Omelette
Ingredients:
• 3 eggs, beaten
• 1 tsp vegetable oil
• Seasoning
• You can also add: onion, cheese, bacon, ham, peppers.
Method:
1. Season the beaten eggs, then heat oil in a pan over a medium heat.
2. Pour the eggs into the heated pan, then tilt so the egg is covering the pans whole surface area.
3. Scrape the edges after about 20 seconds.
4. You can now add whatever you like and fold!
Even faster method!:
1. Beat the eggs in a mug—season if needed.
2. Microwave for 1 min, stir, then cook for another 30 seconds.
Mashed Potato
Ingredients:
• 50g potatoes
• 20ml milk
• 1 tsp butter
• Salt and pepper
Method:
1. Boil a large saucepan of water add the potatoes and boil until soft when pressed with a fork
2. Drain well in a colander then leave to further drain
3. Tip the potatoes into an empty pan add the milk and butter
4. Remove from heat and mash till you get the consistency you want
5. You can add cheese and herbs if you wish!
Cheese & Potato Pie
Ingredients:
• 1 large potato
• 1 spring onion
• 60g cheese
• Small piece of butter
• Splash of milk
• 2 slices of tomato (optional)
• Salt and pepper
Method:
(Serves 1-2)
1. Peel, slice and dice the potato and boil until cooked; you can check this with a knife!
2. Chop the spring onion and mix with the grated cheese.
3. When the potatoes are cooked, drain excess water.
4. Add the butter and milk, then mash until smooth.
5. Add the chopped spring onion and cheese to the potatoes, keep some cheese back.
6. Season with salt and pepper then spoon into an oven proof dish.
7. Add the remaining cheese to the top and tomato if you wish, place on a baking tray and cook in the oven till golden.
8. To add an extra layer and improve the protein you can put a tin of beans in the dish before adding the potatoes!
Tomato Soup
Ingredients:
• 1 tbsp vegetable oil
• 1 tbsp butter
• 1 onion finely diced
• 1 carrot grated
• 400g tined tomatoes
• 1 stock cube (chicken or vegetable)
• Basil
• Salt and pepper
• Paprika
Method:
1. Heat the oil and butter in a large pan over medium heat add the onion, carrot and garlic. cook until they become soft.
2. Add the tinned tomatoes and stock cube
3. Heat through on a low heat for a few minutes
4. Take off the heat and blend together
5. Add paprika, salt, pepper and basil to taste
6. You can add 75ml single cream to make it richer
Bread Rolls
(Makes 3-6)
Ingredients:
• 200g bread flour
• Pinch of salt
• 1 heaped tsp of yeast
• 150ml warm water (do not add all at once)
Method:
1. Put the flour, oil, salt in a bowl and stir.
2. Add 1 heaped tsp of yeast to the bowl.
3. Add half the warm water and stir with a knife.
4. Use your hands to bring it all together. If it’s dry and crumbly add more warm water but use your hands to mix it. If the mixture feels dry add more water until you have a ball of dough that is ever so slightly sticky.
5. Put the dough on a clean work space and kneed for 10 mins. It should feel smoother in texture and slightly springy.
6. Leave in a warm place for 30 mins.
7. Divide the dough into even sized amounts and shape.
8. Leave in a warm place for 30 minutes.
9. Bake for around 10-15 mins until golden.
10. For softer bread, use warm milk instead of water.
11. Its great to bake bread with others and use the dough for pizza!
Scone Based Pizza
Ingredients:
• 110g self raising flour
• 25g margarine
• 4 tbsp of milk
• Sauce ingredients:
• 1 large tbsp of tomato puree
• 2 tbsp of water
• 1 clove of garlic
Method:
1. Oven goes on at 180c.
2. Make the base by sieving the flour and adding margarine, rub them together and add milk slowly to bring to a soft dough
3. Roll or push out to a round shape to your preference on thickness the thinner it is the crispier it will be
4. Add all the sauce ingredients and mix a cup.
5. Spread the sauce over the base but leave 2 cm between the edge of the base and the sauce
6. Cover in any toppings you want to add
7. This can also be made with the bread roll recipe as the base for a more traditional pizza
Stir Fry
Ingredients:
• Noodles, rice, or serve in a wrap!
• 100g of various vegetables such as: mushrooms, beansprouts, peppers, onion, broccoli
• Chicken or alternative
• Optional sauces include: sweet chilli, hoisin, soya, black bean, chilli and garlic
Method:
1. Half fill a pan with water. Bring to boil, remove from heat and then add noodles. Or, cook rice following cooking instructions .
2. Slice the vegetables into pieces roughly the same size.
3. If using meat, cut into thin strips. For tofu/alternative, cut into cubes.
4. Heat oil in a large frying pan or wok, then fry the onion for a few minutes.
5. If you’re using chicken, place into pan and cook through.
6. Add the rest of the veg and fry for 2-3 mins. Take care not to overcook as they should be served crunchy!
7. Add your chosen sauce and a splash of soy sauce, mix well. Cook for 2-3 mins more until the veg is tender. Stir in the tofu, if using, and
Cheese & Onion Tartlets
Ingredients:
• 150g plain flour
• 75g butter/ margarine
• Cold water
• 100g cheese
• 1 small onion
• 1 egg
• 6 cherry tomatoes - optional
Method:
1. Over on at 180c or gas 6
(Makes 12)
2. Rub together the butter and flour to form fine bread crumb appearance and no lumps of fat are visible
3. Add a small amount of water to bring the dough together
4. Roll out the dough and cut into circles to fit in a muffin tin
5. Dice the onion
6. Grate the cheese
7. Mix together the egg, cheese and onion
8. Fill the pastry cases with the mix
9. Add half a cherry tomato to each case if you wish to
10. Bake for 10 mins until the pastry is cooked
11. Remove from the muffin tin and leave to cool for 2-3 mins more until the veg is tender. Stir in the tofu if using and heat through.
12. Drain the rice/noodles well
13. Serve together
Thai Green Curry
Ingredients:
• 300g raw chicken/ quorn / tofu / chickpeas
• 1 small onion
• 1 garlic clove
• 1/2 tsp chilli
• 1 tsp ginger can be dried or fresh 2tsp Thai green curry paste
• 1 tin coconut milk
• 1 chicken/vegetable stock Cube
• 1 small sweet potato
Method:
1. Cut all the chicken into chunks
2. Heat the oil in a pan over a low medium heat.
3. Add the onion, garlic, chilli and ginger and leave till soft but not coloured
4. Stir in the curry paste and cook for two mins
5. Add the chicken pieces increase the heat and cook till the chicken isn’t raw
6. Add the coconut milk, chicken stock and sweet potato and simmer for 15-20 mins until the sweet potato is tender
7. Take off the heat and serve
Curry Ingredients:
• 2 chicken breast or alternative
• 1 Large onion
• 2 garlic cloves
• 1 tsp coriander seeds
• 1 tsp Cumin seeds
• 1/2 tsp cayenne pepper
• 1 tsp curry powder
• 1 tsp chilli flakes depending on spice tolerance
• 1 stock Cube
• Add any left over veg you have to increase nutritional content
Method:
1. Heat oil in deep frying pan or large saucepan
2. Cook chicken, onion and garlic. Cook over a low heat for 5 mins or follow cooking instructions on any alternatives
3. Add the spices and chilli and stir
4. Add the stock and season to taste
5. Bring to a boil, reduce the infect Simmer for 15 mins
6. Whilst simmering the sauce, cook some rice following the instructions on the packet
7. Drain rice and serve
Spanish Rice
Ingredients:
• 1/4 large onion, chopped
• 1/4 red pepper.
• 20 mushrooms
• 1 garlic cloves
• ½ large tins of tomatoes or 1 small
• 1 tsp tomato purée
• 1 tsp dried herbs
• 1/4 veg stock cubes
• 60g long grain rice
• 1tsp smoked paprika
Method:
1. Slice onions and start gently frying off. Add raw meat of using it
2. When meat has sealed add the other vegetables and cook for 2-3 minutes
3. Add the rice and stir to coat with oil and flavours
4. Add tinned tomatoes and stir
5. Half fill the tin with water and add to the pan and stir then add the stock cube, herbs and spices
6. Stir and add water if needed
7. Cook untill the rice is soft (BE WARNED IT CAN BURN SO STIR REGULARLY AND SIMMER GENTLY)
Chilli Con Carne
Ingredients:
• 200g minced beef
• 1 onion
• 1 garlic clove
• 400g tin tomatoes
• 75g mushrooms
• 400g kidney beans
• 1 chilli
Method:
1. Cook garlic and onion in oil over low heat.
2. Add mince and brown all over
3. Add tomato puree and tomatoes, mushrooms, sait, chilli and pepper. Stir and cook for at least 20 mins [lid on pan].
4. Add drained chilli beans to meat sauce, cook for 5mins.
5. Check, stir occasionally.
6. Serve with rice or a baked potato or make a burrito.
Bolognaise Ingredients:
• 200g minced beef
• 1 onion
• 1 garlic clove
• 400g ton tomatoes
• 75g mushroom
Method:
1. Cook garlic and onion in oil over low heat.
2. Add mince and brown all over.
3. Add tomato pure and tomatoes, mushrooms salt and pepper, stir and cook for at least 20 mins (lid on pan] Check, stir occasionally.
4. Serve with pasta.
5. You can add other left over vegetables
Mac and Cheese
Ingredients:
• 20g margarine (or 1tbsp)
• 100g pasta
• ¼ tsp English mustard
• (OPTIONAL this adds depth in flavour and helps reduce the amount of cheese you need)
• 20g plain flour (or 1 tbsp)
• 125 - 200ml milk
• 50g mature cheddar, grated
• 1-2 handfuls of frozen veg
Method:
1. Heat oven to 200C/fan 180C/gas 6.
2. Bring water to the boil with the frozen veg in. once boiling add pasta and cook for 2 mins less than stated on the pack, then drain
3. Meanwhile place the milk, flour and fat in a pan and heat gently. Stir continuously until the sauce has thickened
4. Simmer for 2 mins, whisking all the time until thickened.
5. Take off the heat, then stir in the mustard and nearly all of the cheese. Keep some for the top
6. Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or 4 individual dishes.
7. Scatter over the remaining cheese, then bake for 20 mins until crisp and golden. This can be crisped fasted under a grill
8. Can be frozen before baking - defrost thoroughly before cooking.
Lasagne
Ingredients:
• 1 thsp olive oll
• 1 carrot
• 2 garlic cloves
• 1 tbsp tomato purée
• 500 ml beef stock
• 9-12 lasagne sheets
• 150g grated cheese
• 50g butter
• 50g plain flour
• 550 ml semi skimmed milk
• 1 onion
• 500g beef mince
• 500 g Tom tomato’s chopped
• 1 tsp Worcestershire sauce
Method:
1. Preheat the oven to gas 6, 200 C, fan 180 C.
2. In a large pan, heat the olive oil overs low heat. Fry the onion, carrot and garlic for 5 mins, or until softened.
3. Add the mince and fry on a medium heat until golden. Stir in the tomato purée, chopped tomatoes and stock.
4. Add in the Worcestershire sauce and simmer for 15 mins, or until the liquid has reduced/thickened. Season. This mixture is called a RAGU. A ragu can be used in many other dishes
5. Meanwhile, make the white sauce. Place the fat, flour and milk in a pan. Heat gently and stir continuously. Once the sauce thickens simmer for at least 2 minutes. DO NOT STOP STIRRING.
6. Layer up the lasagne in a baking dish, starting with a third each of the Ragu, then the pasta, then the white sauce. Repeat twice. Top with the cheese then bake in the oven for 40-45 mins, until piping hot and crisp and bubbling on top.
7. TIP—Assemble in small dishes that can be frozen for a later date
Cottage Pie
Ingredients:
• 1 tsp oil
• 2 medium carrots, chopped
• 1 large onion
• 500g beef mince
• 400g can tomatoes
• 500 ml beef stock
• 2 tsp tomato purée
• Salt and pepper
For the topping
(Serves 4)
• 750g potatoes, peeled and chopped
• 15g butter
• 55ml milk
• You can also add sweet potato. swede, butternut squash for mash as an alternative
Method:
1. Preheat the oven to 190 C or gas 5
2. Heat the oil in a large pan. Add the onion and carrot and cook till soft
3. Add the mince and till brown
4. Add tomatoes, purée and beef stock
5. Cover and simmer for 30 mins. Make sure to season to your taste

7. Spoon the meat into an ovenproof dish. Top with the mash and bake for 30 mins until golden brown
You can used substitutes like quorn mince if you want a vegetarian option and use a vegtable stock cube
Bean Casserole
Ingredients:
• 2 diced carrots
• 1 leek
• 2 garlic cloves
• Tin of tomatoes
• 1 vegetable stock cube
• 200g tinned butter beans
• 200g cannellini beans
• dried herbs
Method:
(Serves 3-4)
1. Cook off the carrots fill they reach desired texture then add the garlic and leeks cook for 3-4 mins
2. Tip the tomatoes in and season. Add the stock bring to a boil, then simmer for 30-35 mins until the veg is tender
3. Stir in the beans with a dash of hot water of necessary and cook for 5 mins
4. Remove from heat and stir in herbs (it’s worth re checking the seasoning now)
Sausage Mediterranean
Ingredients:
• 8 sausages
• 1 onion
• 1 garlic clove
• 400g tinned tomatoes
• 100g mushrooms
• 150g fresh pepper
Method:
1. Chop onion, pepper, mushroom, garlic
2. Put a spoon of oil into a frying pan. Fry the chopped onions until soft and the sausages have browned
3. Add the tinned tomatoes and bring to a boil
4. Simmer gently for 20 mins stirring occasionally
5. Serve with pasta, potatoes, a crusty roll or rice
Tuna Pasta
Ingredients:
• 1 tin tuna
• 20g margarine
• 2og flour
• 200ml milk
• 150g dried pasta
• 50g mushroom
• 75g mixed frozen or fresh veg
Method:
1. Boil water then add the pasta and cook till softened
2. Open and drain the tuna
3. Put the flour, margarine and milk into a pan and whisk gently and bring to a boil
4. Add the rest of the ingredients
5. Turn into a oven dish and put in the oven for 15 mins
Pancakes
Ingredients:
• 100g plain flour
• 2 large eggs
• 300ml milk
• Vegetable oil
Method:
1. Combine all ingredients and leave to rest for half an hour
2. Heat the oil in a pan
3. Add a ladle of the mix into pan and rotate round to cover the pan with a thin layer of mixture
4. When the mix is cooked through flip the pancake over and cook for a few minutes
5. Tip onto a plate and serve with fillings of your choice
Meringue Kisses
Ingredients:
• 1 egg
• 50g caster sugar
• Optional food colouring
Method:
1. Pre-heat the oven at 100ºc
2. Separate the egg into whites and yolks s into clean bowls they have to be really clean or the meringue will collapse. You can use the yolks to make a custard
3. Whisk the egg whites until stiff peaks form
4. Add in teaspoons of sugar amd wisk for at least 30 seconds.. Add another spoon and wisk again for at least 30 seconds. Continue until all the sugar is used up
5. Pipe OR spoon small meringues onto a tray with baking paper
6. Place into a oven on the low heat until crispy
Cookies
Ingredients:
• 318g self raising flour
• Pinch salt
• 226g unsalted butter
• 250g granulated sugar
• 1 large egg
• Chocolate chips
Method:
1. oven on at 180
2. Combine the butter and sugar into a bowl until creamy
3. Add the egg and mix till combined
4. Sift in the flour
5. Add the chocolate chips or ingredients such s raisins
6. Shape into even sized balls
7. Bake for 10 minuets and then leave to rest
Pesto
Ingredients:
• 40g spinach
• 9g basil leaves
• 18g whole almonds
• 10g parmesan cheese
• 1tsp garlic
• Olive oil
• Sea salt
• Black pepper
Method:
1. Put everything but the oil into the blender
2. Then cover about a third of the ingredients with oil
3. Blend together until smooth
4. Add more oil if you want a runnier pesto
5. Season more if needed
Carrot Muffins
Ingredients:
• 125g carrots
• 100g sugar
• 75g margarine
• 100g plain flour
• 1 tsp cinnamon
• 1 tsp making powder
• 1 large egg
• 60g sultanas
Method:
1. oven goes on at 200c
2. Grate the carrot into the bowl
3. In a bowl add sugar and margarine and combine together then sift in the flour
4. Beat the egg into the mix
5. Add in the sultanas and stir, you can add more dry fruit if you wish
6. Spoon some of the mixture into cupcake cases
7. Then bake in the oven for 15 to 20 mins
8. They should be bouncy when done
9. Enjoy
Mug Cake
Ingredients:
• 1 tbsp butter
• 3 tbsp milk
• 1/4 tsp vanilla extract
• 2 tbsp sugar
• 4 tbsp plain flour
• 1/4 tsp baking powder
Method:
1. Melt the butter in your mug the add the milk
2. Stir in the vanilla and sugar
3. Add the rest of the ingredients and then mix with a fork till smooth
4. Microwave for a minute—make sure you let it cool before eating
5. You can try adding different things to change the flavour
Brownie
Ingredients:
• 151g butter
• 200g sugar
• 2 teaspoons vanilla
• 3 eggs
• 120g flour
• 40g coco powder
Method:
1. Add everything into a bowl and whisk gently till combined you can always add milk if the mix is to dry
2. Pour into a deep baking tray
3. Bake for 15-25 mins depending on how gooey you like your brownies
4. Enjoy
Halloumi Pasta
Ingredients:
• 450 g Halloumi,
• 300 g Pasta
• 1 Onion, Peeled and finely chopped
• 3 Cloves Garlic, Peeled and crushed
• 300 g Broccoli
• 250 g Cherry tomatoes
• 2 tsp paprika
• 500 g Passata
Method:
1. Boil your broccoli for about 5 mins and then leave to drain
2. Cut the halloumi into cubes and fry along with the onion and garlic when it’s golden add in your passata and paprika and let it simmer for a few minutes
3. In a separate pan boil your pasta once cooked drain
4. Add your drained pasta and broccoli into the rest of the mix
5. Take it off the heat and add the cherry tomatoes
Sausage Roll
Ingredients:
• small garlic clove handful of parsley
• 400g sausages
• 375g pack ready-rolled puff pastry
Method:
1. Chop the garlic and parsley add to a bowl
2. Squeeze out the sausage meat into the bowl and mix
3. Unroll the puff pastry
4. Put the mix in then middle and roll the pastry
5. Cut into 2 inch sections
6. Bake in the oven at 180°C until golden brown
