LOVIN’ THE OUTDOORS I’M GOING TO admit, I am the woman who rarely turns on the air conditioning. Even long ago, when I lived in the scorching Midwest, I still rarely turned it on—much to the chagrin of my family. I just love the fresh air, and in Colorado, where there’s little humidity (or at least a lot less than in Iowa!), it’s a pleasure to open the doors and drift from indoors to outdoors. In this issue, we’re all about the outdoors. We introduce you to some restaurants with great patio dining (Up on the Roof, page 24) where you can not only soak up the sun and imbibe on delicious treats and drinks, but you can also marvel at our amazing mountain views. We also talk to some local seafood restaurants (Swimming Upstream, page 20) not about their patios, but about their commitment to the planet through sustainable fishing. They also happen to have some delectable dishes you’ll no doubt want to try.

Ongoing Through July 27 THE FAMILY DOG EXPERIENCE TOUR The Family Dog (or “The Dog”) was Denver’s premier concert venue that launched Denver’s rock scene in the late ’60s. Presented by the Museum of Outdoor Arts (MOA), this exhibit features the incredible poster artwork from the venue, plus dressing rooms that have been re-created in the style of some of the legendary bands that played there. There’s also a special film screening on July 8. MOA, showcasing more than 40 permanent artworks in Marjorie Park next to Fiddler’s Green, also hosts a full lineup of other activities, including UnWine Wednesday (July 6), with wine, food trucks, art demonstrations and live music. Swimming Upstream South Denver’s top SEAFOOD RESTAURANTS are dishing out delectable seafood with an eye toward sustainability By Dionne Passacantando-Roberts WATER COVERS more than 70 percent of the earth, and although that may seem like an endless well of resources, our oceans, seas and waterways are subject to supply chain issues just like any other industrial avenue. Here in Colorado, we trade the caress of the coast for our majestic mountains, yet as consumers, we don’t exhibit any less of a taste for fresh fish. Thanks to modern transportation modes, we can enjoy oceanic delicacies, flown in daily to many reputable restaurants from equally reputable sources. Thoughtful sourcing is a balancing act that must acknowledge the availability and responsibility it takes to bring these unique seafood dishes to the table. “For us, it’s how we’re sourcing, and we’re really mindful of our menu being sustainable,’’ says Sheila Lucero, culinary director for Big Red F Restaurant Group. “Each ingredient at Jax Fish House is a nod to supporting people who are doing things right.” Jax Fish House & Oyster Bar cites its longterm relationships with select seafood companies, its involvement with Monterey Bay Aquarium’s Blue Ribbon Task Force and James Beard Foundation as critical to its accountability.

While the global shipping and export pandemic has created challenges in obtaining consistent products, there are backup markets such as Scottish salmon farms, which pay strict attention to proper diet food ratios and humane living and harvesting conditions. “We are paying more attention to fishing practices, which promotes better sustainability,” says Finnegan. “Overfishing the seas, trying to repopulate, working with the product the way we do, it does mean a lot to me. Sustainability leads to profitability, so we need to take care of the earth so it can take care of us in the long run.” Try these notable dishes at restaurants infusing upscale seaside vibes to Denver’s south suburbs. This generational family farm has been growing Emersum oysters, specifically for Jax, since 2010, creating a proprietary varietal that she refers to as their “workhorse oyster.” Jax showcases their “go-to” oyster as a chargrilled dozen with Creole butter and grana padano cheese. Jax also features a farm-raised, pan-seared barramundi sourced from a fishery in Arizona. Lucero says it’s sustainable because it’s raised on land in recirculating tanks to filter and reuse that water. Additionally, the fish are fed a diet that regulates their size, which helps with the rate of harvest and growing them sustainably to keep up with demand. “It’s a delicious, buttery, white-fleshed fish— think snapper meets halibut,” says Lucero. She serves the fish skin on “nice and crispy” with a rustic pine nut caponata, cheesy Anson Mills grits, fennel pollen beurre blanc and fried basil. “We’re really connected to our vendors and farmers,” says Lucero. “Plus, we do our homework, so we know what things are in season. We want to be enjoying seafood for years to come, so by making these choices now, it will hopefully help carry that on.” Denver Tech Center’s Ocean Prime executive chef, Ryan Finnegan, also references the importance of careful consideration when

WHETHER IT’S A FANCY built-in bar, a rolling cart or just a corner of your patio table, there’s no wrong way to set up your backyard bar for outdoor entertaining. The challenging part is stocking it with all the ingredients and tools you’ll need for master mixology, all summer long. Here, we share local experts’ favorite tips for everything from the basics (a few select bottles and mixers) to a fully stocked at-home watering hole that rivals even the trendiest cocktail bar. SPIRITS The Basics: For a liquor lineup that makes all guests happy, Nic Chase of Heritage Wine & Liquors in Centennial recommends having at least one type of each liquor category on hand: • Vodka • Gin • Rum • Whiskey • Tequila • Blending liquors like orange liqueur, amaretto, and bitters Don’t forget vermouth: Alexander Kady of Denver’s William Grant & Sons, a largescale distiller and distributor, says it can be sweet, dry or blanc, but he recommends Dolin. “It comes in a 375-ml bottle, and that’s good because vermouth, like wine, can spoil, even when refrigerated.” Also have a few mixers on hand like juices and sodas, plus garnishes like lime wedges, olives and cocktail cherries. Then stock a cooler or large bucket with ice, beer, wine and soft drinks, and you’re ready to please everyone. “There are many more ingredients you can add,” says Kady, “but these, combined with fresh-squeezed juices and a classic simple syrup, can make a plethora of cocktails.” TAKE IT UP A NOTCH: Not content with just the basics? Chase says this is where it can get complicated (and also fun), as each type of spirit also has different sub-types. Vodka, for instance, can be corn-based, wheat-based, rye-based or flavored/infused. “Check out Colorado-made Vanjak vodka,” he suggests. “The affordable price doesn’t sacrifice quality, it’s made locally in Golden from 100 percent corn, and it’s gluten-free.”

SHORTLY AFTER you get the hang of the whip and you flick your rod just so, the line whispers through the air, landing the woolly bugger on the intended spot in the river. With equal parts luck and skill, you tease a two-pound rainbow trout into striking. Bam! The fight is on as the fish slashes through the water with you working to coax it towards your awaiting net. Once you’ve posed for the classic “I-caught-the-big-one” photo, you gently remove the hook, releasing the fish back into its habitat to fight another day. Fly-fishing is as popular in Colorado’s tapestry of outdoor activities as mountain biking, skiing, snowboarding, golf and hunting. If you’re curious about its allure, watch the 3:52 long YouTube clip on the 1992 movie A River Runs Through It, and you’ll appreciate why it’s received over 420,000 views. The scene shows Brad Pitt’s encounter with a trout and cinematography that is as enthralling as the fight. The challenge is to land the fly near where you aim and entice the fish to strike. Sage anglers examine the speed of the current, water temperature, where the sun and shadows appear, depth of the water and other conditions before choosing the appropriate fly—all aspects of the sport that novices best learn through instruction. “We offer an introduction to fly-fishing one-day class pretty much every weekend from April to October,” said Tyler Banker from Minturn Anglers. “We start in the shop going over the fundamentals and gear you’ll need, then we drive down to the river, usually near Deckers, and spend about an hour on streamside education, followed by three or four hours of fishing.”

GETTING OUT THERE Of Colorado’s more than 6,000 miles of streams and 2,000-plus lakes and reservoirs, there are 315 miles of Gold Medal Waters, streams, rivers and lakes designated by Colorado Parks & Wildlife for the quality of their cold-water trout habitat and ability to host trout 14 inches or longer. Running with brown, cutthroat, rainbow and brook trout, these spots give anglers a shot at a hat trick or a grand slam, where three or four different species might be caught in one outing. The season officially begins April 1. However attractive the long and temperate days of summer, many outfitters agree that the best time of year for fly-fishing is autumn. You may be surprised, too, that wintertime is great for casting a line as well. Anglers are required to carry a license issued by Colorado Parks & Wildlife (cpw.state.co.us/), which can be bought online, through outfitters or retailers.

Typical to the intro class most shops offer, participants learn how to rig a fly rod by connecting the shafts, affixing the reel and stringing the line. Novice anglers also learn how to tie different knots, why the fish hang out where they do and fly-fishing etiquette. And it’s worth paying a bit more to get gear with a warranty.” Think twice before buying used fly-fishing gear online (think eBay, Facebook Marketplace) because a warranty issued to the original purchaser often isn’t transferable. If supporting a homegrown source for fly rods and flies is of interest, check out SaraBella Fishing. Founded by Colorado natives April and JT Archer and Scott Grieble, the Eriebased company, staffed largely by military veterans and cancer survivors, produces oneof-a-kind rods that are assembled by hand and primarily designed for female anglers. “Women have been fly-fishing for centuries,” said April. “The first written piece about it was actually authored by Dame Juliana Berners in the 15th century. Women today join the sport because of camaraderie, healing power, more gear and safety options, and because they are seeing more women participate.” Supportive of school programs, nonprofits, conservation entities, girls in science, accessto-all fishing education and veterans, SaraBella Fishing uses repurposed, Colorado sourced hardwood lathed locally to make its reel seats. The Mile High WorkShop, a nonprofit manufacturing facility offering employment and job training for those facing barriers to work, makes the rod tubes and carrying sleeves for SaraBella, and rods carry a five-year warranty for the original purchaser. “Project Healing Waters offers a path for veterans to connect with the healing power of water through the sport,” April says. “In this program, veterans can meet other veterans through fly-fishing trips, rod building and fly tying. The human connection to other veterans who understand each others’ perspectives and who enjoy spending time near water is truly impactful! Through this organization, we’ve hired veterans who found they enjoy rod building and decided they’d like to continue it as a source of income.” Fly-fishing requires patience. Being new to the sport, count on frequently snagging your line and losing flies. But once you catch those first few trout, you’ll be hooked.

WHEN SHE MOVED to Castle Rock more than a decade ago, Nicky Kulish enjoyed the community’s small-town feel. As rapid growth started happening all around her, though, she became a bit apprehensive. “But now I see all that has come into Castle Rock, and it’s exciting,” she says. Today, although the population has climbed to more than 80,000, Kulish isn’t upset about the boom at all. That’s because the growth— which she believes is being well managed by town leaders—has resulted in a lot of positives for residents, including more retail and dining options, more open space and parks, a fullservice hospital, numerous community events and a revitalized downtown area. Through it all, she says, “Castle Rock has never lost that small-town feel we all love.”

MANAGING GROWTH The county seat and largest municipality in Douglas County, the town is named after the castle-shaped rock formation that’s perched on a hillside, dramatically visible as you travel along I-25. (Early settlers in the area reportedly

suggested the butte be dubbed “Poundcake Rock,” but thankfully, that moniker didn’t stick.) The town has grown at a rapid clip since 2000, when it was just shy of 21,000 residents. Tara Vargish, the town’s director of development services, says that most of the growth that’s visible today has actually been in the works for a long time. “A lot of things being constructed now had their planning done a decade ago,” she explains. “It just took that long for the market to catch up.”

WHAT’S NEW in Castle Rock

As for those who fear the growth might someday spiral out of control, Vargish is quick to assure them it won’t happen. “All of the land in our jurisdiction is already designated with a proposed use, whether that’s residential, commercial, open space, parks, schools, fire stations and so on,” she says. “If everything in town were all built, we might someday reach a population between 120,000 and 140,000 residents, but maximum buildout wouldn’t be for a few more decades at least.”

Here’s a glimpse at just some of the projects underway this year: COBBLESTONE RANCH PARK in northeast Castle Rock, just opened at the end of June. RENOVATION is happening at Butterfield Park to include new tennis courts, pickleball courts, trail connections. It will also include Possibilities Playground, one of only a handful of fully inclusive playgrounds on the Front Range.

“The important thing is to grow smartly so we can maintain our community character,” says Jeff Smullen, the assistant director of Castle Rock Parks and Recreation. In community surveys, residents overwhelmingly indicated that one concern about growth was trying to cram more people into the same spaces. But the town has a plan for that, Smullen says: Each new development (residential or commercial) must dedicate a minimum of 20 percent to open space, plus eight acres per 1,000 new residents for active parks. The town’s goal, he adds, is to conserve at least 30 percent of land for open space, whether public or private.

CASTLE ROCK ADVENTIST HOSPITAL is constructing a third office building that will include more medical offices and a surgery center. A NEW LIBRARY recently broke ground in downtown. THE PARKS & REC DEPARTMENT is currently building trails on a 60-acre land donation that connects to another open space property near Founders Parkway. When completed at the end of 2022, the parcel will include 100 acres of open space and 5 miles of trails.

PRESERVING THE LIFESTYLE “The message we got [from residents] is that parks, trails and open space are important components of maintaining our quality of life and making sure we don’t lose that as we grow,” Smullen says. These amenities help preserve the small-town character locals want. Jen Reinhardt, the town’s events supervisor, believes that having a bustling downtown is another key to maintaining a quaint, smalltown feel and preserving the desired lifestyle. “People were tired of driving elsewhere for events, and for amenities,” she says, “so we had to figure out how to grow with intent.” Historic downtown Castle Rock has undergone a renaissance of sorts in recent years, with a slew of new restaurants; gathering places like coffee shops; locally owned stores and galleries; and the renovation of Festival Park, a community space where Reinhardt hosts many of her popular annual events (see sidebar). “Downtown Castle Rock has transformed into a place where people live, work, dine, shop and celebrate,” says Jason Gray, Castle Rock’s mayor. “I’ve had the pleasure of living here for more than twenty years, and I’ve see the town evolve a lot during that time. While much of the growth we see today was set in motion years ago, I believe the town is doing an excellent job in balancing growth with a commitment to quality development.”

Save Your Summer Locks PROTECT YOUR HAIR from sun and water damage By Harper Thomas

JUST LIKE YOU need to protect your skin, the same is true for your hair. Sun, water, the environment—they can all wreak havoc on it. But it’s all preventable with a few simple tricks to keep your tresses in great shape all season long. PREVENTATIVE MEASURES Before heading outdoors for your active lifestyle, consider pulling long hair into soft braids. Pop on a hat, as well, to help prevent split ends that come from wind damage and general dryness from the sun, says hairstylist and makeup artist Stephie Lane with Be Love Beauty in Lone Tree. If you’re heading to the pool, keep in mind that chlorine can not only dry out your hair but can cause color damage—especially to light locks. “Wet your hair with fresh tap water before getting in the pool,” says Lane. “Hair can only hold so much water, so if you ‘fill’ it up with nonpool water first, most of the pool water will stay out of your hair.” For beachgoers (fresh or salt), rinse your hair as soon as you get out of the water to remove any algae or other residue.

Senior stylist Lauren Peterson from la Tierra Salon & Day Spa in Highlands Ranch suggests strengthening masks to help remedy the damage caused by an outdoor, active lifestyle. “Also, keep up on haircuts to keep the damage from getting worse,” she says. MOISTURIZE If you’re swimming and sweating, wash your hair frequently. If you’re washing daily, use a leave-in conditioner to protect the hair from heat and replenish lost moisture. Straight and curly hair have different needs. “Straight hair needs moisture, but the molecules need to be a bit smaller—think argan oil and other light oils—while curly hair needs a leave-in with a lot of moisturizing ingredients like shea butter and aloe,” says Lane. A weekly conditioning treatment will be your best line of defense and method to repair the damage. Leave it on at least 30 minutes after thoroughly combing it through the hair. If you have blonde or gray hair, opt for a blue or purple conditioner to keep color from yellowing. 60

“Pro tip: Wash hair with a clarifying (non-blue) shampoo before using the purple treatment,” Lane says. “That will remove any product build-up and help the toning conditioner better stain the hair.” SAVE YOUR SCALP Sun damage happens here, too—and not just for people with no hair. Don’t neglect your part and the hairline around your forehead when applying sunscreen. Some leave-in hair moisturizers have SPF that protects your locks, so give it a rub around your scalp for extra protection there, too. And that’s why two local organizations are taking in the most vulnerable and giving them the healthy, happy homes they deserve. PEPPER’S SENIOR DOG SANCTUARY It all began with a dog named Pepper that Mary Leprino decided to adopt in 2011 to help her through alcoholism recovery.

For now, the dogs at Pepper’s are not available for adoption. “By the time they get to us, they’ve probably experienced several homes and some serious trauma. We want this to be their last home,” says Leprino. They hope to spread awareness of the benefits of adopting senior dogs, “These dogs have been discarded. For you to come in and embrace that life and nurture them until they transition, I don’t think you can serve a better purpose. “I wanted to focus my attention on something other than me,” she says. She found Pepper, a seven-year-old Pomeranian, through a dog rescue. “He was so screwed up,” she recalls. “I fell in love with him, and we embarked on this adventure together to get him healthy.” Bonding with Pepper was intended to help him, but in the end, it healed them both. She was so thankful for the experience, she wanted to help another dog.

dogs that likely won’t ever be adopted. It doesn’t accept drop-offs.

Her desire to pay it forward led Leprino to partner with her son Justin Klemer and friend Leigh Sullivan to create Pepper’s Senior Dog Sanctuary in 2018. They found property in the beautiful Roxborough Park foothills area with construction planned for completion by the end of 2022. The facility will include 50 acres of land containing everything dogs will need to live their last days to the fullest. Leprino describes it as a retirement community for dogs instead of a shelter. The dogs come from other rescues and shelters to relieve overcrowding. Pepper’s brings in puppy mill rescues and medically challenged 64

EDWARDS FOUNDATION While there are rescues for dogs and cats, there aren’t many for farm animals. Enter the Edwards Foundation. Formed by Lynda and John Edwards in Parker, it’s home to a collection of goats, chickens, ducks, llamas and horses. “People in this area think, ‘we’re in the wild west. We’ll get some farm animals.’ Then they find out how expensive it is and how much work it is. So, the animals end up here,” says Lynda Edwards. The Edwards Foundation does adopt out the animals they receive, and the first step in the process is for potential adopters to commit to an animal who may live 20+ years. “They have to come here several times and bond with the animals. We usually adopt in pairs because these are herd animals. We do an onsite visit to ensure the adopters have adequate shelter, space, fencing and the knowledge to take care of them,” she says. “Failed adoptions are hard on the animals.” Although they always do their due diligence to ensure a positive outcome, they will take the animals back if it doesn’t work out. The foundation relies on donations and volunteers. “We appreciate them so much!” says Edwards. Brunch at River and Woods is the perfect start for a “dressed-up” day. This century-old miner’s cabin in the Whittier neighborhood is now a boutique restaurant specializing in locally sourced Colorado comfort food. Chef Daniel Asher prepares playful interpretations of traditional dishes such as pork belly Benedict where Callicrate pork belly and garlic Swiss chard top poached Amish eggs. Or try his challah French toast, with fried plantains, fresh blackberries and powdered sugar atop vanilla custard dipped challah. After brunch, go art gallery hopping starting at the Smith Klein Gallery. Known for featuring predominantly large paintings and sculptures, the gallery curates a showroom full of high-quality eclectic art. When you finish perusing the showroom walls, hop on over to the Dairy Arts Center. The old dairy plant now houses four art galleries, three performance venues and an arthouse cinema. The center’s visual arts program curates the free galleries’ spaces with rotating exhibitions. Dinner options are plentiful. If you want an intimate dinner full of golden light and oldworld charm, head to Bramble and Hare. The three-course prix fixe menu changes daily as most of each dish’s ingredients come from the chef’s 425-acre organic farm. Everything from charcuterie to liquors to desserts is made in-house. DRESSED DOWN One of the best ways to spend the day in Boulder is with a hike. Start your day with a pre-hike pastry at Lucky’s Bakehouse & Creamery to fuel your legs for those last few miles. Boulder is home to an incredible variety of hiking trails for all abilities but choose the Wonderland Lake trail if you’re looking for a nice, leisurely hike. The twomile trail is an easy route around Wonderland Lake. The area is also a wildlife sanctuary, so be on the lookout for birds, prairie dogs, deer, fox and coyotes. If you want something more strenuous for your time up north, hike Mt. Sanitas or find a climbing or bouldering spot at Chautauqua Park. Always plan ahead by checking bouldercolorado.gov for any trail or area closures. Back in town, head to lunch at Pica’s Boulder Mexican Taqueria. The local eatery offers delicious—yet simple—Mexican dishes that are adaptable to a variety of dietary preferences. They also make some of the best margaritas in the city. After lunch, explore Boulder by e-bike. Whether you take a guided tour through historic neighborhoods, the University of Colorado campus or Boulder Creek Canyon, or just rent an e-bike to explore the city on your own, it is a great way to spend an afternoon.

Wind down the evening at Avanti Boulder. This modern food court inspired by European markets and food truck roundups has seven restaurants housed in modified shipping containers. Once you’ve made your food decisions, head to the fourth floor to eat on what is probably the region’s best rooftop. With a 360-degree open-air view, you can spend the rest of the evening sampling food from each food stall or just enjoy cocktails and the view. If you’re spending the night, Basecamp Boulder is a no-frills-but-all-the-fun hotel geared toward the adventurous soul with indoor bouldering walls, table tennis and more. Plus, you can take your pup (see their website for complete details).

Dressing down in Boulder is all about hitting the trails. Wonderland Lake (bottom) is a nice, easy hike where you can spot local wildlife. Scoot around town on a rented e-bike (center) to take in lots of the sights. End your day on the rooftop of Avanti Boulder (top) to watch the sun fall behind the Flatirons with great food and cocktails.

Here is the deal: Boulder is an extremely casual town. Only the fanciest of restaurants prefer nice attire, but the local attitude is “live and let live.” So, if you want to wear a sundress and heels to bounce around town, fine. If you prefer jeans and flip-flops, that’ll work, too. As long as you are smiling and have something on, you can enjoy your stay in Boulder without a problem.
