A Taste of the Season The holidays bring friends and family together. And when any group of people get together what do they like to do? EAT! We asked area chefs to share some of their sumptuous seasonal recipes with our readers. We hope you enjoy! Tremendous turkey meatloaf 2 lbs. extra lean ground turkey ½ of a mediuim green pepper ½ of a medium red pepper 1 stalk of celery ½ of a Spanish onion Extra virgin olive oil ½ cup tomato juice 2 Tbsp. Worcestershire sauce ½ cup BBQ sauce 2 eggs 1 cup plain breadcrumbs Seasonings added to taste: salt, pepper, garlic powder, Tabasco, thyme Dice onion, green and red pepper, and celery. Saute in a skillet with the olive oil until soft but firm. Mix all ingredients, except seasonings, adding breadcrumbs last. Mixture should bind together but still be moist. Make a small ½-dollar-size patty from mixture, grill it up and taste-test! Adjust seasonings to your preference. Grease two loaf pans. Divide the mixture evenly into the pans and cover pans with foil. Bake at 325° for 1 hour, removing foil for last 15 minutes of baking. For a firmer “crust” remove foil for the last 30 minutes of baking. TIP: If you only need one meatloaf this recipe freezes well. Divide mixture, placing one half in a pan to bake. Place other half in a gallon-size freezer bag. Press mixture out flat, to ¼ inch thickness. Label, date and store flat in the freezer for up to 3-4 weeks. Pressing the mixture flat allows for neat storage and quick thawing. Once thawed, if mixture seems too moist, add a touch more breadcrumbs, bake as directed, and enjoy! Pork Loin Roulade 1 2½-pound boneless pork loin roast* 4 slices bacon, cooked and cooled ½ pound ground hot Italian sausage, browned, drained, and cooled 1 large shallot, finely chopped 1 jalapeño pepper, stemmed, seeded, and finely chopped 3 large slices dill Havarti cheese Spice rub 1 tsp. salt 1 tsp. freshly ground black pepper 1 tsp. paprika tsp. cinnamon ½ tsp. dried thyme ½ tsp. crushed dried rosemary tsp. cayenne pepper * Note: Ask your butcher to butterfly the roast, or see instructions below.

Wash and pat dry the pork loin roast and place on cutting board. To butterfly, starting one-third from the bottom, slice end to end along long side of loin to within 1 inch of opposite side. Don't cut all the way through. Repeat on other side, this time starting cut 1/3 down from top. Unfold the pork loin and lay it flat on a work surface that has been covered with plastic wrap. Place another piece of plastic wrap over the pork loin and, using a smooth-edged meat mallet, gently pound pork evenly until it is 1/3inch thick. Remove top plastic wrap and season meat lightly with salt and pepper. Lay the slightly-cooked bacon lengthwise along the middle of the pork loin, to within 1 inch of each edge. Sprinkle the browned sausage over the entire pork loin, to within 1 inch of the edge. Sprinkle the green onions and jalapeños over the sausage, again keeping the filling to within 1 inch of all edges.

Layer the cheese lengthwise, as with the bacon. Starting on one long side, begin rolling up the roulade, tucking the ends in. Tie with kitchen string every 3 inches or so, and tie each end so that the cheese does not seep out while cooking. Preheat oven to 400°. Rub the outside of the roulade with the spice rub. Place 1 tablespoon of olive oil and 1 tablespoon of butter in an oven-safe roasting pan. Place pan over medium high heat, being careful not to burn the butter. Brown roulade on all sides. Place in oven and roast until thermometer placed in center of the roulade meat (not the filling) reaches 145°. Remove from oven, cover, and allow roulade to rest for 15 minutes. Cut away string and slice into 1-inch thick medallions and serve warm or at room temperature. This recipe comes from G. M. Joachim's cookbook, A Taste of it All

Songs, Blessings & Latkes When Melinda Wentworth came to Monson, she brought a love of food, entertaining, and Jewish tradition. Her kids supplied the motivation to celebrate Hanukkah in a big way. Her husband supplied the moose menorah. Hannukah latkes 10 medium potatoes 1 medium onion 2 large or 3 medium eggs Âź cup unbleached all-purpose flour, breadcrumbs, or matzoh meal Vegetable oil Salt and white pepper to taste Peel the potatoes if the skin is coarse; otherwise, just clean them well. Keep them in cold water until ready to prepare the latkes. Starting with the onions, alternately grate some of the onion on the large holes of the grater and some of the potatoes on the smallest holes. This will keep the potato mixture from

blackening. Press out as much liquid as possible and reserve the starchy sediment at the bottom of the bowl. Return the sediment to the mixture. Blend the potato mixture with the eggs, flour, salt, and white pepper. Heat one inch of oil in a frying pan. Drop about one tablespoon of mixture for each latke into the skillet and fry, turning once. When golden and crisp on each side, drain on paper towels. Serve with yogurt, sour cream, sugar, or applesauce. This recipe originally appeared in our December 2008 issue.

Baking With Love Sunday afternoons are a little bit sweeter at the home of Lanie Abbott and her daughters, Lydia, and Natalie Colson. Healthy, homemade food is important to this mom and her daughters, and they spend some time each weekend baking up a storm in their country kitchen.

Peel and slice the apples into 1-inch cubes. Mix in sugar and spices. Set aside. Mix crust ingredients until moist and doughy. Set half aside. Roll other half out into an even circle between two sheets of waxed paper and place inside pie plate. Fill the bottom crust with the apple filling mixture. It’s OK if it rises above the rim of the plate. Roll the other half of the crust dough into a circle be-

tween two sheets of waxed paper and place on top of the pie plate. Pinch the top and bottom crusts together around the edges of the pie plate with your fingers. Make three slices into the top of the pie for steam to escape. Cover the crust with strips of tinfoil to avoid burning. Bake at 450°F for 40–45 minutes. fillings Sliced ham Sliced prosciutto Pepperoni Sliced portabella mushrooms 1 small onion, sliced 2 cloves of garlic 1 roasted red pepper, sliced Let your frozen dough rise overnight. Stretch your dough into a rectangle measuring about 9 by 14 inches. Preheat oven to 425°. Slice your meat, cheese, and

vegetables. Cook your mushrooms and brown your onions and garlic in a saucepan before adding them to the dough. Spread spaghetti sauce down the middle of your dough. Add cheese and other ingredients. Fold sides toward the middle, one at a time, and seal the seam by pinching together. Also pinch the ends. Flip the stromboli over so that the seams are on the bottom. Rub lightly with olive oil. Place in the oven for 12 to 15 minutes. The stromboli is done when the dough is lightly browned. Let cool for a few minutes before slicing and serving with a side of warmed spaghetti sauce for dipping. Todd’s Trash Can Turkey Looking for a different way to prepare your Thanksgiving bird this year? Take a tip from weatherman Todd Simcox and cook your turkey like a real Mainer—in a trash can. 34

Prepare the bird: Rub the turkey with olive oil, sprinkle with salt and pepper. Add other spices to taste. Drive the wooden stake firmly into the ground. Prep the ground around the stake by layering sheets of aluminum foil. Light two piles of charcoal; let them burn until they turn white. Place the turkey on the stake and center it under the trash can. Layer the coal on top of the can and around the edges, piling them up the side of the can. Roll up the foil hanging out below the trash can to create a seal. When enough time has passed (approximately 2 hours), remove the coals from the can and uncover the bird.
