The meats are carefully and artfully crafted with passion and the highest quality ingredients. Our products are only sourced from pigs born and bred in the regions of Emilia Romagna and Lombardia. Piacentini’s premium DOP products can only be sliced and packed in the Piacenza province to ensure traditional craftsmanship and quality standards are always followed. It is the only province in the EC with 3 dry-cured meat products with a DOP designation: this is an acknowledgement of our territory’s strong tradition in the production of Coppa Piacentina, Pancetta Piacentina and Salame Piacentino, which were originally awarded the DOP designation in July, 1996.
COPPA PIACENTINA PDO Coppa Piacentina scent is delicate, with a seasoned meat aroma, and a slight spicy fragrance of pepper. The flavor is characterized by an outstanding sweetness, in pleasant contrast with the characteristic aroma that distinguishes the seasoned products. SALAME PIACENTINO PDO The Salame Piacentino DOP is cylindrical in shape, and the slice is bright red in color and the meat is flecked with small white dots of fat. PANCETTA PIACENTINA PDO Pancetta Piacentina PDO has a distinctive taste, thanks to the union of the sweetness of meat and the slightly salty and spiced taste of the external part. We can easily distinguish the scent of spices, in particular of pepper and cloves, which penetrate inside meat thanks to the massaging of pancetta. Rolled and hand sewn, cured for at least 4 months
