The landmark has served its neighbors since 1952, when Steven Johns – the son of first-generation Lebanese and Syrian immigrants – opened it up as a windowservice-only hot dog stand. The establishment now serves up some of the best burgers and “pig sandwiches” this side of the Mississippi. Johns’ daughter Suzanne and husband Jeff Wallace carry on the proud tradition. any years ago, the fire department in Beckley, West Virginia, was summoned to an emergency situation involving a kitchen fire. A girl had inadvertently turned on the wrong burner, heating up a can of lard stored on the stove. When she realized her mistake and reached for the container, she burned her hand while moving it and spilled the bacon grease on the open flames. Things quickly turned pretty dramatic, but the firefighters managed to extinguish the blaze and save the house. Although no one was injured, the kitchen was a total wreck. 38 . MARCH 2018
The gas stove and refrigerator were both destroyed, as was the wallpaper, and smoke damage was extensive. The kitchen soon received a full makeover, complete with matching appliances in harvest gold. Fast forward a few decades and you’ll occasionally find that same woman behind a stove, experimenting with recipes. More likely though, she’ll be busy running three of Little Rock’s most popular restaurants. That person is Mary Beth Ringgold, and her kitchens can be found at Cajun’s Wharf, Capers and Copper Grill.

For Capi Peck, cooking is in her blood. The Little Rock native is the granddaughter of Sam and Henrietta Peck, who’s legendary Hotel Sam Peck on Capitol Avenue was the setting for her first on-the-job training as a chef. She even brings some of her grandparents’ creations to the table at Trio’s. Since 1986, Peck has attracted a loyal following with her diverse menu offerings, which include an interesting mix of both American and worldly flavors. In addition to her loyal diners, Peck has also been an inspiration to a number of loyal staff members, too. Over the course of her 32-year career, she has mentored many young chefs, and many have been with her for more than 10 years, some since the 1980s. Keeping to her grandparents’ tradition, Peck continues to serve up the global cuisine she loves.
You could probably say that Scott McGehee is a rock star in the world of Little Rock food. There’s no doubt you’ve heard of his work. After graduating with honors from the California Culinary Academy in San Francisco, McGehee embarked on his culinary career as a line chef at Alice Waters’ famed Chez Panisse restaurant in Berkeley. In 1999, he returned to Little Rock to open Boulevard Bread Company. The gourmet bakery’s success was followed by the opening of ZaZa Fine Salad & Wood Oven Pizza Company in both Little Rock and Conway, Local Lime, Heights Taco & Tamale and Lost 40 Brewing. McGehee loves cooking up something delicious for everyone. And there’s no telling what he’ll be cooking up next.

Nominees in this category must be owned and operated in Arkansas, must have been in business for at least 25 years or more and must not be a chain restaurant. Three honorees will be selected each year for this category

For Chef Matthew McClure, nothing is worse than monotony. The four-time James Beard Award semifinalist and executive chef is always looking for new flavors and ways to reinvent classics at The Hive at 21c Museum Hotel in Bentonville. Raised in Little Rock, McClure’s family never forgot their country roots. Those family traditions in the kitchen stayed with him as he journeyed onward to the New England Culinary Institute for his associate’s degree and then at an internship Boston at Troquet, Harvest and No. 9 Park. During this time, he became exposed to a variety of flavor profiles from different cultures and developed a love for spice, which he brought with him to The Hive. When McClure isn’t in the kitchen, he spends time with his family and volunteering for the Southern Foodways Alliance, Bentonville Chef’s Alliance and No Kid Hungry.
This award recognizes unique food festivals and events that give residents a taste of Arkansas foods and hospitality. Festivals or events nominated for this award must be an annual event that has been held for at least five years. One honoree will be selected each year for this category.
Gone But Not Forgotten This award recognizes the collective culinary legacy of a once-and-always influential Arkansas restaurant that has since ceased operations. The reason for the closure is not important. It is the influence that the food – and/or those who prepared it – still have on other restaurants that matters. Cotham’s Mercantile Scott • 1917 - 2017 BY KAT ROBINSON One of the first restaurant to be considered for the rolls of Gone But Not Forgotten in the Arkansas Hall of Fame is one that has recently left our culinary scene. Cotham’s Mercantile in Scott burned to its stilts early on the morning of May 29, 2017, a loss that still stings for those who loved the country lunches and Hubcap burgers offered in the long building that sat on the bank of a bayou in Scott. Cotham’s Mercantile traces its history back to 1917, when it served as a general mercantile store for the town of Scott. Over the years, it spent time as a military commissary and even once served as Scott’s local jail. In 1984, owners Bill and Suzy Cotham created an Arkansas icon, adding a single table to the store for area farmers who wanted to sit down and enjoy their lunch, rather than eating their wax paper-wrapped bologna sandwiches on the front porch. It was soon discovered by local politicians such as David Pryor and Bill Clinton, who found the 20-minute drive from downtown Little Rock the perfect distance to escape the state’s capitol for a respite and a bite. It wasn’t long before more tables were brought in, and the moniker “where the elite come to eat” was tacked on. 42 . MARCH 2018
Though the mercantile’s goods gave way to a full set of table and chairs over time, the store’s walls remained covered with sundry items and photographs from its past. A long counter with glass cabinet sat to the left from the entryway, packed with everything from elixirs and spices to undergarments and baseball hats. Mismatched ceiling fans circulated the air in the massive, wood paneled room. Larry Griffin and his nephew Jon bought Cotham’s Mercantile in 1996 (Jon still owns Cotham’s in the City, the sister restaurant). The Griffins held onto it until 2001, when they sold the store to Scotty McNair, who owned the restaurant with Danielle Lynch at the time it burned. For three decades, folks from all walks of life rubbed elbows at those wooden tables while downing the daily meat-and-three or two-handing the restaurant’s famed 17-ounce Hubcap Burger with a side of double dipped oversized onion rings. Cotham’s was visited by President George Bush, by Food Network’s Rachel Ray and by The Travel Channel’s Adam Richman, who attempted to eat a four-patty Quad Hubcap on his show, Man vs. Food. It was a regular watering hole for business folks from the city and neighbors from rural Arkansas, and the meals taken within its walls were the sort that stick to the ribs, and to our memories.
GONE BUT NOT FORGOTTEN
Klappenbach Bakery Fordyce • 1975 – 2011 BY CALEB TALLEY The story of this famed bakery began in Washington state, but its chapter in Fordyce began in 1975. For 36 years, Norman and Lee Klappenback ran the bakery in the red brick building downtown, offering up locals and travelers a variety of warm pastries. It quickly became a rich, sweet tradition for those traveling along Highway 167. It also served as an anchor for the town, drawing in visitors from miles and miles away. A fire shut the bakery down in 2009, but it fought back to business a year later. But it didn’t last long. For another year, Klappenbach’s loyal customers had the chance to soak in that sweet smell and enjoy their tiny doughnuts, massive cinnamon rolls, Danishes and monkey bread. The bakery shut its doors for good on Oct. 1, 2011.
Coy’s Steak House Hot Springs • 1945 – 2009 BY CALEB TALLEY For decades, Coy’s served up juicy, top-tier steaks and seafood to locals and the many guests to the Spa City. The steakhouse was a popular haunt for nearly everyone on their annual pilgrimage to Oaklawn Park. This place was legendary, and was also a favorite of President Bill Clinton when he visited his boyhood town. And while their steaks were highly coveted by anyone who’d eaten there, what many miss most about Coy’s was their famed salad dressing. Plenty have tried to imitate it, to little success. The world lost this treasure in 2009, when the restaurant burned to the ground on the eve of the racing season.
