U.S. Hemp for Health & Economy Industrial Hemp is not a drug. It contains no significant amount of THC, the primary psychoactive ingredient in drug varieties of Cannabis. However, due to outdated and inaccurate drug policy, federal law still prohibits commercial industrial hemp cultivation. The movement to legalize hemp farming in the U.S. is based on potential environmental, health and economic benefits.
Spring Salad with Chicken & Berries Ingredients
homemade chicken fingers stir fried in coconut oil 8 handfuls lettuce or greens of choice 4-6 ounces crumbled goat cheese 1 cup toasted pecans ½ cup dried cranberries or raisins 1 cup sliced strawberries 1 batch of homemade honey mustard dressing (see p.2) or homemade dressing of choice
Preparation
Environment Hemp is a fast-growing renewable resource and requires no petroleum-based chemicals to grow. Hemp products help reduce market dependency on synthetics, lumber, cotton and other non-sustainable industrial materials. Pollinators thrive on hemp’s high pollen content. Health Hemp seed provides Omega-3 and Omega-6 essential fatty acids, is an easily digested complete protein and a good source of dietary fiber. It is gluten free and has no known allergens. Economy In Canada, hemp nets farmers $200-$400 per acre. According to the USDA, soy and corn typically net less than $160. The American market for hemp products is the largest worldwide. Cook the chicken fingers or strips in refined coconut oil. Prepare honey mustard and set aside. To serve: Put two big handfuls of lettuce/greens on a plate. Chop chicken and top each salad with equal amounts of goat cheese, pecans, cranberries, strawberries and dressing. Enjoy!
Homemade Chicken Fingers Ingredients 3 medium chicken breasts (free range) 2 eggs 1 cup almond flour 1 teaspoon garlic powder ½ teaspoon salt By Deb Cyrel, CNC BHN. Adapted ½ teaspoon pepper 1 cup coconut oil for cooking from http://wellnessmama.com/8577/ spring-salad-berries/
Instructions Cut the chicken into strips or nugget size. Beat eggs with 1 teaspoon of water in a medium bowl. Add chicken strips and toss well. In another bowl, mix almond flour, garlic powder, salt and pepper. Heat coconut oil in a large skillet over medium high heat. (continued, p.2)

...Once oil is hot, coat chicken in egg mixture, dredge in almond flour mixture and place in pan. Cook 3-4 minutes per side or until golden brown and cooked through. Sprinkle with additional salt and pepper.
Homemade Honey Mustard Sauce Ingredients ½ cup Homemade Mayo ¼ cup mustard or Dijon mustard ¼ cup honey (I used ¼ cup honey for a tripled recipe) ½ teaspoon salt ½ teaspoon pepper ¼ tsp garlic powder (optional) Instructions Mix all ingredients with whisk or blender until smooth.
Homemade Mayo Ingredients 4 egg yolks at room temperature 1 TBSP lemon juice or apple cider vinegar 1 Tsp regular or Dijon mustard (or ½ tsp dried mustard) Salt and pepper ⅔cup olive oil or avocado oil ⅔cup coconut oil (warm) or other healthy oil (macadamia works well) Instructions Put egg yolks into blender or bowl and whisk/blend until smooth. Add lemon juice or vinegar, mustard and spices, blend. SLOWLY add oil while blending or whisking at low speed, starting with olive oil. Start with a drop at a time until it starts to emulsify and then keep adding slowly until all oil is incorporated. Refrigerate for up to 1 week.
