Southwestern Hot Pepper Jack Pizza Prep Time: 15 minutes Cook Time: 12 minutes Serves 4-6 Ingredients: 1 prepared ball pizza dough 1 Tbsp olive oil 1 ½ cup shredded Sonoma Hot Pepper Jack 16 oz can black beans, drained and rinsed 1 chile en adobo, chopped, plus 2 tsp sauce from can ½ tsp chili powder ½ tsp cumin ½ cup diced red pepper ½ cup diced red onion ½ cup frozen corn, thawed 1 small tomato, diced 2 scallions, diced 2 Tbsp chopped cilantro Optional: sour cream and avocado Instructions Preheat oven to 475 F degrees. Place a pizza stone in the middle rack on the oven to heat. Place the pizza dough on a floured pizza peel, or the back of a baking sheet. Roll the dough out into a large circle. Brush dough with olive oil and sprinkle cheese evenly over top. In a small bowl combine black beans, chile en adobe and sauce, chili powder, and cumin. Season with salt and pepper. Spread black beans on top along with red pepper, onion, corn, and tomato. Carefully remove the preheated pizza stone from the oven and slide the pizza onto the stone. Place back into oven and bake for 10-12 minutes or until pizza is golden. Top with scallions and cilantro. Cut into 8 slices and serve with avocado and sour cream.
