Belton Farm Red Fox, Bacon & Fig Toasties

Ingredients
6 strips cooked bacon
4 thick slices sourdough bread
6oz Belton Farm Red Fox cheddar, sliced
4 figs, sliced
2 Tbsp butter, softened
2 Tbsp chili pepper jelly, optional
Instructions
Heat a large skillet to medium high and cook bacon for 2-3 minutes on each side, or until cooked and crisp. Remove bacon and set aside. Reserve bacon drippings.
Spread red pepper jam on 2 slices bread and top with cheese, bacon, and figs. Top with 2 remaining slices of bread. Spread butter evenly on each outside slice.
Heat the skillet with bacon drippings to medium and add the toasties. Cook on each side 1-2 minutes, or until golden brown and the cheese is melted. Cut and serve warm.
