Savory Goat Cheese and Olive Sandwich Cookies Servings: 18 Cookies
Ingredients: 8 tablespoons (1 stick) unsalted butter, softened 4oz soft fresh goat cheese 1 tablespoon minced fresh rosemary 1 teaspoon black pepper ¼ teaspoon fine sea salt 1¼ cups all-purpose flour ½ cup Mt Vikos Kalamata Olive Spread

Directions: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat butter and goat cheese on medium speed until smooth. Add rosemary, pepper, and salt and beat until combined. Add flour and mix on low speed until dough comes together. Transfer dough to a piece of parchment paper and shape into a 1½” log. Wrap tightly in parchment and refrigerate until firm, at least 1 hour. Preheat oven to 350℉. Remove dough from refrigerator, unwrap, and cut crosswise into ¼” thick rounds. Place cookies on a large baking sheet leaving about 1” between cookies, and bake until very lightly browned, 15-18 minutes. Transfer cookies to a rack to cool completely. When cookies are cool turn half of them upside down and spread with a heaping teaspoonful of olive spread. Top with remaining cookies. Serve immediately and store any leftovers refrigerated in an airtight container.
