Bonito del Norte tuna are line and pole caught and within 24 hours are cooked in sea water and their loins hand-packed in olive oil to keep it moist and flavorful. After maturing for at least two months they are ready to be enjoyed. Perfect as an antipasto or part of a Spanish tapas meal. Fully dolphin safe.
