the Peach Truck Tour

there are lots of things to love about summer, but fresh peaches rank near the top of the list for many Southerners. Not much beats the simple pleasure of biting into a fresh peach—the taste, the texture, the juice running down your chin—it’s summertime bliss!

Peach lovers in and around Memphis will be excited to learn that fresh, high-quality peaches are coming to town this month and next, thanks to the Peach Truck. The Nashville-based company partners directly with farmers in the South to bring the beloved fruit off the farm and straight to customers nationwide. During peak ripeness season, June and July, the Peach Truck Tour hits the road, bringing peaches, as well as pecans, to locations in 24 states.

On June 19 and July 15 the tour will make stops in several locations in and around Memphis, bringing joy in the form of pre-ordered peaches and pecans. For additional details on the tour or to order, please visit thepeachtruck.com.

In the meantime, here are a couple of The Peach Truck’s staff’s favorite peach-centric recipes to help you start planning ways to best enjoy one of summer’s sweetest perks.

Peach Toast

WEEKEND MORNINGS NEVER HAD IT SO GOOD! WE EXPECT THAT ONCE YOU’VE TRIED THIS DELICIOUS FRENCH TOAST

FILLED WITH MAPLE CREAM CHEESE AND FRESH SLICED

PEACHES, YOU’LL BE MAKING IT AGAIN AND AGAIN.

PREPARED ALMOST LIKE A SANDWICH, WE PREFER USING

A SOFT BREAD LIKE CHALLAH OR BRIOCHE TO SOAK UP THE BATTER.

(serves 4)

THE INGREDIENTS:

1 loaf challah or brioche bread

6 eggs ⅓ cup milk 1 tsp. ground cinnamon ½ tsp. ground nutmeg 1 Tbsp. granulated sugar 4 Tbsp. melted butter, plus more for cooking ½ tsp. almond extract 4 oz. cream cheese, softened 2 Tbsp. pure maple syrup 4-5 fresh peaches Powdered sugar, whipped cream and maple syrup for serving

THE STEPS:

Begin by mixing together the eggs, milk, cinnamon, nutmeg, sugar and melted butter in a blender to make the batter. Transfer to a flat-bottomed baking dish or cake pan and set aside. In a separate small bowl, combine the cream cheese and 2 Tbsp. of maple syrup until smooth. Set aside. Wash, pit and slice the peaches. Set aside.

To assemble, cut eight ½-inch slices of the bread. You’ll use two slices for each serving. Take two slices at a time and open them like a book so they fit back together as one slice. Spread ¼ of the cream cheese mixture onto the inside surface of each set of slices. Arrange peach slices on one side, covering the entire surface before closing up the sandwich and pressing the two sides together lightly. Continue this process until all four are made.

One at a time, carefully lift the assembled French toast, place it in the prepared batter and press lightly to help it absorb the batter. Flip it over so the batter can saturate the other side before lifting it out of the batter and placing it in a buttered skillet over medium-low heat. Cook until browned on one side and turn over to cook the other side.

Place the cooked French toast on a serving platter and arrange any extra slices of peaches around it. Dust with powdered sugar and serve with whipped cream and maple syrup.

Slow Cooker Asian Peach Short Ribs

WHO SAID YOU NEED A GRILL FOR DELICIOUS SUMMERTIME RIBS? THIS RECIPE TAKES ADVANTAGE OF THE CLASSIC SLOW COOKER TO MARRY SPICY ASIAN FLAVORS, RICH BEEF SHORT RIBS AND SWEET GEORGIA PEACHES FOR AN AMAZING MAKE-IN-ADVANCE TREAT!

(serves 6-8)

3 ½ lbs. bone-in beef short ribs or 2 lbs. boneless short ribs ¼ cup flour 1 Tbsp. kosher salt 1 Tbsp. freshly ground black pepper 4 Tbsp. vegetable oil 4-inch section fresh ginger root, peeled and minced (about ¼ cup) 3 Tbsp. minced fresh garlic (about 4 large cloves) 4 fresh peaches, pitted and roughly chopped 1 bunch scallions 1 cup beef broth 1 cup hoisin sauce ¼ cup soy sauce 2 Tbsp. chili paste

THE STEPS:

Mix together the flour, salt and pepper. Coat the short ribs with the seasoned flour, brushing off any excess. Heat a large skillet over medium heat. Working with a few at a time with a little vegetable oil, brown the short ribs on all sides and transfer to slow cooker.

Working in the same pan over medium heat, add the garlic, ginger and chopped peaches and stir. Reserve the green tops of the scallions for garnishing, and roughly chop the white portions, discarding the bottom roots. Add to the pan with the peaches along with the beef broth, hoisin sauce, soy sauce and chili paste. Bring to a boil and pour over the short ribs in the slow cooker. Cover the short ribs and cook on low for 8-9 hours. Serve with steamed sticky rice. Before serving, mince the reserved green tops of the scallions and sprinkle over portions of short ribs.
