TURN OFF THE ALARM clock this weekend. You deserve a leisurely start to your Saturday and Sunday with a luxurious brunch. Stay in your jammies and eat in or … put on something other than yoga pants to go out. We have suggestions for both. LET’S GO OUT Feeling cooped up? As restaurants loosen capacity numbers, brunch is back. We’ve collected a few restaurant options to brighten your weekend. Note: all restaurants listed here are following COVID guidelines with limited seating, sanitation and employee monitoring. Reservations are a must, as is a mask.

For a few months, brunch was put on the back burner at this popular Castle Pines restaurant. The wait is over. Danielle’s Scratch Kitchen is back on for Sunday brunch and we couldn’t be happier. As always, the fare is Italianinspired – pancetta, Polidori sausage and cremini mushrooms are tucked between a fluffy three-egg omelet; fried calamari and cherry peppers with house made marinara and lemon aioli. Smoked Salmon Pizza with Everything Light and flaky puff pastry meets the salty umami flavors of smoked salmon, pickled capers and onions plus “Everything but the Bagel” seasoning mix in this easy to craft morning pizza. Make 6 servings. Ingredients 1 all-butter frozen puff pastry sheet, thawed (rectangle or round shape) 2 Tablespoons extra-virgin olive oil Everything but the Bagel seasoning blend 4 ounces spinach artichoke spreadable cheese or other soft herbed cheese (like Boursin) Pickled red onions (see below) Pickled capers 2-3 ounces Pastrami-style smoked salmon, sliced into thin slivers PHOTOS: CHAD CHISHOLM

¼ cup grated pecorino Romano cheese Lemon for garnish Method Preheat oven to 425 degrees. Line baking sheet with parchment paper. Unroll puff pastry. Crimp the edges to form a onehalf inch rim that resembles a tart pie or pizza. Poke holes with a fork every 4 inches in the dough. Brush with olive oil and dust with bagel spice. Dot the top with the soft herbed cheese. Bake for 20-25 minutes until pastry is golden. Top immediately with pickled onions, capers, salmon and grated cheese. Serve with lemon wedges. Pickled Onions: Thinly slice ½ red onion, place in a lidded jar. Fill halfway with red wine vinegar. Let sit for a few hours or overnight. Frequently turn upside down to release the liquid from the onion. Note: If you are in a hurry, place sliced onion and cover with vinegar in a glass dish. Microwave for 3 minutes. Cool and serve.

Gluten-free Almond Flour Pancakes Are you looking for a high-protein morning treat that is filling and just sweet enough to be satisfying but not cloying? This recipe is the answer. Ingredients 3 eggs 1 cup cottage cheese 2 Tablespoons Greek yogurt

OVEN BAKED POLENTA WITH PESTO ROASTED TOMATOES AND EGGS

½ teaspoon salt 1 cup almond flour 1 ½ teaspoon baking powder ½ teaspoon baking soda 3 Tablespoons butter, melted 1 teaspoon vanilla

Method Place all ingredients in a blender and mix until very well blended. The texture should be like thick cake batter. Preheat an oiled skillet to medium-low heat (the almond flour will burn if the heat is too high). Pour scant quarter cup in the pan for each pancake. Be patient, wait for the batter to bubble and the sides to cook before turning over.

RASPBERRY RICOTTA MUFFINS

The pancakes will deflate as you take them out of the pan, it’s OK.

SICILIAN SPRITZER Ingredients 2 oz Deviation Distilling Mountain Herb Gin 2 oz fresh squeezed blood orange juice 0.75 oz lime 0.75 oz simple syrup Rosemary sprigs Splash of soda water Method Fill a shaker with ice. In shaker combine gin, blood orange juice, lime and simple syrup along with one rosemary sprig broken into smaller pieces. Shake vigorously for 30 seconds. Strain into a rocks glass filled with ice. Top with a splash of soda water and a blood orange wheel.

Ingredients 2 oz Deviation Distilling Citrus Rosé Gin 2 oz mango ginger syrup (recipe below) 0.5 oz fresh squeezed lemon 1.5 oz Champagne or sparkling wine Lemon peel garnish Method In a shaker combine gin, mango ginger syrup and lemon. Shake with ice to combine. Pour into a glass and top with Champagne or sparkling wine.

MANGO GINGER SYRUP Ingredients 2 fresh mangoes 1 Tbsp fresh minced ginger 3/4 cup sugar 1 cup water

COMMITMENT TO CARE AND COLORADO The couple, who live in Lone Tree, have more than 40 years’ combined experience in senior living—Susie in community management and Tom on the real estate side. Of course, the couple’s top priority is care. Ascent’s communities—Carillon at Belleview Station, Village at Belmar and Hilltop Reserve, which will open in August 2021—have 24-hour nursing. “This is not a Colorado regulatory requirement,” Susie says. “It is something we chose to do so we have that level of care available to our residents.” After resident care, it’s all about offering them a top-notch lifestyle

DESIGNED FOR LIVING At Ascent, there are various floor plans to choose from, including studio, one- and two-bedroom apartments and independent living flats detached from the main building. Depending on the floor plan and level of care, apartments can have walk-in closets, washers and dryers, stainless steel appliances, solid-surface countertops, tile backsplashes and tile bathrooms or shower inserts with modern-looking grab bars and safety features. Ascent Living Communities include wellness centers, gathering areas with fireplaces, outdoor common areas and, of course, beautiful finedining rooms. “It has to feel like a hotel when you walk in,” Tom says, “but it also has to feel comfortable like home.” Dean Maddalena, founder and president of Studio Six 5, the senior living-focused interior design firm working on Hilltop Reserve, says he embraces the “third place” concept coined by Starbucks—it’s a social space where people choose to gather outside of home and work. “We want people to think ‘this is a really cool place to be,’” says Maddalena. “We build in the infrastructure including all of the technology—Wi-Fi, places to plug in with USB ports, program spaces with game rooms for fun and socialization. It’s a vital community place with multiple generations and lots of action.”

Community design is heavily focused on outdoor space, too, so residents can take full advantage of Colorado’s 300+ days of sunshine. “Our communities have high ceilings, lots of windows with natural light coming through,” Tom says. In addition to outdoor gathering spaces, many apartments have private balconies. ALIGNING MICHELIN STARS Because dining is such a massive part of what they do, Tom and Susie recently hired a culinary director who hails from Michelin Star and James Beard award-winning restaurants. The communities feature high-end dining rooms, lounges, full bars and bistros for a more relaxed dining option.

At Hilltop Reserve, residents will be treated to a high-end exhibition kitchen. “We’ve got a couple of these very nice wood-fired hearth ovens,” says Tom. “We’ve got a rotisserie as you would see at Cherry Creek Grill that’ll have chickens or lamb or the protein of the day.” From the individual apartments to curated social events to fine dining experiences, every facet of senior living takes its cues from the hospitality industry. Our client fell in love with this mural from Anewall, and had to have it! Since the mural size was smaller than the room’s ceiling dimensions, the ceiling perimeter around the mural was painted the wall color, to trick the eye and provide the illusion of a full coverage ceiling mural.

With the high vaulted ceilings and subtle carrara marble, our client wanted a bold and colorful statement for the backdrop of the master tub. This wallpaper from Thibaut checked all the boxes for pattern, color and scale.

With an open riser staircase being the focal element as you enter this home, we decided to wallpaper the entire backdrop of the stairwell, from the basement to the second floor. This Cole & Sons hand-painted banded stripe was just enough whimsy to add to the staircase ambiance, without being a distraction.

By Amanda Lacey IT COMES as no surprise that stance and alignment are key in golf, but often just as critical for the more fashion-forward player is the clothing aspect. With an array of designers to choose from, putting a look together might seem like an easy task, but we have some tips on the spring/summer trends that you’ll want in on. 1 Colorado PGA Golf in Schools - An introductory program at no cost to students or schools, PGA Professionals have been bringing the program to schools since 2008.

4 PGA Jr. League - Teams are captained by PGA and LPGA Professionals in this fun, social and inclusive opportunity for boys and girls age 17 and under.

2 3 Youth on Course - This program provides juniors the opportunity to play golf at participating facilities for no more than $5. In 2020, 30 facilities participated with over 4,000 rounds of golf played.

Drive Chip & Putt - This free youth golf development initiative welcomes boys and girls ages 7-15. Local qualifying skills competitions are hosted by PGA Professionals.

Farm Refresh How one COLORADO FLOWER FARMER is growing happiness, flower by flower. By Kathryn O’Shea-Evans BRIANA BOSCH is a fifth-generation farmer, but it took a personal tragedy for her to go back to her roots—literally. “I had a really close friend that ended up with intense postpartum depression...and died (by suicide),” she says. “I felt like I needed a drastic change to get back to feeling like myself again. I started looking around: what am I doing with my life right now? I don’t feel like I have any purpose, any drive.” At the time in 2018, Bosch—who has her MBA and has been everything from a ballerina to a journalist to a brand manager —was nine months pregnant with her second daughter. Then a house, just under two acres, came on the market near Crown Hill Park, started whispering to her. “I told my husband, ‘let’s just go look at it—we don’t have to buy it.” But as she stepped

onto the property, she didn’t even look at the house—just went straight to the land. “Something in my heart called me to the farm,” she recalls. Although a deep-pocketed developer was interested in the property and wanted to build townhomes, the owner ended up choosing Bosch and her family to buy the place. “He decided to make the call that he would rather have someone here who wanted to enjoy the land a little bit more and not just raze it all,” she says. Enjoy the land they have Ever a powerhouse, Bosch has kick-started something of a Colorado florist farmer empire on their plot. Blossom & Branch offers everything from freshly-grown floral arrangements (including a CSA, or community supported agriculture, where you can buy monthly bouquets of freshly-picked blooms grown right there on the premises) to classes in their just-revamped barn with topics that range from herbal cocktails to soil blocking. Some of Bosch’s favorite flowers to grow in this corner of Colorado? “Zinnias and cosmos and sunflowers do really well,” she says. Dahlias, too. “I call them our divas...they like to be really well drained and don’t like to be fertilized. Once you find a rhythm with dahlias, they’re very happy.” Her trick: don’t overwater them, or they’ll end up rotting. “Plant them, water them once, and don’t water them again until you see green coming up above the soil!”

Speaking of green, sustainability is key for Bosch, who espouses water conservation and other eco-practices on her farm. “One of the things I mentioned on Instagram is native plants—like yarrow, dill, and milkweed,” she says. “Those things are good for pollinators.” She recommends seeking your plantings at local nurseries over big box stores. “CSU extension service has a great list of local [spots, and you can] call them for free to ask: ‘what should I plant?’ If people are interested in local flowers, [we recommend] that they tell their florist ‘I am interested in getting more local flowers.’ The more consumer demand for that, the more florists will be responsive to it.” Call it flower power.

Tracing Monet’s Footsteps in France By Kathryn O’Shea-Evans LONGTIME artist and art educator Meg Carte shares some of the top stops on one of the most transformative journeys of her life: a group trip led by her friend, David Chang, Frost Professor of Art at Florida International University, through France following in Claude Monet’s footsteps. (Proof their tour was authentic? She carried a Jullian French easel—the exact same brand the impressionists used—along with her to capture the sights, just as the painter would have.) Here are Carte’s favorite cultural stopovers for your next hop across the pond. Musée Marmottan Monet “This is a gallery museum [in Paris] that most people don’t know about,” Carte says. “They have [Monet’s] original sketches from when he was growing up in Le Havre. When he was in school, he used to draw caricatures of his professors—he got in a lot of trouble for it, but he got some local grocery to let him sell them.
