowl combine the sweetened condensed milk, vanilla extract, chocolate, and butter; set aside. Fill a small saucepan half way up the side with water and bring it to a boil. Reduce the heat to a simmer and place your bowl on of the pot. Stir frequently, until the chocolate has melted and the mixture is completely smooth, about 5-7 minutes. Alternatively, you can microwave in 30 second intervals. Stir in vanilla, then quickly transfer the mixture to the lined pan. Refrigerate until firm, about 2-3 hours. Gently run a knife around the edge of the pan. Remove and place on a cutting board. Remove the parchment and cut into small even squares. Sprinkle with flakey sea salt and serve immediately or store in refrigerator.

Animal Fries Prep Time: 15 minutes Cook Time: 25 minutes Servings: 4-6 For the fries 32 oz frozen handcut fries ¼ cup Snowdonia Balsamic Caramelized Onion spread For the sauce 3 Tbsp mayonnaise 1 Tbsp ketchup 1 Tbsp sweet relish 1 tsp apple cider vinegar 4 slices Mifroma Raclette Cook fries according to package directions. While fries are cooking prepare the sauce. In a small bowl combine mayonnaise, ketchup, relish, and vinegar. Set aside. Once fries are finished remove from oven and top with Raclette slices. Return to oven for 1 minute, or just until cheese melts. To serve, divide fries into a shallow dish or bowl. Top with Snowdonia Balsamic Caramelized Onions and drizzle with the sauce. Serve immediately.


A L’Olivier Paloma Serves 3 6 oz tequila (optional) 1 ½ oz fresh lime juice 3 Tbsp Pamplemousse A L’Olivier vinegar ½ oz simple syrup Crushed ice, for serving 2 oz grapefruit soda water Course sea salt Grapefruit wedges, for garnish Lime wedges, for garnish Salt rim of glasses with course sea salt and set aside. Add tequila, fresh lime juice, A L’Olivier vinegar, and simple syrup to a shaker with ice. Shake well and strain into a glass over ice. Top off with grapefruit soda. Garnish with grapefruit or lime wedge.
