CURATING THE PERFECT WEDDING MENU

As an expression of culture, love and joy, it’s no wonder sharing a meal has become a staple part of a wedding day celebration. With so many types of cuisines and meal options out there, deciding on the perfect wedding day menu can sometimes be a daunting task. To bring you some delicious inspiration, we have consulted with local caterers to see what wedding food trends are stealing the hearts of couples along the Gulf Coast in 2024.
Buffets & Food Bars
If you search “wedding food” on Pinterest, you’re bound to come across photos of elaborate table spreads, beautiful grazing boards and customizable self-serve bars. Buffet-style dining and interactive food bars allow guests to get all of what they like, and nothing that they don’t.
In recent years, buffet-style dining at weddings has become increasingly popular due to its casual and customizable nature. “In my experience, most people lean towards a buffet service here in Pensacola. This option allows your guests to have more selections to choose from,” Events Manager for Great Southern Events Kady Reeves said.
Buffet-style food service is a change from the traditional plated
wedding meals of the past. “Buffets and [interactive] stations are very popular, even more so than plated. Really since the end of the pandemic, people seem to crave those opportunities for buffets, which is a shift from the traditional sit-down plated meal that was the most popular option for a long time,” Owner and Executive Chef of Nancy’s Catering & Events and Agapi Bistro + Garden Gus Silvos said.
The self-serve nature of buffetstyle dining can be taken up a notch with food bars. Food bars allow guests to customize their plates to exactly their taste. Guests can start with a base and then layer on all the toppings, seasonings and sauces that they desire. With so many options, food bars are sure to satisfy every guest—whether they like their plate plain jane or piled high with fixins. From macaroni and cheese bars with bacon bits, cheese and breadcrumbs, to grits bars with shrimp, grilled veggies and cream sauce, there are a multitude of options for food bar bases and toppings. “Grits bars are always popular, and we’re seeing that even more so now. Again, I think it harks back to the comfort food that people have been seeking. Who doesn’t love a grits bar with all the toppings?” Silivos added.
Choices & Variety
Wedding menus are becoming more and more unique with fun flavors, different types of cuisine
and multiple entrée options. Today, couples are opting for a variety of food choices rather than a small, fixed menu. With so many amazing catering options available today, you can have your cake and eat it, too.
Like the uniqueness of the special bond between you and your spouse, your wedding menu should reflect your unique tastes and personalities. Make your mealtime memorable with your favorite foods. Whether you want to pay homage to your ethnic heritage and serve up culturally traditional food or get quirky by putting an adult spin on some of your childhood comfort foods, there are so many ways to incorporate your food faves into your big day. “Couples seem to love comfort food and ethnic cuisine, which is definitely another shift from the traditional style I’ve seen over the years,” Silivos explained.
In addition to variety in the types of cuisine that couples are choosing, many are also opting for variety in the protein options on their menu. Personal preferences and dietary restrictions may be considered when selecting the main courses of the night. “All my brides like to have variety. I would say most lean towards three protein options—steak, chicken and seafood,” Reeves explained. Along the same lines, General Manager of The District, Lisa Benson, said that “most couples that I’ve been meeting with are definitely leaning toward surf and turf.”
As plant-based and healthconscious eating has become more popular, some couples are serving plant-based entrees, as well. “Plantbased options are more and more popular, whether it’s exclusively a vegan menu or just making sure those options are on the menu,”
explained. Even if you are not vegan or vegetarian, plantbased options can tend to be on the healthier side, which is perfect for anyone wanting to eat healthy. “In terms of food service, I believe people want to see more healthy choices,” Benson said.
Continue the Culinary Celebration
Who says the celebration has to be confined to one evening? Today, many couples are opting to celebrate their love for longer than the few hours of the ceremony and reception. It is common for couples to host pre- and postnuptial festivities for those closest to them. Some of the ways that couples are extending the celebration include welcome parties on the day before the wedding, day-of pre-ceremony drinks and postnuptial brunches the morning after the big day. An important element of any celebration or event is, of course, food!
To kick off the wedding festivities early, consider hosting a welcome party! Traditionally, rehearsal dinners are the primary festivities held the day before the wedding, however, welcome parties are now playing a part in the day, too.
Welcome parties differ from rehearsal dinners in the way that rehearsal dinners are typically reserved for those in the wedding party or close family and friends, but welcome parties usually include everyone invited to the wedding. Welcome parties also tend to be more casual celebrations for socialization and fun.
“The new ‘trend’ these days is to do a Welcome Party for guests the night before the wedding. Dessert spreads are very popular at these events,” Reeves said.
Pre-wedding libations and finger foods are a popular choice
for a treat on the wedding day. Upon arrival at the venue, guests can sip on a beverage and enjoy small bites before the ceremony begins. Silivos has implemented this trend locally. “We had a local artisan, Kasia Szabo, create a beautiful champagne wall for weddings we host in the Agapi Garden, and it’s one of our most popular requests! A full wall of champagne flutes filled up to greet guests when they arrive is a great way to start a celebration,” he said.

Emerald Coast Theatre Company’s (ECTC) signature event, “La Vie En Rouge,” held on Thursday, March 28 raised $37,467 for the local organization.
Embodied after the hit musical, Moulin Rouge!, the event brought the glitz and glamour of a 19th century Parisian cabaret to the Emerald Coast. From entry to exit, guests were delighted with live musical performances and interactive experiences from ECTC’s talent troupe of singers and actors, sponsored by Grand Boulevard at Sandestin® and Cabana by The Seaside Style.
Guests started their night with a glass of champagne, courtesy of Vin’tij Food and Wine, before entering cocktail hour which featured fare from Tommy Bahama’s and The Ruby Slipper Café. JOIN PENSACOLA BEACH JUNIOR LIFEGUARDS THIS SUMMER
The Pensacola Beach Junior Lifeguard program is seeking aspiring lifeguards between the ages of 13 and 15 to join an exciting and challenging two-week training session this summer on Casino Beach.
A tryout for the Junior Lifeguard Program will occur Saturday, June 1, at 7:30 a.m. at Quietwater Beach. The tryout will consist of an approximately 400-yard open water swim in waist-deep water, followed by a one-mile run on the sand. Applicants must attend the tryout to be considered for the program. *In the event of a postponement due to inclement weather, the alternate tryout date will be Saturday, June 8, at 7:30 a.m.
The program cost is $200 per person. Applicants accepted into the program must pay
on the day of the tryout with a check or money order (credit cards or cash are not accepted). A parent must be present at the tryout. During the program, junior lifeguards will learn about ocean rescue and medical care, participate in rescue drills, shadow Pensacola Beach Lifeguards and enjoy beach recreation time.
There will be two program options for applicants accepted into the Junior Lifeguard Program, running from 9 a.m. to 3:30 p.m. Monday-Friday for two weeks each:
• Session One: June 17-28
• Session Two: July 15-26

Triumph Gulf Coast earlier this month surpassed the milestone of distributing more than $550 million in grant awards stemming from the BP oil spill settlement, with much of the funding going toward schools in an effort to boost the North Florida region’s local workforce.
The grant funds have been spread across public school districts, state colleges and universities in the eight-county region encompassing Bay, Escambia, Franklin, Gulf, Okaloosa, Santa Rosa, Walton, and Wakulla.
Proposed programs and projects funded by the grants must meet certain requirements before they can get funding. For example, the funds have to go toward projects that “increase students’ technology skills and knowledge” and lead to industry certifications, and provide alternative pathways for students to meet high-school graduation requirements. The grants also can go to programs that encourage students with aptitude in science, technology, engineering and mathematics, or STEM, to attend a state college or university in the region.
Susan Skelton, Triumph Gulf Coast’s administrator, told The News Service of Florida that the organization has “committed to supporting a complete pipeline of workforce education, beginning with elementary schools through university-level training.”
A News Service review of some of the bigticket items funded at least partially by the grants explores the initiatives that have been funded at all levels of education.
Funding going to school districts in the area has totaled tens of millions of dollars.
In 2021, the Triumph Gulf Coast Board of Directors approved $20 million for the Wakulla County School District’s War Eagle Career Academy. The project built on existing training programs offered by the district, giving students the ability to get training in fields such as information technology, artificial intelligence and computer cloud computation.
Last year, the Santa Rosa County school district was awarded $9 million to go toward the Santa Rosa Center for Innovation. The center was billed as giving students the opportunity to engage in “project-based activities” that are geared toward obtaining industry certifications in areas such as robotics, engineering, healthcare, agriculture and automotive trades.
Warrington Preparatory Academy, a charter school in Escambia County, was awarded $7.45 million last year to train students for careers in what the school called in its grant application the “top three industry cluster areas of the county” — defense and homeland security, life sciences and professional services.
The Wakulla school district also in 2017 received $3.926 million from the Triumph board for a Career and Technical Education
Center that was geared toward giving students the potential to earn certifications in automotive-related skills as well as heating, ventilation and air conditioning, or HVAC, fields.
Money distributed by the Triumph board comes from a settlement with BP oil company over the 2010 Deepwater Horizon disaster in the Gulf of Mexico. The Triumph Board is required to distribute the money with the goal of “recovery, diversification, and enhancement” of the eight impacted Panhandle counties.
In addition to being designed to bolster the local workforce, applications for some of the various career education programs expressed goals of also increasing household incomes for area residents.
Of the Triumph Gulf Coast money steered to higher-education institutions, Florida State University has received the largest-ever grant. The Triumph Gulf Coast board earlier this month approved $98.5 million for FSU to construct aerospace and advanced manufacturing facilities in Panama City.
“One focus Triumph is working towards is building a strong workforce pipeline in aviation related industries,” Skelton said in a statement.
“Several nursing programs funded by Triumph support training at all levels from high school through post secondary.”
The University of West Florida in Escambia County received a $6.685 million grant related to nursing and respiratory therapy education in 2022. The university wrote in its application for the funds that the “number of job postings is far exceeding the number of educational completions in the region for these occupations.”
Northwest Florida State College was the beneficiary of a nearly $21.8 million grant from Triumph aimed at expanding its nursing program. The grant money comprised only a portion of the funds required to fully finance the project, which also included state funds aimed at bolstering nursing education as demand for the profession increases alongside population growth.
“Combined, these funding sources are paying for a renovation project, new equipment, and the development of cutting edge virtual and augmented reality simulations that will result in more immersive learning spaces for twice as many nursing students than the College can currently train,” the college said in a statement to the News Service.
The college also received $2.856 million for a Walton Works Training Center of Excellence, which provides training in a range of fields from carpentry to cybersecurity, and more than $7 million for an Aviation Center of Excellence.
“Graduates of these programs contribute to the local talent pool by filling positions in commercial airlines, private aviation companies, aircraft maintenance facilities, and related industries,” the college said of the aviation center.
STATE JOBLESS RATE INCHES UP

Matching its highest level in two years, Florida’s unemployment rate has ticked up to 3.2 percent after holding steady for three consecutive months at 3.1 percent.
The Florida Department of Commerce on Friday estimated 353,000 Floridians were out of work and actively seeking employment in mid-March, an increase of 8,000 from a month earlier. At the same time, the overall labor force grew by 7,000 to 11.097 million.
“Population growth is a big driver of all the growth we are seeing in Florida,” Jimmy Heckman, the Department of Commerce’s chief of workforce statistics and economic research, said Friday. “That just creates more opportunities and more demand for goods and services, which creates more opportunities for businesses, which creates more demand for labor.”
The state figures follow U.S. Bureau of Labor Statistics earlier in the week showed 303,000 Floridians quit their jobs in February, one of the highest rates in the nation and an increase of 35,000 from a month earlier. In the same time, the state estimated there were 557,000 job openings, up 20,000 from the prior month.
“There are a lot of people that are confident in their ability to find jobs out there in the labor market,” Heckman said during a conference call with reporters. “We are seeing a couple of different things that point to that and there is a lot of demand for labor right now.”
Florida’s unemployment rate was last at 3.2 percent in March 2022.
A year ago, the jobless rate in Florida stood at 2.8 percent. Since that time, the labor force has grown by 185,000, while the ranks of the unemployed increased by 52,000.
BIDEN’S FLORIDA VISIT HIGHLIGHTING ABORTION

In a conference call with reporters on Monday, Michael Tyler, communications director for the Biden campaign, shrugged off dismissed suggestions that former President Donald Trump “has the state in the bag.”
National Democrats are seizing on abortion restrictions imposed in states such as Florida, where the Republican-controlled Legislature and Gov. Ron DeSantis approved a ban on abortions after six weeks of pregnancy. The six-week restriction is set to go into effect May 1.
Tyler pointed to a 2022 U.S. Supreme Court ruling that overturned Roe v. Wade, which for nearly 50 years guaranteed access to abortions. Trump has credited his Supreme Court appointees for the controversial ruling, which left decisions about abortion up to states and spawned a series of laws in Republican-dominated states, including Florida, restricting access.
Trump “owns” restrictions on women’s reproductive rights now being imposed across the country, Tyler said.
“This campaign’s posture reflects the seriousness with which we’re taking Florida,” Tyler said. “Again, the President is traveling there (Tuesday). We’ve got staff on the ground. You’ve seen our paid investments begin to pop up in the state of Florida. It is one of many pathways that we have to 270 electoral votes, and we’re going to take it very, very seriously tomorrow and throughout the rest of the election.”
Florida Democrats maintain the looming six-week abortion restriction will help counter an ever-widening Republican advantage in registered voters and boost support for a proposed ballot measure aimed at enshrining abortion rights in the state Constitution.
The proposal, which will appear as Amendment 4, seeks to “limit government interference with abortion” and says that “no law shall prohibit, penalize, delay, or restrict abortion before viability or when necessary to protect the patient’s health, as determined by the patient’s healthcare provider.”
Recent polling on the ballot proposal indicated that support remains under the 60 percent voter approval required for passage.
A USA Today/Ipsos poll conducted in early April showed that Amendment 4 drew
approval from 57 percent of registered voters, with just 6 percent undecided. Results from Emerson College Polling conducted between April 9 and 10 showed 42 percent of registered voters supported the measure and 32 percent were undecided.
A poll conducted last week by Florida Atlantic University Political Communication and Public Opinion Research Lab in collaboration with Mainstreet Research showed that 49 percent of registered voters supported Amendment 4, with 32 percent undecided.
“Since almost one-third of respondents do not know how they would vote if faced with the ballot initiative, this means that it could go either way come November,” Luzmarina Garcia, assistant professor of political science at FAU, said in a release.
Gov. Ron DeSantis has railed against the measure and predicted it will fall short of approval from 60 percent of voters required for passage.
“I can tell you that that amendment is written very deceptively, to try to trick as many people to vote for it as possible,” DeSantis said during a bill-signing event in Hialeah Gardens last week.
Leading opponents of the proposal include the Florida Voters Against Extremism committee, which has received about 90 percent of its campaign contributions from the Florida Conference of Catholic Bishops, according to the state Division of Elections’ website.
John Stemberger, President of Liberty Counsel Action, said on the podcast “Deeper Dive with Dara Kam” the measure will face a “legitimate” opposition campaign that includes TV and radio advertising.
“We don’t need to raise as much money as the other side,” Stemberger said. “But we will raise millions of dollars and we will fight this and defeat it.”
As of March 31, Florida Voters Against Extremism had raised $30,640, including $25,000 from the Florida Conference of Catholic Bishops. The conference also has provided $45,000 in in-kind contributions, the records showed.
The Floridians Protecting Freedom committee, which is backing the proposal, spent roughly $17.9 million to get the abortionrights amendment on the November ballot.
The committee received 17,000 separate contributions, with Planned Parenthood branches giving more than 21 percent of the total contributions as of March 31. Other major contributors include American Civil Liberties Union and the Homestead-based Florida Advancement Project.
FHSAA MULLS ESPORTS

Florida was the only state to post an increased unemployment rate from February to March, according to the U.S. Department of Labor, while six states saw rates go down.
The national unemployment rate stands at 3.8 percent. The rate has been under 4 percent for more than 40 months, while wavering between 3.7 percent and 3.9 percent since August 2023.
Florida has gained 211,100 jobs over the year, an increase of 2.2 percent, while nationally the jobs numbers have risen by 1.9 percent, the state commerce department noted Friday.
The month-to-month figures saw health-care and social-assistance jobs grow by 12,900, construction by 3,600 and serviceproviding jobs by 7,900. Food service and accommodations jobs dropped by 1,600, real estate jobs declined by 2,200, manufacturing was off by 1,600, and positions involving transportation, warehousing, and utilities were down 4,700.
Across Florida, the Miami-Fort Lauderdale-West Palm Beach metropolitan area, at 2.7 percent, continues to have the lowest unemployment level in the state.
The 2 percent unemployment rate for the Miami-Miami Beach-Kendall region within the South Florida area was a 0.4 percentage point increase since February, which was among the highest month-to-month increases in the state.
Unemployment in the Orlando area was at 3.3 percent, while both Jacksonville and the Tampa-St. Petersburg-Clearwater areas were at 3.4 percent. Other rates included Pensacola at 3.5 percent.
The region around Homosassa Springs had the highest rate at 5.1 percent, down from 5.2 percent in February. The Villages was at 4.7 percent and Sebring was at 4.6 percent.
The Florida High School Athletic Association could potentially sanction competitive video gaming, or esports, as an official sport, amid growing interest from member schools.
The FHSAA Board of Directors held a discussion about esports during a meeting in Gainesville Monday, with talks focusing on the share of Florida schools that would be interested in offering programs if the games are sanctioned as an official sport.
The organization distributed a survey and received responses from 425 schools, which accounted for 58 percent of its combination and senior high schools.
“Two questions were about current participation and interest, while several other questions were asked to guide future research and decision making, if necessary,” a document included in the board’s agenda said.
Overall, 26.4 percent of schools that responded reported sponsoring an esports team or club. Of that overall number, 24.9 percent of public schools have teams or clubs, while 25.2 percent of private schools and 39.1 percent of charter schools said they have such programs.
The FHSAA requires at least 20 percent of schools in at least two of its four “sections” or regions of the state offering a sport in order for it to be eligible for sanctioning.
Interest in offering esports is high among the member schools that did not report having programs.
More than half — 54.6 percent — of the schools surveyed said they would be interested in offering esports to students if the FHSAA sanctioned the games. Nearly 50 percent of public schools surveyed indicated interest, while more than 56 percent of private schools and 82 percent of charter schools expressed interest.
Of the state’s four FHSAA regional sections, schools in Section 4 encompassing South Florida expressed the highest level of interest at 69 percent.
FHSAA board member Trevor Berryhill, who also is athletic director for Oviedo private school The Master’s Academy, was among the members who voiced support for sanctioning esports.
“Last year we had a student get a scholarship to Florida State (University) in esports. He also is a part of their NIL (name, image and likeness) collective,” Berryhill said, referring to student-athletes at the collegiate level being able to earn money from business agreements such as endorsement deals.
“So it’s just another opportunity for kids to be involved in something,” Berryhill added.
The FSU Esports program is a studentrun organization, according to its website, that “provides a foundation for our school’s many competitive gaming teams.”
Esports programs also are increasingly being recognized by sanctioning bodies across the country.
There are 21 states that are members of the National Federation of State High School Associations that have sanctioned esports in their schools, according to FHSAA documents. Southeastern states that have signed off on the programs include Georgia, Mississippi, Alabama and Louisiana.
Gulf County Schools Superintendent David Norton also backed the idea of sanctioning esports, calling the proposal a “winwin” for the FHSAA and saying he hopes the board will “move forward on this sooner than later.”
“This would be a way for us to reach us and bring some more student athletes in,” Norton, who also serves on the board, said during Monday’s meeting.
FHSAA officials did not indicate during Monday’s discussion when a potential decision could be finalized on sanctioning esports, but said the organization is in the early stages of the process. The next step would be requesting official petitions from member schools that would announce their intent to add esports programs.

ESCAMBIA COUNTY HOUSING
FINANCE AUTHORITY NOTICE OF REQUEST FOR PROPOSALS (RFP) FOR PURCHASE AND DEVELOPMENT OF PROPERTY
LOCATED AT 625 OLIVE ROAD, PENSACOLA, FLORIDA
PROPOSAL NO.: ECHFA 2024-01
The Escambia County Housing Finance Authority (hereinafter referred to as the “Authority”) owns certain real property appropriate for development as affordable residential use property. You are advised that the Authority will accept Proposals for the sale and development of the property from qualified developers. . All interested parties are invited and encouraged to submit proposals. The specifications for the proposal may be obtained from the Authority by contacting fran. jones@escambiahfa.com or lisa.bernau@ escambiahfa.com or by telephone at (850) 432-7077 or (800) 388-1970.
All submissions must be in the form described in the specifications and must be received by the Authority by May 21, 2024 no later than 4:00 p.m. (Central Standard Time). Proposals may be delivered to the Authority’s Office located at 700 South Palafox Street, Suite 310, Pensacola, Florida, 32502. Submittals received after the closing time will be returned unopened. Multiple submittals from the same entity will not be accepted and will be returned unopened. All submittals shall be sealed and marked in the manner prescribed. Responses must be clearly marked as follows:

The Authority reserves the right to accept or reject any or all submissions, to waive any proposal informalities and to re-advertise for submission when deemed in the best interest of the Authority.
