For its sixth album, Iron & Wine leader Sam Beam employs a jazz drummer (Brian Blade), an upright bassist (Tony Scherr, on a few tracks), Bob Dylan’s long-time bass player (Tony Garnier, on most of the other tracks), as well as strings and horns of all sorts. It’s not the wild tapestry of sounds that Beam has masterminded over the course of his last two albums. Nor is it the stark, home studio, whispering-in-the-basement beauty found on Iron & Wine’s first pair of albums, which mainly capture Beam’s hushed voice and his John Fahey/Nick Drake inspired acoustic picking and sliding. Beam has gone from one extreme to the other and now he’s made an album that’s somewhere in the middle. One thing that has remained constant throughout Iron & Wine’s six albums is Beam’s undeniable talent as a writer, and particularly his extraordinary gifts as a singer and storyteller. Although Ghost on Ghost offers few surprises, it does showcase Beam’s maturity as a songsmith. On the new album he’s more Paul Simon than he is freak-folk. — JS

any of the Atlantic City area’s most highly acclaimed singers and musicians will join together for the eighth annual Serenity House and Hansen House Street Life Benefit Concert on Wednesday, May 8, at the Concert Venue at Harrah’s. Inspired by a poignant song about a woman’s personal account of life on the streets, the show will feature 20 performers and their bands. Presented by the Hansen Foundation, this year’s concert theme is “A Tribute to Music in Film.” It will honor Print Art’s Carl and Lisa Blase for their extraordinary support of the missions of Hansen House and Serenity House — facilities that provide substance-abuse treatment and affordable, sober-living quarters for those struggling with addiction. Street Life is produced by Melanie Rice and Bob Fowler, and well-known Philadelphia entertainer Eddie Bruce will be among the performers and serve as emcee. The inaugural concert was the brainchild of Northfield’s Nina Soifer, who was inspired by hearing Hansen House founder Jennifer Hansen’s song titled “Street Life” that Hansen wrote about her personal anguish of having lived life on the streets with a drug addiction. “Jennifer’s song really touched me, and I knew it would touch others as well,” says Soifer. “That gave me the idea to put together the Street Life CD and concert. Melanie and Bob immediately came on board as the producers, and they’ve donated countless hours of their time, talent and expertise to make this event a reality.” Tickets are $25 per person and VIP tickets, which include a dessert reception with the musicians after the show, are $150. The Harrah’s box office opens at 5:30pm, doors open at 6:45pm and the show starts 7:30pm. Tickets may also be purchased online at hansenfoundationnj.org. see more online @

Bartender Tips:

Stephanie Troiano of Maynard’s: ‘I was pretty much born into this business’ By Ray Schweibert • feedback@acweekly.com

I

n many cases there are places resilient to change or neighborhood gentrification due to a style that always seems to stay in vogue, or due to a character that makes them beloved among the locals. Maynard’s Café fits the description on both accounts. Maynard’s saw Margate’s Amherst Avenue bayfront morph from a college party community to a more upscale dining district, but still managed to blend in well as the workingman’s equivalent. It has also weathered some serious storms both literally and figuratively, but persevered and thrived through a friendly atmosphere that is well reputed to lend assistance to anyone in need. Maynard’s does about 30 to 40 fundraisers every year. It also has a staff that can seem like a family, which in many cases it is. The late Al Troiano bought and renovated the circa-1914 building in 1966, passing it along to his son Steve in 2003. Several other Troiano family members have staffed the establishment in various capacities over the years, and now Stephanie Troiano, Steve’s daughter, comanages Maynard’s with her dad. She is also a regular face behind the bar, and has been since prior to earning a degree from West Virginia University. Atlantic City Weekly caught up with her recently for the latest installment of its “Bartender Tips.” series. How did you get started in this business? I was pretty much born into it. I started as a waitress before working the bar, and before that I was always here with my grandfather when I was younger, playing with the adding machine and pretending I was a secretary. I was teaching school and when I got laid off due to budget cuts, my dad said he could always use help around here, so I came back. The timing actually worked out pretty well. Did you go to school to learn how to bartend? No, I never took any classes, it was more just watching and learning from other people. Basically about 10 years ago my dad threw me behind the bar on a Wednesday night, which is traditionally a busy night [due to weekday drink specials] and I was a little lost. But I was shown how to run the cash register, I figured out where everything was, and what I didn’t know I’d just ask someone. That’s how I learned. If somebody wanted a particular drink that I was unfamiliar with, I’d first ask another bartender. If they still don’t know I’ll just ask the customer how to make it. Now people can just bring things up on their phones, like ‘I just saw this recipe, can you make this for me?’ What do you like best about bartending? I just enjoy it because it’s not like working to me. It’s fun. You get to meet new people and learn new things on your shift. It’s awesome — like having a job that’s not really work. How often are you asked to suggest a drink for those who can’t decide?

facebook.com/ACWeekly @acweekly

Stephanie Troiano

“You just take your time and do it right, and the customer always appreciates that.” Pretty often. A lot of guys will want to order a shot for a girl and tell me “just give them something girlie.” Basically every summer there’s a shot that becomes the “shot of the summer” that you end up making all summer long, and I’ll often suggest that. The first time I worked I think it was SoCo (Southern Comfort) Limes, the next it was Washington Apples, now Green Tea is a big shot among the younger crowd, which is Jameson, peach schnapps and sour mix. Are there any drinks you don’t like to make? Not really. Sometimes you’re really busy and you’ll get a request for a martini or something that takes a little longer to make, but that doesn’t bother me. You just take your time and do it right, and the customer always appreciates that. I appreciate when I go out and order something off a drink menu and know it was made with care and quality, and customers here do too. Are there rules of thumb for carding people? Actually myself and a few other employees went to a class yesterday that helped us out with carding issues — some tips and tricks to keep an eye out for. We have doormen here on busy nights but I’ll sometimes card people at the bar since I’m never really sure who got carded and who didn’t, and since I’m the person serving the drinks I’m going to be the one held accountable for it. I want to be sure I did everything I could to prevent serving someone who’s underage. It’s funny how people in their early 20s look forward to not getting carded anymore, then take it as almost a compliment if they’re carded in their upper 20s, early 30s. Yeah, I’ve got no problem with being carded personally. I’m going to be 30 in a month, so card away! ■

Il Divo plays May 4 at Revel

The group performs primarily in four languages. in Italian, Roy Orbison’s “Crying,” sung in Spanish and Toni Braxton’s “Unbreak My Heart,” which is also performed in Spanish. Hearing the songs performed in a different language helps eliminate the audience tendency to become weary of hearing songs that have been covered to death by a variety of artists over the years. Prior to the North American leg of their tour, Il Divo recently completed a European road trip. During a performance at the Echo Arena in Liverpool in April, Il Divo dazzled the crowd with a mix of fan favorites. They opened the show with their interpretation of Celine Dion’s “My Heart Will Go On.” The love theme from the epic movie Titanic is one of the new tracks from their greatest hits album, which also includes “I Will Always Love You,” a massive hit for the late Whitney Houston that was written by Dolly Parton and the ubiquitous “I Can’t Help Falling In Love With You,” a wellcovered chestnut most commonly associated with Elvis Presley. Joining Il Divo on their current tour is Katherine Jenkins, a gifted, 32-year-old old Welch mezzo soprano best known to American audiences as a contestant on the 2012 edition of the reality series Dancing With the Stars. Jenkins turns Il Divo into a supergroup when she joins them periodically throughout the show (in a variety of costumes ranging from demure to smoking hot) to perform on selections that include the Broadway standards “Music of the Night” from Phantom of the Opera and “Somewhere” from West Side Story. n

o be certain, the international vocal group Il Divo was hardly the music world’s first “manufactured” ensemble. The movie studio Screen Gems created The Monkees in 1965. Of more recent vintage, now-imprisoned music producer Lou Pearlman organized the Backstreet Boys and ‘N Sync in the mid-1990s. What sets Il Divo apart from the other “boy bands,” however, is their material. While the aforementioned groups confined their repertoire to the popular music of the day, Il Divo often dips into the past to find its songs. And once they settle on a tune, the quartet, consisting of three singers with classical opera training and one with a pop background, give it a unique twist by infusing classical arrangements with a pop sensibility. For lack of a better term, critics began describing this hybrid sound as “popera,” and audiences throughout the world have snatched up tickets to their live shows and have bought enough albums to earn each of their first six studio albums platinum status. Il Divo, which could be considered the ultimate cover band, is touring now behind its seventh album, a greatest hits collection. They’ve created such a stir in the music world that no less than Barbra Streisand was so smitten with their sound that she tapped Il Divo to be her opening act during her 2006 American tour, just three years after they were formed. Today, Il Divo — Italian for “divine male performer” — has shed its opening act status and is considered headliners in every sense of the word and in every corner of the globe. Through the careful management of their creator and manager, British music producer Simon Cowell, the ensemble has assembled such a large body of work in just a decade that they’re already able to successfully tour with a “best of” show, which rolls in Revel’s Ovation Hall Saturday night (May 4) with a 20-piece orchestra. Cowell spent two years scouring the world in search of just the right combination of voices, eventually selecting French pop singer Sebastien Izambard, American tenor David Miller, Spanish baritone Carlos Marin and Swiss tenor Urs Buhler. The group performs primarily in four languages — Spanish, Italian, French and English with a side trip into Latin, a language not generally associated with contemporary music outside of a church setting. Another one of their hooks is performing power ballads commonly associated with one language and transposing it to another. Examples on both their albums and in their live shows include the Righteous Brothers’ “Unchained Melody,” which they perform

MAY 2 - 8, 2013 • ATLANTIC CITY WEEKLY

T

aking its cue from the highly successful Atlantic City Food and Wine Festival, which has grown into a massive summer event since its modest beginnings in 2007, the Atlantic City Alliance (ACA) will be using the promise of an extensive wine list and enticing food items to bring visitors to town before the warm weather hits with what it hopes will be an annual event. The DO AC Boardwalk Wine Promenade takes place Saturday, May 4, and Sunday, May 5, along the Atlantic City Boardwalk. In an unusual example of solidarity, all 12 of Atlantic City’s casino-hotels are banding together for this springtime event celebrating the Atlantic City Boardwalk. The Wine Promenade will be an outdoor wine festival featuring 150 wines presented at seven tented destinations along the Boardwalk. Each destination along the stroll will include seven “themed” stations that highlight the history of Atlantic City. Guests will be offered a broad spectrum of wines, including some selections from four local Atlantic County wineries, ranging from high-quality, affordable wines to prized special wines. Signature bites from several Atlantic City restaurants will be paired with the wines. One-day tickets are $75 in advance and $85 on the day of the event and the event starts at noon both days. Tickets are available at the Boardwalk Hall Box Office, Ticketmaster locations, at doatlanticcity.com/wine or by calling 800-736-1420. On the day of event, you can redeem your ticket at Kennedy Plaza in front of Boardwalk Hall for a wristband. Liza Cartmell, president of the ACA, explains that the event has been in the planning stages since December. “Originally we

facebook.com/ACWeekly @acweekly

“We want to prominently feature Atlantic City as the food and wine destination it has become while making it a fun and different experience.” were hoping to do it as a winter wine festival,” she tells AC Weekly. “It is something they do up in Canada quite well. We ran into some issues about whether Americans were hardy enough and had warm enough woolies and the Boardwalk is always a weather risk so we pushed it to early May as a ‘welcome spring’ event. It’s still taking a risk with the weather, but there will be tents. We want to prominently feature Atlantic City as the food and wine destination it has become while making it a fun and different experience.” Asked about the expected turnout, Cartmell is candid. “We have no idea. Hopefully it will become an annual event, but we need time to build it. It will be highly weather dependant. We hope to get several thousand people. We have an amazing wine list and we’ve got it paired with [good food] and we’ve got fun tents with themes and the opportunity to enjoy the Boardwalk.” Cartmell adds that focus groups in New York, Philadelphia and Baltimore show that, with regard to Hurricane Sandy six months ago: “There is universal knowledge that the [destruction reports about the Boardwalk] had been overblown. The perception [that the Boardwalk was utterly ruined] is still out there, but it is way, way improved.” Cartmell also says that the DO AC campaign is showing significant improvements in selling Atlantic City as a year-round resort and in the perception of the diversity of options that it offers beyond gaming. Cartmell also

notes an up tick in the perception of the town as being more upscale. The Wine Promenade should add to that perception when it unfolds this weekend. For more info visit atlanticcitynj.com. ■

ince opening just over a year ago, Revel has certainly faced more than its fair share of hardship. One undeniable fact though, the shimmering building with the globe on top has brought a dazzling collection of gastronomic options to the area, including star chef concepts from the likes of Marc Forgione, Jose Garces, Luke Palladino, Alain Allegretti and Robert Wiedmaier. In celebration of that fact, the facility offers a second edition of its Taste of Revel — described as a “weekend-long, resort-wide epicurean extravaganza” — from Friday through Sunday, May 10-12. Serving as host for the proceedings is Katie Lee, cookbook author and entertaining maven who formerly appeared on Bravo’s initial season of Top Chef. As host, her duties begin with a “Meet the Chefs Kickoff Bash” on Friday at 6:30pm featuring passed hors d’oeuvres, drinks, music and an opportunity to mingle with Revel’s culinary masters. Other highlights include Conquer the Steak, a workshop hosted by Forgione where participants will learn the secrets of preparing three different cuts of beef; For The Love of Chocolate with Palladino, which features pairings of handcrafted chocolates with exclusive Italian wines; a VIP Box hosted by Wiedmaier (the Mussel Bar proprietor) overlapping Saturday night’s ZZ Top concert in Ovation Hall; and Garces’ Sips of Summer, a demo and tasting of signature cocktails designed specifically for the upcoming season. For a full directory along with times and ticket info, consult Revel’s Web site at revelresorts.com/tasteofrevel. Another tidbid worth noting is a pair of distinct “Sip and Savor” room packages —

tried before or they feel embarrassed to ask about. Since you alluded to change, what did you find most in need of revision? Our main courses were maybe a little too ambitious. I’m not trying to impose something and deliver what they are not ready to try. It’s not just to please my palate as a chef or my ego.

Alain Allegretti

“There is no point to giving them a fish they have never tried before or they feel embarrassed to ask about.” The Sous Chef and The Master Chef — will afford visitors overnight hotel accommodations along with access to a variety of events. Closing out the weekend will be a personal favorite from among Revel’s roster of restaurants, LDV Hospitality’s Azure by Allegretti, which is hosting a spectacular Mother’s Day brunch. Atlantic City Weekly had an opportunity to speak with Allegretti, a native of Nice, France. Congratulations, you’ve now put a full year under your belt locally. What’s your current state of mind regarding Azure specifically and Atlantic City in general?

We feel great. It was a year that we were particularly trying to understand what the clientele is expecting, what we need to grow and what we need to change. We now know what our patrons are coming for. Could you elaborate about what your customers seek? They want something they can relate to and to let us bring it to a different level. Items like halibut, Chilean sea bass, scallops and salmon, but to make it our way. The first priority is the fish. But, there is no point to giving them a fish they have never

Lunch & Dinner

Any new items upcoming on the bill of fare at Azure that you’d like to mention? We are slowly incorporating some different things like frog legs and escargot. Frog legs will be sautéed and set atop a bed of garden puree, Provencal-style with herbs, garlic, tomato and basil. Escargots will be out of the shell, slowly braised with butter, white wine and cayenne pepper then served with a very rich combination of herbs and garlic butter. We have developed a wonderful group of regulars who are happy to be a little more adventurous. If you were to open a restaurant with a completely different concept here in Atlantic City, what would it be? Tough question. My background and style are high-end, but I would do something funoriented around tapas. Not to complete with Jose Garces, but more of a French version where people can relax, sit at a high-top table and enjoy good beer and wine with friends. Keep it always simple. What else should we expect from you and your team in the near future? I do hope to bring the concept [of Azure] to other markets. But everything that we offer here is very specific — the open kitchen, high ceilings and windows with wonderful ocean views. ■ see more online @

Soundgarden in Bloom Again One of the best of the grunge-era rock groups is on tour with new album, plays Borgata May 3. By Ed Condran • feedback@acweekly.com

o much was racing through Chris Cornell’s head when he inducted the band Heart into the Rock and Roll Hall Of Fame two-weeks ago. Cornell, who came of age in Seattle with the grunge-rock outfit Soundgarden, was a perfect choice to induct his fellow Emerald City rockers into the hallowed hall. “It was definitely an honor to be up there for Heart,” Cornell says. “What a great band and a great singer [Ann Wilson] is.” Cornell is one of the most revered vocalists in rock today with a tremendous range. He discovered that he had an unusual set of pipes while growing up with Soundgarden during the late 1980s to 1990s. “My voice is the product of on-the-job training,” Cornell tells Atlantic City Weekly during a recent telephone interview. “I didn’t know what I had. I was moved to take it to another level when we were playing clubs in the early days. I had to scream over the noise back then. That was such a long time ago.” After a 14-year hiatus, Cornell and the rest of his Soundgarden bandmates decided to reunite in 2010. The band also talked about releasing a collection of B-Sides and re-releasing old material.

facebook.com/ACWeekly @acweekly

“I want to keep on making music. Just because you’re at mid-life, doesn’t mean that you can’t create valid music. I think we’re still doing it in Soundgarden.” “But what made the most sense was to just make a new album,” Cornell says while calling from Los Angeles. “The four of us have never had a problem coming up with new ideas. We’re never sitting at ground zero when it comes to creativity. It all flowed.” King Animal, which is the first Soundgarden album in 16 years, is visceral, much like preceding offerings from the Seattle band. However, there are some changes. Most of the arrangements are shorter and many of the new songs are uptempo. “That’s definitely a difference from what we’ve done,” Cornell says. “But when you get older things change.”

Cornell, 48, admits that his set of pipes have changed at mid-life. “That’s the way it goes for everyone,” he says. “A certain amount of range goes away, but that’s fine. We’re all a little different than we were than when we started. The thing that has remained the same is that I write differently with [bassist] Ben [Shepherd] and with [guitarist] Kim [Thayil] and [drummer] Matt [Cameron].” Expect the band to deliver a bunch of hits when it performs Friday, May 3, at the Borgata. “Spoonman,” “Black Hole Sun” and “My Wave” were among the familiar tunes Soundgarden played during a recent concert in suburban Philadelphia. “We still play the songs fans know well,”

Cornell says. “It’s still fun for us to play those songs and we love playing the new material.” Cornell, who has fronted Audioslave and released solo albums, will continue to work on other projects. “But there’s room to keep going with Soundgarden,” he adds. “After doing this for 30 years, I’m not going to divide things up in my brain and overanalyze things. I’m going to continue to make music and I see no reason to stop making music as Soundgarden. We’re re-energized. I love where we are right now.” When asked to look back at the incredible amount of musical talent that came out of Seattle a quarter century ago, his answer changes during every interview. “The reason for that is that my perception keeps changing,” Cornell says. “I’m a little older each time I look back and I see it from a different vantage point now. “I was thinking about it during the Rock and Roll Hall of Fame induction. I’m looking around at Rush, John Fogerty and Heart. These were all my heroes when I was growing up. And now I guess maybe some people look at us in that way and other bands that came out of Seattle — and that makes sense. Kim Thayil helped put Sub Pop Records on the map and that helped change everything. A recipe for success was put together and there were so many great bands that came out during that period that you can compare what happened with Seattle to what happened in punk rock during the ’70s and the Mersey beat during the ’60s. Something huge was going on in Seattle during the ’80s and we were at the center of it. I’m proud to be part of something that had such a huge impact in the world of music.” For much of Cornell’s life, he has taken the advice of Bob Dylan. “Don’t look back” is his credo. “But I’m finally looking back at what Soundgarden and other bands from Seattle accomplished and it’s pretty cool,” Cornell says. “I’ve always been about tomorrow’s accomplishment. I’m still very much in that mode. I want to keep on making music. Just because you’re at mid-life, doesn’t mean that you can’t create valid music. I think we’re still doing it in Soundgarden and I want to do with other projects I’ll be working on in the future. I have no desire to slow down. I’m just going to keep on going. That’s the only way to be. You can’t stop if you’re restless like I am.” ■ see more online @

Pain & Gain

Martin Z. Mollusk Day

All-star Comedy Show

ATLANTIC CITY WEEKLY • MAY 2 - 8, 2013

ichael Bay, the director famous for putting the biggest bang in big-bang movies and conversely, the least amount of character development and emotional connection in his big-screen efforts, thinks he is presenting a change of pace with his so-called comedy Pain & Gain. Perhaps Bay connected with this basedon-fact, sordid tale about idiotic bodybuilders turned into idiotic criminals because the story was so insane it seemed like a bad movie idea to begin with. Bay could apply his action-on-steroids style to a movie about guys actually demented from doing too many steroids and that gave him carte blanche to take his cinematic excesses to the next level. Unfortunately, that next level did not equate into laughs, not with a violent ambiance that is far from comedic. One feels sorry for the cast, in particular Dwayne “The Rock” Johnson who is trying so hard to earn laughs playing a born-again cokehead in an environment that makes those laughs impossible to deliver. Mark Wahlberg and Anthony Mackie are also stuck in this dilemma, and then there is Tony Shalhoub, who is expected to earn laughs because, as the victim of the criminal plan, he is so arrogant and repulsive we are supposed to think it is funny when he gets tortured and forced to sign over his house and business to these bozos. When the trio totally screws up killing him, and he reports the scheme to the police, they don’t believe his story because it is: a) ridiculous and b) he was born in Colombia, so he must be involved with drugs. Only the latter plot point evokes just a hint of the satire this story was designed to evoke. In conclusion, satire delivered with a sledgehammer doesn’t work. ■
