Ingredients
8 slices bacon
1 lb seasoned hashbrowns
1 Tbsp butter
10 eggs
Salt and pepper
1 tsp garlic powder
1 tsp paprika
¼ cup heavy cream
6 small flour tortillas
2 cups Belton Farm Double Gloucester w/ Chive & Onion cheese
3 scallions, green and white parts sliced Hot sauce for serving
Instructions
Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray and set aside.
In a large skillet cook bacon on both sides until golden and crisp. Remove bacon from pan, but reserve the bacon grease in the pan. Add hash browns and cook, undisturbed, until golden brown. Flip and cook alternate side until golden. Season with salt and pepper, set aside.
In a large bowl mix together eggs and cream. Season with salt, pepper, garlic powder, and paprika. In a large nonstick skillet melt butter over medium heat. Add eggs and cook, stirring often, until just cooked through.
Assemble by layering tortillas, hash browns, eggs, scallions, sausage, bacon, and cheese. Repeat two more times ending in cheese. Bake for 30 minutes, or until cheese is melted and golden brown.
Serve with hot sauce, if desired.
