“I am pleased to report that our ANZAC Day Mixed Bowls Legacy Fundraiser was again a success this year. Your Directors and I were very humbled by the support from all those who attended, as we were able to raise close to $3,500 for Bankstown Legacy, which helps to support our war widows."

We have some very exciting things happening at Bankstown Sports Club during the winter months with a major redevelopment of our Sports Bar and the creation of the new Brewhouse officially underway, as well as new menus at Greenfield Station Bistro and Platform 1. Our newest restaurant Lucky Chengs has been a big hit with our members in its first few months since opening, and I would encourage all of you to come and taste the unique Asian street cuisine for yourselves. I am pleased to report that our ANZAC Day Mixed Bowls Legacy Fundraiser was again a success this year. Your Directors and I were very humbled by the support from all those who attended, as we were able to raise close to $3,500 for Bankstown Legacy, which helps to support our war widows. We also had a member of the Bankstown Sports men’s bowls club raise a bit of extra money for the cause. Stuart De Pede agreed to shave his head on the day and collected $350 in donations. Well done Stuart! Bankstown Sports Club also hosted the Zonta Sydney West Year 10 Citizenship Awards dinner in May where director Alex Fulcher and I presented special awards to students from 11 schools, recognising their achievements in the community. The Zonta International group works to advance the status of women around the world through various initiatives aimed at eradicating domestic violence, raising awareness of the needs of refugee women and empowering young girls to pursue their dreams. Here in the Sydney West region, we provide help and support for women’s refuges, as well as special services to hospitals and schools. Celebrations for International Nurses & Midwives Day were held at Bankstown Hospital on May 12, where the Board and I were pleased to donate additional funding for scholarship programs, which will further the education studies of up to 15 nurses. This is the 10th year that we have supported the nurses with a $40,000 donation to fund special programs to improve their skills. 2016 is a very exciting year in the sporting calendar with the Olympic and Paralympic Games in Rio. Australia will again be sending a very strong team, with athletes

entered in almost every sport. We will be keeping a close eye on a few very special competitors who hail from the local Bankstown area. Chloe Esposito and her brother Max are competing in the modern pentathlon. Chloe was a member of the Bankstown Sports Athletics Club until the London Olympics, when she decided to relocate overseas. Jacob Hansford grew up training with the Bankstown Sports Swimming Club and will be competing in the men’s 4x200m relay team at this year’s games. The directors and I would also like to offer our congratulations to the Club and La Piazza for several recent awards. Bankstown Sports won the Health & Wellbeing category at this year’s Clubs & Community Awards in May for our on-going financial support of the Little Wings Charity. The organisation is a not-for-profit children’s charity that provides free ongoing flight and ground transport to families in need from country NSW, who live and work in remote areas with little or no access to specialised medical services. Little Wings has been a part of the ClubGRANTS program and receives regular financial assistance from Bankstown Sports. The club has also hosted major fundraisers and functions for the group, provides ongoing accommodation and ground transport for families who use the Little Wings service, offers marketing and promotional assistance for the Little Wings brand, and staff run their own events to raise money for the cause. Congratulations to La Piazza as well which was named Favourite Restaurant in the CanterburyBankstown area in the 2016 Go West Campaign. The owners and staff work tirelessly to create a true authentic Italian atmosphere for our members and their guests, and the accolade is well deserved. And finally, the directors and I would like to offer our condolences to the family of Jack Bedford OAM, Former President of the Bankstown RSL Club Limited and current President of the Bankstown RSL Sub Branch. Jack passed away on May 1. He was a well-liked and highly-respected member of the local community and will be missed.

The multi layers of glistening glaze are infused with the bright red colour of pomegranate seeds which pop with sweet and sour notes, to compliment the rich, juicy flavours.

IS GULYAS, IS GOOD Also known as “goulash”, this classic soup is a rarity these days. The slow-cooked braised beef and rich round silverside shank are perfectly complemented by a fusion of carrots, potatoes, onion, garlic and celery, delicately seasoned with bay leaf, caraway, lemon zest and sweet Hungarian paprika. Served with sour cream and chives, this light but deeply warming dish is a perfect start to your meal as you escape the wintry weather.

BEEF WELLINGTON TAKES CENTRE STAGE

This classic is inspired by the Gordon Ramsay version I saw at his ‘Paris Hotel’ in Las Vegas.

The highlight of our winter menu is the classic Beef Wellington – served on a traditional English plate under a stunning silver cloche. This retro signature dish features a generous eye fillet enveloped in delicate puff pastry and a thin layer of prosciutto, surrounded by shaped vegetables, pan-fried mushrooms, parsley and onions. This much-loved winter warmer is sure to satisfy!

KEFALOGRAVIERA – SAY ‘CHEESE’ Originating in Macedonia and developed in the 1960s, this tantalising cheese dish uses a combination of sheep and goat’s milk to produce a taste similar to haloumi. It is pan-fried, then served with halved heirloom tomatoes, lemon juice and a generous drizzle of balsamic vinegar to offset its naturally salty taste. Garnished with fresh oregano, Kefalograviera is reminiscent of the white washed walls and blue roofs of the Mediterranean.

GIANT MOOLOOLABA PRAWNS Our Mooloolaba prawns have been carefully butterflied and flash-seared in a combination of olive and vegetable oil, ensuring they are cooked to perfection! Splashed with a garlic, paprika and chilli mix, this wonderfully light, natural and flavoursome dish will not disappoint!

YOU’LL LIKE LOUKOUMADES

SWEET THINGS (ARE MADE OF THIS) If you’re fond of fondue, this sticky-date pudding served in bite-sized chunks, dipped in a warm butterscotch and chocolate sauce is the ideal desert for you! The cubes of sticky-date pudding have hints of ginger and cinnamon, the squares of strawberry and vanilla marshmallow are flamed and dripping, the fresh strawberries are halved and delicious, and the vanilla-infused ice cream is the cool addition that balances it all off.

Loukoumades (pronounced ‘Loo-koomar-dees’) are a real treat if you like profiteroles or donuts – except these traditional Greek deserts feature a syrupy surprise made of cinnamon, honey, clove, sugar and water. The dough is shaped by hand before being double spooned and carefully flicked into oil held at 185º and deep-fried for 4 to 5 minutes – enough to create delicious dollops with crispy outsides and a gooey, chewy finish. They are served with honey, cinnamon ice cream and pistachio halva.

I owe the inspiration for this dish to my Greek Mother-in-Law.

LAMB SHOULDER AT ITS BEST Two hours marinating, then six hours slow roasting, this southern Gippsland lamb is a no-fuss, natural dish featuring traditional tastes and combined with some exciting new flavours! Served with Freekah Risotta, an ancient grain from Syria which is rich in protein and has a unique smokey flavour, the dish is finished off with mint, Jamon salad, chopped roasted pistachios, almonds and walnuts and a parmesan butter.

TRACK RECORDS "…November 1999, the Dunc Gray Velodrome set its own records, ready in good time for training and the events themselves.

Local history is a wonderful thing. In this issue of InTouch we look back on the year 2000 when the Olympics were on our doorstep. Your Club was host to numerous overseas guests, and the futuristic Dunc Gray Velodrome wowed the international cycling community. With the Rio 2016 Olympics starting 5 August, it’s worth remembering our very own involvement with the Sydney 2000 Olympics – and how it affected the local area. In truth, the ‘Olympic Year’ was going to change the municipality forever. Construction of stadiums and infrastructure was in full swing. Olympic teams and coaches came out to train and stayed right through to the Closing Ceremony and beyond. Then, as that magic moment in September 2000 approached, tourists started flooding in and the whole area really began to buzz. It felt like Australia was on show and that the whole world had come to be a part of it. As a result, your Club became a glamourous hub and temporary home to many visitors.

According to the Club’s history book In The Name Of Sports, most of the American team stayed at the Athlete’s Village at Homebush. But some high profile athletes opted for accomodation away from the main site, choosing instead to stay at Travelodge Bankstown. By all accounts, they were heady times. History records that the Club responded with an array of initiatives, including lavish shows, tribute bands, generous promotions and cash giveaways, as well as opening The Calypso Coffee Lounge (now known as the intouch café) – the first to serve patrons 24-hours a day. When Olympic weightlifter Suzanne Leathers married her coach Don McCauley at the Club – the day before the Olympics Opening Ceremony – 70 wedding guests descended,

followed by US television crews and reporters from 12 countries. If you’d walked into Bankstown Sports 16 years ago, you’d have seen flags of the world and Olympic bunting decorating the walls. In fact, such was the variety of nationalities of people visiting the Club, some waggish members likened it to the League of Nations. Not surprisingly, the massive overseas influx was good for business and Bankstown Sports announced a record trading profit for the year ended 30 June 2000.

WORLD CLASS VENUE One of the biggest changes to the local area was the construction of the Dunc Gray Velodrome at the Crest in Bass Hill, named after Kiama boy, Edgar ’Dunc’ Gray, Australia’s first cycling Olympic gold medallist.

DUNC GRAY VELODROME

Commenced in May 1998 and opened in November 1999, this new indoor cycling track set its own records, ready in good time for training and the events themselves. The venue’s splendid architecture brought international attention to the local area – and design kudos too. The futuristic roof emulating the look of a modern helmet received numerous plaudits, as did the 60 kilometres of imported Baltic pine that contributed to its extremely fast surface. Sean Eadie, Bankstown cyclist and world sprint champion, experienced many memorable moments there, including winning bronze in 2000 as part of the men’s pursuit team. We can all be proud of the Club’s past association with the Olympics, and in particular the Dunc Gray Velodrome. We are also pleased that Bankstown Sports Cycling Club is fortunate to have continued access to Australia’s greatest velodrome. Bankstown Sports InTouch

Chloe and Max

ROAD TO RIO! The Esposito family is one of a kind. Father Daniel competed in the Modern Pentathlon at the 1984 Olympics. Daughter Chloe followed in his footsteps in the 2012 London Olympics. Now, brother, Max, joins her in the hunt for medals in Rio – coached by their Dad.

Chloe Esposito has come a long way since the days when, as a young girl, she would compete for numerous Bankstown Sports sporting clubs.

Is there sibling rivalry? Not according to Chloe, in an interview she did with The Sydney Morning Herald.

In August, she will be representing Australia at the 2016 Rio Olympics, competing in the sport that runs in the Esposito family: the Modern Pentathlon.

“Max and I talked about it. We wanted to go to Rio together,” she said. “I am so proud of Max.”

It’s her second Olympics, and she’s hopeful of bringing home medals, after finishing an impressive seventh in London in 2012. But these Olympics are different. It’s four years later, and, after younger brother Max shocked former champions with a gold in the Asia/Oceania qualifiers last June, he’ll be going too.

And what’s it like having your Dad pushing you through a brutal eight-hour-a-day regime, you might wonder? “It’s good because he knows us so well,” says Max, “he understands a lot about the sport. “We have a couple of arguments… but he can tell whether we’re bludging or slacking off.” The brother-sister duo was thrilled to be chosen to represent Australia on the biggest stage at the biggest sporting event in the world. “It feels amazing,” says Chloe, a member of the Club for five years, “I’m so happy … I’m really proud to represent my country.” How the Pentathlon evolved? Penta means five in Greek, and athlon means competition. In Ancient Greece, the Pentathlon lived up to its name with five events held over one day – discus, javelin, long jump, wrestling, and a short foot race called a stadion. Today’s version, known as Modern Pentathlon, was introduced in 1912 by the father of the Modern Olympics, Pierre de Coubertin, and still retains the five-event structure. Coubertin modelled the event on a 19th Century soldier stuck behind enemy lines, hence the five sports of today: fencing,

pistol shooting, horsemanship, freestyle swimming and cross-country running.

Competitors accrue points for their performance in each discipline and the winner is the one with the highest tally at the end of the fifth event.

FOLLOW CHLOE AND MAX Following this dynamic duo is easier and more interesting if you know a little more about what’s involved in their chase for Olympic gold. Some facts you may not know about the Modern Pentathlon include: • Fencing is the only event where competitors face off against each other, it runs for 1 minute, and the winner is the first to land a hit. • Riding involves show jumping over 12–15 obstacles, over a 350m–450m course. • The swimming component is 4 x 50m laps of the pool. • Running and shooting are now combined into four 800m running loops with a 10m pistol component at the start of each one – competitors have to hit the target five times before running the next loop. • Laser shooting was introduced in 2011 to replace traditional pellets. Remember, your Club will be carrying all the action from the Olympics broadcasts and you can come on in and watch in comfort. The Rio 2016 Opening Ceremony is on 5 August and the Closing Ceremony is on 21 August. IS BREWING! Boutique beers, gourmet burgers, wine and cheese and our very own microbrewery – the new Basement Brewhouse at Bankstown Sports will have it all.

We wanted a venue that was new and completely unique to the Bankstown area. Something that had never been done before. A destination bar that would have something for everyone. The Basement Brewhouse will be exactly that. Construction is underway with the current Total Sports Bar being completely redeveloped to make way for a new multi-faceted layout, featuring our very own microbrewery, where we will be producing our own beer. We will be focusing on quality, flavour and technique, rather than the actual volume of alcohol we produce, and our special four-vat system will allow us to create four different flavours and styles of beer as often as we like. Our in-house beers will be accompanied by wide range of other independent boutique and craft beers on tap, catering for all tastes. We will also have cocktail and wine lists available with a selection of boutique brands. The Basement Brewhouse won’t just be all about beer though. One of the main highlights of the venue will be our new Burger Bar which will be open ‘til late, with a range of gourmet food offerings. Among the menu items to tempt your tastebuds will be a Signature Reuben Burger and a delicious Pork Belly Burger. For something a little lighter, an in-house Gourmet Delicatessen will serve a range of cured meats and cheese. The design concept for the new outlet is also something that’s completely different to any other bar or event space in the area.

We’ve gone for a very modern industrial feel, with exposed gold and copper piping, which complement large cement pillars with timber and metallic features. As far as layout goes, we decided to move away from the old open-plan design to focus more on smaller gatherings, and provide our members and guests with a more intimate atmosphere for their events. The room has been divided up into multiple sections which can be roped off for functions, but can also be left open for larger events. This may all feel very un-sports-bar-like, but rest assured, we will still be screening all major games and sporting events, with the option of big screen TV’s in the common areas or smaller flat-screens in your own private booth. And for all members who love that Grand Final, big-game atmosphere, from 2017 we will screen large sporting events, including State of Origin games, in The Theatre. One of the goals we wanted to achieve with the new Basement Brewhouse was to appeal to a broader audience and not just sports fans. We want the venue to be somewhere you can meet your mates and watch a game and enjoy a meal with friends, with enough entertainment to keep non-sports fans happy too! Bankstown Sports Club is always working on ways to create better experiences for our members and guests. FOR THE MUSIC! SplashDance is a brand new music series broadcast several times daily on ABC Kids Television, featuring the wonderful performance talents of Daniel Milne, Adele Parkinson, Adrian Espulso and Monique Salle. The SplashDance series premiered earlier this year, with the reaction to the show so strong that ABC TV immediately returned all 26 episodes to air after the first run. Social media has been abuzz with posts from parents and fans, all expressing their enthusiasm for the uniqueness of the show. SplashDance presenters use colours and fun elements to create a unique and wonderfully special dance studio before launching into a pop-infused dance song. All of the songs performed by the SplashDance cast have been written by John Field, who has produced more than 300 songs for The Wiggles. SplashDance is directed by Deb Ryan, who has also directed hugely

successful series such as Playschool, Bananas in Pyjamas and Hi 5. Families will now have the opportunity to experience SplashDance Live with the cast coming to the club on Saturday 16 July for a special morning performance starting at 10am. The Theatre will come alive with colour, fun, singing and dancing, with families invited to move and learn together through song. A dab hand

WITH THE BAT It has been 16 years since Bankstown Women’s Cricket Club member Sue Fairhurst walked out at her second Olympic Games to represent Australia at the 2000 Sydney Olympics for softball. Sue won a Bronze medal at the 2000 Games, equalling her Bronze achievement in the 1996 Games. An elite level batter, Sue now replicates her batting standards on the cricket pitch, which has taken her club to numerous successes of late. The club last year won an astonishing

four premierships, a first in 44 years. Sue has been the club’s highest scorer, biggest hitter and a key to their success for the past two seasons. For example, Sue scored an astonishing 174 runs including 23 fours and three sixes in one game. With Sue’s expertise and knowledge on the pitch, Bankstown Sports

TWO WHEELS TO SUCCESS Bankstown Sports Cycling Club junior member Soumia Karare found her love for the sport by watching the riders she idolised from past Olympic Games when many Australian representatives earned a slew of medals. The 10-year-old hopes to do the same one day. The young talent is a breakaway from the pack in her exceptional performances at the recent track series at the Dunc Gray Velodrome. Club Secretary Peter Buckingham says Soumia is a talent ready to jump away from the bunch of girls she rides against. In her short time she has developed the skills to be a targeted force within races and continues to excel in her transition through the age groups. The Bankstown Sports Cycling Club has had a large influx of junior riders over the past 12 months with the addition of 14 new riders for 2016. With a facility such as the Dunc Gray Velodrome, it’s not surprising that elite level athletes are starting to emerge.

WOMEN IN SPORT – DID YOU KNOW? Recent research from the Australian Bureau of Statistics indicates teenage girls in Australia face an increased risk of chronic disease unless they become more active. According to the research, nearly 60% of girls aged 15-17 report doing little to no exercise. The Australian Government has launched a campaign called Girls Make Your Move which encourages girls to be more active.
