Cheers to Beer This Year " Whoever drinks beer, he is quick to sleep; whoever sleeps long, does not sin; whoever does not sin, enters Heaven! Thus, let us drink beer!” — Martin Luther At 12:00 a.m. on Saturday, September 20, the mayor of Munich, Germany will tap the first Oktoberfest beer barrel inside the Schottenhamel Tent, officially kicking off the iconic global beer celebration for 2014. This 16-day festival may be based in Bavaria, but it resonates worldwide because, well, the world loves beer. But in today’s bar business, oddly enough, that can sometimes be forgotten. The cocktail craze that has enveloped the industry and the dawn of “mixology” have made it occasionally hazy what this whole thing was built upon in the first place — good ol’ beer. Of course, that’s not to say that spirits and cocktails have totally overshadowed beer on-premise. In fact, this issue of Bar Business shows that ale is not ailing much these days, rather it’s booming, based heavily around the continuing growth and love of craft beers. As we report in our Booze News section, the Brewer’s Association announced that through June 2014, approximately 10.6 million barrels of beer were sold by craft brewers, up from 9 million barrels over the first half of 2013. Craft beer has averaged nearly 11 percent growth each year over the past decade. “Today’s marketplace offers an

unparalleled number of styles, varieties and flavors of beer,” says Craig Purser, President and CEO of The National Beer Wholesalers Association. “American consumers continue to demonstrate that they enjoy this vast variety.” And variety, as they say, is the spice of life. In that same Booze News column, we introduce a soon-to-arrive line of new beers based on characters from the wildly popular Hobbit books and movies by author J.R.R. Tolkien, who himself once wrote this about imbibing: “Ho! Ho! Ho! To the bottle I go To heal my heart and drown my woe Rain may fall, and wind may blow And many miles be still to go But under a tall tree will I lie And let the clouds go sailing by” Tolkien would surely be proud to have his own beer, but he’s not the only wizard wishing for a cold one. In our Owning Up column we discover a California-based brewer who just happens to be finishing up his PhD in neuropsychology while creating new ales in his laboratory. And our Inventory section tells us that, just in time for Halloween, Newcastle is bringing back its Werewolf Blood-Red Ale to haunt beer coolers across the country. So while you celebrate National Bourbon Month and sip some amazing cocktails in September, remember where this all started — with a nice cold beer. And beer is still here, in a big way.

Booze News Do You Have a Drinking Hobbit?
I
f your habit is drinking and you like The Hobbit, there is a new series of beers making its way into the marketplace that is right up your alley. Beer geeks and regular geeks alike rejoice with the announcement that a trio of Hobbit-inspired microbrews are being released by Olympia, Washington-based Fish Brewing. Honoring J.R.R. Tolkien’s literary little people and the supporting cast of his books (and the recent Hollywood movies), Fish Brewing is partnering with BevLink and Ocean Brands to promote and distribute the new beers, while Warner Brothers and New Line Productions signed off on licensing and usage of the iconic Hobbit imagery and names. Set to be sold only in 22 oz. bottles, this epic tippling trilogy will include Gollum Precious Pils, a strong Imperial Pils style brew; Smaug Stout, modeled after a classic Russian Imperial Stout with a subtle hint of Habanero chilis to represent its namesake dragon’s famously fiery disposition; and Bolg Belgian Tripel, a strong Belgian Tripel named for the Orc chieftan of Hobbit lore. At 22 oz. and nearly 10% ABV each, there is nothing little about this Hobbits. 8

Booze News America’s Beer Distributors Applaud Sustained Growth for Craft Beer
T
he National Beer Wholesalers Association (NBWA) – which represents the interests of America’s 3,300 licensed, independent beer distributors – applauds America’s craft brewers for their continued growth and entrepreneurial spirit. According to mid-year data released this week by the Brewers Association (BA), craft brewers enjoyed continued growth as American craft beer production volume increased 18 percent during the first half of 2014. According to the BA, from January through the end of June 2014, approximately 10.6 million barrels of beer were sold by craft brewers, up from 9 million barrels over the first half of 2013. BA-defined craft beer has averaged nearly 11 percent growth each year over the past decade. The BA also reported that, as of June 30, 2014, there were 3,040 breweries operating in the United States, with 99 percent being craft breweries. That number includes 502 new breweries that opened for business in 2014 across the country. “Craft beer continues to provide a significant contribution to the American beer industry,” said NBWA President & CEO Craig Purser. “The tremendous growth in craft beer sales underscores the excitement of independent beer distributors in partnering with America’s craft brewers to help them reach a wide network of retailers and increase their value. This

en and women are different when it comes to their wine habits. New research from Canadean finds that in the US, women drink wine in order to relax and unwind, seeking good value options, whereas men are more likely to be wine buffs, searching for high quality and new drink experiences. In 2013 the US spent a total of $21.2 billion on wine. Women are the biggest drinkers accounting for 59% of consumption by volume compared to 41% for men. According to Canadean’s new research, women desire products that will help them relax and unwind, with this need motivating over $6.7 billion in

success is due in large part to the effectiveness of the independent distribution system that allows access to market for brewers of all sizes and a state-based regulatory system that works to level the playing field between brewers, distributors and retailers." U.S. beer distributors directly employ more than 130,000 people and add $54 billion to the country's economic output. wine sales in 2013. Finding good value wine is also highly important to women: 15% of what they buy is driven by the search for products which give the best value for money. According to Catherine O’Connor, senior analyst at Canadean, this is partly due to women’s high wine consumption: “Being more regular drinkers of wine than men, women look to find affordable offerings that allow them to enjoy the drink frequently without feeling guilt over their spending. This makes communicating value an essential part of how marketers should target women.” Although they drink less wine than women, men spend more in the search for quality. Male wine consumers in the US are driven by the search for quality products and new drink experiences. Although they drink less wine than women, they spend considerably more money in their search for high quality products. Men spent $1.8 billion to meet this need in 2013, whereas women only spent $1.0 billion in their search for quality. Men are also driven to find products that offer new experiences, with this need fuelling $2.4 billion of their wine consumption compared to $2.2 billion of female consumption. O’Connor explains, “these findings reflect a growing wine connoisseurship among American men. While beer is still more likely to be men’s standard drink of choice, a growing number of men are looking to wine for a premium drinking experience as well as to show off their knowledge and refined palates.” According to O’Connor, “this means rising male demand for luxury wine experiences and products that can offer the wine buff something new.”

The sweet, high-powered flavors that give these cocktails a kick match up well with new products made from exotic ingredients like cacao fruit to shape some amazing new cocktail recipes. n Chicago, one of America’s hotbeds of molecular cuisine, the kitchen-made cocktails at I|O Urban Roofscape under the direction of Chef Riley Huddleston update familiar tiki cocktail favorites by carrying ingredients and preparation to extremes to create an updated but approachable drink. His cocktails— such as the The Piná Roja Colada — average between 12-18 ingredients each — many of them liqueurs — and he uses scientific techniques of molecular mixology to craft them. “We use liquid nitrogen to create our sorbet, so the mouth feel will be pleasant and mix well with the spirit and make for an impressive presentation when it goes out to the table,” explains Huddleston. “The challenge here is to ensure the balance of the various ingredients blend and yet preserve the integrity of the spirits and fruits. My goal is to appeal to both the adventurous guest who wants a new experience and somebody who may be less experienced and can get to know the rum or whatever spirit we’re using in a way that’s totally approachable. For both customers, the flavors stay true and are nicely pronounced.” In Los Angeles, where the tiki trend thrives alongside pre-Prohibition genre drinks, Lesley Solmonson, a cocktail writer for the L.A. Weekly newspaper, and husband David, dedicate a great amount of space in their new book, The 12 Bottle Bar (Workman) to drinks that illuminate the enduring power of tropical thunder. The book, aimed at beverage professionals and fans, features contributions from top local mixologists reconciling their sweet appeal with a more balanced and modern sensibility. “The American palate, perhaps more than anywhere else in the world, is attuned to sweetness,” says Lesley Solmonson. “We love sugar, and the average customer, even at a time where today’s tiki recipes are more balanced, wants that clear sweetness element that’s at the core of the rum as well as the fruit juices. Also, we love fireworks--the presentation of the drink. You can have a lot of fun with garnishes as well as flourishes such as plastic monkeys and paper umbrellas. The mix of flavors, combined with the (drink’s) appearance is sure to spark conversation. As a bartender, you can break down barriers with your customers that you may not be able to with other drinks that are more serious and spirits-forward.” Lesley Solmonson further advises bartenders to be aware of the fact that their palate may not always be the same as the public because they’ve already been exposed to a broader range of flavor and texture. For example, while bitterness is a darling for the bartender at the moment, some bitter flavors may be too intense for the average customer unless that element is used judiciously. Therefore, sweetness cannot totally be lost in a tiki drink, as the sweetness is part of that genre’s soul. “It is really a meeting between the current craft cocktail culture and the fun of drinking,” adds David Solomonson. “I don’t think anybody has ever ordered a cocktail like a Manhattan for a good laugh. At this point, there is a new generation of tiki drinks emerging that www.barbizmag.com

This happens to true for beverage directors and bartenders at top resorts in French Polynesia who are looking to update their offerings for their endless summers. David Enkaoua, Food and Beverage director at Le Meridien Bora Bora Resort, points out that although the property guests currently make more requests for straight alcohol (including fine sipping rums from around the world), neat or on the rocks, a slow but steady return of rum production and “rum culture” to Tahiti and its neighboring islands has prompted him and his colleagues to develop new cocktails and improve upon classic cocktail recipes with access to higher quality rums from around the world as well as their home-grown bounty of tropical summer fruit. “Our bar offers twelve cocktails that stay the same through the year, and we have a selection of four that change every month to get our (beverage program) current with international mixology trends,” says Enkanoua. “We teach our staff new tricks and techniques so they can capture the essence of what guests from different parts of the world will want to order, as well as September 2014 Bar Business Magazine

One thing we offer that one cannot find outside of French Polynesia is Avotea, a beautiful white rum produced in Tahiti which is in many of our cocktails. ID formats are constantly changing, so it’s important to stay up to date. 2) REWARD THE GOOD, PUNISH THE BAD Loyalty cards and other incentives can be very persuasive in determining a patron’s behavior. By creating a strong loyalty program where you reward the good and punish the bad you can greatly persuade customers to be on their best behavior. To ensure this is successful, it is important to advertise your loyalty program to customers to make them aware of your VIP and Banned lists. 3) IF YOU KICK THEM OUT, MAKE SURE THEY STAY OUT There’s no such thing as a one-time offender. Many of the club-goers who get kicked out tend to come back and cause more trouble. If you ban them from your establishment, make sure you keep them out and don’t allow them to sneak in when a different bouncer is on duty. Most modern ID scanners have this capability and will allow you to record incident details. 4) TALK WITH YOUR FELLOW CLUB OWNERS Many troublemakers will get kicked out of one club and simply move onto the next one. Placing cameras where customers can see them will let them know you’re being vigilant to keep your club safe. Several bars, nightclubs, and restaurants in Minneapolis discovered that the same customers continually go door to door and cause all of their businesses’ problems. To eliminate this issue, these business owners began looking for a way to work together to keep the 1% of their customers that cause 95% of their incidents off their premises. f you’ve ever been a victim of a mild case of computer shock, a vendor file that you couldn’t open, or an employee record that you or someone accidentally deleted, consider yourself lucky. Glitches like that pale in comparison to the ultimate computer disaster — a hard disk crash or a virus that wipes out all of your business records.

Think it can’t happen to you? Think again. Computer consultant Michael Leibrandt of Abington, Pennsylvania says that almost every computer in service over a period of several years will suffer a major catastrophe such as a hard disk crash. Imagine what that would mean to your bar business. Further, computer failures aren’t the only danger. “Many owners
and managers tend to think of a computer malfunction as the only risk to their business records,” says Jack Shea, President of Solutions by Computer, Springfield, Massachusetts. “It’s easy to forget about the possibility of fire or flood.” Fortunately, modern technology has made protection from that kind of disaster simple and inexpensive. Still,

whether you use dedicated software or an off-the-shelf package, you must take the steps necessary to give yourself the peace of mind that comes from knowing that your business records are safe. Remember, you can replace a computer that fails; the information it contains, in many cases, is irreplaceable.
A Brief History of Backups In the early days of desktop computers, backing up was a simple procedure. All you had to do was pop a floppy disk in a drive and copy your data. Today, most files are much too large to fit on floppies. That’s why manufacturers no longer include floppy drives on their computers. In 1995, Iomega introduced their innovative ZIP drive, a format that many regarded as the logical successor to the floppy, but that didn’t happen. The ever-increasing size of data files has caused many users to look to emerging technology as a better solution to the backup problem. While some users still rely on Zip disks for their backup chores, Leibrandt recommends looking to newer technology as a better long-term choice for protecting business data. Another early format that has lost favor is the tape drive. “Tape backups are less reliable than other methods,” says consultant Robert Meyhoefer, of Mount Laurel, New Jersey. “Tapes can break making them unusable, backups and restores are slower than other methods, and tape drives capable of handling large amounts of data are quite expensive.” Here are four backup methods that Leibrandt and Meyhoefer say are most suitable for providing the peace of mind that comes from knowing that your business records are protected from loss:
CD/DVD Disks Compared to early floppies that held a maximum of 1.4 MB of data, CDs can hold as much as 800 MB. DVDs can 4.7 gigabytes of data (twice that much if it’s a double layer). A gigabyte (GB) is 1,000 megabytes. There are few sets of bar business records that

WHAT WOULD THAT MEAN TO YOUR BAR BUSINESS? cannot be accommodated by CDs or especially DVDs. A single DVD with its massive storage capacity can be bought for around $1.25; CDs cost much less. Most new computers now come with CD/DVD drives built in. As recently as a dozen years ago, a DVD drive went for as much as $500 and a single DVD disk for $35. “While we use tape backups for our Unix-based systems,” says Shea, “our Windows-based systems use DVD disks.” According to Leibrandt, you should keep in mind that disks have their own set of disadvantages. Some users have reported disks that became unreadable after a few uses, others readable only in the drives in which they were created. He recommends a second set of backups when DVDs are used. “However, as far as cost is concerned,” says Leibrandt, “CD and DVD disks can’t be beat. For most users they should be adequate and would certainly be the least expensive.”
Jump, Flash, USB Drives So-called jump or flash drives are tiny plug-and-play portable storage devices that use flash memory for data storage. As small as one-half inch by one inch, they can be toted around in a purse or shirt pocket. Jump Drives will work with any newer PC or Mac with an existing USB 1.1 or USB 2.0 port. When you plug a jump drive into a USB port, your computer automatically assigns it to the next available drive letter. Then, just use the drag and drop method to transfer files and folders. Retail prices for jump drives have dropped dramatically in recent years. Some manufacturers offer jump drives with up to 32 GB of memory, far in

How To: excess of the needs of a single bar business. “The primary advantage of jump drives,” says Leibrandt, “is compactness and portability. They were originally designed to transfer files from one computer to another with a minimum of bulk, and they do that job superbly well.”
Meyhoefer agrees. “If you are backing up less than 2 GB of data, I recommend using inexpensive USB jump drives. They’re a great way of backing up and transporting data quickly and easily. You can never make too many backups. Just make sure you organize multiple backups

so you can find what you need easily in case of an emergency.” In Leibrandt’s opinion, jump drives have one major disadvantage. “They’re so small,” he says, “that they’re easy to misplace or lose. I’ve managed to lose a couple of them myself.”
External Hard Drives As you know, the “permanent” storage device on your computer is its hard drive. This is where all of your applications and data files reside. The use of a second hard drive for backing up data is arguably now the most popular of all systems. “The method of choice for backups is the addition of an external hard drive,” says Leibrandt. “Plug the device into a USB port and copy your entire library of data files. For the ultimate in protection, unplug the drive and take it to a completely separate location for safe off-site storage. Because they come with huge storage capacity, one drive can do it all.” The latest external hard drives have also benefited from technological downsizing. Drives of up to a whopping 2 terabytes (TB) of capacity selling for around $100 are smaller than your favorite novel. A terabyte is equal to 1024 GB. Smaller external drives with enough capacity to store all of the data files for a typical bar business are no larger than a cigarette package. For the ultimate in compactness, Leibrandt likes the FireLite brand. “I’ve had very good luck with them,” he says. “However, you won’t go wrong with any of the major manufacturers such as Maxtor and Iomega.” Maxtor drives, bundled with Dantz Retrospect software, include a one-touch backup button. Just press the button and do other work while your computer handles the backup procedure automatically.

Online Data Storage Business owners who prefer not to invest in backup hardware and the bother of toting physical backups to an off-site location have an alternative method that helps solve both of those issues. Online data storage allows you to log on to a secured Web site where you may upload your files for storage and recovery if that is ever necessary. Many commercial software packages offer an online storage option for an additional fee. “One of our clients recently had a devastating fire,” says Shea, “but we were able to get him up and running quickly with our online backups.” The costs for online storage vary according to the capacity you require. www.Ibackup.com offers a basic plan with 10 GB of storage space for $9.95 per month. There are many other companies such as ZipCloud (www. zipcloud.com) that offer similar plans. All companies encrypt their stored data so that it can not be accessed by unauthorized persons. Also, some Internet service providers offer limited storage space to their account holders at no additional charge. “There’s one caution with online data storage that you should keep in mind,” says Leibrandt. “If the provider’s server goes down, you won’t be able to backup or have access to your files until the problem is fixed. That’s why I consider online data storage a supplement to traditional backups, not a replacement.”

pointed to his burnt out building.” Finally, whatever backup option you choose, be sure to do a test restore occasionally to make certain that it’s working properly. “Don’t wait until you have a catastrophic loss to discover that your backups don’t work,” says Leibrandt.

Schedule Regular Backups Remember that protecting your business against data loss will be effective only if you perform your backups on a regular basis. Unless you use a program with an automatic backup feature, you must initiate the backups. How often should you back up your data? If you used your computer only occasionally, a weekly backup might be enough. However, in your business, important information in your computer changes every business day. That’s why you should make backing

The evening will pay tribute to the club’s rich cultural history and its founders, with an extravagant soiree in the original month in which it opened. The newly renovated Tongue & Groove has expanded to include all new furnishings, décor and lighting in its 8,600 square-foot space, located in the Lindbergh neighborhood of Buckhead. Guys could only get in with sport coats, we had a tight dress code, and it was the roaring 90s — dot.coms and everyone in Atlanta was making a lot of money. We catered to that crowd, and over time things have evolved.” Krohngold and Strumlauf opened the original Tongue & Groove in the former Buckhead Village, when

The city’s nightlife landmark is proud to celebrate its 20th anniversary this year. Throughout the past 20 years, the club has hosted and entertained the likes of numerous A-list actors, pop stars and athletes, as well as performances by world-class musicians and DJs, who have all played an integral part of the club’s history. After opening its doors in 1994, the original owners, Michael Krohngold and Scott Strumlauf, still manage the day-to-day

“Design and music changes, but the core of our business is hospitality.” NEWSWEEK aptly described the club; “Named after its wooden floors, and what happens on them.” “The biggest changes have been in the technology,” explains Strumlauf. “Social media has been a big change from 20 years ago; even e-mail is a big change from when we opened 20 years ago. We put an iMac in the wall with a keyboard at one point so people could check their e-mail, and we thought, ‘Are people really going to do this?’ But they did. Everything from

The club was displaced by developers in July 2007, but it would take more than a wrecking ball to keep them down. 30

The duo created the buzz again in 2008 by opening the new Tongue & Groove (T&G) in Lindbergh City Center, just off Piedmont Road in Buckhead, an updated and a larger version of the first, again with two rooms creating two distinctly different environments. Krohngold and Strumlauf tapped David Kreidler as operating partner, and pulled out all the stops to ensure this Tongue & Groove was bigger and better. The Tongue & Groove team attributes its ongoing success to a constant state of reinvention in efforts to stay relevant with regards to all aspects of popular culture. Advances in technology affect the way music is played and how it sounds. T&G’s new space-age sound and lighting rig leaves little to the imagination and completely satisfies the most discerning clubber. The system was designed by Atlanta architect Jeffrey Griffin, and outfitted in technology by Scott Waterbury of Atlanta Sound & Lighting. The dress code that at one time required sports coats for gentlemen now acknowledges that jeans and sneakers are fashion forward. The well-trained and hospitable staff includes a team roster of polite doormen, seasoned veterans and hot young rookies
In 2012, The Joint debuted as a redesign of T&G’s second room. More organic in nature, with reclaimed wood and up-cycled materials, this 1,500-square-foot space allows for an alternative music format and is perfect for smaller private parties. Two decades is a long time for any type of business to remain viable, but it’s virtually unheard of in the nightclub world. T&G has broken the old-school rules by not only keeping its doors open for two decades, but remaining “liked” by cynical locals — and not just on Facebook. “I think anybody can open a nightclub;. all it takes is a little bit of money,” says Krohngold .”But can you

We’re aware that we operate in opposite ways but at the same time we’re always on the same page.”

ure, external marketing efforts can contribute to higher customer counts, but it does not guarantee those additional patrons will come back after the initial visit. To turn a first-time customer into a regular depends on the ability of the staff to sell, not so much the marketing effort. It comes from the competency of your bartenders, servers and, most importantly, your manager’s ability to drive bartenders and servers to a higher level of performance. Herein lies the problem. Most bartenders and servers could care less about higher sales — that’s management’s problem. And most managers can’t raise anyone’s level of performance because most managers in today’s bar business don’t know how to train. They often don’t have the necessary skills that come from experience and knowledge. If you want to increase sales at your club, it’s only going to come from one source — a well-trained, knowledgeable staff. Who positions oneself directly in front of the customer to make a sale? It’s not the manager. It’s the bartenders and cocktail servers who are on the “front line.” They have the best chance to get to know your guests — their needs, their drink choices, their anticipations. The customer is right in front of them. Here are some suggestions and guidelines for better managing your bartenders and servers. Use every one of them and I’d bet your sales will improve.

A PERSONNEL APPROACH A. Teach the importance of “attention and recognition” — what it means for repeat business. Why do people come to bars instead of staying home? They want interaction. They want someone to talk to, someone to pay them some attention. It’s not the drink that makes them return, its how much attention you give them while they’re there. Teach your bartenders and servers to get to know each guest by name, remember what they drink and their favorite food items — something about them. Teach bartenders to introduce themselves and extend a handshake to anyone sitting at the bar. This is one of many important “people” skills for repeat business.
B. Teach bartenders and servers how to generate a conversation with a guest. The bartender should ask open-ended questions that create a conversation. Conversation starters can be anything. Make sure it’s not “Hi, you ready to order?” Ask your bartenders/ servers what their opening line is going to be.
C. Teach bartenders and servers everything you can about the products you sell. They must learn how to make a few recommendations. Up-selling bar products is not easy and it has to be taught. However, today’s bar manager usually takes it for granted that bartenders and servers know how to do this. They don’t. Management must train their bartenders and servers through role model situations and constant testing. The bartender/ server must grow from the “order taker” type of

service person to the concerned, “how can I better serve, and sell to, this person?” It’s done through knowledge, and the knowledge is validated by testing. Vendors can provide on-site training about most of their products. You have to ask them for their help. Get vendors involved with your staff.
D. Assign someone in your company to be the Training Director. When it comes to sales, this person is more valuable than the GM or the Bar Manager, provided they take the job seriously and try to make a difference. What kind of impression does a guest have if the bartender or server can’t name, or doesn’t know, the difference between all the domestic and imported beers you sell, or if they can’t explain the breadth of your wine list?
E. Emphasize to your bartenders and servers the importance of the constant smile. Being pleasant and making eye contact with every guest should come naturally, but many bartenders and servers have to be constantly reminded to do it.
F. Make sure your bartenders talk to new customers more than regulars. It’s the new customers you must get to come back, hopefully with a friend or two. You’ve already got the regulars. Spend your free time getting to know as much as you can about the new customers. This is the best way to increase sales. Get the new customers to come back, somehow, some way. In the bar business the formula for increasing sales is simple: “No people equals no money.” You need more 34

people to make more money. And your best chance to get more people is to get the new customers coming back, often. Now you’re making more money.
G. Keep distractions away from the bartenders/servers. No cell phones. No boyfriends/girlfriends/husbands/ wives allowed on the property during shifts. No incoming personal calls. No texting (unless to promote the bar). Every bit of a bartender/ server’s attention must be devoted to the customer.
H. Do not allow employees to congregate amongst each other on the floor or behind the bar. If it’s not busy, the server should be on the floor in their station, even if there’s only one customer, or at the front door meeting and greeting guests as they come in and then seating them in their station. Bartenders who understand “cyclical motion” behind a bar should always be busy doing something.
I. Do not allow your bartenders or servers to be seen eating, or smoking, or counting their tip change, in front of customers. Is management on the floor watching for these things?
J. Do you have props in place to help you make the sale? But remember — a champagne or wine list cannot be presented unless the server or bartender can answer any question a guest might ask about the list. If you’re going to put a table tent on a table, everyone must be able to describe it to a guest and be able to make a sale from it. That includes the managers.
K. Always do a daily “alley rally” at shift change time. Managers should conduct a five-minute session that www.barbizmag.com
focuses on “what’s happening today”? The manager could include some suggestive up-selling techniques. He could verbally quiz employees about drink ingredients, pricing, or whatever will help them be of better service to each guest. Daily reminders to the staff are critical to the success of the “increasing sales” process. Do not expect your employees to motivate themselves into great sales people. It comes from management.
L. Management should not allow a bartender or server on the floor until extensive training has taken place and tests have been passed. Sales will never get better if a bartender or server is just thrown onto the floor in a “sink or swim” mode just after hiring with very little to no training. There’s too much to know, such as the cash register/ POS system, drink prices, bottle prices, what products are available, where the fruit backup is kept, who cuts it, etc. It doesn’t happen overnight. It takes several days and it takes management training.
M. Schedule according to the needs of the business first. Management should forecast sales from historical data and schedule accordingly, allowing for extraordinary circumstances, special promotions or conventions in town. Make sure you have scheduled enough bartenders and servers to meet the demand, but don’t “overstaff.” I have witnessed too many “grand opening” events that didn’t schedule enough bartenders and servers. Therefore, all the money tied up in the big promotion failed because customers couldn’t get product or service. They left upset. Will they be back? I doubt it. N. Don’t change the schedule from week to week. Give your staff a chance to have a personal life outside of work. Give them a schedule that has them working the same times, same days, week to week. Your customers will appreciate this as well. Regulars get accustomed to seeing the same bartenders/servers at expected times. They look forward to it. It’s a waste of management’s time to try to accommodate every employee’s request for a schedule change. O. Management must lead by example. It cannot be done from the office. Get out on the floor and greet guests, shake their hands, talk to them. Make suggestive sells or talk about upcoming promotions, the same way you’d like your staff to up-sell and promote. Your staff should notice and follow your example. Very few will do it by themselves. They must be shown the way. P. Tap into each employee’s skills outside of work. Maybe some of your employees are college students who are developing skills in marketing, landscaping, public relations, computer technology, advertising or graphic design. If so, do you need help putting a brochure together? Do you need help with social media, a promotional event, gardening around the club? You might have a music major who could lend a hand with entertainment situations or band promotions.

R. Teach your bartenders and servers to anticipate service needs, such as lighting cigarettes, a need for paper/ pen, drink refills, a glass or mug for bottled beer, change, etc. Some employees have natural instincts when it comes to anticipating service needs – most have to be taught.
S. Treat your employees better than you do your customers. If your employees are happy, love their job and love working with you, don’t you think all of that transfers over to the customer? A brand new set of venues paired together — one above the other — in New York City’s swanky TriBeCa neighborhood marks an auspicious start to one owner’s first foray into the bar business, both featuring throwback vibes mixed with contemporary touches. n the past 13 years, Jon Behling has worked for renowned brands such as the Gansevoort Hotel, Pink Elephant, SL, Sl East, Finale, Juliet Supper Club, South Point and most recently Gilded Lily. His appreciation for hospitality stems from his varied experience and background in the nightlife, restaurant, and hotel sectors. But this month, Behling takes his biggest plunge yet, opening a venue of his own for the first time; more impressively, two venues, paired together. Located at 313 Church Street, in the heart of NYC’s richest precinct, TriBeCa, Church Street Tavern will take guests back to an old New York ambiance with vintage décor, featuring a classic American menu with a modern twist and a vibrant raw bar. Directly below that, Behling and his partner will also open a lounge called Bandit’s Roost, where guests will feel like they’ve stepped into the iconic Jacob Riis photograph from 1888 (titled “Bandit’s Roost,”) that depicts a mobster-ridden alley on Mulberry

Guests will enjoy an extensive cocktail list and an open format DJ program in the Roost, while both floors of the 313 Church Street space will offer unparalleled levels of hospitality, aiming to quickly become one of New York City’s premier destinations for fine dining and nightlife. “We really want to make it a New York kind of place with a New York feel, which is something we came up with it when we realized there weren’t a lot of places like that in the area,” explains Behling, who, with a partner, has formed Tribute Hospitality Group to own and operate the two venues. “It’s something we came up with when we saw the space. It was not designed very well in its old configuration. It had blue walls and blue ceilings and red chairs. It wasn’t a design that we liked at all, so we kind of gutted the whole thing and started from scratch.” When guests enter the stunning 2,000 square foot space of Church Street Tavern, they will feel like

Church Street Tavern will accommodate 70 people seated with options ranging from long black tufted leather banquettes, various tables, and hightops near the bar. For a more casual atmosphere, guests can enjoy the bar area, which is wrapped in brass with stained wood trim and offers extensive wine and signature cocktail menus. “The design came first,” says Behling. “We saw what we wanted in our heads and we put in on paper. Then we kind of created the menu and the cocktails to fit the space and the area. And we think the neighborhood can really use this kind of venue down there. There’s not too many places with a cool speakeasy or a great old school restaurant with a modern American New York feel.” In addition to the fresh raw bar at Church Street Tavern, Chef De Cuisine Chris Burke offers a continental menu with dishes such as crispy artichoke with lemon-tarragon yogurt, Rock Hen with sherry reduction and duck fries salad, Broiled Halibut with tomato confit and soft herbs, as well as an array of fresh seasonable vegetables and sides, all perfect for sharing. The venue will also feature tableside classics such as steak tartar, and freshly pulled mozzarella with seasonal accompaniments. A budding celebrity, Burke has over 19 years of experience in the food industry including time spent with world famous chefs such as David Bouley, Daniele Boulud and Gordon Ramsey. With Church Street Tavern, says Behling, “We’re catering to the TriBeCa crowd and the Wall Street people, and of course we want everyone uptown to come as well. But it’s more focused on the downtown crowd in the restaurant, and then the downstairs is going to be more of the party scene.” Downstairs at Bandit’s Roost is a very exclusive 1,000-square-foot space with a capacity of 100 VIP-only guests. Upon entrance, guests will be transported to some of New York City’s most dangerous and iconic allies of the early 20th century. Named after Jacob Riis’ iconic 1888 photograph of Bandit’s Roost alleyway and the mobsters that occupied it, the speakeasy will depict that time period, featuring a mirrored hallway and ceiling at the entrance, and inside, 38

To enjoy the elevated state-of-theart DJ booth, sound system, and upscale bottle service ambiance at Bandit’s Roost, guests must adhere to doorman discretion or be an existing client lucky enough to receive a personalized entry card with the guest’s name and code written on the card. A quick text using their card’s code will alert management of their arrival. Weekly entry codes will also be e-mailed to select VIP guests to grant them entry to private events and/or existing daily and weekly parties.
“For the Bandit’s Roost, the space kind of fit the idea,” says Behling. “We saw the space and thought about what would fit best in there and how we could make it work. We feel like the exclusivity is great, it’s what New York needs. Everyone is tired of the big clubs and going out with herds of people. They want the exclusivity and something that’s like a members-only kind of place.” The membership program for Bandit’s Roost is there to offer existing clientele and new clientele an elevated level of hospitality, but it’s not the only way to get in. and easy access and entry process. When management is alerted via the code of their arrival, they can ensure their cardholder guests get in quickly and that their table is set up with their pre-determined bottle or cocktails of choice. Existing members come from Behling and his partner’s existing lists and they will invite frequent diners and on a weekly basis and send codes out to various VIPs and industry tastemakers. Guests without a card or code can just ring the buzzer outside and the doorman will come upstairs and help them. It’s a small venue, so entry will be at the doorman’s discretion but they don’t intend to be any tougher than any other downtown lounge. “We’re not going to do much promoting for downstairs; it’s going to be internal promoting,” says Behling. “We won’t even have a web site or anything like that.” Behling and his partner were excited and intrigued by the area and the culture in the early 1900s, and the Jacob Riis photograph, “Bandit’s Roost,” gave them much inspiration; the entire Five Points neighborhood in general has always intrigued them. So when they saw the intimate space for Bandit’s Roost, Behling knew right away it was what they should do with it. “Downstairs we just wanted to have cool drinks that everyone likes and everyone feels comfortable drinking,” says Behling. “It will hold about 80 to 100 people, with 10 tables, and we’ll have different DJs every night playing cool openformat music. You might hear Madonna or Led Zeppelin or Guns N’ Roses.” While the dual spaces of Church Street Tavern and Bandit’s Roost co-exist in the same footprint, they will provide patrons with varying experiences. While diners can go downstairs to Bandit’s Roost, Behling and his partner anticipate the two venues will remain separate from one www.barbizmag.com

The upstairs bar is more of a laidback atmosphere catering to those looking for casual cocktails and conversation, or for those who came for dinner and have the option of a lively but casual atmosphere at the bar for cocktails after their dinner. But dinner at Church Street Tavern doesn’t necessarily feed into a night downstairs at Bandit’s. “They are very different spaces,” says Behling. “When you’re upstairs, if you don’t know about the Bandit’s Roost downstairs, you can eat dinner and not even know it’s there. But we are

THE (NEURO)SCIENCE OF BREWING
FOR PHILIP VIEIRA, working on a Ph.D. in neuropsychology while starting a brewery has meant some sacrifices. There have been 5 a.m. lab sessions to collect data for his research on different regions of the brain and the formation of memory. There have been midnight sessions of transferring beer to kegs and midnight neuropsychology data analysis marathons. And, there has been little time for long distance runs. “That’s unfortunate because with this industry there is a lot of beer drinking and a lot of calories consumed,” Vieira said. “My scholarly body is being weighed down.” In late May, Seven Brothers Brewery opened in Riverside with Vieira as its head brewer. (The name will soon change to Seven Brethren Brewery because of a trademark dispute that has required new licensing.) The opening comes at a time of tremendous growth of breweries. In June, the Brewers Association announced there are more than 3,000 breweries operating in the United States, almost double the number compared to 2010. 44

Seven Brethren is also part of another beer trend — the growth of brewery incubators. Brewery incubators allow multiple breweries to operate in the same location while sharing equipment, staffing and other costs. Vieira’s brewery is one of three that share a 1,800-square-foot industrial space, which serves as a tasting room and manufacturing facility. The three brewers are contract laborers under the company Brew Crew Inc., which leases the space and handles the business side of the operation. Vieira compared the arrangement to that of a musician and music label. This model allowed him to open a brewery without spending hundreds of thousands of dollars or having to get all the needed equipment, licenses and permits. “As a grad student, the idea of me starting a brewery on my own would be ridiculous,” Vieira said. “But with this model I do one important thing — brewing beer — and the rest happens through the company.” Vieira, 29, grew up in Modesto, CA, one of seven brothers. (The other brothers are all involved with the brewery, but in advisory roles.) After graduating from high school, Vieira spent three years traveling in Europe tracing his family roots, which includes a 16th century monastic brewer. He developed an interest in a variety of brewery traditions as he lived in the Czech Republic, Belgium, Germany and the United Kingdom. He returned to the United States, earned a bachelor’s degree from Fresno State and moved to Riverside for graduate school. The start of graduate school in 2009 coincided with Vieira beginning to brew beer at home. He teamed up with Z Riesz, a fellow graduate student at UC Riverside. They brewed in Vieira’s backyard using makeshift equipment from a WinCo grocery store and Home Depot. Then, as Vieira put it, “the inner scientist” in him wanted feedback. He started entering his beers in competitions. At first he got terrible results. But, the feedback itself was great. By 2012, he was winning awards and high praise at competitions throughout Southern California. Several of those highly praised beers pay tribute to the city of Riverside, whose symbol is the raincross, and UC Riverside, whose nickname is the Highlanders. The beers include: RAINCROSS RED, an Irish red ale; TARTAN STRONG ALE, a Scottish strong ale; and RYESIDE ALE, a Scottish-American rye ale. He also created several beers using ingredients foraged from the UC Riverside campus, including kumquats, grapefruit and oranges. In the future, he would like to use types of citrus found in UC Riverside’s citrus variety collection, which has more than 1,000 varieties. While brewing at home, Vieira got to know Brad McCauley, the husband of one of his classmates, Jasenka Orion. McCauley, who also brewed at home, decided with another partner to create the brewery incubator that became Brew Crew Inc. He liked Vieira’s beers and asked him if he wanted to be one of the initial breweries. (McCauley runs Delicious Science, another one of the breweries at the incubator.) Vieira, who is writing his dissertation and expects to receive his Ph.D. this fall, tries to spend only one full day a week at the brewery, but increasingly that is becoming two or three days a week. “Brewing is a lot more fun than typing on a computer,” he said. www.barbizmag.com
