Crispy Asparagus Fries with Feta Dipping Sauce Servings: 4
Ingredients: ½ cup all purpose flour 1 tablespoon cornstarch 2 teaspoons chili powder 1 teaspoon smoked paprika 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon fine sea salt Pinch of cayenne pepper 2 large eggs 1 cup panko bread crumbs 1 pound asparagus, trimmed 1 tablespoon olive oil For Feta Dipping Sauce: ½ cup buttermilk ½ package Mt Vikos Feta 1 tablespoon red wine vinegar 3 tablespoons olive oil

Directions: Preheat oven to 400℉. Lightly oil a large baking sheet. In a wide shallow bowl, whisk together flour, cornstarch, chili powder, paprika, garlic and onion powders, salt, and cayenne. Transfer to a plate. In a wide, shallow bowl, beat eggs with a fork. Pour panko into another wide shallow bowl. Place all 3 bowls in a row. Dredge each asparagus spear in flour mixture, then egg, then panko and place on prepared baking sheet. Drizzle with oil. Roast until crispy and browned, 10-15 minutes. In a blender, combine buttermilk, feta, and red wine vinegar. Blend until smooth. With machine running, slowly pour in oil and blend until creamy and thick. Add salt and pepper to taste. Serve asparagus with feta dipping sauce.
