OLIVES ITALIAN SPECIALTY OLIVES MEDITERRANEAN OLIVES PITTED OLIVES STUFFED OLIVES

From the mythical stories of the Greeks to the mountains of ancient Jerusalem, olives were originally cultivated in the cultures and cuisines across the Mediterranean. The olive tree, unremarkably subtle in its appearance, can live for hundreds of years. Its origins trace back to the area of modern day Turkey, and have been part of Mediterranean civilizations for centuries. Grown on trees along the shorelines of some of the world’s most majestic locations, olive trees belong to the same plant family as lilacs and jasmine. In Greek mythology, the olive tree is known for being the gift from the god Athena. In ancient times, olive branches were worn as adornments during weddings, and are currently known for being the international sign for peace. With over 500 known varieties of olives today, olives are combined with a variety of herbs, spices, oils and other accoutrement for a range of flavors and textures for culinary usage. Atalanta’s selection of olives includes varieties from across the Mediterranean. With authentic flavors, textures and uses, these olives can be used for an array of applications.

GRAINS ANCIENT GRAINS RICE FLOUR PASTA

The growing, cultivating and harvesting of grains is often recognized as the cornerstone of most civilizations throughout history. These rich and versatile grains were seen as a food source that could be grown relatively easily, farmed in quantity, and suitable for storage in colder climates. As far back as 2500 B.C., rice has been the documented source for culinary traditions beginning in Asia and eventually staking claim in Central and South America. Its versatility has enabled rice to be grown in varied climates with distinguished and separate culinary applications. One of the most popular and nutrient-rich grains is quinoa. Called the “mother grain” by the ancient Incas and an abundant part of the empire’s crop base, quinoa has been regarded as a “super food” for over four thousand years by the people of Bolivia, Peru and Columbia. High in protein and flavor, quinoa offers an aesthetic and nutritional value that is undeniable. Similar to rice and quinoa, farro has a long and storied history. For thousands of years farro has fed the Mediterranean and Middle East populations. This Italian treasure is prized in hearty soups, risottos and other dishes. Choose the world’s foremost ancient grains and rice varieties from Atalanta’s grain selection.

9

GRAINS Ancient Grains Ancient grains are new again as one of the top trends in the food industry, spanning from the fertile Mediterranean to the highlands of Peru. Favored for their numerous health benefits, substitute traditional rice or pasta with Italian Organic Farro, Israeli Toasted Couscous or Peruvian Organic Red and White Quinoa.

Usage: Make a fresh Mediterranean salad with quinoa tossed with diced asparagus, scallions and sun dried tomatoes with pitted Calamata olives and feta cheese. Drizzle with a red pepper infused olive oil.

Rice Atalanta’s selection of short and medium grain rice is celebrated in kitchens throughout the world for their texture and versatility. When compared to other long grain rice, Italian rice, grown exclusively in north Italy’s famed Po Valley, has a higher starch content and absorbs more liquid. Nuttier basmati rice has aromatic properties that are quintessential for any hot curry dish.

Usage: Make an innovative curry by adding oven roasted tomatoes to any chicken curry and serve over a bed of steamed basmati rice.

Accompaniments: Blend MENU Truffle Cream Sauce into hot, cheesy Parmesan arborio rice risotto and top with plenty of fresh herbs.

CHEESE & CHARCUTERIE IMPORTED CHEESE CHARCUTERIE & MEATS

The history of cheese shares a storied past from a time when nomads roamed the desert in search of a way to preserve the precious milk that they carried. Once the product of cheese was born, its importance in gastronomy and cuisine across the globe grew at a bewildering pace. Each country and culture presented a different production and preservation method of their cheeses, from the washed rind Belgian delights to sturdy English Stilton with its flavorful molding. Similarly, charcuterie and meats are as synonymous with their specific food cultures as their cheese counterparts. Cured meats are typically made from either pig or boar’s legs and thighs, and the process for making these meats can take upwards of several months or years. Traditional hams and salamis are still the everlasting favorite on sandwiches and for snacking. Atalanta offers one of the most extensive libraries of cheese and charcuterie products from around the world. With a focus on quality and consistency, our innovative and classic selections will leave no cheese wheel unturned.

ACCOMPANIMENTS CRACKERS & BREADSTICKS SPICES OILS & VINEGARS SPECIALTY

From salts worth their weight in gold, to balsamic vinegars aged in barrels in northern Italy, the elements that accompany an ingredient, dish or meal can enhance every aspect of what is on the plate. Salt from the Mediterranean was an extremely valuable commodity. Soldiers during the Roman Empire were paid in salt (the word “salary” derives from the Latin word for “salt”), while the legendary Salt Roads trailed through the Germanic tribal lands and the rest of northern Europe during the Middle Ages. Vinegars hold a rich tradition, particularly in Italy, where authentic balsamic vinegars of Modena and Reggio Emilia have been produced using the same artisanal methods for centuries. Saffron, with its vibrant color and bountiful flavor, is still a mainstay in Asian and Spanish cuisines. Atalanta offers a breadth of accompaniment products, including sea salts from the Italian island of Sicily, to balsamic vinegars from Modena and delicious crackers from Australia’s Yarra Valley.

18

ACCOMPANIMENTS Crackers & Breadsticks From classic Italian grissini to airy focaccia, breads and breadsticks are an integral complement to any meal. Typically pencilthin in size, grissini originated in the northern Italian city of Turin sometime in the 14th century. Though simple in taste and crispy in texture, grissini are now combined with upscale ingredients including black truffles, pepper and corn. Focaccia is the classic Italian treat, perfect for sandwiches or dipping in high-quality olive oils and vinegars.

Usage: Wrap grissini with prosciutto or make a focaccia panini with mozzarella and fresh tomatoes.

Accompaniments: Pair crackers with soft ripened cheeses like Zerto Borgonzola and Chimay DorĂŠ Gold.

SpICES Our selection of quality spices are ideal for cooking and finishing. Offerings include traditional Saffron from central Spain and coarse Sicilian Sea Salt. P.D.O. Saffron, from the Castile-La Mancha region, is revered for its culinary use and cultural importance. Harvested off the coast of Sicily, all-natural sea salt’s delicate flavor is versatile, perfect for meats, fish and pastas.

Usage: Sprinkle sea salt on steamed edamame, or flavor any of your favorite home cooked dishes.

Accompaniments: Add a pinch of saffron to your next seafood paella made with Royal Mahout Basmati Rice.

19

ACCOMPANIMENTS oILS & Vinegars Vinegars come from the concentrated juice, or must, of wine grapes. While many are produced in the famous Modena region of northern Italy, vinegars can range in flavor, from sweet to savory, and are now produced around the world, including celebrated varieties from France and traditional sherry from Spain. Much like vinegars, oils have a varied flavor profile and usage capability from frying, sautĂŠing, to dressing.
