Steve Gallagher from The Gallagher Group shares his expertise about preparing your house to put on the market. WHAT IS THE MOST IMPORTANT ROOM IN THE HOUSE? The kitchen is definitely the most important room in the house. An updated and beautifully designed kitchen is a major selling feature for any home. Conversely, an outdated kitchen that needs TLC can be a deal-breaker for many home buyers. When we are showing a home, we spend about half of our time in the kitchen area with prospective buyers. WHICH AREAS SHOULD I INVEST IN, AND WHICH SHOULD I LEAVE AS IS? Kitchens and bathrooms are usually the areas we recommend spending the most time and money on. Those are rooms that, in my experience, are important to potential buyers. I always advise people to be cautious if they are renovating their home solely to increase its saleability. You want to ensure that the money you are spending on updates and renovations is going to add enough value to your home to make it worthwhile. IS INVESTING IN MINOR TOUCH-UPS, SUCH AS PAINT, A GOOD INVESTMENT? Absolutely, without a doubt, yes! A fresh coat of paint just brightens up a house and makes it so much more appealing to buyers. I have a young family so I know how the walls of a house really take a beating. From sticky hands, to scuff marks, to the dents created by lively games of ministick hockey, our walls bear the brunt of it. Paint is a great, low-cost way to rejuvenate your home. SHOULD I KEEP MY PERSONAL BELONGINGS IN PLACE OR START PACKING? There are definitely some things that should go and some that can stay. We provide a preparation consultation on all of our listings. We walk through the home, room-by-room and give recommendations on what should stay and what should go. A big no-no when you are trying to sell your home is to have all of your family and personal pictures up all over the house. Potential buyers are better able to picture themselves living in a home if they are not inundated with pictures of the current owners. WHAT SHOULD I LOOK FOR IN A REAL ESTATE AGENT? There are a lot of qualities you should look for in choosing your agent. Buying or selling a home is the biggest transaction of your life and you should feel confident in who you choose. The agent you choose should ideally have experience selling homes in your community and you should feel that the lines of communication are wide open when interacting with your agent. I think one of the most important factors is testimonials from past clients, a good agent has these and can provide them for you when asked. Looking at my own business, 80% of that is from repeat clients and referrals from past clients. Ask your

friends and family for their recommendations. Anyone can tell you they will do a great job, but will their past clients back up what they say? HOW DO I KNOW HOW MUCH TO ASK? Pricing, along with preparation, is the most important aspect of selling a home. We study the current market trends, recent comparable sales and use our years of experience to properly price the home. WHAT ARE THE BENEFITS OF A REAL ESTATE AGENT AS OPPOSED TO SELLING PRIVATELY? One benefit of using an agent over selling privately is the multiple listing service and the wide market your home will have access to. The majority of the public are using an agent when they are looking for a home, these agents are cooperating with other agents to bring buyers and sellers together. With exposure to all types of buyers, this cooperating system gives the sellers the best chance to get top dollar with minimal stress. Your agent is not just advertising your home, they are negotiating the sale, ensuring all the paperwork is properly completed, liaising with banks, mortgage brokers and home inspectors to make sure that your purchase goes smoothly. One really important factor to consider is that an agent is also acting as an objective and unbiased party. I have had clients who fell in love with a home and would have purchased it, had I not stepped in to remind them that it fell short of several criteria I knew were important to them. Emotions are high when you are selling or purchasing a home and it is invaluable to have an objective agent to make sure you don’t make a mistake. WHEN IS THE BEST TIME TO SELL? Historically, the best time to sell is in the spring time. Having said that, markets are constantly changing and timing is critical. Try to consult with your agent months before you plan on putting your home on the market. SHOULD I HIRE A PROFESSIONAL STAGER OR DO IT MYSELF? I think it is worth it to hire a professional. We always include staging/ preparation consultations with our listings. It is always best to have a fresh set of eyes giving you honest advice on how to best prepare your home. The money spent on staging is minimal compared to the value added to your home.


LOFT LIVING text ARTHUR LIFFMANN

You’d be hard-pressed to find another style more enigmatic than the humble loft. While simple in concept, they have, over the past half-century, segued from an inexpensive alternative type of living space to a driving force in interior design, home furnishings, real estate development and urban renewal. In the process, the approach to loft living has become as multifaceted as the iron-framed factory windows that inspired many of the original spaces that spawned a design trend that impacts the way many of us live today. Essentially, lofts are spaces that are created out of buildings designed for industrial use. Originally conceived as a combination of commercial and residential use, many of today’s lofts are still true to their roots; mixeduse spaces with living areas partly partitioned off from spaces that serve as studios, offices or retail storefronts. These lofts made their debut in the early 19th century in Paris, where artists and musicians seeking spaces where they could live and work cheaply first noticed the potential of old warehouses and other commercial spaces. With large open spaces, high ceilings, and plenty of natural light spilling in through massive windows, they made excellent spaces in which to set up studios. The lack of neighbors were an added bonus for those who often worked throughout the night. Over time, the notion of carving these types of spaces out of older industrial buildings began to catch on in other large European cities, where the costs of studio spaces in congested urban areas were often prohibitive. By the end of World War II, lofts had crossed over to North America. Unsurprisingly, the United States’ “loft movement” first took root in New York; ironically, it was inspired by the same needs as those in Paris a century earlier. Abstract Expressionism began to emerge in America’s art scene, and artists like Jackson Pollock and Willem de Kooning began needing larger spaces in which to create the grand canvases

of their new works. Ceiling height and natural light became imperative for artists to not only create their work, but for showing it as well. Ask any expert in urban renewal what happened next and they’ll tell you; areas like SoHo and Tribeca, loaded with vacant cast iron industrial buildings renting out spaces for $100 a month slowly started attracting artists, who set up studios and illegal living spaces. Eventually, galleries began to open in the main floor commercial spaces to show their works. Wealthy art collectors with developed senses of aesthetic would attend these shows and begin visiting the studios of their favorite new artists. Upon seeing the high ceilings, massive banks of open windows, raw concrete and timeworn wood floors in these raw industrial spaces, they fell in love with the style and began to buy the apartments. Artists would move on to the next building, and the process would repeat itself over and over again, gentrifying entire areas of New York City. Today, lofts and the loft lifestyle are highly sought-after by modern-day bohemians, and the transformation of former manufacturing zones of medium-to-large cities is now a familiar pattern. But who wants to live in one big room? You might be surprised. Firstly, while a true loft is a warehouse or other commercial building that has been converted to residential space, today’s loft options include new construction featuring the elements that have come to define loft spaces – high ceilings, exposed pipes, and ductwork, and wood or concrete floors. Additionally, many of these “soft lofts” have walls or partitions to define separate “rooms” within the unit. For

those seeking an urban way of life, they are an appealing option that crosses generational and economic strata – young people, young professionals, artists, empty-nesters are all attracted to the style AND lifestyle loft living affords. But while the city abounds with many loft options and countless buildings ripe for conversion, living the loft lifestyle isn’t limited to those living in an urban core. The key to bringing loft style into your home is to introduce industrial edge and finishes to your space: think burnished metals like iron, oiled bronze, brushed gold and galvanized tin. Exposed brick –whether an entire wall, or simply uncovering a chimney – adds instant warmth and patina. The effect of all those huge windows found in most lofts can be replicated by replacing interior doors with glass-paneled ones that stretch the full height to the ceiling, allowing light to flow from room to room and blurring the lines between delineated areas. Concrete, whether used in polished floors and countertops or rougher applications on fireplace surrounds, injects an instant edge to spaces. In the end, the mix of raw industrial and softer furnishings – whether urban or suburban – is all you need to live up to these lofty lifestyles.

To honor National Scrabble Day on April 13th (and wish a happy birthday to its inventor, Alfred Mosher Butts!) we composed this way-fun message board. Leave a family member a little love note, have an ongoing game or transcribe a grocery list. Using an old picture frame and the good side of a sheet of plywood cut to fit inside the frame, this easy craft will have you shuffling your tiles in no time. We prepped our frame and gave it a fresh lick of white paint, primed our plywood sheet with magnetic primer and finish coated in a lovely shade of blue (Benjamin Moore CSP-695, Antique Glass). Lastly, we adhered some strong, rare-earth magnets with super glue to scrabble tiles and voila... it’s game on!

CURATING A GALLERY WALL

H

anging art in a domestic space is a daunting task to many. Maybe the apprehension stems from the thought of hammering nails into pristine plaster or simply an inability to know which pieces should go where. There are a few simple strategies to confidently hang art in your home. Large pieces require large walls. A natural spot for larger pieces is above a fireplace, couch or dining room wall. When considering an over-couch hang make sure that the piece is behind glass. An original work on canvas is too delicate should someone on the couch brush the work. I made the mistake of hanging a large piece on canvas above the couch and every time we had guests I rushed to sit on the spot by the painting so that no one would touch it. When considering a piece above a sideboard or mantle, be sure to hang it low enough so that someone seated can enjoy the piece. I

often lean large pieces on top of the mantle. If your collection consists of smaller pieces, don’t be scared to group them. These grouping are called “salon style,” which historically was intended to show the complexity and depth of a collection. This type of grouping does not have to be symmetrical. I do, however, like the frames to be in a limited palette, a maximum of three different colors. One way to make sure you get the right look before hammering is to cut paper the size and shape of the work and tape it to the wall. Rearrange it until you get the right look. Pieces in circular frames and square frames can be mixed together. Leave the papers in place when you go to hammer your nails to make sure you have the proper placement of hardware. Once all your art is hung, it is important to rotate it every so often. Rotating art keeps it fresh to the viewer and also gives

the work a break from a draft or light in your house. This is especially important for watercolor paintings and oil paintings. Our collections specialist Stephanie Middagh has spent the past 12 years being inspired by museum collections while working as a curator for various museums and galleries. Concurrent to her curatorial work, she took this inspiration to her sessional positions at the University of Manitoba where she continues to teach Introduction to Art and the History of Textiles.

26 m e rto n roa d a n d … p i n e r i d g e h o l low Twenty-three years in the bee biz and the honeymoon’s still not over for Phil Veldhuis, owner and operator of Phil’s Honey. “At this time of year, the hives are very gentle and peaceful. The days are long and warm. You sit in the yard while you’re working with the sun shining on your back, the birds singing and the trees blooming. It’s very pleasant,” says Veldhuis. Veldhuis, along with his wife Vona Guiler and their children Timmy and Jayna, run a 1,000-hive operation that yields approximately 250 barrels (each weighing 600 pounds) of honey annually. “We start pulling the honey around the end of July and continue until the middle of September so that we can,

hopefully, harvest each hive three or four times,” he explains. Most of the crop is canola honey, but they also produce clover, alfalfa, sunflower and buckwheat varieties. A third generation apiarist, Veldhuis’ grandmother started keeping bees in 1917 and was a founding member of the Manitoba Cooperative Honey Producers. Veldhuis joined the cooperative in 1991, serving several stints as a director and a term as chairman. Today, 90 per cent of his production is sold through the cooperative under BeeMaid Honey, the only honey packer to sell 100 per cent pure Canadian honey. The remaining honey is sold directly from farm gate to customer. “It’s very much a father-and-son thing for us,” Veldhuis says. “When things slow


down, Timmy will get out his fiddle and do some busking next to the table. The fiddle music is how many people find us in the market.” Talking with customers has provided an invaluable opportunity for Veldhuis to discuss the nature of his business. “When a mom of three wants your word that your food is safe and healthy to feed her family, it forces you to take what you do very seriously,” he says. “So I have a standard to keep for my own integrity that is reinforced by the expectations of my customers.” For its efforts in sustainable farming practices, Phil’s Honey has been certified by Local Food Plus, a Canadian non-profit committed to growing sustainable food systems. “Sustainability is important, not only because consumers expect it, but because I

have kids and hopefully someday, grandkids; plus I am the grandchild of someone who farmed and looked after things well. To contemplate this coming to an end because of avoidable mistakes you made seems pretty unacceptable to me.” With the honey bee population dwindling because of numerous threats, Veldhuis says considerable challenges lie ahead. “As bee populations shrink, there will be more tendency for beekeepers to focus on professionally pollinating rather than producing honey. This could mean that good quality honey will someday be priced as a luxury item instead of a staple. It will be more like caviar than peanut butter,” he says. “It’s a doomsday scenario to think that there will be no honey in the future, but it is conceivable that there won’t be as much of it available.” In the meantime, Veldhuis is just glad there is good buzz surrounding his pure,

locally-made honey. “Like most products on the shelf, there is some very good honey and some subpar honey. The truth is, not every jar is the same,” he cautions. “Canadian honey is the best quality in the world; no other kind tastes better and no other industry has better control of how its bees are treated or how its honey is produced. HONEY GREEK YOGURT POPSICLES

½ cup strawberries (or other fruit of your choice) 1 cup nonfat Greek yogurt 2 tbsp Honey

In a small food processor or blender, puree the fruit for 30 seconds to 1 minute. (Do not blend for too long or the puree will become too watery). In a measuring cup or bowl with pouring spout, stir together the yogurt and honey. Fold in about 2 tablespoons of the fruit puree. Taste and add more honey or fruit puree as desired. Pour fruit and yogurt mixture into popsicle molds, filling about ¾ of the way. Add wooden sticks and freeze for at least 3 hours. To remove: run warm water over the bottom of the popsicle mold and gently twist and pull out the popsicles.

HONEY CUCUMBER SALAD 3 medium cucumbers, sliced and halved ¼ cup Honey ½ cup white balsamic vinegar

(can also use white wine vinegar) ¼ cup water 2 tbsp red onion, diced salt Place cucumbers in bowl and sprinkle with salt. Toss and set aside. In a small mixing bowl, stir together honey, white balsamic vinegar, water and diced red onions. Pour the mixture over the cucumbers and toss. Allow the salad to marinate in the refrigerator about 1 hour prior to serving.

he late, great interior designer Billy Baldwin once said, “When you arrange your living room furniture, think less of symmetry and more of comfort.” In the case of this beautiful home, the Shaker-style living room was so symmetrical that it was overtly masculine. The homeowner asked designer Bahia Taylor of Envy Paint & Design to create a softer, feminine balance without making the men of the household feel uncomfortable. “After five years of living with the original décor, the homeowner had grown tired of everything being very square and very brown. She wanted to bring some life and some color into the space,” Taylor recalls. Redesigning the living room started with replacing the heavy wood window treatments with light-filtering silhouette shades. Drapery panels from the Sarah Richardson fabric collection by Kravet, featuring a clean white background and a sophisticated print in coral, aqua blue and gray, became the color palette that served as a jumping off point for the remainder of the furnishings and accents. A cream-colored wool area rug was chosen to anchor the 17 footby-12 foot room, adding texture and warmth without distracting from the rich grain of the oak hardwood flooring. Given that the active family has a large dog, and frequently entertains in their home, the choice of wool broadloom was significant as it not only gives the The brick fireplace is a lovely display spot with both an open pass-through niche to the kitchen as well as a mantle. abode desired aesthetic effect but is very easy to maintain. Once the rug was cut to the specified size, custom binding in deep coral was selected to match the drapery. As for the furniture, Taylor found pieces that were suitable and stylish while still complementing the Shaker “square bones” of the home. “The bulky sectional that they had in the living room was quite masculine and the accent chairs were okay for perching on but weren’t conducive to entertaining and conversing in,” Taylor says. “Instead, we brought in two Kravet sofas, covering the body with fabric and then a contrasting fabric to add some detail in the piping. The effect is striking.” Between the two opposite-facing couches is a rustic, oversized coffee table that looks like architectural salvage (it’s not) – a focal point and guaranteed conversation starter. A pair of matching side tables are conveniently placed within arm’s reach of the sofas, each solid table topped with a ceramic lamp boasting a distinct blue crackled patina. A custom-designed fireplace bench, wrapped in coral, stands squarely on three iron legs, each welded in a contemporary yet basic box-like design. A wheeled cart brings an appealing sense of whimsy to the room, its rustic wood and iron detail referencing the legs on the aforementioned bench. For those wanting to relax, read or reflect in front of a crackling fire, there are two weighty armchairs, which Taylor describes as “chunky, and yet graceful in their shape.” Both neutral beige chairs feature a stunning wood frame that echoes the home’s craftsmanship, especially its delicate millwork and trim around the windows. “Although the room feels very spring-like because of the fresh elements of coral and blue throughout, the more masculine lines of the architectural details and the heavier pieces of furniture will ensure that it transitions easily into every season.”

Having already undertaken some minor renovations, Kal Barteski and Dan Kostenchuk were getting ready to embark on a major home expansion and upgrade. Plans were moving along until, Kal says, “Dan came home one day and told me he’d bought a new house.” Kal’s reaction? Unsurprisingly to friends and fans of her inspirational quotes and artwork, Kal seized the opportunity to create a new dream home for her family. Carpe Renovation, so to speak. Located in the same neighbourhood as their previous home, the century-old house offered an abundance of desirable features: additional square footage, high ceilings, all on a prime block within walking distance to many of the area’s favorite local cafes, shops and bakeries. Much of the home’s charm comes from its period details, something that Kal kept in mind while reworking the interior into spaces suitable for a young, hip and style-conscious family. “The black and white scheme works really well for us because I’m an artist and I have different paintings hanging in the house every month. White works for that. It helps to make our house a bit of a gallery. It feels bright and happy,” says Kal. The graphic palette immediately greets visitors as they enter the foyer, a studied contrast of dark gray tile floors and white walls. tracks; the door, which is hung backwards in order to clear the width of the original baseboards, closes off either the front hall closet or Dan’s adjacent main floor office, depending on how it’s positioned. To the left of the foyer, the large living/dining room runs the full depth of the house. Modern squared-edged furniture upholstered with solid black and white leather or high-gloss lacquer finishes is balanced by the worn patina of the original oak flooring, period trim work, and the organic shapes of Kal’s art and textiles. Consideration was given when removing walls between the main living and kitchen areas. “The way the kitchen was before made it impossible to socialize with the cook,” says Kal. “I feel like the kitchen is the heart of the house and everyone should be a part of it.” While the spaces are now open to each other in a way that allows light and sight lines to flow uninterrupted, the floor plan is laid out so that the kitchen is out of sight from the foyer, only being revealed as you venture further into the space. The large dining area is centered around a beautiful long table fabricated from reclaimed boards from a grain elevator floor. While

abode opening the kitchen to the dining area, Kal was able to create a substantial peninsula that multitasks as a prep area, breakfast bar and buffet. Eschewing upper cabinets, she installed a full wall of cabinets on the wide side of the kitchen, with space dedicated to the household’s dishes, pantry and storage needs. The cabinets are fronted with black doors; the adjacent window wall is also painted black. With custom designed vinyl decals and a bright red foot stool, it creates a high impact design focus in the space. Just off the kitchen, a tiled mudroom with blue walls and white cabinetry provides space for household projects and a feeding station for the family’s two French bulldogs, Norman and Frank. The success of the scheme is in the tension created from the mix of opposites: black and white, old and new, glossy and timeworn. Kal’s advice? “Our design theory is that the house should act like a stage for the characters in it... we are a lively bunch, so it’s nice to have a space that lets us be that way.” Working carefully to set that stage - a modern living space within a period home - takes the touch of a true artist. The result? A tangible example of design sensitivity, and a fabulous family home with style to spare.

one are the days of dark, dingy basements, where the sump pumps run and spiders and ladybugs abound. Instead, finished basements have evolved into bright, beautiful spaces that rival the main floor. Tamara Eckstein of Eckstein Design Group knows all about making the most of a home’s lower level. She recently tackled a basement development, creating a refreshing and refined recreational area from a blank canvas. Eckstein’s clients, a professional couple with two active children, wanted a functional and fun space for their family. “One of the biggest criteria for the project was to have a large games area where the family could have a ping pong table,” Eckstein explains. “There is definitely some competitive spirit within the family.” Having worked with Eckstein on two previous projects, the easygoing couple handed

all their trust to the designer, allowing her creative control. “I act as contractor on my projects,” explains Eckstein, adding that she hires the trades and manages the scheduling of the project. “I get to ensure that my design is executed to a tee from start to finish.” Eckstein’s vision for the basement of the 2,800-square foot home was to make the space unexpected and infuse a mix of traditional and mid-century modern. To give the basement a main-floor feel, she “disregarded the standard notion that basements are meant to have drop tile ceilings and carpet.” According to Eckstein, the key to achieving a glamourous games area was “adding a bit more oomph and not accepting that basements need to look a certain way.” Going against the grain meant executing elegant custom details typically expected on the main level. “The vision was to incorporate bulked up traditional architectural elements such as the mouldings, built-ins, a fireplace and coffered ceiling, but then balance the room out with more modern furnishings This page (above): Challenge accepted! and a few classic vintage mid-century pieces.” Originally, Eckstein had envisioned a two-tone paint scheme, with white wainscoting and a grayish tone on the upper portion of the walls. In the end, Eckstein tossed out the two-tone concept in favor of something a bit more fresh and fun – all white walls with monochromatic components and a few colorful accents. “It took the seriousness out of all the traditional architectural details and gave the basement more of a feeling of height,” she explains. “Mixing the traditional architectural elements with the contemporary furnishings resulted in a finished product with depth and interest.” Pot lights, stylish fixtures and a perfectly placed pendant were installed to give off glitz, glamour and lots of light throughout the entertaining area. Little extras like in-cabinet and in-shelf lighting offer big impact, highlighting opulent details such as brushed brass hardware and mementos. Custom millwork and built-in bookcases keep things sleek and tidy and provide a place to tuck away photo albums, board games and Opposite top: Preppy pops of colorful in the toss cushions brighten the charcoal sectional sofa. electronics. A touch of rustic simplicity and natural wood comes through in accents like the coffee table, the sofa arm board and ornate antlers. Because the basement was an empty space waiting to be brought to life, very few challenges stood in Eckstein’s way. “Common in most basements was the placement of the teleposts, and making them make sense within the design,” she details. Eckstein turned a con into a pro by cleverly creating fixed pillars that flank a bar counter – an ideal place for eating a slice of pizza while still facing the flat screen TV. The eat-in area with bar-height stools splits the multifunctional space into two areas – one for TV watching, the other for game playing and exercising. The orientation also allows for the family’s first priority: the ping-pong table. With ample room around the table, guests can easily pass by to sneak a snack or two from the stunning wet bar, complete with under mount sink, wine fridge, and quartz countertop. The bar cabinets and bathroom and utility doors received a dramatic dose of Sherwin Williams paint in Gris, a grayish color echoed in the gas fireplace’s Basaltino mosaic tile. Instead of the customary upper-cabinetry, Eckstein kept it light and airy, opting for floating shelves that complement the equally-unconventional high-end Torlys Everwood vinyl plank flooring. “Both the clients and I were originally completely opposed to the idea of vinyl plank flooring until I saw this stuff! It is remarkable how real it looks. It is perfect for basements and great for any moisture that may come up through the floor.” The elegant and realistic wood texture flooring is impervious to water, ultra-thick and durable, and warm to the touch. Plus, it’s the perfect party floor, because it’s dent-resistant, quiet, and highly stain resilient. Before the floor planks were fitted, DRIcore subfloor was installed, creating a thermal break and air gap between the concrete and the top layer of flooring, adding warmth underfoot. While Eckstein admits to splurging on the flooring, budget-friendly finds, such as IKEA pillows and gold spray-painted pots with faux foliage didn’t break the bank. abode A sophisticated powder room is a welcome surprise off of the recreation area, combining timeless elegance and fashionable flair. Bold, geometric wallpaper counters the white walls and wainscoting and adds a playful pattern with the perfect amount of pop. “I am totally into black and white right now,” Eckstein gushes. “It always looks classic and glamorous. The wallpaper just punches it up a bit. The bold geometric makes it fun, and again, takes the seriousness off of the traditional elements. It’s the same juxtaposition of modern and traditional that we see in the rest of the basement.” A black vanity with shaker-style doors and chrome hardware flawlessly flatters the marble herringbone tile floor and grounds the room. The mirror and sconces have tons of vintage appeal, but are trendy enough to blend into the chic space. Despite the extravagant details in the basement, the most important aspect of this area can be found at the bottom of the stairs. Four framed black-andwhite family photos hang there, a gentle reminder that the best part of the space is the people that play in it.

We asked tonnes of people what fare made them think of Spring, and asparagus almost always topped the list. This recipe combines their fresh flavor with that of beef and steak spice. Drizzle with lemon just before serving!

ASPARAGUS WITH LEMON Grocer's bundle or two of asparagus Olive oil Epicure Selections Beef and Steak Spice Large bowl of ice water Bring large pot of water to a boil. Insert asparagus into boiling water for 1 minute to blanche. Immediately transfer to bowl of iced water to stop the cooking process. Lay asparagus onto tin foil and drizzle with olive oil and sprinkle genrously with beef and steak spice. Place foil onto bbq grill or on a pan under broiler, and cook until the tops begin to brown and blister.

LEMON PASTA WITH SHRIMP 12 Spaghettini pasta nests (3 per person) 3 large cloves of garlic grated or pressed ¼ cup olive oil 2 tbsp. butter 1 tsp. grated lemon zest 2 tbsp. fresh lemon juice ¼ cup fresh parsley 2 cups fresh arugula 16 giant cooked prawns, deveined and peeled (defrosted if using frozen) Boil a large pot of water for the pasta nests. While waiting for water to boil, combine all ingredients except parsley and arugula in a large skillet. When water comes to a boil, place your nests in the pot and cook until el dante (about five minutes). While the pasta boils turn the heat (under the skillet) up to medium and heat oil mixture for about a minute. Add shrimp and heat through (about three minutes). Remove from heat and add parlsey and arugula. Drain pasta and place in a platter or bowl. Pour skillet contents over pasta, toss, season with salt and pepper and serve.

c h ow LEMON CAKE 1 cup butter, room temperature 2 ½ cups all-purpose flour ½ teaspoon baking powder ½teaspoon baking soda 1 teaspoon salt 1 tablespoon lemon zest 2 cups sugar 2 large eggs 2 tablespoons fresh lemon juice 1 cup low-fat buttermilk ¾ cup sour cream 1 lemon, thinly sliced and seeded Set aside: ¼ cup sugar, ½ cup water, 8 thin lemon slices ¼ cup fresh lemon juice 2 containers premixed cream cheese frosting

LEMON BARS 1 cup flour ½ cup butter ¼ cup sugar pinch of salt 1 cup sugar 2 tbsp. flour ¼ tsp. baking powder zest of 1 lemon juice of 1 lemon 2 eggs beaten sprinkling of icing sugar

Cut butter into dry ingredients and press into ungreased 9” square pan. Bake at 350 degrees for 20 minutes. While crust is baking beat all ingredients together. Pour our over crust and bake at 350 degrees for 25 minutes. Cool and sprinkle with icing sugar. Cut into squares. Preheat oven to 350 degrees. Butter and flour two 8-inch round cake pans, tapping out excess flour or spray with cooking spray. Insert a round of parchment paper cut to fit in the bottom of each pan. In a medium bowl whisk together flour, baking powder, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. With mixer on low, beat in eggs one at a time. Beat in lemon juice. Add sour cream. Alternately beat in flour mixture and buttermilk beginning and ending with flour mixture; mix just until combined. Divide batter between pans and smooth tops. Bake until cakes pull away from sides of pans (about 30 to 35 minutes). While cakes bake bring ½ cup sugar and ½ cup water to a boil in a saucepan. Add lemon slices and simmer 25 minutes. Place lemon slices onto a waxedpaper-lined plate. Stir ¼ cup fresh lemon juice into syrup and set aside until cakes are done. Once cakes are baked let cool in pans 10 minutes. Run a knife around edges of pans and invert cakes onto a wire rack. Poke holes in warm cakes with a toothpick or thin skewer. Spoon syrup over each cake five times and discard reamining syrup or make into lemonaid by adding water and ice. Let cakes cool completely. Frost cooled cakes and top with candied lemon slices.

LEMON COMPOUND BUTTER This make-ahead blend of herbs, lemon and butter is a spring staple. Mix it up in large batches and use it to sauté veggies, scramble eggs, spread on breads and more. Freeze it in logs or cut into pats and freeze and you'll have a quick and natural go-to seasoned delight to finish a sauce, throw into bbq foil packs, round out a roux, or top baked potatoes at the ready all season long. Here we spread it on hot grilled chicken for a melted, tasty, delicious meal. For a more formal affair you can make a small incision in the side of a chicken breast and grill or bread and fry the chicken for a wonderful kiev. He frequently lectures at public forums and to professional organizations, is a popular daytime talk show guest and lends his expertise to writing for a variety of media publications. .

DID YOU ALWAYS WANT TO BE INVOLVED IN THE FIELD OF DESIGN? WHAT WAS YOUR DREAM JOB AS A CHILD? No, I can’t say I did. I was, however, very inquisitive as to how things worked. I would be more interested on taking toys apart to see how they worked rather than play with them. Looking back at my teenage years, it’s easy to link certain characteristics to what I love as a career now. I can’t say that I had a dream job in mind. I do know I wanted to be very successful but had no idea about the definition of success. BEING SURROUNDED BY INSPIRING DESIGN DAILY, HOW DO YOU DECIDE THE DESIGN DIRECTION FOR YOUR OWN HOME? That is definitely a tough one. I have a hard time creating a space for myself. I almost have to create a fictional client in my own place to keep focused. I still can’t tell you what my dream home would be. Last month I would have said a very minimalist contemporary loft, however, after visiting a friend last week I remembered my love for a beautifully-restored Century home. YOUR CAREER HAS GIVEN YOU THE OPPORTUNITY TO EXPERIENCE DESIGN IN MANY DIFFERENT MEDIA. HOW HAVE THOSE EXPERIENCES INFLUENCED THE DESIGNER YOU ARE TODAY? I have been very fortunate to be involved in many unique and interesting projects with some of the most amazing clientele. I have definitely grown as a designer and have honed skills that I didn’t even know I possessed. I am more particular about details than I ever was and I think the best answer would be that “I am humble enough to know that I’m not better than anyone and now wise enough to know I am different from the rest.” BALANCING YOUR MEDIA COMMITMENTS AND YOUR DESIGN BUSINESS, WHAT IS YOUR TYPICAL DAY LIKE? My days are scheduled from start to finish. They are busy and generally full days. I have to ask specifically to have my calendar cleared for a day so that I can simply be me and deal with regular things like hanging out with the team in the office or taking off and having lunch with my kids. Otherwise, it’s an organized chaos every day that I simply love. WHEN DO YOU SPLURGE AND WHEN/WHERE DO YOU SAVE? I splurge on going out with my kids. I splurge on vacations with my kids, I splurge on simply everything I do with my kids. They’re great

kids with amazing values and they appreciate their father to no end and I just love that. I save on the clothes I buy. I love shopping for clothes and finding beautiful things for a great bargain. COULD YOU GIVE US THREE RULES OR THINGS WE SHOULD KNOW BEFORE HIRING A DESIGN PROFESSIONAL? 1: Look very carefully at their portfolio and make sure you love their work. 2: Pay careful attention to how they listen to you. Are they hearing your needs and understanding your fears? Do they have solutions to address both? 3: Listen to your gut feeling. If it feels at all wrong; it is. So, move on. WHAT IS SOME GREAT DESIGN ADVICE YOU’VE BEEN GIVEN? I was good friends with the late Ray Staples and I just loved her nononsense attitude. One of my favorite Ray quotes is, “I’m not one of those people who says there are 10 rules for doing so and so, screw it! Forget rules. Jump in and have fun.” This quote pretty much sums up my feelings. I don’t like to conform to the norm, I want to break the moulds and create the new. WHAT TRENDS DO YOU PREDICT FOR 2015? For 2015, I predict the trend to be “not to be trendy.” Look inside and realize what you love. Create a space that fits who you are, one that functions for you. Make it a space you love to be in and then make it beautiful – for you! WHAT’S YOUR FAVORITE SINGLE ROOM TO TACKLE, GIVEN THE OPPORTUNITY TO RIP IT OUT AND START FROM THE STUDS? The bathroom for sure but the kitchen is a close second. WHAT ARE YOU TIRED OF SEEING? The same old stuff, whether it’s tiles, hardwood, cabinetry or counter surfaces. There are so many beautiful things in this world but unfortunately, not enough people have the love and passion or the time to go out and find them. I spend a lot of my time travelling to get inspiration and to attend industry trade shows where I find some of the newest and most beautiful products.
