TAKE THE PLUNGE AFTER ABOUT 10 YEARS, the much-anticipated Palisade Plunge will open this May and will be the country’s newest long-distance downhill mixed-use singletrack. Flower Child’s menu includes bountiful salads and Buddhastyle bowls such as the year-round Mother Earth, with a blend of ancient grains, grilled sweet potato and portobello mushroom, topped with avocado, cucumber, broccoli pesto, charred onion, leafy greens, red pepper miso vinaigrette and a sprinkle of hemp seed. It’s good just as-is, or you can add a meat, seafood or plant protein. There is an option to make your own plate – pick a protein and two sides like cracked cauliflower and quinoa with date, currant, pistachio, Greek yogurt, cilantro, mint and you are good to go. It wouldn’t be right not to mention the healthy queen bee of Denver. The older sister to Flower Child, True Food never fails to inspire. Microgreens Spring Salad with Pomegranate-Lime Vinaigrette Makes 8 servings Ingredients 10 ounces asparagus, rinsed and trimmed 1 teaspoon olive oil 4 cups fresh microgreens, rinsed and drained 2 cups fresh blackberries ¼ cup slivered almonds or pine nuts ½ cup pomegranate arils salt and pepper to taste For Dressing ½ cup pomegranate juice ¼ cup red wine vinegar 2 Tablespoons honey ½ cup olive oil 1 fresh lime, juiced (about 2 Tablespoons) Method Heat oven to 400 degrees. Place asparagus on a baking sheet and drizzle with olive oil. Roast for about 8 minutes until crisp. Remove from the oven and set aside. When cool, cut asparagus into 1-inch pieces (this can be done earlier in the day). Assemble the salad in a large, decorative bowl by tossing together the microgreens, asparagus, blackberries, nuts, pomegranate arils and salt and pepper, if using. To make dressing, in a small bowl, mix together pomegranate juice, vinegar and honey. Let it sit for 10 minutes at room temperature. Whisk in olive oil and lime juice. Store leftover dressing in the refrigerator. Stir thoroughly before serving. Time Saving Tips! Make the salad dressing in advance. Prepare the asparagus in advance and chill in the refrigerator. For a rich, nutty flavor, toast the almonds in a 350-degree oven for about 5 minutes and cool before serving. Since we are spending more time at home, we are also spending more time staring at screens. Blue light can be damaging not only to our eyes, but studies are now showing it can escalate the effects of aging. Blue light is shorter in length than ultraviolet light (UV), and it has been proven that UV light causes skin cancer and ages the skin. We’re so accustomed to seeing blue light that the effects seem harmless. This doesn’t imply that blue light causes skin cancer but it has been linked to aging the skin. There are different levels on blue light that actually help the skin, like blue light therapy for acne and inflammation. The blue light we see on our screens is different. If sunscreen is part of your daily regimen, you’re already ahead of the game. Zinc oxide and titanium dioxide provide some blocking of blue light; Vitamin C also helps. Switching devices to night mode changes the type of light they emit and doesn’t disrupt our sleep rhythms. Beauty rest is a real thing.

Consider men who earn a living from their smoldering handsomeness, protuberant biceps and corrugated abs. “Male model” doesn’t exactly suggest “Mensa member.” Nor does a movie like Zoolander debunk the cliché of male models as narcissistic dimwits. “I think Zoolander’s hilarious,” Gregg Avedon says with a laugh. “I wasn’t offended by it at all, because I know people like that.” The 56-yearold model also knows those people are nothing like him. In addition to a 33-year modeling career highlighted by more than two dozen covers of Men’s Health and clients such as Gianni Versace, Dolce & Gabbana, Trussardi and other major fashion houses, Avedon is a bestselling author, champion bass fisherman, sought-after personal trainer, accomplished photographer and, above all, devoted family man. “I never take myself that seriously,” the owner of that face says. He’s dressed in a loose-fitting T-shirt and shorts on a balmy February day. His countenance suggests a hybrid of Richard Gere and Bryan Cranston; his arms bulge like those of Dwayne “the Rock” Johnson, whose Florida gym Avedon managed for three years. “I’m just a normal guy; that’s who I am,” he continues. “Look, we’re all in this together. Avedon’s humility and drive stems from being a shy, skinny son of a Great Santini-type father. After getting his “butt kicked” trying out for the high school football team, the 15-year-old walked into the weight room “and became completely obsessed. I got to school early to help the coach set up the weight room and lifted between classes and for three hours after school ended.” A passion for health, wellness and fitness kicked in, as did a sense of self-confidence and self-discipline. “I realized I didn’t like team sports—or relying on other people,” he says. At 17, he won the first of the 22 bodybuilding competitions he’d enter during high school and college. He quit competing after graduation to pursue a career as a commercial artist. Then a chance encounter with a modeling agent at a Miami mall forever changed his career trajectory. But it didn’t change him. While circumnavigating the globe for photo shoots rewarded him with lifetime platinum elite status on numerous airlines, it did not turn him into a high-living jet setter. “It was always about being professional, making a living to support my wife and kids at home,” he explains.

If a shoot in the Seychelles or Bahamas wrapped days sooner than scheduled, he says he’d forsake a few all-expense-paid days in paradise in favor of catching the next flight home—even if he had to charter it. “And unlike 98 percent of the models who want the free meal, I’d never go to dinner with my clients or other models,” he explains. Instead, when checking into a hotel, he says he’d always find the closest gym and shop for food—two yogurts, four pieces of fruit, a bag of lettuce and two cans of tuna per each day of his stay. “I’d eat in my room with food I can control,” he says. “When I was traveling all over, if I could control my nutrition and my sleep, I looked better, I functioned better and I felt better. And that was more important to me than partying and screwing around.” He treated his clients with respect and demanded it in return. “A lot of clients think ‘Oh, he’s just a model,’ but I think it was different for me,” he reflects. “Most models start younger, never went to college—they take the abuse, suck it up and keep going—but because I started modeling after graduating from college, I was in a different place. I had clients and photographers who would treat people like crap, but they treated me well. I think they sensed they couldn’t get away with treating me poorly.”

YOU ALWAYS HEAR the advice to listen to your gut but when society is urging you to stay the course, it’s not always easy to let your intuition guide you. In 2008, Heather Harrington was working in finance and following the career path she had always thought she wanted. In reality, that job was the catalyst for her to finally follow her heart. “I would wait until noon to go to the gym every day. That’s where my creativity flowed and I felt more like me — not sitting at my desk every day,” remembers Heather with a smile. She knew what she had to do to live more authentically, so after some time, she finally took the plunge. She left her cushy finance job to become a certified yoga instructor, then personal trainer, spin instructor and so on. “I just couldn’t get enough. My body and my brain were fueled by fitness and the community I was creating was amazing.” Fast forward to 2017 and Heather once again listened to that little voice. This time it told her to gather that community and start a gym where she could share her passions and her talents every day. That dream became Compass Fitness Denver. “It was amazing — people started showing up hungry for more so we grew to 20 instructors, offered kid care and eventually expanded our offerings between two locations — Compass Fitness and Compass Wellness.”

So in 2020, Heather Harrington was living the life she designed. Despite the intense stressors of COVID (especially on the fitness community), her adorable daughter and hunky husband were by her side, and her two gyms were thriving with both virtual and small group in-person classes. Heather’s sense of humor, down-to-earth personality and tough-as-nails determination make her a force to be reckoned with, yet when her doctor told her not to worry about getting a mammogram at 40, she couldn’t shake that nagging voice again. Her grandmother was diagnosed with breast cancer at the age of 42, so Heather felt like she needed to be sure. Despite her doctor’s advice, she trusted that voice and got a mammogram as her 41st birthday present to herself. And it’s lucky she did.

“Here I am, navigating a global pandemic as a female business owner of two gyms, raising my five-year-old daughter, trying to keep it all together and now I have to deal with cancer? It felt surreal to say the least.” It turns out Heather had stage 3 breast cancer. Last August the doctors found three tumors and were concerned there could be more. “These tumors spanned a large area and were growing fast. I had to take action right away.” In typical Heather fashion she faced cancer head-on with her family, friends and fitness community supporting her every step of the way. Her cheerleaders helped her stay focused on healing, focused on being authentic and of course, infused each day with an oversized dose of humor. “Being able to laugh is such a gift, truly a gift.”

Fast forward to almost 10 months after her diagnosis: Heather had a bilateral mastectomy followed by chemotherapy to target her fast-growing, estrogen-fueled breast cancer. She’s gearing up for reconstructive surgery and her outlook is as positive as ever. “You have a choice to live in fear or to let go of the worries and focus on the good. As hard as this year has been, I’m showing my daughter what it means to be a strong woman, how to be resilient no matter what and to value the importance of community. Those are the things I choose to focus on.” As she looks to the future, Heather wants to open more Compass Fitness gyms and to grow her brand with workshops, retreats and new virtual classes each day. The hot springs sources are untreated waters containing 34 minerals and trace elements, (especially high in sulfate, nitrate, zinc and potassium) from a nearby hillside behind the spa. These therapeutic waters flow through narrow, shallow channels down into the caves which then push through the stone floors at a steamy 125 degrees Fahrenheit. This magical transition therein creates natural geothermal baths within three consecutive underground rock chambers where guests can experience
