THERE’S NOT MUCH we don’t like to grill come July. Flamed fish and fowl, seared steaks and scallops, roasted romaine and radishes – the sky is the limit so get ready for a summer filled with flame-cooked foods.
BBQ 101: GAS OR CHARCOAL: Ahhh…the age-old grate debate! Gas grills are so convenient and perfect for quick dinners with minimal know-how and clean up but if you want that smoky flavor and gorgeous char marks, charcoal is tops. Because they can reach very hot temperatures, charcoal grills are the best for smoking, searing and charring. However, they take more set up and clean up. Bottom line, it’s a personal preference, but regardless of your type of grill, you’re still winning because you’re grilling! CLEAN AND SEASON: The first step to any great grilling experience is to ensure your grill is clean. For steel or cast iron (non-coated) grates, use a stiff bristled steel brush to get any gunk, grime, or rust off. For porcelaincoated (or other non-stick coated) cast iron, use a nylon bristled brush to avoid scratching. Next, make sure the bottom of the grill is clear of any debris. Sometimes, things can get stuck and block the heat source, especially with charcoal grills. LOW AND SLOW: Grilling with indirect heat will take a little longer just the smoky flavor you’ll obtain will be worth the wait. Assemble a small pile of coals on one half of the grill bed or pit (or ignite but one set of burners on a gas grill). Place food to the side of the source of heat rather than directly over it. DON’T BE PUSHY: Pushing your meat down against the grates promotes flareups and can lead to burnt food. Trust the low and slow method and use a meat thermometer for food safety guidelines.

GRILLED PIZZA INGREDIENTS
For the crust ½ cup warm water 2 Tablespoons honey 2 ½ teaspoons active dry yeast 2 Tablespoons olive oil ½ teaspoon kosher salt ¾ cup unbleached all-purpose flour ¾ cup plus 2 Tablespoons white whole wheat flour, divided Find-ground conrmeal for rolling
For the pizza 2 ears sweet corn 1 zucchini cut into ribbons or thin rounds 2 Tablespoons olive oil divided 2 Tablespoons rosemary 2 clove garlic minced 4 ounces fresh mozzarella torn or shredded 2 ounces Gorgonzola crumbled METHOD To make the crust: In the bowl of a stand mixer fitted with a dough hook (or in a bowl and using a wooden spoon), combine the water, honey and yeast. Let sit until the yeast activates, 5 to 10 minutes. Stir in the olive oil, sea salt, unbleached allpurpose flour, and ½ cup of the white whole wheat flour. Turn on the mixer and mix until the dough comes together, adding 1 tablespoon of the white whole wheat flour at a time until the dough begins to pull away from the sides of the bowl and is no longer sticky. Remove from the mixer, cover with a warm damp towel, and place the bowl in a draft-free spot to rise for 1 hour. After the initial rise, punch down the dough and preheat the grill to medium-low heat. Shuck the corn and remove remaining silks. Cut zucchini into ribbons or rounds. Rub both with 1/2 Tablespoon of the olive oil and place on the grill. Cook, turning occasionally until charred, 6 to 8 minutes. Remove from the heat, let cool slightly, then remove the kernels from the cob.
Grill the pizza until the cheese has melted and the crust has a nice char. If the crust is cooking too fast, move the pizza to a cooler part of the grill. Recipe adapted from Foodie Crush

Sprinkle the cornmeal on a cutting board or pizza peel and turn the dough out onto the cornmeal and roll into a 14-inch circle. Brush the top with ½ of the olive oil. Place the crust olive-oilside-down on the grill and cook until puffed and browned. Flip and brush the remaining 1 Tablespoon of olive oil onto the dough, then sprinkle on the garlic, rosemary, cheeses and charred corn kernels and zucchini.

GRILLED PINEAPPLE with Nutella and Macadamia Nuts INGREDIENTS 1 pineapple, cored and sliced ½ inch thick Nutella ½ cup of macadamia nuts, toasted 2 Tablesoons chopped mint METHOD Cut off the skin of the pineapple trying to save as much pineapple as possible. Keeping the pineapple whole, use a corer and remove the core from the center of the pineapple. Next slice pineapple into 1″ thick slices. Heat grill to medium high heat and grill each slice for 2-3 minutes per side. Remove from grill and set aside. Toast macadamia nuts in a sauté pan over medium high heat for 3-5 minutes. In the meantime, put 1 tablespoon of Nutella on each pineapple slice. Serve pineapple slices individually or stacked on top of each other {like a cake}. Top the pineapple with 1 Tablespoon of toasted macadamia nuts and chopped mint. Recipe adapted from Joyful Healthy Eats

THERE IS PERHAPS nothing better than a fresh Colorado peach from our farmer’s markets. They make the perfect backdrop for cool and bright warm-weather mocktails and frozen treats.

PEACH BELLINI The Bellini champagne cocktail dates somewhere between the 1930s and 1940s, by the Giuseppe Cipriani, the owner of Harry’s Bar in Venice, where the likes of Ernest Hemingway, Truman Capote and Orson Welles frequently hung out. Anywhere grapes grow well, so do peaches, which means like Colorado, Italy has an abundance of the fruit in summertime. Cipriani was enamored by Italian peaches and the 15th century Venetian painter Giovanni Bellini. He captured his love for both in the cocktail made from peach purée and Venetian prosecco, named for the artist. We’ve dried out the recipe here for non-drinkers. But the base is the same whether you use non-alcoholic or traditional prosecco. Makes 4-6 drinks. INGREDIENTS 2 fresh ripe Colorado peaches Chilled sparkling dry Prosecco* METHOD Peel and pit peaches. Place in blender and puree. Add 1-2 Tablespoons peaches to the bottom of each champagne glass. PEACH DRY LEMONADE or popsicles
INGREDIENTS 3 ½ cups water, divided 3 ripe peaches, pitted, peeled and chopped ¾ cup to 1 cup sugar (less if peaches are very sweet) ¾ cup lemon juice Mint or basil garnish METHOD Place 2 cups water in a sauce pan. Add chopped peaches. Bring to a boil and take the heat down to a simmer for 8-10 minutes. Purée in a blender and cool. Place remaining water, lemon juice and peach purée in a pitcher. Serve over ice with garnish. For popsicles, pour lemonade into molds and freeze until firm.

Table Topping Creating the perfect SUMMER TABLESCAPE for any occasion By Heather Shoning SUMMER IS the perfect time to shed pretense and embrace casual-chic— especially when it comes to entertaining. Our gorgeous Colorado weather beckons us outdoors, which is ideal for informal gatherings. But that doesn’t mean they can’t be fabulous. Here’s what you need to know to set a spectacular tabletop—and beyond—for any summer occasion.
LAYER YOUR TABLE
Create casual drama with layers. Denver event planner, Jaala Sheldon of Jaala and Co., says skip the long, full table coverings for outdoor events because they can blow in the breeze. “Create a sophisticated look using table runners, napkins and a great centerpiece,” she says. You can also layer chargers and a variety of stacked plates. Want to go big? Layer them all! Create a gorgeous centerpiece. “Use garlands or eucalyptus,” says Laura Tarket-Johnson, owner of T is for Table. “You don’t want your centerpieces overwhelming the conversation; you want them to enhance the conversation.” Tip: When layering materials, don’t skimp on texture. Think: wood, bamboo, beads and grasscloth.

Blending colors and patterns on your tabletop can be a beautiful way to wow your guests and there’s little commitment—you can just switch it up for every occasion. Put together complementary colors such as deep teal with rich apricot or spring green with amethyst. Tarket-Johnson suggests mixing a floral, a check and a pattern with natural elements such as butterflies or hummingbirds. Feel free to commingle linens, of course, but also dinnerware and flatware. This is a great way to incorporate inherited china patterns with your favorite modern dishes. “Don’t be afraid to mix and match and not have anything look the same,” says Tarket-Johnson. Tip: Pay attention to the scale of your patterns and be sure they are varied, such as a small nature print with a medium check and a large floral.

If your outdoor table is situated under a pergola or even a lovely tree, you’ve got a great canvas above to continue decorating. From a pergola, hang sheer drapes for ambiance. For evening gatherings, Sheldon says lighting is key: “Lanterns or lightweight bamboo chandeliers are great for above the table. For additional lighting, rice paper lanterns are making a big comeback. Or consider tiny fairy lights simply hanging straight down.” Decorative outdoor string lights provide a warm glow, and they come in a variety of shapes and designs, from modern to traditional. Try something even more casual, create your own lighting using hanging mason jars with battery-operated mini string lights or candles. Tip: Opt for candlelight, which Sheldon suggests is relaxing and great for getting guests to linger. But be sure the candle containers are the right height to prevent accidents or the candles from blowing out.

ECOSYSTEM POND: PEACE AND TRANQUILITY While an ecosystem pond is not for splashing, plunging or soaking the mental-health benefits are plentiful. First, an ecosystem pond is, just as the name implies, a complete ecosystem right in your backyard. “This type of water feature is dependent on a skimmer box and a bio falls filter system, combined with gravel bottom, plus fish and plants,” says Mark Russo, owner of Rocky Mountain Waterscape, “Take one out and you upset the balance.” Large boulders and artistry are important for a quality pond, and Russo says streams that twist and turn are key. Imagine sitting near your pond, listening to the babbling of a waterfall right in your backyard. That level of relaxation can be life-changing. Russo recalls a couple for whom he had built a pond 20 years ago: “The husband wasn’t sold on the idea, but then before it was even finished, he called to tell me he had been outside all night listening to the relaxing sounds—he couldn’t tear himself away,” Russo says. “And they are still loving that pond today.”

SET ON A RIVER overlooking the Teton mountain range, Alma’s Lodge is a haven for fisherman the world over, and it has been for over a century. As the story goes, Alma Kunz began guiding at the age of 18 with the majestic Tetons as his backdrop. Born in Teton Valley in 1901, his aptitude for fishing and hunting earned him a reputation of outdoor expert, so when a wealthy gentleman from the East Coast came to Idaho to fish the Teton River, he asked around for someone to guide him. Everyone in town knew Kunz was his man. He was a muskrat trapper and a part-time fisherman, yet he knew the river well enough to know where the fish would be hiding. That was good enough for the East Coaster, so between delivering milk from local dairy farms, he rigged up his “Johnny boat” and became an official river

guide; a role he was lucky enough to have for the rest of his life. In 1938 Kunz bought some land and began to build a main lodge and a sleeping lodge, the humble beginnings for what would become Alma’s Lodge—the first fishing lodge west of the Mississippi. He ran the trapping and fishing outfitter with his sons while his wife served up homecooked dinners for guests that would soon become extended family. Year after year, families and friends would come to eat, fish, sleep, repeat. But between the fish tales, huckleberry cobbler and historic log cabins, the guests came for something much more meaningful —the camaraderie and community built around this vast, beautiful wilderness.

“It has always been a fly-fishing camp and will always be a fly-fishing camp. It is a place to come and get away from the tribulations and toils of the world,” says John Perhson, who started guiding for Kunz in the 1950s and who owned the Lodge with Randy Berry from 1970 − 2003. “It’s as relevant today as it was four decades ago, and it will be four decades from now too.” John attests it’s pertinence to the legacy that Kunz instilled in his family and in his staff to treat everyone like family, welcoming them to the table and sharing their days on the river. “We’re all stewards of this land and of Alma Kunz. We honor and respect it, and luckily we call it home.” Through John’s 55 years of guiding fly-fishing float trips, tying flies and catching rainbow and native cutthroat trout at

Teton Valley Lodge, he’s become a living legend and the only one left who can recall those early days and stories of the beginning. And as a true storyteller, Pehrson sat down to immortalize the history in his book, A Fly Fishing Tale, The Legacy of Alma’s Lodge which brings to life a century of the outdoors, fly-fishing, love, friendships, faith and hope. “As the last of the old guard, I had an obligation to keep these stories alive and to honor Alma. It’s his life’s work and it’s become all of ours as well.” Pehrson chuckles when he shares, “Alma was a true character, full of ‘BS’ up to his ears and a mean card player. People loved hearing his stories and losing their money in a game of pinochle or gin rummy. He was the glue that bonded us all, and still does.”

The guides that work here also leave their mark on The Lodge. “It’s long hours spent rigging rods, guiding rafts, wading into rivers, casting under the sun, it’s a labor of love that’s physically exhausting but it’s so worth. waterfowl, and we can also hunt ruffled grouse in the surrounding mountain canyons. We also added pheasant hunting to our offerings and it’s quickly becoming a favorite,” says Cleary. Teton Valley Lodge as it’s known today, has been in the family now for four generations. Today, Brian Berry and his wife Joselle at the helm, living, working and dedicated to creating the same magic Berry’s great grandfather made years before. Year after year, guests float down these majestic rivers, watch the wildlife and attempt to catch and release rainbows, browns and cutthroats, but most of all, they share their lives and become family, one fish tale at a time. Embracing the Authentic
With only 63 homesites and 900 acres of spectacular open space, ALPINE MOUNTAIN RANCH & CLUB remains an idyllic redoubt of the real Steamboat Springs. By Jon Rizzi AT ALPINE MOUNTAIN RANCH & CLUB— a gated, 1,216-acre residential enclave of fiveacre homesites that showcase the natural splendor of Steamboat Springs—one of the most desirable locations is a stone-andwood cabin. This is a real cabin, not a threebedroom guest house that goes by the name. It measures 375 square feet—no bigger than the master bathroom in any of the 63 luxury homes that will eventually comprise the development. Known as the Hermitage, the wee structure tucks into the aspen groves climbing toward the Medicine Bow-Routt National Forests. It sports a wood fireplace, stocked bar, leather chairs and an outdoor deck—all of which residents can access by foot, snowshoe, horse or skis. “The Hermitage is so special,” says Fred Taylor, the president and co-founder of Denver-based Northstar Investment Advisors. “We’ve been multiple times, even spent the night drinking hot chocolate there with our daughter and
her friends. It just made you fall in love with the place.” Taylor and his wife, Claudia Garza, fell so hard for Alpine Mountain Ranch that they are breaking ground this fall on a 6,200-squarefoot home with sweeping westerly and northerly views of the surrounding mountains and the lush, undulant meadows of the South Valley. They plan on hosting Christmas 2022 there with their children and grandchildren, and, Taylor says, “down the road, we’ll probably spend all our time here.” Like many of AMRC’s current and future homeowners, Taylor previously owned condos in other Colorado ski towns closer to Denver before buying one in Steamboat in 2006. “I’d always had a love affair with the town and its low-key Western flavor,” the Denver native says, noting that both he and his son chose the town to have their weddings. One of his eventual neighbors, Michael Stokes of Greenwood Village, echoes those 70

sentiments. He says he and his wife, Miranda, “were searching for a location that was away from the crowds you typically see at other resorts.” They also found themselves drawn to AMRC’s elevation of 6,700-feet—nearly 3,000 feet lower than that of Breckenridge, where the skiers have had “a super condo” for years. “It’s a genuine place. There’s a reason why it’s home to more Olympians than any other town in America, and it’s not just the great powder,” Taylor says. “Let’s just say you don’t see 30 jets lined up at the airport. Steamboat doesn’t have that vibe.” KEEPING IT REAL That seductive, unpretentious vibe radiates throughout AMRC, providing residents and their guests with “authentic luxury” in the form of catered food-and-wine experiences at the rustic Owner’s Barn (where residents can also outfit themselves with snowshoes, skis, fishing poles and even a Polaris RZR), barbecues, guided hikes, sunset horseback rides, campfire dinners and other events. “As owners build their homes and settle in, we want to foster that sense of community,” says the Director of Marketing Brittanny Havard. “They’re really down-to-earth, cool and forward-thinking people.”

They’re also hungry for both food and social connection. Although no on-property restaurant exists, the spacious Owners’ Lodge features a kitchen and dining area, and an eightminute drive north to downtown Steamboat or Steamboat Ski Resort delivers a staggering range of gastronomic options. Conveniently, the golf-cart path on the property’s southwestern corner leads to the private Catamount Golf Club and The Periodic Table, its highly regarded public restaurant that reopens every summer and winter with a different theme. Last winter’s “New Orleans Classics” has yielded to this summer’s “European Riviera”—a collection of flavors from Southern France, Italy and Spain. Golf at Catamount requires a separate $45,000 membership, but one of the state’s best dailyfee layouts—Haymaker Golf Course—lies just west across U.S. 40. So do AMRC’s own 1.5 miles of private, Gold Medal fly-fishing along the Yampa River. Anglers can also wet a line in a stocked onsite lake, on which residents can also canoe, kayak, swim or paddleboard. Equestrian facilities include a community barn, tack room and staging area. The ranch’s 220 acres of pasture house horses that are available for trail rides and to stable resident’s horses. More than five miles of trails for hiking or biking meander through the ribbed property, with some leading to the adjacent Medicine Bow-Routt National Forest. In winter, those trails and the pasture welcome cross-country skiers and snowshoers, while the hills near the Owner’s Barn are alive with the happy sounds of children sledding on innertubes. Of course, nearly 3,000 acres of steeper hills covered in champagne powder await at
Steamboat Ski Resort, where AMRC residents can opt for a $100,000 membership at the lavish Alpine Mountain Summit Club at One Steamboat Place. Free underground valet parking, private ski lockers, instant gondola access and other five-star amenities and slopeside services await, as do wine tastings, après-ski food and drink, spa treatments, workout facilities, pool/hot-tub access and social events.

AT PLACE VALUE While such white-glove appurtenances ostensibly belie Steamboat’s leather-gauntlet authenticity, some value the Alpine Mountain Summit Club membership option for its sheer convenience.
Meanwhile, plans call for a community center— replete with a children’s activity room, fitness studio, infinity-edge pool and outdoor jacuzzi— to complement the well-appointed Owners’ Lodge, as well as additional, well-stocked Guest Cabins to join the lone building where visiting owners and guests can currently stay.
“It’s become a great benefit,” homeowner Steve Speer says. “We drive up, and they park our car. We’re in the locker room and on the gondola just like that.”
No date has been set for the release of the final 13 homesites in the Upland Preserve, an enclave situated high on the property’s southeastern corner, near the beloved Hermitage.
Speer built the very first home at Alpine Mountain Ranch in 2012. That was five years after Bill Butler of Corporex—the Kentuckyheadquartered developer that also produced Denver’s Museum Residences—purchased the land, and eight years before the pandemic spurred a spike in sales that has claimed more than one-third of the available inventory.
When those lots hit the market, they likely won’t fetch less than the current average price of nearly $2 million. Even during the recession, Butler never cut lot prices or sold off parcels. He maintained value for other early investors, and that track record gives purchasers confidence. “As an investor, I feel like he’s got my back,” Fred Taylor says.
“Half of them are full-time residents who saw they could live and work from anywhere,” says Havard, who observed a “do-or-die mentality” among prospective buyers.
Moreover, he continues, “When you analyze these kinds of properties in comparable areas— like Vail, Aspen and Jackson Hole—it would cost five to ten times as much to buy and build. The annual homeowners’ fees of $7,420 are also comparably lower. That makes Alpine Mountain Ranch an incredible value.”
“The pandemic has driven buyers to want it now,” confirms AMRC’s Senior Vice President and Director of Sales Suzanne Schlicht. “This has been a reminder that life is short.” True, but homes that average 6,500 square feet don’t just sprout overnight. Schlicht says it currently will take two years for Alpine Master 72
