Mediterranean Tuna Flatbread Prep Time: 15 minutes Cook Time: 5 minutes Servings: 3-4

2 naan or flatbread 16oz Celebrity chunk tuna ½ cup diced red onion ½ cup Del Destino Sliced Ripe Olives ½ cup Del Destino Artichoke Quarters 1/3 cup Del Destino Sundried Tomatoes ¼ cup Del Destino Capers, drained and rinsed 3 cups arugula For the dressing 1 tsp Edmond Fallot Dijon Mustard 1 tsp honey 1/2 lemon, juiced 1/4 cup extra virgin olive oil 1/2 tsp dried oregano Salt and pepper In a medium bowl combine tuna, red onion, olives, artichoke hearts, sundried tomatoes, and capers. Set aside. Prepare the dressing by combining all ingredients in a mason jar or a container with a tight fitting lid. Shake vigorously until combined. Season with salt and pepper, to taste. Add arugula to the bowl with the tuna. Add dressing and toss well. Preheat a grill pan to high. Add naan and cook 1-2 minutes on each side or until toasted. Remove and top with tuna arugula mixture. Serve immediately.
