In recent years, a phenomenon has captured the world’s attention, sparking widespread interest and curiosity: Blue Zones. Blue Zones are geographic regions where people have a longer life expectancy. They can be found in Nicoya, Costa Rica; Lomao Linda, California; Okinawa, Japan; Ikaria, Greece; and Sardinia, Italy. What is the Mediterranean Diet?

Part of the secret to longevity within several Blue Zones includes food popularly known as the Mediterranean Diet. In 2023, US News & World Report named the Mediterranean diet the best diet for the sixth consecutive year in the row. The Dynamic Shift of Upcycling Food

Upcycling is the hottest new trend in sustainable food and beverage. Yet you might be surprised to learn it’s nothing new. More than ever, consumers care about making choices that help care for the environment. They believe their individual choices can have a powerful impact on the world. 70% of operators confirm sustainability is currently a priority for their organization*. The Upcycled Food Association reports that 60% of people want to buy more upcycled food products. A team of experts from Harvard Law School, Drexel University, World Wildlife Fund, Natural Resources Defense Council,

ReFED, define upcycled foods as foods which use “ingredients that otherwise would not have gone to human consumption, are procured and produced using verifiable supply chains, and have a positive impact on the environment.” Here’s why upcycling is crucial for the future of the food industry, and how we’re seeing the trend unfold.

What is upcycling? In simple terms, upcycling means finding new, higher value uses for items that would otherwise go to waste. Upcycling is different from traditional food waste reduction processes in that it utilizes products people would usually consider garbage, from fruit peels to coffee grounds. As concern and care about sustainability grows, food products that once ended up in the garbage (for example banana peels) are being re-imagined as delicious solutions to our $940 billion global food waste problem. 22


At its core, upcycling diverts waste from landfills. Organic matter in landfills releases greenhouse gases like methane. Food waste is a major source of greenhouse gas. To grow, process, and ship product all takes energy, water, and natural resources. It’s estimated that one third of the food intended for human consumption in the United States goes to waste.

Sustainability matters Leah Graham, the marketing director at Upcycled, says, “According to food AI company, Spoonshot, interest in upcycling grew by 128% across business media in the past year.” The thinking behind upcycling is not new. Smart producers always knew to utilize all the resources at their disposal. The silent generation knew to save scraps and transform them into something wonderful, with a little creativity. Savvy chefs knew—and know

now—that even off cuts could be saved and celebrated. Meat scraps could be made into sausage and other delicacies. This may not be precisely upcycling, but it embraces the same savvy ethos of making the most of every single available thing. Artichoke pieces, broken mandarin oranges, and mushroom pieces and stems are all considered imperfect ingredients and are great for recipes. Innovative processes take products like pulp, peels, or stalks—once destined for trash—and turn them into culinary possibilities. Avocado seeds, eggshells, and banana peels might now become something delicious. Upcycling supports local farmers by providing a new market for traditional crop byproducts. Traditionally, businesses thought of the value their products offered instead of the sustainability of the food waste they were inherently reducing by providing these offerings. With upcycling, sustainability becomes the top priority.

RUTHERFORD & MEYER CASE STUDY: From Spent Grain To Delicious Crackers When making beer, brewers steep malted barley to give beer its body and flavor. The resulting liquid is used to make beer, and the leftover ‘spent’ grains – which are usually discarded – are brimming with nutritional value. What could easily become trash is instead turned into wonderful, healthy crackers. Based in New Zealand, Rutherford & Meyer built their brand on the foundation of upcycling. They rescue spent grains from local breweries for their upcycled grain project crisps. Made from a proprietary blend of 100% natural ingredients and rescued spent brewers’ grain, their crisps are tasty, nutritious—high in protein and fiber, and sugar free— and good for the earth.

“When we saw how much waste was involved in the beer brewing process, we had… a grain wave,” says Upcycled Grain Project Owner, Jan Meyer. “We decided to use the grains from the beer-brewing process and upcycle them into our tasty and healthy snacks.” Rutherford and Meyer mixes spent grains with other natural ingredients to produce their plant-based, GMO-free snacks. To date, Rutherford and Meyer has saved 12,153 kilograms of grain. Starting this past summer, Atalanta partnered with Rutherford & Meyer to bring their delicious products to the US.


Atalanta showcases cheesemakers who innovate with whey Making use of all possible ingredients, while not strictly upcycling, is an integral part of traditional foodways. For example, Ricotta Salata, or pressed and salted ricotta, has been made with whey, a byproduct of making cheese, since antiquity. IL Villaggio’s partner cheesemakers craft authentic specialty Italian cheeses, and use the sheep’s whey from the production of Pecorino Romano to make their premium Ricotta Salata. The process limits wasted whey and makes incredible cheese. Belton Farm, beloved British cheesemakers since 1922, also doesn’t let whey go to waste. They transform whey into products including Whey Cream Butter, Whey Protein, and lactose permeate (concentrated lactose), which gets used in the local anaerobic digestion of plants to produce electricity. “Nothing is wasted,” explains Alison Taylor, Belton Farm Marketing Manager. “We start with milk, make cheese and finish with water.” Belton Farm recognizes that they must care for and sustain today’s world for future generations. They value and strive to protect the natural environment and resources that are at the very heart of their business.

Upcycled cheese…and beyond

DID YOU KNOW? Since 2009, Belton Farm have reduced Greenhouse Gas Emissions by 48% per million liters of milk. Their solar panels generate 130,000 Kwh on site. They have regeneration cooling on their milk pasteurizer, and electric car charging stations at their plant. Some of the upcoming key milestones on their sustainability journey include: • Reducing their carbon footprint by 50% based on liters of milk processed by 2025. • All farmers participate in Carbon Footprint Assessments. The current average of their dairy farms is 6% lower than the UK average. • All electricity is generated by renewable energy sources. • All the milk used in their award-winning cheese comes from within a 25-mile radius of the dairy.

Our cheese processing facility has also found ways to reduce waste through various offerings. Table One Shredded Swiss is a blended Swiss cheese that mitigates food waste within their system. Beemster cheese wheels cut at the Tipico facility also offer an extra delicious cut: Beemster Cores. In this new program, cheese cores are cut from the full wheel of Beemster’s award-winning Goudas to provide consistent wedges. Those cores can then be packaged and sold as a new, small cut—especially since it’s the king cut of the cheese. At Gellert Global Group, we continue to innovate along the entire supply chain, not just at the consumer facing level. At Atalanta, we’ve recently partnered with a new program, Spoiler Alert, a Boston-based startup that has recovered over $1.75 billion in food waste to date by generating a bid-based platform for at-risk inventory. Together, we expect to recover 65-75% of all excess inventory for Atalanta which, in addition to food bank donations, will improve our overall food waste impact. “We’re excited about what the future of this program could mean for our at-risk inventory” says James D’Antonio, Customer Supply Chain Services Manager at Atalanta Corporation. THE LAST FOUR YEARS have been marked by radical, unforeseen challenges for the food industry. Worker burnout and the Great Resignation left organizations at all levels in the food industry scrambling to implement labor-saving programs. The COVID-19 pandemic also dramatically shifted consumer behavior as well, resulting in accelerated e-commerce growth, advanced takeout technology and heightened awareness of general wellness. Only time will tell if we have yet established a “new normal,” as the past year has continued to be marked with even more challenges. Historically erratic weather patterns have led to droughts, floods, wildfires, and other catastrophic events that have decimated crops across the globe. Food exports from Ukraine, the “breadbasket” of Europe, have been effectively shut off after Russia’s invasion in late February 2022. And more uncertainty continues to develop around the conflict between Israel and Hamas. Technomic’s 2023 Mid-Year Economic Outlook reported an expected 7% increase in produce price increases due to these supply shocks. Although we cannot predict the future, we can prepare for it. Peruvian Quinoa & Potato Bowl with Chimichurri Prep Time: 15 minutes Cook Time: 30 minutes Serves 4

INGREDIENTS

For the Bowls: 1 lb assorted baby potatoes (red potato, purple, fingerling, etc) 2 Tbsp olive oil 1 tsp garlic powder 1 tsp Saftiner smoked paprika 1 tsp kosher salt 1 tsp ground cumin 1 tsp dried oregano 1 small sweet onion, roughly chopped 1 14oz can chick peas, drained and rinsed 2 cups prepared Del Destino quinoa ½ cup mandarin oranges For the Chimichurri: 1 cup fresh flat-leaf parsley leaves, packed 1 cup fresh cilantro leaves, packed 2 Tbsp fresh oregano leaves or 1 tsp dried 1 small shallot roughly chopped, (about 1 Tbsp) 3 large garlic cloves 3 Tbsp Del Destino lime juice pinch red pepper flakes ½ cup Olive Oil, or more as needed salt and pepper

INSTRUCTIONS

Preheat oven to 400 F degrees. Rinse potatoes and pat dry. Cut in half, or quarters, depending on size of potato. In a large mixing bowl toss potatoes with olive oil. Add the garlic powder, smoked paprika, salt, cumin, and oregano. Season with fresh cracked pepper. Line a baking tray with foil and spread potatoes out evenly. Scatter the onions over the potatoes. Cook for about 30 minutes, or until potatoes are tender and golden brown. Remove from oven and add the chick peas. Toss to coat well and return to oven for 5 minutes, just to warm through. While the potatoes are cooking prepare the chimichurri. Combine parsley, cilantro, oregano, shallot, garlic, lime juice, red pepper flakes, and 1/2 cup olive oil in a food processor or blender. Season with a generous pinch of salt and fresh cracked pepper. Pulse 2 to 3 times, scraping down the sides as needed. Repeat pulsing until a thick sauce forms. Be careful not to puree the sauce as you want to leave a slight texture to the herbs. Add extra oil 1 Tbsp at a time, if needed. Taste, and adjust seasoning as desired. Divide the quinoa into four bowls. Top with roasted potato and chick pea mixture. Add mandarin oranges and a drizzle of chimichurri. Garnish with additional cilantro leaves and serve with extra chimichurri, as desired.
