Southern Ocean Lodge Culinary Profile Baillie Lodges Culinary Philosophy at Southern Ocean Lodge Southern Ocean Lodge offers an almost exclusively South Australian culinary experience, with a menu of locally sourced food and beverages designed to connect guests with Kangaroo Island’s farmers and artisan producers and to offer a real taste of South Australia. Driven by a commitment to provide a real ‘sense of place’ for guests, the Baillie Lodges’ Culinary Philosophy is to source local produce for its daily changing menu and is essential to the dining experience at Southern Ocean Lodge. Chef Tom Saliba and his team in the kitchen at Southern Ocean Lodge deliver a menu that connects guests with the locale and features the finest regional ingredients from the restaurant to the cellar to the in-suite bar. The Southern Ocean Lodge kitchen team works with many local, small scale artisan food producers both on the island and the mainland and have established many exclusive, mutually beneficial relationships with its growers. Southern Ocean Lodge Chefs At Southern Ocean Lodge Executive Chef Tom Saliba brings a brilliant blend of his local South Australian and Maltese heritage to the fresh local produce-driven menus. Tom first worked at Southern Ocean Lodge in 2018 before gaining precious Baillie Lodges experience at sister properties Silky Oaks Lodgre and at Longitude 131, and returning to Kangaroo Island in time for the lodge’s reopening in 2023. Tom is joined in the kitchen by Sous Chef Dylan Pitallo who grew up in South Africa and worked with luxury expedition company Singita. Dylan moved to South Australia and joined the Southern Ocean Lodge team in 2015, before working at Sunset Food and Wine on Kangaroo island and opening his own restaurant, The Odd Plate, in Kingscote. In 2023 Dylan has returned to welcome gourmet travelers to the new-look Southern Ocean Lodge.

Wineries Islander Estate Winery Kangaroo Island is a new and relatively unknown wine region. The Islander Estate vineyards bring to fruition the enormous viticultural potential the region offers and blends the results with French winemaking expertise to produce a range of wines with elegance and finesse, designed to last and stand uniquely amongst the best in the country. Springs Road Springs Road Wines has been owned and operated since 2016 by the owners of Battle of Bosworth Wines Joch Bosworth and Louise Hemsley-Smith. The vineyard is on a special site in a very special place. It has a unique combination of relatively low rainfall, low soil fertility and a moderate maritime climate which results in low yielding vines producing highly coloured and intensely flavoured wines. It includes 11-acres of Shiraz, just under 11-acres of Cabernet Sauvignon and just about 3 acres of Chardonnay planted at Springs Road. These Kangaroo Island vineyards are a perfect fit for their pristine location on an island which is certified GMO free. Joch has continued with his organic ways which began in his vineyards in Willunga and Springs Road is undergoing conversion to certified organic viticulture. springsroad.com.au False Cape Named after a nearby coastal landmark, False Cape vineyard on Kangaroo Island was established in 1999 together with winemaking family, the Folletts of Lake Breeze Wines in Langhorne Creek. Located on the banks of the Willson River on the Dudley Peninsula between Penneshaw and Cape Willoughby, its location was selected for its ideal soil conditions. Boasting a north facing slope containing Terra Rosa soils over limestone and the Willson River flat with fertile dark alluvial soils making it the ideal conditions for growing quality fruit. Before the first vintage in 2005, the team explored the region and came across plots of 50-year-old Grenache vines. At the time, most Grenache was destined for blending. The team decided that had to change, so made these vines their focus and gave them the attention they deserved. McLaren Vale has great geological diversity from sub-region to subregion, and the soils are among the oldest in the world estimated at over 500 million years. Rockford Rockford is a family-owned winery and vineyards set in the heart of the Barossa Valley. Beverage Suppliers Kangaroo Island Spirits The Kangaroo Island Spirits distillery and tasting room is located near Kingscote in the island’s north. The team at KI Spirits was commissioned to create Baillie Lodges’ signature Baillies9 gin, crafted with Kangaroo Island’s local juniper and botanicals. Included in the range is a Coastal Lager, Indian Pale Ale and the very local Sheoak Stout. Mike (and his dog Lela) founded the brewery in 2015 and used his construction skills to create a rustic and welcoming venue. Almost all materials in KIB are recycled; from local shearing sheds to local quarried stone, the brewery is a very local affair. Kangaroo Island has been built on the hard work of generations, and to this day, perseverance and grit has been the underpinning quality of the island and its people. Seafood Pandana High School Students at Kangaroo Island Community Education’s Parndana Campus have created a groundbreaking ‘aquaponics’ project, which now provides sustainably produced barramundi and a range of hydroponic herbs and greens to Southern Ocean Lodge to the delight of the kitchen team and the relish of its guests. Southern Ocean Lodge has been the school’s largest customer, the lodge has steadily increased its orders of barramundi over time and worked with the students on special requests for herbs. The relationship between the school and the lodge flourished as everyone embraced the possibilities on offer to both the students and the lodge. Scott Wilson Marron Kangaroo Island’s Scott Wilsom is a man of many talents. Scott created the 125-metre-long limestone feature wall that’s the backbone of Southern Ocean Lodge, and is also a sheep farmer and the supplier of marron – or freshwater crayfish – for Southern Ocean Lodge. Marron is a delicious regional speciality and a must-try when offered on the menu. Kangaroo Island Marron Kangaroo Island Marron is a family owned and run business that is dedicated to growing ethically farm grown marron. Family member Justin Le Cornu is a qualified chef. After many years in the industry working as a commercial chef, Justin saw a television program on marron and, impressed their suitability to commercial restaurants, decided to give sustainable production a go. KI Olives Kangaroo Island Olives is a South Australian agribusiness focused on regenerative agriculture and sustainable farming. Today, the family farm is known as 'Little Liguria’. It is a mixed farming operation which includes olive groves, honeybees, seasonal grazing, and agritourism. Since then, the lodge has become his main client. At Southern Ocean Lodge guests might try John’s game birds on the menu, perhaps served as an aromatic ragout with pearl barley, potato and fried kale. The kale is not a random choice of garnish. ‘‘The pheasants actually eat kale as part of their diet,’’ says Kearsley. “We work on maintaining a healthy diet for our birds, which are a combination of insect-based pellets, plus lots of vegetables and grains to plump them up. It also adds to the flavour – and we are all about flavour, not fluff.’’ KI Living Honey Kangaroo Island Living Honey is a family owned and operated bee farm which produces raw organic honey and honey products. The family farm includes Shawn the apiarist (beekeeper), farmer and father; Anthea the bookkeeper, product manufacturer and mother and their five children. Shawn started working with bees as a hobby in 1998 and soon realised that he wanted to do more with them and so they continued to build their hive numbers each year. KI Living Honey currently manages around 250 productive hives, and on a good year they extract up to 26-tonne of certified (NASAA) National Association for Sustainable Agriculture Australia organic honey.
