from the editor
welcome to
Bali
Tourists, Travelers, & Adventure-seekers... It’s finally sunshine and blue skies this March in Bali! After months of rain and grey skies, we’re finally able to enjoy Bali as it is meant to be enjoyed. With plenty of sunshine to go around, we’re thrilled to welcome the third month of the year, which is also a great time to visit Bali for the Nyepi celebrations that mark the start of the Hindu New Year. Those of you who already know the drill, Nyepi means complete silence for 24 hours - the entire island goes into total shut down mode and everyone is prohibited from going outside, making loud noises, travelling and even working and for those who have not yet experienced Nyepi, you’re missing out! This globally unique Balinese celebration runs for a week or so, with preparations taking place weeks before. An absolute don’t miss is the Ogoh-Ogoh Parade that takes place on the eve of Nyepi. Also do not miss the entire series of intricate ceremonies before and after Nyepi Day, which you can easily observe while you’re here in Bali. To find out more, flip over to our Don’t Miss pages for details. Our other favourite thing about Nyepi is the amazing hotel deals that are available during this time. Check out our Hot Deals pages for Nyepi deals at your favourite hotels and villas that would include relaxing stays in some of the best rooms in town, breakfast, lunch and dinner, F&B and Spa discounts as well as free use of the hotel’s amenities. Turn over a few pages and check out everything fresh and new on the island this month in our What’s New section. Party people, Party Agenda gives you the most exciting and thrilling parties and don’t forget to check out all the winners this month in Bali Best Awards. As usual, our Reviews are personal recommendations, ones that are tried and tested to ensure that you get only the best out of your time here in Bali. This month, Courtyard Seminyak brings the best from the sea to you with its Seminyak Fish Market that takes place every Saturday at Seminyak Kitchen. KORI Restaurant, Bar & Catering is offering organic avocados fresh from its very own garden! Hotel Santika Seminyak is the place to go for a traditional Balinese feast called “Megibung” and High Tea at The ANVAYA Beach Resort Bali is a great afternoon treat. BIMC Siloam Nusa Dua is all about reversing the effects of ageing and Central Kuta Money Exchange is still the best and safest place on the island to conduct your financial transactions. Don’t forget to visit Poppies Cottages in Kuta when you’re feeling nostalgic and need some quality “me” time. If you’ve had a wonderful time here in Bali, or have tried something exciting and new that you would like us to know about, contact us! We always love to hear from you. Melasti March 14th, 2018 When loosely translated, Melasti means “to purify” or “to cleanse”. This intricate ceremony typically takes place 3 days before Nyepi Day with the intention to cleanse oneself of bad karma and sins. This is a significant event that takes place every year, where villagers would gather at a meeting point before walking to the beach or a water source while carrying a variety of holy artifacts from the temple along with offerings and the traditional Balinese flags called umbul-umbul. Men, women and children are decked out in their traditional finest, creating a most beautiful procession. Sweet smelling incense smoke and traditional Balinese music accompany the devotees on their walk, before arriving to their destination and performing intricate purification ceremonies. Women carrying tall offerings of fruits and rice are a sight to behold and men carry a large yellow and white cloth that symbolizes the bridge of God. A Melasti Pilgrimage is a definite don’t miss – it is a magnificent vista, a momentous occasion that will definitely add a delightful flavour to your excursion on the island. Ogoh-Ogoh Parade - Eve of Nyepi March 16th, 2018 One of the most awaited events to take place on the eve of Nyepi; the Ogoh-Ogoh Parade has gained worldwide recognition due to its cultural uniqueness. Before the parade starts, every family will conduct prayers and blessings at the family temple before conducting a ritual called “Pengrupukan” – which means, to chase away malevolent forces. Entire families will go through their homes hitting pots and pans and carrying lit fiery torches. These evil spirits are later manifested in the form of the Ogoh-Ogoh or demon effigies with bulging eyes made of bamboo, papier-mâché and cloth. Carried through the streets in torch-lit parades, the OgohOgoh’s purpose is to bewilder evil spirits to flee and cease harming human beings. On this day, cock fighting is permitted because the spilling of blood is necessary for the purpose of purification. The parade usually starts at around 19:00 local time and can be viewed on all major roads around Bali. Nyepi Day 2017 (Day of Silence) March 17th, 2018 Commemorating the start of the Hindu New Year, Nyepi Day is a day of complete silence where the Balinese spends the day fasting and resting in contemplation and meditation. It is observed from 6am to 6am the following day and no bright lights are allowed along with working, entertainment, pleasure, travelling and, for some, no talking or eating at all. On this day, Bali’s usually bustling streets and roads are empty, with little or no noise from TVs, radios, clubs and restaurants with few signs of activities. The only people to be seen outdoors are the Pecalang, traditional security men who patrol the streets to ensure the prohibitions are being followed. This year’s Nyepi is extra special as it falls on the same day as Saraswati, a traditional Balinese holiday that celebrates knowledge through the Goddess Saraswati, a symbol of knowledge, arts, wisdom and learning.

Omed-omedan Banjar Kaja, Sesetan Village, Denpasar March 18th, 2018 A hundred-year old ritual that originated from the Banjar Kaja Sesetan Village in Denpasar is also known as “The Kissing Ceremony” and is mainly held for youths of the village to express their joy for the first day of the new year. The procession, which involves unmarried youths between the age of 17 to 30, begins with mass prayer for safety before both groups take the position of facing each other on the main street of the village. Then, at the signal of a Hindu leader, both sides approach the center of the road. Male participants pull and kiss the female participants while other villagers pour buckets of water over them. Pagerwesi March 21st, 2018 The word Pagerwesi is derived from two Javanese words - pager (fence) and wesi (iron).Celebrated in honour of Lord Siva only days after Saraswati Day, these two celebrations are closely related to one another as it is believed that knowledge must be protected from bad influences and misuse as the iron fence is a symbol of protection. It’s a propitious day for the Balinese to strengthen their minds and souls against evil forces through prayers and meditation, a reminder to live life appropriately without giving in to bad behavior or evil desires. It is the third most celebrated holiday in Bali after Galungan and Nyepi and is celebrated every 210 days on a Wednesday. Tumpek Landep March 31st, 2018 Tumpek Landep is a holy day dedicated to the God of Heirloom. Celebrated once every 210 days on the Balinese calendar, offerings and prayers are offered for objects made of metal. Prayers begin early morning at the village temple, and continues at home with more offerings and prayers made to all metal items owned by the family including heirloom, weapons, transportation, computers and any other object that may contain metal in the hopes that these items will keep the owner safe and help them towards betterment in their daily lives. On this day, you’ll see the automobiles and motorbikes on the roads of Bali bearing intricate stitched-leaf ornaments and offerings called “Sampian”. It is also said that ceremonies held on Tumpek Landep is symbolic, held to remind people to keep their minds alert and sharp so as to remain useful to society.

about bali
Beautiful Island With a reputation as one of the most beautiful and diverse tourist spots in Asia, Bali annually attracts almost 7,000,000 visitors yearly from around the world.
Geographically, situated between the islands of Java and Lombok, Bali is small, stretching approximately 140 km from east to west, and 80 km from north to south. The tallest of a string of volcanic mountains that run from the east to the west is Gunung Agung, which last erupted in 1963. Located just 8º south of the Equator, Bali boasts a tropical climate with just two seasons (wet and dry) a year with an average temperature of around 28ºC. The wide and gently sloping southern regions play host to Bali’s famed rice terraces, which are among some of the most spectacular in the world. In the hilly, northern coastal regions, the main produce is coffee, copra, spices, vegetables, cattle and rice. The Balinese have strong spiritual roots and despite the large influx of tourists over the years, their culture is still very much alive. The main religion is Agama Hindu Dharma, which, although originally from India, is comprised of a unique blend of Hindu, Buddhist, Javanese and ancient indigenous beliefs; It is very different from the Hinduism practiced in India today. Naturally creative, the Balinese have traditionally used their talents for religious purposes and most of the beautiful work to be seen here has been inspired by stories from the Ramayana and other Hindu epics.

The majority of Bali’s 4,000,000 people live, for the most part, in tight village communities with large extended families. The largest cities are Denpasar (the capital) and Singaraja in the north. The main tourist area stretches from Kuta to Seminyak. Kuta became a major attraction during the tourist boom of the 70’s because of its famous white-sand beaches, the surf, and stunning sunsets. Today, the stretch from Kuta to Seminyak is a major tourist destination, with hundreds of hotels, bars, restaurants and shops. Those in search of a little peace and quiet tend to head for the more serene resorts of Sanur and Candi Dasa on the east coast, or Lovina in the north. Nusa Dua, on the southern-most peninsula of the island, houses many five-star hotels. The central village of Ubud, in the hilly region of Gianyar, has also blossomed as a tourist attraction and is now considered to be the artistic and cultural centre of Bali.

culture
Beautiful Culture By the Bronze era, around 300 B.C., a fairly evolved culture already existed on Bali. The complex system of irrigation and rice production, still in use today, was established around this time.

It appears that the main religion around 500 A.D. was predominantly Buddhist in influence. In 670 A.D., a Chinese scholar (Yi-Tsing), on a trip to India, reported that he had visited a Buddhist country called Bali. It wasn’t until the 11th century that Bali received the first strong influx of Hindu and Javanese cultures. With the death of his father around AD 1011, the Balinese Prince, Airlanggha, moved to East Java and set about uniting it under one principality. Having succeeded, he then appointed his brother, Anak Wungsu, as ruler of Bali. During the ensuing period there was a reciprocation of political and artistic ideas. The old Javanese language, Kawi, became the language used by the aristocracy, one of the many Javanese traits and customs adopted by the people. With the death of Airlanggha, in the middle of the 11th century, Bali enjoyed a period of autonomy. However, this proved to be short-lived, as in 1284 the East Javanese King Kertanegara, conquered Bali and ruled over it from Java. In 1292, Kertanegara was murdered and Bali took the opportunity to liberate itself once again. However, in 1343, Bali was brought back under Javanese control by its defeat at the hands of Gajah Mada, a general in the last of the great Hindu-Javanese empires, the Majapahit. With the spread of Islam throughout Sumatra and Java during the 16th century, the Majapahit empire began to collapse and a large exodus of aristocracy, priests, artists and artisans to Bali ensued. For a while Bali flourished and the following centuries were considered the Golden Age of Bali’s cultural history. The principality of Gelgel, near Klungkung, became a major centre for the arts, and Bali became the major power of the region, taking control of neighbouring Lombok and parts of East Java.

The European Influence
The first Dutch seamen set foot on Bali in 1597, yet it wasn’t until the 1800’s that the Dutch showed an interest in colonising the island. In 1846, having had large areas of Indonesia under their control since the 1700’s, the Dutch government sent troops into northern Bali. In 1894, Dutch forces sided with the Sasak people of Lombok to defeat their Balinese rulers. By 1911, all the Balinese principalities had either been defeated in battle, or had capitulated, leaving the whole island under Dutch control. During World War II, the Dutch were expelled by the Japanese, who had occupied Indonesia from 1942 to 1945. After the Japanese defeat, the Dutch tried to regain control over their former colonies, but on August 17, 1945, Indonesia was declared independent by its first President, Sukarno. After four years of fighting and strong criticism from the international community, the Dutch government finally ceded and, in 1949, Indonesia was recognized as an independent country. The People
Life in Bali is very communal with the organisation of villages, farming and even the creative arts being decided by the community. The local government is responsible for schools, clinics, hospitals and roads, but all other aspects of life are placed in the hands of two traditional committees, whose roots in Balinese culture stretch back centuries. The first, Subak, concerns the production of rice and organises the complex irrigation system. Everyone who owns a sawah, or padi field, must join their local Subak, which ensures that every member gets his fair share of irrigation water. The other community organisation is the Banjar, responsible for arranging all village festivals, marriage ceremonies and cremations. Most villages have at least one Banjar and all men have to join when they marry. Banjars, on average, give membership to 50 up to 100 families and all Banjars have their own meeting place called the Bale Banjar. As well as being used for regular meetings, the Bale (pavilion) is where the local gamelan orchestras and drama groups practice. Religion
Balinese people are Hindu, yet their religion is very different from the Indian variety. The Balinese worship the Hindu trinity Brahma, Shiva and Vishnu, who are seen as manifestations of the Supreme God Sanghyang Widhi. Other Indian gods like Ganesha (the elephant-headed god) also appear, but more commonly. Shrines associated with the many gods and spirits, uniquely Balinese, are found all over the island. Balinese people strongly believe in magic and the power of spirits, basing much of their religion on this. They believe good spirits dwell in the mountains and that the seven seas are home to demons and ogres. Most villages have at least three main temples, namely: (1) the Pura Puseh, or ‘temple of origin’, facing the mountains; (2) the Pura Desa, or village temple normally found in the centre; and (3) the Pura Dalem, aligned with the sea and dedicated to the spirits of the dead. Aside from these ‘village temples’, almost every house has its own shrine. Some temples, for example Pura Besakih on the slopes of Mount Agung, are considerably more important and people from all over Bali travel there to worship. Offerings play a significant role in Balinese life as they appease the spirits and thus bring prosperity and good health to the family. Every day small offering trays (canang sari), containing symbolic food, flowers, cigarettes and money, are respectfully put on shrines, in temples, in front of houses and shops, and at dangerous crossroads. Festivals are another great occasion for soothing the gods. The women carry huge, beautifully arranged pyramids of food, fruit and flowers on their heads while the men might conduct a blood sacrifice through a cockfight. The gods are invited to descend and join the festivities with music and traditional dances to go with it. This kind of event is extremely exciting, memorable and well worth attending.

art & artist
Beautiful arts
With the arrival of European artists in the beginning of the 20th century, this soon began to change. Local artists started to develop their own individual styles. PAINTING
Until the start of the 20th century, the dominant form of painting was the portrayal of Hindu epics by painters and illustrators called ‘Sangging’. Aside from making large representational paintings, the ‘Sangging’ were expected to decorate everything from gourds, wooden altars, bamboo vessels, headboards for princely bed chambers and, in particular, they were expected to illustrate astrological wall hangings on bark paper or cloth. It wasn’t until the early 1900s that western influences reached Bali. The use of Asian symbols in the works of, among others, Paul Gauguin, Toulouse Lautrec and Camille Pissaro, created a new trend for Asian-influenced art and for European painters to move to Bali. Ubud’s fame regarding art can be traced to the arrival of the German painter Walter Spies and the Dutch Rudolf Bonnet. There is a much wider range of artistic styles today. Ubud Style
Influenced by the western use of perspective and everyday-life subject matter, the Ubud style is one of the most ‘expressionistic’ of all Bali’s schools. Despite this, Ubud’s art still retains many traditional features, including attention to detail and stylized characters. Batuan Style
Strongly wayang based (puppet). This style involves hundreds of intricately painted representations of Balinese life, filling every available nook and cranny of the canvas. Keliki Style
Keliki paintings measure 20cm by 15cm. They contain scenes of mythical and Ramayanic characters engaged in battle, good versus evil, on sinister backgrounds.

Pengosekan Style
From this village, on the outskirts of Ubud, a new style sprang up during the 1960s. It concentrated on just a few natural components, such as birds, insects, butterflies and plants. STONE CARVING
Stone carvings were mainly used to decorate temples and palaces. There is little difference between the iconography decorating temples and that of private buildings. Gateways represent the dividing line between the inner and outer worlds and as such are the recipients of some of the most fantastic carvings. Bali’s modern-day centre of stone carving is the village of Batubulan, situated halfway between the towns of Denpasar and Ubud. TEXTILES
One of the most striking things about Bali is the rich variety of cloths and materials that are to be seen in thousands of shops throughout the island. However, only a small proportion of these are indigenous to Bali. The myriad of batik clothes and sarongs available everywhere, are mainly imported from Java. Bali does have a very rich textile industry of its own. The beautiful Songket fabrics, worn by performers of traditional dances, are a good example. In Songket gold and silver threads are woven into the cloth to create complex motifs of birds, butterflies and flowers. Endek, or weft ikat, is another common method used in Bali. In weft ikat weaving, the weft threads are dyed to create the design and are then woven with plain warp threads.

The least common form of weaving to be seen in Bali is the Geringsing, or double-ikat, and it is perhaps the most sought after. In Geringsing both the warp and weft threads are dyed to their final designs before being woven together. With the exception of certain areas in India and Japan, this weaving technique can only be found in the small Bali Aga village of Tenganan, East Bali. WOOD CARVINGS
Wood and stone carvings have traditionally been featured largely in temple and palace architecture. Immaculately carved demons and mythical beings decorate pillars, door panels, lintels and window shutters with the object of protecting the buildings from evil intruders. Scenes of legendary figures placed within a floral décor, set a more pleasant and educational tone. With the arrival of European influences, wood carving started to develop a long more innovative and commercial lines. Today, whole villages specialise in producing certain styles of work. The village of Mas, near Ubud, is the best known for its carvings of female figures, Buddhas, characters from Hindu epics, the traditional topeng (mask) and Wayang Wong masks. DANCE & DRAMA
Dance and drama have played a historically important role in Balinese society. Through this medium, people learned about the tales of the Ramayana, Mahabarata and of other epic stories from Balinese history. The following are brief descriptions of some of the more well-known dance-dramas that can be seen at regular performances throughout Bali. Baris - This is a warrior’s dance. It is usually performed by men, either solo
or in a group of five or more.
Barong & Rangda - This is a story about the struggle between good and evil.
Good is personified by the Barong Keket, a strange but fun-loving creature in the shape of a shaggy semi-lion. Evil is represented by Rangda, a witch.
Kecak - The most famous of the Balinese dances, originated from the Sanghyang dance choirs, holds its uniqueness in the entrancing ‘Kecak, kecak’ chant. The Kecak as a dance developed in the 1930s, in the village of Bona, where it is still performed regularly. Legong - This dance tells a story of princess Rangkesari being held captive
by King Lakesmi. Rangkesari’s brother, prince Daha, gathers an army to rescue his sister. The Legong is a very classical and graceful dance, always performed by prepubescent girls, who can be as young as eight or nine years old.

Wayang Kulit (Shadow Puppet) - Wayang Kulit is one of the great story-telling traditions of the Javanese and Balinese people. The wayang show usually consists of a small four-piece orchestra, which provides the musical accompaniment, around sixty ‘puppets’, carved out of flat pieces of water buffalo hide, and the dalang or puppet-master. The good characters speak in ancient ‘Kawi’, whereas the evil or coarse ones speak Balinese. The Bali Agung Show
The Bali Agung Show at the Bali Safari and Marine Park is an inspiring cultural performance dedicated to the entertainment of both local and international audiences. This spectacular show celebrated its 1500th performance on Jan 19, 2016. With regular scheduled performances over the past five years, the colossal and spectacular Bali Agung Show is arguably the longestrunning theatrical production in Indonesia’s theatrical history. Devdan’s “Treasure of the Archipelago” at the Bali Nusa Dua Theatre is a 90-minute show that takes you on a tour of the Indonesian archipelago with impressive acrobatics, effects and traditional dances. Performed 4 times a week every week.www.devdanshow.com. Calonarang
The Calonarang dance tells the tale of a widow queen, Walunateng Dirah from Girah village who possessed the ability to conduct powerful black magic. Her powers were said to be stronger than the King Erlangga’s, causing fear among all that nobody would dare to ask for her daughter’s hand in marriage. The widow, furious, placed a curse on the entire land and people began to die without reason, which caused a state-wide war. The King then sought the help of a Priest, Mpu Bharadah, who defeated Calonarang with his white magic. Ramayana
The Ramayana dance tells the epic love story of Rama and Sita whose love was too strong to be torn apart. Expect exciting scenes of treachery among the royal family, lost-in-the-jungle scenes, kidnappings, brave rescue missions by Hanoman the Monkey King, and a romantic ending where Rama is forever reunited with his love, Sita.

There are many diving sites in Bali that attract divers from around the globe. Some of the diving sites, like USAT Liberty Shipwreck and Amed diving sites are suitable for beginner divers. If you’ve not yet tried these sports, we recommend that you start at Sanur or Tanjung Benoa Beach where you can hire the necessary equipment, either right on the beachfront (at a beach club) or at one of the hotel-run dive centres. Instructions are available at these diving centres. Most of the centres offer International (PADI) diving certificates but be sure to check their PADI Resort Code as well, for the insurance and medical facilities. It is advisable to look for diving centres that have a ‘five-star’ PADI Approval Rating. Please note that Bali’s only decompression chamber is at Sanglah Public Hospital in Denpasar (see ‘Hospitals’ in the ‘Essential Info’ section for more info). BALIPLUS March 2018 |

how to get around

Easy Riding car HIRE Car rental agencies can be found in all the major tourist areas. Prices start from approximately USD 30 a day for a Suzuki-style jeep (Jimny) and about USD45 for a new Kijang jeep. Organize and arrange your car rental needs for a holiday or business stay. Most rental cars in Bali are in decent shape, BUT you should check them thoroughly before signing any forms. Always carry an international driver’s license with you. Motorbike rental You can find bikes for rent almost everywhere. Prices usually start from around USD6/day for a standard 125cc motorbike. Scooters, affectionately called ‘Bebeks’ (Ducks), start at around USD5/day. Always check the bike before parting with your cash. In Indonesia you have to wear a helmet by law and carry an international drivers license! Bicycle/Mountain Bike Cycling can be a cheap and enjoyable way to get around and about. It does, however, take some fitness to ride around the more central and hilly regions! The northern coastal roads are ideal for longer trips. You can find bike rental shops in all the main tourist areas. Bemo Public transport in the form of mini-vans is by far the cheapest way to travel, although not the most comfortable! Tours Organised tours relieve you from the hassle of trying to navigate your own way around. You do have to follow itineraries however, so spur of the moment sight-seeing is not an option on these. The next time you plan a holiday to Bali, don’t give Kuta a miss because it is here in the heart of iconic Poppies Lane 1 that you’ll find a beautiful and transcendent garden, home to the enchanting Poppies Cottages. This is the place where time has stood still, where the charm and pleasures of days gone by are still very much alive. Hidden behind tall brick walls covered with creepers, among a magnificent tropical garden with swaying palm trees, Balinese statues, fish ponds and stepping stones is where you’ll find a cluster of the most charming cottages you’ll ever see. Sitting in their own cozy nook and partially hidden behind delightful tropical flora are twenty individual cottages with white washed walls and thatched roofs welcoming you into your own secret escape. Nothing much has changed since its establishment in 1998; everything is just the way it should be, but painstakingly and lovingly maintained. Service is always at its best and you’ll feel right at home with friendly and professional Balinese staff members who have mostly been with the establishment since it was first opened. Here you will learn that the staff and owner are all Balinese and chances are they have been serving at this fine institution for at least two decades. The name Poppies Lane was actually taken from Poppies Restaurant. Since 1978, Poppies restaurant is renowned for fresh seafood or tasty Indonesian and international cuisine in a romantic tropical garden setting. Located across the lane from Poppies Cottages 1, the name was given by tourists at that time to reference those looking for the restaurant and later on, the cottages. Each cottage at Poppies Cottages is identical with pleasant white brick walls, a breakfast terrace, a private garden and a carved wooden Balinese door that leads into expansive and 66

well thought out rooms within. The interiors are decorated with colourful Indonesian fabrics, and include a host of thoughtfully provided conveniences as well as local artifacts and discreet design details. Here you’ll find all the amenities that you would need for a relaxing stay including AC and fan, a flat screen TV, comfortable beds, sofas, WIFI in all the rooms, a writing desk and chair. Adjoining every room is a hidden garden area that conceals a charming and spacious bathroom featuring a sunken marble bathtub and shower.
Our favourite part of the property is where the swimming pool and bar are located. Concealed in the corner of the beautiful garden among riotous banks of bougainvillea, you’ll find a sheltered retreat set amongst natural rocks and cascades for you to swim, sunbathe, relax and unwind. Steps lead up to a peaceful reading and internet room, where right across sits an intimate pool bar that serves drinks and light bites. Poppies Cottages is truly a unique find, a timeless treasure well worth discovering in an ever-evolving space that will stay in your hearts and minds for years to come.

The Head Chef at the newly opened SereS Springs Resort & Spa in Singakerta, Ubud believes that Passion Fuels Creativity and this strongly translates into every exquisitely prepared and mouthwatering dish served at the resort. Chef Matthew Wood hails from Australia and has seen the ins and outs of over 15 kitchens in the resorts and restaurants that he’s been with since 1984. Now, he oversees all the kitchens and food preparations at SereS Springs Resort & Spa and takes special pride in the one-of-a-kind hydroponic garden that supplies fresh edible flowers, vegetables and fruits to his kitchen before creating a dish that gives fantastic results in taste and texture. The only Chef in a large family, both Chef Matthew’s mother and grandmother were great cooks and he believes that they play important roles in his devotion towards food and cooking. This further intensified at the age of 15 when he began working part-time in various restaurants after school for experience and to be amidst the “kitchen chaos” as he calls it. Currently, Chef Matthew is in charge of both restaurants at SereS Springs – Mulberry Place offers all-day dining with exquisite selections from international cuisines along with buffetstyle displays of Indonesian, Chinese, Western, Singaporean, Thai, Japanese and Italian foods. You could watch Chef Matthew and his team at work here in the open kitchen and during live demonstrations for the making of the Chinese “La Mian” noodles. Chef Matthew’s signature dish that you must try is the Wonton Noodle Soup, which, 74
| BALIPLUS March 2018
according to the Chef himself, is a very simple dish, but it takes time and great detail to achieve the flavour balance. Live seafood is available here too, along with decadent desserts, wines, freshly pressed juices and freshly brewed coffee or tea. At Bell Aria Italian Restaurant, Chef Matthew prepares spectacular dishes from Rome, Venice, Napels, Florence, Milan and beyond - signature dishes from each Culinary Region of Italy. A wood-burning brick oven is at the ready for your pizza order. Another great
favourite at Bell Aria is the juicy and tender Grilled Chicken Balsamic. There’s a wide selection of pasta too including Bolognese, Arrabiata and Puttanesca. Chef Matthew was also the Executive Chef at Sens Hotel & Spa, the sister property of SereS Springs where he oversaw the all-day dining venue, Yonne Café & Bar, 97 rooms and suites and the ballroom with a capacity of 300 guests. He faces a hoard of new challenges at SereS Springs with 2 restaurants, a lounge, and 2 ballrooms with a capacity of 500 guests, 60 rooms and 20 private villas. He says his secret to excellence and keeping it all together is to lead by example with respect & integrity towards the guest, the product & the team. SereS Springs Resort & Spa is a five-star getaway that is culturallyinspired by Bali’s ritual-rich traditions to deliver an authentic and unique experience beyond compare. It is blissfully nestled amidst verdant valleys, rivers, waterfalls as well as Bali’s iconic terraced rice fields.

When in Bali, do as the islanders do and immerse yourself in an exotic dining occasion with a Balinese “Megibung” experience; an act eating from the same large plate to foster the spirit of togetherness. According to various sources, this unique sharing concept emerged from East Bali in the 17th century and the word “Megibung” comes from the Balinese word “Gibung” which means, to share with others. An authentic Balinese Megibung would mean a group of 4 to 7 people eating with their hands off one large plate, or a large leaf. There is white rice, and various dishes to complete the meal. Now, you can try this unique Balinese tradition at Hotel Santika Seminyak’s Merah Saga Rooftop Restaurant & Bar with a modern take of the Megibung. Priced at only IDR 200,000++ tax service for two persons or IDR 400,000++ tax service for four persons, Megibung at Hotel Santika Seminyak is a beautiful presentation of some of Bali’s most tantalizing selections; eight succulent dishes in delicious Balinese spices come together on one large tray featuring the ever tasty Balinese Chicken Soup for a fantastic start and great when poured over steaming White Rice and in between the Sate Lilit or Balinese Tuna Satay, Chicken Satay, Grilled Prawns, Pepes Ikan Tuna that comes sizzling hot over a smoking charcoal grill. If you think this sounds a lot, you’re not even halfway through! The Kacang Kalasan or Long Beans in Balinese Spices and Coconut Milk will go well with the classic favourite Ayam 78
| BALIPLUS March 2018
Betutu, Braised Tender Chicken in Balinese Spices. Bringing all of these dishes together is the signature touch of Balinese cuisines; the Sambal Matah for a refreshingly spicy and zesty flavour to your meal or the Sambal Embe; Balinese Fried Shallot that is delightfully crunchy, salty and spicy. Feel free to choose the spiciness level – just let the staff know and the food, as well as the sambal, will be adjusted according to your preferences.
Merah Saga Restaurant & Bar is no ordinary restaurant – you can be sure that the food and drinks here are exceptional and many would flock to this rooftop venue to enjoy breathtaking sky views from this spectacularly elevated space, high above all the hustle and the bustle. The swimming pool is located right next to the restaurant and is the perfect space for Romantic Dinners, cocktails and sunset sessions with 360 degrees unimpeded views of Seminyak and beyond. Giving you a sense of light and space, this is one of the best spaces in Seminyak to enjoy a peaceful and relaxing meal, swim or a drink. Don’t forget your camera – we’ve enjoyed the most mesmerizing sunrise and sunsets from here as well as the most immortal views of the mighty Mount Agung on an exceptionally clear day.

...put on loads of high factor waterproof suncream (especially if you intend to spend a lot of time in the water).
...swim outside designated swimming areas. Currents can be very strong so swim between red and yellow flags.
...drink a lot of bottled water and eat a lot of fresh fruit - do your body a favour.
...do drugs! It could lead to death penalty. Enough foreigners reside in Bali in courtesy of the Govt. prison service!
...try not to step on offerings in the street (walk around them). ...be careful with your belongings at all times. Crime is on the increase and can ruin your holiday. Cases of handbag snatching have been reported so please leave important documents in your hotel safe (carry photocopies) and wear your bag across your shoulders! ...respect the slow pace of processions. If stuck behind one don’t honk your horn! ...haggle when buying (except on price-tagged goods). ...buy ‘lmmodium’ to relieve bouts of Bali belly.
...touch people’s heads - it is very offensive to Hindus. ...enter a temple during menstruation. Sorry ladies! ...forget to add salt to your food and to drink lots of water-you probably sweat more here than at home. ...worry too much about the ice - it’s government quality controlled in established bars and restaurants. ...forget to look and listen while crossing the road. Cars may stop, motorbikes may not! ...forget to reconfirm your flight 72 hours prior to flying.
...have a great holiday! 114

As little as twenty years ago, ageing is a concept that refers to not only the maturing of the mind but the ageing of the physical self. Today, with the popularization of injectables like Dermal Fillers and Botox, everyone can remain young to reflect their true self within. With worldclass institutions like the BIMC Siloam Nusa Dua, a growing number of Bali residents and visitors are feeling more and more comfortable to explore Dermal Fillers, a safe and effective, non-surgical method that diminishes facial lines and restores youthful volume and fullness to the face. Aging is the natural loss of subcutaneous fat to the face, causing facial muscles to work closer to the skin’s surface. Smile lines and crow’s feet then become more apparent. The facial skin stretches, adding to the loss of facial volume. Sun exposure, heredity and lifestyle also cause ageing. Consider Dermal Fillers to plump thin lips, enhance shallow contours, soften facial creases and wrinkles, and improve the appearance of recessed scars while adding volume to the lips and cheeks, creating a defined and asymmetrical look. Dermal Fillers are inexpensive, safe, painless to inject, hypoallergenic, and longlasting and the BIMC CosMedic Centre provides several high-quality temporary fillers, namely Teosyal, Esthelis, Restylane and permanent fillers like Aquamid. Until April 2018, take advantage of a special 20% discount on all dermal fillers at the BIMC Hospital CosMedic Centre. Please contact the reception staff at cosmedic@bimcbali.com to make your appointment today!

A Word of Advice ATTENDING CEREMONIES:
Remember these are serious occasions and should be treated as such. Religious guidelines: • Always wear a sarong and sash. • Do not walk in front of people that are praying. • Do not use a flash camera or point your camera into the priest’s face! • Never sit higher than the priest or the offerings. • At cremations, do not get in the way of the attendees - however important that photographic opportunity is! • Women are not allowed to enter temples during menstruation. N.B. When attending Special Ceremonies or Anniversary Celebrations as a guest or onloocker, small donations are gratefully received. Your donation will help in paying for the offerings, and upkeep of the temple.
DANGEROUS SPORTS:
Make sure you either have personal insurance or travel insurance that will cover any accident.
DRIVING:
In Bali, always expect the unexpected, always keep your eyes open and your mind on driving. Beware of motorbikes! It is best to rent a car with full insurance as this will save time and money if you are involved in an accident. You must use a helmet at all times and have a valid license.
MONEY CHANGERS:
Be very careful when changing your money. Always check the rate of exchange and commission (if any). Most importantly, always count your money before you leave the premises and, if you can, bring your own calculator as the ones used by some places can be a little ‘inaccurate’.
PETTY CRIME:
There have been a few cases of handbags being snatched after tourists have cashed money at Banks or Money Changers! Put your money away in your ‘burn-bag’ or hold onto your hand bag tightly! When changing large amounts of money please check each note carefully as there are a number of (noticeably) fake notes in circulation. When trying on garments do not take your jewellery off and leave it lying around - give it to a friend or leave it in the hotel safe. When at a spa - use the jewellery box or locker provided for jewellery.
SWIMMING IN THE SEA:
Currents and undertows can be strong. Always swim between the red and yellow flags and don’t swim too far out! Please, do not leave your belongings unattended on the beach.
Thank you for respecting these suggestions.
