For Sauce 1/4 cup sweet chili sauce 2 Tbsp olive oil 1 Tbsp grated ginger 1 garlic clove, minced 2 dried chilies 1 tsp soy sauce 1 tsp vinegar 1/2 tsp Chaat masala 1 poblano pepper, diced 2 scallions, diced
Instructions In a large bowl combine avocado oil, coriander, cumin, and smoked paprika. Add paneer cubes and toss well to coat. Season with salt and pepper, to taste. Preheat the air fryer to 400 F degrees. Air fry for 5-7 minutes or until the paneer is just crisp. Meanwhile, in a small bowl combine sweet chili sauce, olive oil, ginger, garlic, chilies, soy sauce, vinegar, and chaat masala. Set aside. Remove from air fryer and toss with sauce. Return to air fryer and cook additional 10 minutes or until sauce is thick and sticky. Remove and top with sliced scallions. Serve warm with basmati rice.
