Spicy Shrimp & Orzo with Celebrity Sheep’s Milk Cheese

Serves 4

1 Tbsp olive oil

12 oz peeled and deveined shrimp

1 small onion, diced

3 large garlic cloves, mined

½ tsp crushed red pepper

1/3 cup dry white wine

1 (28oz) can crushed tomatoes

1 tsp oregano

½ cup Kalamata olives, halved

2 cups cooked orzo

Salt and pepper

1 4oz log Celebrity Sheep’s Milk Cheese

6 fresh basil leaves, chopped

Heat the olive oil in a large cast iron or other oven-safe skillet over medium. Pat the shrimp dry with paper towels and season all over with salt and pepper. Sear for 1 minute on each side, then set aside.

Using the same pan, add the onion and cook until tender and translucent, about 5 minutes. Add garlic and red chili flakes and sauté until fragrant, about 1 minute. Add white wine and cook until reduced by half.

Add the crushed tomatoes, oregano, and 1/2 teaspoon of salt. Stir to combine and bring to a boil. Reduce heat and simmer for 10 minutes. Add Kalamata olives and shrimp to the pan. Cook for 2-3 minutes longer, or until shrimp are cooked through.

Stir in cooked orzo and season with salt and pepper, as needed. Sprinkle Celebrity sheep’s milk cheese over the pasta and shrimp and garnish with basil before serving.
