IF YOU HAVEN’T been to Blue Island Oyster Bar and Seafood, you’re seriously missing out. It’s a shell of good time with its modern take on nautical décor, fresher-than-fresh delights of the sea and, of course, perfectly paired cocktails— it’s like being dropped into the Hamptons, but without the East Coast accents. The restaurant is owned and operated by Colorado's Shucking Good Hospitality, which collaborates with Long Island's Blue Island Shellfish Farms in its commitment to high-quality seafood. Blue Island Oyster Bar offers a robust selection of oysters, clams, lobster, crab, caviar and dayboat catches every day of the week. Run by Shucking Good owner Sean Huggard—a professional chef, buyer oyster shucker—and his partner and seafood diver Chris Quartuccio, Blue Island Oyster Bar provides guests with the ultimate seafood experience through its dedicated oyster farm and decades-long relationships with fishermen on both coasts offering sustainably sourced seafood. “We couldn't be more excited to open our second outpost in Lone Tree, and bring our fresh dayboat catches to the southern suburbs,” says Huggard. “Having grown up on the East Coast, immersed in the shoreline culture, it’s an honor to work with such knowledgeable and experienced partners, and bring so many coastal flavors and delicacies to Colorado.” This is their second restaurant in the front range and with their success at bringing a taste of the sea to the Rockies, who knows how high they’ll aim next, but we can’t wait to see what the catch of the day brings. COCONUT CURRY MUSSELS Ingredients For the sauce: ½ cup canola oil 1 onion, sliced, approximately ¼ inch thick 1 tablespoon yellow curry powder ½ cup yellow curry paste 2 tablespoons fresh ginger, minced 4 cups coconut milk 4 cups white wine ½ cup lime juice, freshly squeezed 2 tablespoons fish sauce

For the mussels: 1 pound black PEI mussels, scrubbed, debearded 1 tablespoon butter 2 tablespoons tomato, chopped 2 tablespoons red bell pepper, chopped

Method

For the sauce: Heat oil in a heavy, large pot over medium-high heat, add onions, sauté until translucent; add curry powder, stir until fragrant, about 1 minute. Add curry paste, ginger, coconut milk, white wine, lime juice and fish sauce; simmer until reduced by one-fourth. For the mussels: Heat a large sauté pan over medium-high heat, add butter, tomato, red bell pepper and mussels; sauté until peppers and tomatoes are sizzling, about 1 minute. Add 1½ cups of coconut curry sauce, toss until mussels are coated; cover and cook for 3 minutes until mussels open. Using tongs, place mussels in a large pasta bowl, discard any mussels that did not open then pour remaining sauce over mussels. Garnish with chopped cilantro and serve with crusty bread. A New View

Bring your favorite home-away-from-home a bit closer with a CUSTOM MURAL By Heather Shoning PEOPLE BRING HOME treasures from their travels to mark the memories, but what if you could “see” your favorite destination every day right on your wall. A custom mural can do just that, in the sense that it can capture the landscape and scenery, the “feel” of a place, or it can mimic the design of a favorite spot. That’s exactly what painter Genevieve Smith did for a client who wanted to capture the feel of her favorite Palm Beach hotel. She commissioned Smith to turn her dining room into a reflection of the lobby of the Colony Hotel, which features a very midcentury jungle-vibe mural created in de Gournay wallpaper. “[The client] is eccentric, she has a large personality, and her home reflects that,” Smith says. “She loves the beach, and aspects in the mural are meant to express parts of the Bahamas where the homeowners got married. And there’s lots of water to make it feel tropical.” One of the most important considerations, says Smith, is that the mural be representative of you and your personality, not a trend. She likens it to getting a tattoo, but then qualifies: It’s only paint. Do you want your space to feel cozy and tranquil or vibrant and lively? Smith tries to do

as much planning upfront as possible to ensure she and her clients are on the same page about the design using mockups. If a client is somewhat unclear about what they want, Smith will create a collage of ideas to get the conversation rolling. By the time she starts painting, she’s mapped out a strategy. “Sometimes it’s specific, but often the room dictates what it needs to be,” she says. “We have a game plan, but it is art … so it needs room to bend.”

In addition to more traditional landscapes and scenery, she also creates slightly abstruse artwork in the form of misty, gray-on-gray forests or kaleidoscopic ribbons of light filling a lounge to accomplish an “Aurora Borealis” feel. “I want the work to be meaningful and reflect who my clients are,” Smith says, “and to push my artistic abilities.” She’s pushed her skills by painting a rendition of Coolidge’s “Dogs Playing Poker,” floor-to-ceiling line-drawing florals, the Denver skyline, animals, larger-than-life mimosas, Day of the Dead Catarinas and so much more.

“You get to a certain age when you think, ‘I can’t do that’” says Smith. “[A mural] is about allowing yourself to be experimental and not fearful. Don’t color inside the lines.”

Instead of staged vignettes, Agron advises scattering these treasures throughout your home and working them into your existing décor. “For example, we have this vintage ashtray we collected from a hotel in Positano. We don’t smoke but it adds a touch of the unexpected on a side table in our den.” Repurposing items is another great way to weave in your finds. “I fell in love with these prayer beads from Israel and wanted to place them where we could all enjoy them. So now, they’re draped over a picture frame in our hallway, and it brings new life into the space.” On the flip side of scattering your finds, Agron says that if you must have a collection, try making it whimsical, like collecting local postcards to create decoupage coasters. Or collect sand from every beach you visit in bottles or glass jars and put it in containers. “Tuck them in a corner in your home—not a designated travel area but just placed onto a bookshelf or console table. All these little glass bottles are reminders of where we’ve been and help us to appreciate our global environment. In fact, our girls have taken them to school, to study so having them all in a collection, in this case, can be an interactive experience. MAZATLÁN IS A MAGICAL TOWN for travelers of all types, and it’s a great choice for introducing children to international travel and beautiful beach destinations. The city is on a revitalization mission and in recent years has experienced growth in hotels, restaurants and attractions designed to draw visitors. It has watersports, golf, a vibrant arts community and a variety of festivals throughout the year—including the third-largest Carnival celebration (behind Rio de Janeiro and New Orleans) and the annual Day of the Dead festival. VAMOS Since its opening in 1980, Acuario Mazatlán (Mazatlán Aquarium) has been one of the best of its kind and the largest in Mexico. However, this fall (anticipated for September 2022), the city will open its new aquarium which will be the largest in all of Latin America. Located within the city’s Central Park, the New Mazatlán Aquarium will be nearly 540,000 square feet. (To put that in perspective, the Denver Aquarium is 107,000 square feet.) Looking like something out of Jurassic World, the three-level building will feature an oceanic fish tank, containing more than 660,000 gallons of water with a gigantic acrylic window nearly 20 feet tall by 65 feet wide. In addition, the aquarium will have a coral tank, jellyfish, seahorses, rays, turtles, reptiles and a variety of other species. It will be a must-see multimedia aquatic playground. VIEJO MAZATLÁN Plaza Machado is the old town area’s central hub. From here, you’ll find shopping, restaurants, galleries and cultural attractions in addition to street performers and musicians. Immaculate Conception loom large over the north side of the square. This gilded stunner with Gothic, Moorish and Baroque influences, holds a lesser-known secret. The Catholic church has 28 stained glass windows featuring the Star of David. This Jewish symbol serves as a tribute to the local Jewish community that helped fund the final construction of the church. Be sure to see this beauty lit up in the evening. EL MALECÓN Mazatlán’s malecón is one of the longest in the world—stretching 13 miles. Along this famous boardwalk, where you’ll want to get a photo in front of the colorful letters spelling out Mazatlán, and the kids will love the variety of statues to admire along the way. High cliffs, monuments, historical buildings and more dot the surrounding area. EL FARO LIGHTHOUSE If you’ve got some good lil’ hikers (although by Colorado standards, this is really just a walk), you’ll want to visit El Faro Lighthouse. Like all the attractions above, the lighthouse is on the peninsular section of the city—and it’s right at the southern tip. It sits 515 feet above sea level and is the highest natural lighthouse in the Americas—and one of the highest operating lighthouses in the world. The kids will love the glass-bottom lookout after a trudge to the top! NOTE: If you’re looking for something more extreme, you’ll also find the typical vacation destination activities such as ziplining, parasailing, ATV tours and more! 44

And definitely keep your eyes peeled for a churros vendor! CALLING ALL FRANCOPHILES. Visiting Château de Vaux-le-Vicomte may require a long travel day—thanks to its 12 hours or more of flying time from Denver International Airport, plus another hour in the car upon arrival at Charles de Gaulle … but, like the hours spent making your own buttery croissants and pain au chocolat, it is absolutely worth it. “I have been twice, in the summer of 1997 and February of 2018,” says Jaala Sheldon, a Colorado native and the event planner and designer behind Jaala & CO. “You start to realize you’re somewhere special as you approach via the road lined with trees, all of which are perfectly planted and towering into the sky. Arriving at the gates of the château takes your breath away as you witness the architectural masterpiece. The magnitude of the structures and garden are incomprehensible. The history of how it came to be is fascinating and the preservation through all the years of wars and revolutions is miraculous.” Sheldon isn’t overstating it. Not even a little bit. The team behind it—André Le Nôtre, gardener of the King, and architect Louis Le Vau—did such an exquisite job when they built the 100-acre grounds in the 17th century that the duo were later enlisted by Louis

XIV to erect Versailles. (Yes, that Versailles). In all those centuries, only four families owned the magical grounds before it became open to the public by the current owners, the de Vogüé family, in 1968. These days, the interiors are perfectly preserved. “I love to explore the various rooms of the château (especially the Grand Salon) and learn about the history of Nicolas Fouquet and poet Jean de la Fontaine amongst others,” Sheldon says. One of her favorite activities? Wandering the manicured gardens, which as she says, go on for days. “It doesn’t get much better than taking in the fresh air while walking the pathways of this extraordinary place,” she says. “I enjoyed being surrounded by the perfectly curated garden and studying the fountains and statues as I dreamt about what it must have been like in the 1600s as a guest.” Hollywood directors, who know a star when they see one, have filmed movies and TV shows aplenty here. You can see Château de Vaux-le-Vicomte in the 1979 James Bond film Moonraker and 1998’s The Man in the Iron Mask. The cherry on top is having a French picnic with a glass of wine or Champagne while taking it all in. After a picnic, it’s especially satisfying to walk to the far end around the Grand Canal to get a closer glimpse of the monumental Farnese Hercules, [a gold gilt statue of Hercules]. He’s HUGE, but he looks very small from the back steps of the château! Then, turning around and looking back from where you’ve just come from to take in the stunning beauty and scale is amazing. That’s when you realize the true magnitude of Vaux le Vicomte and its stunning beauty. It makes one feel very humble but full.” 49

INSIDER TIPS A popular drive on Maui is to take the Hana Highway to Hana. An insider tip is to leave early in the morning to avoid crowds; stop by a local coffee shop for some Hawaiian coffee, rent a convertible and enjoy the meandering drive to Hana. Right before you reach the town itself on the right side of the road, my favorite “banana bread stand” is by Hana Farms. Definitely try the Chocolate Chip Banana Bread and fresh lilikoi (passion fruit). Beyond Hana, the Pipiwai Trail or Bamboo Forest hike is spectacular. It is possible to drive the entire circumference of East Maui, the road will lead to you Kula, and I highly suggest to make an entire day of it. 52

When thinking of Hawaii, coconuts and palm trees often come to mind, maybe macadamia nuts and mangoes. But cacao? On Maui? That may soon be the case with Maui Ku ‘ia Estate, the burgeoning working chocolate farm on 20 acres of agroforest and factory on the slopes of the West Maui Mountains near Lahaina. The business was opened in October 2019 by Gunars Valkirs, longtime resident and philanthropist, and 100% of profits from the chocolate sales are donated back to the community. Named for the ahupua ‘a (historic land division) on which the farm now stands, the term means “spearhead” as it was previously an area where battle was practiced and training took place.

If you’re lucky enough to be hitting the beach this season (as the saying goes) you’re lucky enough, but to really up the game, it’s all about packing the perfect ensembles for seaside style. “We all want to relax and soak in the sun when we go to the beach, so I recommend keeping the fashions simple yet well-appointed,” Lucchesi says. As with all trips, you want to be smart about what you bring, so look for pieces that can multitask like a pareo that can double as a coverup, a towel or even a casual dress. Also, a well-constructed swimsuit (extra credit if it’s revserable) that flatters and sundresses with flair are essential. “I also recommend bringing a little laundry kit to wash swimsuits and any clothes that might need to freshen up.” And don’t forget sunscreen, sunglasses, sandals, a good texturizing beach hair spray and, of course, a good book.

A Patient Journey of FROM FLY-FISHING to photography, Coloradan Todd Bacon’s passions have led to a destiny-fulfilling career behind the lens, where he aims to capture “life’s essence.” I caught up with him to learn what inspires him to get the shot.

It seems you go to great lengths to get just the right shot. What are some of the unique places or predicaments you’ve found yourself in?

Tell me about your background. Have you always been a photographer? I started shooting about 25 years ago. We had planned a family vacation on Lake Michigan near the tip of the Lower Peninsula of Michigan. I was nursing sore knees from running and skiing and was advised to take some time off from running. That hiatus left a big hole in my daily activities, so on an impulse, I bought a Nikon camera the day before we left and was determined to learn to use it on that trip. I think it was Dale Carnegie who wrote in his famous book How to Win Friends and Influence People that “you become what you think about the most” (I could be wrong about that source, but that concept has stuck with me for decades.) I think about photography a lot. I am largely self-taught from reading photography books, magazines and watching YouTube videos. I probably look at a hundred photographs every day.

What makes you stand apart from other photographers? I have found the world of photographers to be very supportive of each other as people trying to express themselves and supportive of each other’s work, so I prefer to think of it as standing together, rather than standing apart. Having said that, I think my subject matter is more diverse than a lot of photographers’ work. I’m intrigued by the human experience and empathetic to what people go through in life; that means trying to capture life’s essence whether it’s a cowboy at the rodeo or how one reacts to seeing a gorgeous landscape. I come from a lifetime of fly-fishing, and those experiences have taught me the value of patience. So much of photography is just like fly-fishing; sometimes you go out and the fishing is slow, slow, slow. The same can be true with photography: You head out to capture a sunset, and Mother Nature doesn’t cooperate. On the other hand, the sensation of clicking the shutter and knowing that I’ve just taken a great photo is the exact same feeling as the moment of hooking a big fish.

The vast majority of my photography is done outside in natural light. My absolute favorite kind of photo outing is to get up well before dawn and head out into the darkness with a mug of coffee and a banana, a yogurt and a peanut-butter-andjelly sandwich in the passenger seat. I’m a huge music buff, so with the right tunes playing and a great sense of anticipation I’m ready to find out what adventures lie ahead. In terms of unique situations, I have recently dabbled a little bit in night or astral photography. That’s a whole different world unto itself. It can be unnerving to be out in complete darkness (no moon, and the darker the better to get the stars at their best). I photographed the Neowise Comet inside an empty rodeo arena. I photographed the famed Moulton Barns in Grand Teton National Park during a meteor shower with buffalo snorting in the distance. In the Four Corners area of Colorado, I photographed a life-size bronze sculpture of a Native American holding a buffalo skull up to the gods, with the Milky Way lighting up the sky behind him and coyotes howling nearby. For the past two winters, I have photographed horses in snowstorms, trying to capture what they look like after enduring a night of heavy snow and blowing winds. I put myself in their same environment to get those shots standing in knee-deep snow with howling

Light and Color winds and temps in the single digits. That experience is not for everyone, to be sure, but one of my photography heroes, Dewitt Jones, coined the phrase “find the extraordinary in the ordinary” and that mantra helps me to keep my eyes open and to see the world around me in different ways.

paternal grandmother was from Scotland, and my father lived there from age three to six before emigrating to the US. My focus will be on small villages, the Highlands and the Inner and Outer Hebrides with a couple of days in Edinburgh. I’ve been scouring Instagram learning about shooting locations that speak to me.

Where are your favorite places to shoot? I am infatuated with the iconic American West, which includes the landscapes, the architecture and the people. I am on the Board of Trustees of the Mesa Verde Foundation and I love being in the Park at sunset after the crowds have moved on and I have the dwelling sites to myself. What a deeply emotional experience that is, and the challenge for a photographer is how to capture those feelings in a still photograph. I am most familiar with the Rockies, from Wyoming through Colorado and down to New Mexico. In contrast, I recently spent time on the coast of Maine and I felt like everywhere I turned, there was a photo waiting to be taken. I came home with over 1,700 images.

Any recommendations for amateur photographers planning to travel soon? Another one of my photo heroes is National Geographic photographer Jim Richardson. He once responded to a question in a webinar about how to take better photographs by saying, “If you want to take better pictures, put the better subject matter in front of your camera.” Initially I thought he was flippant, but now I find myself thinking about that phrase all the time. For amateur photographers, phones are very capable of taking incredible photos—you don’t need big, expensive gear to be successful. The keys are the subject matter and the quality of the light. I rarely shoot in the middle of the day. I love to get up before dawn and head to a spot that I’ve checked out ahead of time. The best times to shoot are the “blue hour” which occurs just as the first light is coming on in the morning and again after the sun has set in the evening. It only lasts about 15 minutes,

so it’s a misnomer, but it’s all the rage among photographers right now. The “golden hour” refers to the saturated light and long shadows that occur around sunrise and sunset. Where can people see your works? I have an exhibit at the History Colorado Center running mid-March through mid-May featuring horses in the Rockies during winter storms. I’m pretty excited about this opportunity. Additionally, I try to post something every other day on Instagram. I also have several video slideshows on Vimeo where I get to combine my love of music and photography. Fortune has many memories to draw from of going to the theater, both in NYC and Denver. Stressing the importance of the performing arts, Fortune’s parents exposed her to the stage from an early age as they regularly attended theatrical performances together as a family. “My all-time favorite has to be Andrew Lloyd Webber’s Phantom of the Opera,” Fortune recalls, “It was one of the first productions I saw and even as a little girl, I was absolutely captivated by the emotion behind the music. As a teenager I fell in love with Wicked and the way the story is beautifully depicted from an alternative point of view. Now I’ll be adding Mrs. Doubtfire to my list of ongoing favorites!”
