Greek Tortelloni Pasta Salad Servings: 6-8
Ingredients: 1-20 oz package Cheese Tortelloni 1 1/2 cups cucumber, small dice 1 1/2 cups cherry tomatoes, halved 1/4 cup red onion, minced 3/4 cup kalamata olives, halved 3/4 cup Mt. Vikos feta cheese, crumbled 1/4 cup basil, chopped

Dressing1/4 cup olive oil 2-3 tablespoons red wine vinegar 2 garlic cloves, minced salt and pepper to taste
Time: 15 Minutes
Directions: Bring a large pot of salted water to a boil and prepare tortellini according to package instructions. Drain and rinse under cold water. Place cooked tortellini into a large bowl and add cucumber, cherry tomatoes, onion, olives and feta. Gently stir to combine. In a small bowl whisk together olive oil, red wine vinegar and garlic. Season with salt and pepper. Add dressing to the pasta salad and toss to coat. Season with additional salt and pepper if needed, garnish with chopped basil.
