Ingredients
15 Menu whole marinated artichokes, halved
Whipped Feta
4oz Mt. Vikos or Atalanta Feta
1/4 cup full-fat Greek yogurt
1 garlic clove
1 Tbsp fresh oregano
1 tsp lemon juice
1 tsp honey
Salt and pepper
Instructions
Tahini Dressing
¼ cup Tahini
¼ cup Melchiorri Extra Virgin Olive Oil
2 Tbsp lemon juice
2 tsp Edmond Fallot Dijon
2 tsp honey
2 Tbsp fresh parsley
2 Tbsp Del Destino Capers, rinsed and drained, plus more for serving 1/3 cup Del Destino
Sun-Dried Tomatoes, plus more for serving
Salt and pepper
For the feta, in a food processor combine feta, yogurt, garlic, oregano, lemon, and honey. Season with salt and pepper, to taste. For the tahini dressing, in a medium bowl combine tahini, olive oil, lemon juice, and honey. Whisk well to combine. Add parsley, capers, and sun-dried tomatoes. Season well with salt and pepper. Set aside.
For the artichokes, place in an oven-proof ramekin or au gratin dish. Top with whipped feta and place under the broiler for 2-3 minutes, or until golden brown. Remove from oven and drizzle with tahini dressing. Finish with additional cappers, sun-dried tomatoes, and fresh herbs, such as dill, chives, and parsley.
