GOOD CHEERS My life, chronicled in cocktails.

MEMORY LANE is a funny avenue to navigate. In the midst of meaningful moments, I’m sure I’ll easily recall the important particulars over the minutiae. And yet, here I am with a list of aperitifs—small drinkable details—that most readily connect me to some of my best days. A Boston Sour, one of my favorite cocktails, takes me back to the first time I had an exclusive afternoon with a bartender for a story: Once the mandatory questions were asked and answered, he took me on a tasting tour of some of the most interesting, least-ordered spirits behind the bar. Wine brings back to life my Texan grandfather, who finished every evening with a small glass of red. It also revives my wedding reception, where we uncorked fruity varieties made by my mother-in-law (something our friends still thrill over when we open a saved bottle). Mention sangria and I am back in a small sandwich shop in Spain with my family, having my first true taste. As for the holidays, the only eggnog I have ever liked is made by my friend Joe, who passes out nutmeg-dusted glasses at the start of our annual gingerbread-house competition. And then there’s the classic hot chocolate and Baileys mix, which I last sipped at my in-laws’ house while listening to holiday music after the best day of window shopping. The tide has been turning on drinks of all kinds the past few years: Rather than simply being an expected partner to meals and get-togethers, beverages have become an intentional aspect of the main event. And I, for one, couldn’t be happier to (responsibly, of course) jump on that bandwagon.

Inside the life of the woman who called Cherokee Ranch and Castle home, and then made it a palace for everyone else too. By Kendall Kostelic

MILDRED MONTAGUE GENEVIEVE KIMBALL, more commonly known as Tweet Kimball, has stories—lots of them. The Sedalia resident passed away in 1999, but 20 years later, the Denver area is still finding it easy to renew her narrative. There’s the list of public figures and celebrities who were reportedly guests at Kimball’s home. She was said to have 13 catered events a month until her death: Milton Friedman, Winthrop Rockefeller, former Colorado Governors Roy Romer and Richard Lamm and more. There’s the shake-up she caused in the Colorado cattle industry when she determinedly introduced the Santa Gertrudis breed to the state despite others’ warnings. She won blue ribbons for her herd and became the first

woman to serve on the National Western Stock Show’s board of directors. There’s her fine jewelry collection (some pieces designed by Salvador Dalí), a chunk of which was seen by the public for the first time in an auction 11 years ago; and her art collection. And numerous other tales of her grit and resolve. The local tie that binds them all: She is the person to thank for every holiday event, concert, wedding, Cherokee Ranch Science Institute public program and more that takes place at the Cherokee Ranch and Castle. She also gifted the surroundings that created The Keep next door. Kimball moved in to the castle in 1954 after a divorce from her first of four husbands— the place was a parting gift from her ex, who said there wasn’t room on the same side of the Mississippi River for both of them. She combined that with the neighboring ranch to create a property covering thousands of acres. For more than 40 years, she worked the land 18

and her cattle (she was also known as an avid equestrian) and invited in those who wanted to learn about conservation and wildlife. In 1996, she created the Cherokee Ranch and Castle Foundation conservation easement to ensure her home would stay just as she left it: a place for people to gather just as they would when she was alive and a center for preservation (even saving pockets of petrified logs that are said to date back more than 55 million years). The only exception to the plan were some 1,000 acres of her “Summer Pasture,” which could be sold to create funds for the foundation. We’re looking at you, lucky Keep residents.

We support smaller farmers that co-op. … Each place produces a few hundred turkeys, rather than one bringing in 50,000 turkeys every year. “While shopping, you want to consider what the turkey was fed (corn and soy feed are best), as well as whether the bird was free-range or cage-free. The U.S.D.A. doesn’t allow hormones to be used in turkey, so you don’t have to worry about that. Overall, make sure the product you’re buying is Grade A.” THE ONE POUND RULE “I’d rather have leftover turkey, so I like to plan for 1 to 1 ½ pounds of bird per person, which amounts to a pretty generous portion. You’ll need to take the [meat you’ll lose on the] bones and other inedible parts of the bird into consideration.”

ROASTED TURKEY INGREDIENTS 1 fresh or deep-chilled turkey Olive oil Salt and pepper Thyme Rosemary Sage Garlic Lemon or orange zest (optional) Your favorite stuffing (optional) ½ cup water METHOD Make sure your turkey is fully thawed and soft to the touch— even a fresh turkey can start out as cold as 26 degrees F. Preheat oven to 325 degrees F. Rub entire inside and outside of turkey with olive oil and season with spices to taste (salt, pepper, thyme, rosemary, sage, garlic and lemon or orange zest). Loosely pack in stuffing (if including). Place turkey breast-side-up in roasting pan, tucking wing tips under the shoulders and tucking legs, if your bird came with ovensafe plastic or metal leg holders. Pull livers and gizzards from neck cavity.

TO STUFF OR NOT TO STUFF “There has been a lot of controversy around stuffing turkeys over the last 10 or 15 years: A lot of chefs say to never stuff a turkey because there’s a higher risk of food contamination. I’ve been eating a stuffed turkey every Thanksgiving my entire life and no one I know has ever gotten sick.”

Add ½ cup water to the bottom of the pan. Cover turkey in foil. Roast for approximately 14-15 minutes per pound for a 10-16 pound turkey or 12-13 minutes per pound for a 16-24 pound turkey. Add approximately 30 minutes if stuffed.

KEEP THE COOKING METHOD CLASSIC “I like to cook turkey the old-fashioned way: by roasting it in the oven. I’ve never believed in telling people exactly how long to cook a bird because there are so many variables, but roughly speaking, you want to go 15 minutes per pound at 325 degrees F, adding 30-60 minutes if it’s stuffed. Most importantly, you want a high-quality meat thermometer. A bird is safe to eat when the internal temperature reaches 165 degrees F. You need to put the thermometer deep in the breast or thigh to determine that temp. Try to undercook the bird at first—you can always add time.”

Remove foil after approximately 2 hours of roasting to brown the skin. The turkey is done when the internal temperature reaches 165 degrees F at deepest point and the stuffing reaches 165 degrees F. Let bird rest 10-20 minutes before carving.

1. ROSEMARY, PANCETTA AND PARMESAN Add 1 teaspoon fresh rosemary, ⅓ cup cooked, chopped pancetta, 1-2 bulbs freshly roasted garlic and ¼ cup freshly grated parmesan cheese.

METHOD Preheat oven to 325 degrees F. Melt butter and combine with pecans and salt. Stir well to coat. Transfer to a baking sheet and bake in oven until aromatic and slightly toasted, about 15 minutes; stir halfway through.

2. CHEDDAR, BROCCOLI AND BACON Add ½ -¾ cup grated cheddar, 1 cup quickly steamed small broccoli pieces and ½ cup bacon pieces.

Meanwhile, combine orange juice and sugar in a heavy-bottomed saucepan. Bring to a boil and stir until sugar dissolves. Add fresh cranberries and cook until berries burst. Reduce heat to low and add brandy and cranberry sauce. Stir well and heat until cranberry sauce melts. Remove from heat, add toasted pecans and stir well. Garnish with fresh orange zest and serve hot or cold.

By Malissa Stark-Rodenburg IT’S TRUE that learning a craft breeds a greater appreciation for the final product. Before Marcus Tipton and his mother-in-law, Nancy Tipton, opened Invintions, A Creative Winery in 2010, the two learned how to make wine by traveling across the U.S. and abroad, popping into various wineries to see how things were done.

According to Marcus, Invintions’ wine is made with no histamines (which can cause allergy-like reactions), no synthetic tannins (which are typically added to make wine more astringent) and a reduced amount of sulfites (a necessary preservative in wine, but one that some people claim causes headaches). The result? A wine that is less diluted and more fruit forward. It’s the reason Invintions has won more than 40 awards in its nine-year existence. “Our team really understands why we have to produce at such a high level: That quality and the lack of preservatives really makes a big difference,” says Marcus. “It’s a completely different taste of wine for most people.” And it’s an experience the Tiptons want to share with imbibers as much as possible, which is why they let enthusiasts in on the process with a custom winemaking workshop.

The process begins with a tasting, where guests pick the type of wine to create. Next, the professional vintners explain the ingredients going into the wine (the makers stay true to the award-winning recipes even when outsiders are watching) and get the components started.

But once school was no longer in session, they chose not to follow in the footsteps of the familiar vineyards. Marcus and Nancy were going after a different flavor profile: “We let the grapes really speak for themselves,” says Marcus.

In it, attendees dive deeper into the flavor and science behind the company’s wines. “It’s some of the chemistry, and it’s some of the fun of being able to sample the fruit before it goes through fermentation,” explains Marcus.

Plus, tasting menus can be so expensive, but ours is $40 per person, with an optional wine pairing menu.”

Make reservations early: This new location of Ocean Prime is starting its first holiday season since opening earlier this year, and “I’m sure it’ll be jam-packed,” Herz says. “I never go without getting the Mile High Carrot Cake. It has 10 layers, takes two days to make and it’s enough for four people. … You’ll want for nothing here.” ON THE HOLIDAY MENU: The Salty Carmel cocktail and Piedmontese Filet, made with the truffle lover of the family in mind. The filet is topped with a rich truffle butter (made with roasted garlic, shallots, chopped truffles and truffle oil) and then garnished with sliced black winter truffles. Rumor has it the aroma is scrumptious.

Stress Takes a Holiday FIVE EXPERT TIPS ON HOW TO MAKE THIS A HAPPY NEW OF YEAR. By Brittany Anas PICTURESQUE, but filled to the brim with pressure—that is the holiday spirit people have come to expect in this season. Doug and Leslie Gustafson, licensed marriage therapists and intimacy coaches and owners of Authentic and True Counseling and Coaching in Lone Tree, would like to change that. Approach the November and December strain as a couple with a solid communication system in place, says the husband-and-wife team, and you’re a lot more likely to keep stress at bay. Here, the Gustafsons get the festive times rolling with advice on five common difficult scenarios. Happy holidays, here we come. Your spouse wants to spend a ton on the kids’ presents. You want to take a less-is-more approach. Instead of playing tug-of-war over the gift budget, Leslie says, take some time to sit down and unpack the reasons for your different strategies together: “Did your parents overindulge you as a child? Or do you feel you did not get treated well, which makes you want to offer more gifts?” Framing the conversation

this way will help you reach a compromise. “When we understand and have empathy for each other, the likelihood of coming to a loving, mutual decision is greatly increased,” she says. Your mother-in-law keeps trying to control the holiday meal menu, but you’re hosting. The key here is to strike a loving and assertive tone, letting your mother-in-law know you have it covered. Doug suggests reminding her that when she hosts, she gets to decide, and you’d like the same privilege. But do tell her you’d be grateful if she could bring “that favorite dish of hers that everyone loves.” Out-of-town family comes to stay in your home every year for a week. It’s a bit much. Is there a way to pare the stay down to four days? It’s important, first, to re-evaluate what you want the holidays to look like, says Doug: “Then, prioritizing those goals means being clear with others—in kind ways—as to what works and 32

what doesn’t. Try saying something like: We are excited to spend time with you during the holidays. What four days might work best?” You find you’re doing most of the holiday chores. How can you get the rest of the family to chip in? Before the holidays are in full swing, have a conversation with your partner and the kids about the scope of your celebrations, suggests Leslie. What’s your vision for the holiday season? Who is going to be responsible for what tasks? “In other words, emphasize teamwork as you are planning,” she says. You feel your family is glued to phones and tech devices, but you’d like to disconnect. Communicate that you’d like to have quality time and set defined limits when tech devices need to be put away, Leslie says. Maybe the kitchen table is a cell-phone-free zone. “For kids, parents must set the example,” Leslie says.

But for a few days in November, the shop transforms into Carla’s Holiday Open House—

the kind of festive treasure trove people will wait in line to browse. Owner Carla McElroy started the holiday popup in her home, seven years before her first storefront opened. (Carla’s: A Classic Design was first stationed in Highlands Ranch before moving to the current larger location at The Streets at Southglenn in 2010.) The idea stuck, to say the least: “There are groups who make a whole day of it. They rent out limos and shop, and then go out to lunch,” says Michelle McElroy-Moriarity, Carla’s daughter and marketing director and designer for Carla’s: A Classic Design. What’s inside? Trees with themed décor, countless gifts and home items. Each year’s tree vignettes, McElroy-Moriarity says, are a mystery to the public until opening day. “Think of it as early access to an adult version of Santa’s workshop. … You can get unique gifts for everyone: your best friend, your kids’ teachers, family members, your hairdresser,” she continues. “We’ve even had people come in and buy an entire display tree.” Stockpiling the special baubles begins long 34

before winter. Staff members from Carla’s travel to holiday markets in January to make a plan for that year’s iteration. By the end of summer, the Carla’s warehouse is full, wall-towall, with items. The shop closes a week before the big event to get everything placed in time. “The second the doors open, it’s nonstop all day,” says McElroy-Moriarity. “And once items are gone, we can’t get them in again until the following year.” Opportunities to enter in the yearly drawing for a $500 gift card, however, are available for as long as the pop-up is on display. Adds McElroy-Moriarity: “The Open House is a mainstay event for many. People travel from all over, even out of state, to kick off the spirit of the holiday season here.”

“When it comes to the quality of a bottle of vodka, the biggest thing we look for is how many times it’s distilled,” Randolph says. “If you like a stronger, more robust vodka, the less the spirit is distilled the better.” For cocktails, though, Randolph recommends a higher distillation.

However, wine glasses have become universal with cocktail glasses because people like the shapes,” says Randolph. Drinks like this Mulled Apple Cider, he continues, do better in a larger red-wine glass. 3. Rocks glasses “This style can serve for most drinks too. Cocktails are able to breathe because of the wide shape.”

MULLED APPLE CIDER yields 4-6 servings

INGREDIENTS 2 tablespoons cinnamon syrup, Torani or housemade 2 tablespoons vanilla syrup, Torani or housemade ½ teaspoon freshly grated ginger 1 large orange and lemon peel 32 ounces apple cider Honey Half orange slices for garnish METHOD Add the syrups, ginger and orange and lemon peels to a large saucepan. Pour in apple cider and place saucepan over low heat, simmering for 10 to 15 minutes to allow flavors to infuse. Add honey to taste. Strain cider into a carafe and serve while warm. Garnish each glass with half an orange slice. Pairs best with roasted maple-glazed ham or as a substitute for coffee with whatever comes at the end of the night.

“Every cocktail on this menu can be made in batches except the old fashioned, which can be batched up to two to three drinks at a time,” Randolph says. “If you design your event cocktails to all have garnishes on the side of the glass, you can pre-garnish glassware, batch your drinks and, as guests arrive, simply add ice, pour and serve. If you would like to add ice to the batched drink itself, do so 15 minutes before friends and family arrive.”

4 ounces Reed’s Extra Ginger Brew ginger beer ¾ ounce fresh lemon juice ½ ounce St-Germain 1 dash Angostura bitters Crushed ice 1 strip candied ginger and clove 1 lemon wheel for garnish METHOD Combine first six ingredients in a mule mug and gently stir. Place clove into ginger and submerge into drink. Garnish with lemon wheel. Pairs best with a cheese board and candied or roasted nuts. “The mule, along with the mojito, are two earthy, hearty sips. The ginger and mint flavors help digest heavy holiday food and cleanse the palate between bites.”

“Candied fruit and vegetables, like the candied ginger we added in this drink, have become a popular garnish. It’s extremely easy to candy something: put a cup of sugar in a bowl, top with the peels, wedges, etc. you want to candy, top with another cup of sugar and let it sit on your counter for a week. YOUR SKIN time saved: 10 minutes daily A tinted moisturizer with SPF, which takes a few seconds to apply, “will have the biggest payoff in the long run for younger looking skin,” Huelsing says. “You still need SPF in the winter, especially on your holiday ski trip.” Using a tinted moisturizer gives you an “immediate glow, as well as a moisturized, warm, dewy look,” she continues. It’s perfect for a wine night with friends or a holiday gala, and ultimately decreases the amount of makeup you actually need to use. YOUR HAIR time saved: 30-40 minutes over three days Huelsing knows how to extend blowouts— by two to three days. A deep-conditioning treatment at the salon or an at-home leave-in product can also extend the life of hair color. Your manicurist should file nails (to prevent chipping later on), clean the nail bed of oils and debris, clean cuticles and lightly buff nails. Once home, Huelsing recommends adding another top-coat layer and applying cuticle oil to keep the manicure strong. “Dry cuticles are the enemy when it comes to long-lasting polish,” she adds. YOUR LASHES time saved: About 25 minutes daily Eyelash extensions are popular for a reason. Get them; they are absolutely worth the initial hassle, Huelsing says. While extensions can take up to one and a half hours to apply, “they definitely reward in wow factor and time because you aren’t having to curl your lashes and put on mascara every day,” she says. You also don’t have to remove mascara before bed. Lashes typically last for two to four weeks. To get the most out of the service, stick to lashes’ main purpose: don’t use mascara. Also avoid eye products with oil in them; sleeping on your stomach; rubbing your eyes; cleaning your lashes; and, within the first 24 hours of having them, showering, working out or getting lashes steamy. Research before getting lashes to pick your preferred style, Huelsing says. Options range from enhanced volume to length, drama and more. FOR ANN FULTON, fashion consultant and owner of Never Pay Retail (NPR) in the Happy Canyon Shopping Center, the foray into fashion began by learning to sew at a young age. She spent long hours creating elaborate wardrobes for her dolls. “Fashion is what we did at our house,” says the native Coloradan. “I have had many wonderful mentors who influenced and guided me, but my mom motivated me the most. She had abundant skills in makeup, sewing, modeling, acting and art, and an innate sense of fashion.” Spend an afternoon in NPR, a shop that offers a constant collection of designer samples at wholesale prices, and it’s easy to see that the apple did not fall far from the tree. Fulton purchased NPR from its original owner, Margie Alexander, 18 years ago. From there, she went to work combining the best of what NPR had to offer— fashions for the current and upcoming season—with the skill Fulton had spent her career fine-tuning: personal color consulting. 52

Fulton, who graduated with a liberal arts degree from the University of Colorado, became an expert in the art of custom color selection when her two children were in school. “I work with each individual to help them understand what their personal neutrals are, their value contrast and how much saturated pigment they should wear,” she explains. “These are the tools necessary to build a great wardrobe.” Fulton was trained by Debra Lindquist, cofounder of Color Profiles, which is recognized by professional image consultants worldwide. The Color Profiles method, says Fulton, identifies a person’s best colors by matching their facial coloring (hair, eyes, skin- and red-tones): “We use fabric swatches to assess and match. The colors are divided into two categories: neutrals and complementary hues. Value contrast is determined by the difference between hair, skin and eyebrows.” High contrast, for example, allows someone to wear black and white. Fulton has styled executives at companies as big as Xerox and Kaiser Permanente, and, at NPR, a bevy of smart shoppers who opt for the service. “I still do individual color analyses, but what makes our store unique is that every NPR employee is trained by me to understand and implement this color system,” the expert says. “In a way, it’s magical. We hear over and over, ‘I would never have tried that piece on my own.’ Our goal is to help everyone find their best looks and enhance their individuality. “Part of the two-hour color consulting session starts with makeup [NPR has its own private label]. It’s a wonderful way to introduce the colors that will work for both the face and clothes. Also, I need to start on a blank canvas, especially if the gal is wearing the wrong colors of makeup. “The hues in your makeup will always be similar to the neutrals that should be in your wardrobe’s color palette. It’s my theory that no one wants a ‘floating head.’ This happens when your makeup clashes with your skin tone or your clothing is the wrong color, contrast or tone: There is a disconnect between the head and the body. We work hard to have all heads attached.” The clothes Fulton will grab from the rack during the appointment hail from eight annual markets she frequents in Dallas, Los Angeles and New York City. Apparel at NPR is made in the United States and Canada, sprinkled with a few lines from Holland and Barcelona. “Shopping can be stressful, especially as our bodies evolve and our needs change,” she says. “NPR is a special place where you can find a T-shirt, an outfit for a wedding or a whole wardrobe. My mission is to help any woman who walks through our door find attractive clothing that suits her and works with her lifestyle.”

“Every time I paint, I find out more about myself.”

UNTIL A FEW YEARS AGO, Geri deGruy was famous among friends and family for being nowhere near artistically inclined. “Not even good at stick figures,” says the Castle Pines resident, who moved to the area two decades ago and began her art career by making cards and jewelry soon after. “There’s something so ironic and fun in the idea that I’m an artist now.” Looking at deGruy’s colorful inventory—some mixed-media and some acrylic on paper or panels, but largely focused on abstract paintings—it’s hard to believe she ever lacked talent. Her work is bold and provocative, and the multilayered complexities of the pieces hint at the protracted procedure she subjects them to until she feels finished.

HER INSPIRATION DeGruy earned a degree in nursing at Duke University, but a move to Alabama (and a master’s degree in counseling from the University of South Alabama) before she came to Colorado found her working as a therapist, where many of her clients were women who had been sexually abused. “By the time I was done with that job, I had some PTSD of my own to work through,” she says. “The result of my dealing with that really informs how I do art; I believe that developing that relationship between our inner selves and our creative selves can really be healing. “Painting is very similar to therapy. It’s redemptive. And the best part about it is that if I’m disappointed in how something turns 60

out, I can paint over part of it or all of it. Allowing myself that right without self-judgment is what is so appealing. I try to get that philosophy to spill over into the rest of my life as well.”

HOW SHE DISCOVERED HER ARTISTIC FORTE One day 16 years ago, deGruy started making greeting cards. On a lark, she offered them for sale online and to friends. They sold well, so she tried jewelry. Then came knitting and, finally, sewing, where she discovered art quilts, which are more abstract and created spontaneously. She started adding paint to the quilts and using other media before becoming obsessed with oils and painting techniques. “I took classes online and tried everything, and then it just started to become a fun journey of discovery,” she says. “Each step on my way here informed the next, and then it just started evolving.” HER PROCESS “I start off my day with a big cup of coffee, and my cat sits on my lap and lets me groom her,” says deGruy, who offers her work for sale on her website rather than at art galleries. DeGruy 62

then heads to her home studio: “I usually don’t start off painting. Most of the time, I play with shapes and newspaper clippings and whatever else catches my attention. I work on larger pieces first and then take the paint that’s left over and start slopping it onto smaller pieces. And then I go back and paint over what I’ve already done. … I paint pretty much every day.” HER DEFINITION OF ABSTRACT ART “For me, abstraction means using emotions, thoughts, ideas and patterns and creating a painting about them that doesn’t necessarily refer to reality. It’s mostly intuitive and involves playing with shapes, colors, lines and more to make a composition which expresses something in me, but which others may, and do, interpret differently.” HOW SHE KNOWS A PIECE IS FINISHED “It’s different every time. I know when I know. But I will say that there are canvasses that I’ve been working on over and over for forever.”

THE DAY TRIPS The several-hour drive to Newport Beach is more than worth it for the group. “It’s fun to go to the beach rather than just sit by the pool,” says Bill. “It’s a long day trip, but ends with great beaches and ocean views, plus visits to Laguna Beach and Balboa Island.” GETTING THERE To spend less on the flight, Bill recommends landing in Ontario, Calif. and then driving into Greater Palm Springs. 64

It has multiple pools (the Atkinson daughters’ favorite) and a great golf course and poolside bar and grill, called the Snake Bites Pool Bar & Grill (Bill’s favorites). “The experience is consistent,” Bill says.
