TAGLIATELLE Tagliatelle is a long flat pasta from the Emilia-Romagna and Marche regions. An essential characteristic of this pasta is its course texture, which makes it ideal for soaking up denser sauces. Traditionally this cut of pasta is used for Pasta Bolognese. PAPPARDELLE

Pappardelle is a very broad, flat pasta originating from the region of Tuscany. The long ribbons are ¾ inch wide and sturdy, making it ideal for bold thick sauces. SPAGHETTI alla CHITARRA with CURRIED ROASTED PEPPER CREAM 4 SERVINGS INGREDIENTS for the ROASTED PEPPER CREAM ½ cup Marinna Colonna Molise D.O.P. extra virgin olive oil 1 ½ cups roasted yellow peppers, chopped 1 shallot, chopped 1 tablespoon freshly squeezed lemon juice 1 teaspoon curry powder 1 small chili pepper, seeded and chopped

PASTA 2 packages Sapori di Casa Spaghetti alla Chitarra Sea salt 8 fresh basil leaves sliced in a chiffonade

PREPARATION: Put the roasted peppers, shallot, lemon juice, curry powder and chili pepper into a blender jar and puree until creamy. Pour the puree into a saucepan on low heat to warm it. Cook the pasta al dente in boiling salted water according to the package directions. Toss the spaghetti with the pepper cream and garnish with the basil.
